With the changing seasons comes a change in what we are craving, and that means comfort food. October is our most delectable issue of the year, and it is filled with some of our favorite dishes and beverages available in Boerne. We had the pleasure of meeting a wide range of small business owners who put their heart and soul into crafting delicious food. Join us as we explore the Farmers Market at Herff Farm where you can find unique and homemade goods. Get your taste buds ready, as we explore the microbreweries of Boerne. We also included a few new healthy recipes for you to try at home, whether you’re cooking for just your family or for entertaining guests. I have my personal Fall go-to recipes, but I love finding new ones to try like the arugula and fig salad recipe you'll find in this issue. There is an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can take us right back to our childhood kitchen table, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Food As Medicine EATING HEALTHY CAN TASTE GOOD

The science of using food as medicine to prevent and treat disease dates back thousands of years. This is contrary to the pharmaceutical industry's approach. There is a direct correlation between the sharp rise in chronic disease, and the introduction of processed foods loaded with toxins that make up the standard American diet. Nutrient deficiencies and toxicity are linked to nearly all modern health concerns. It is estimated that 90% of Americans are nutrient deficient; with magnesium, vitamin D, B12 and collagen topping the list. Health conditions associated with nutrient deficiencies include: cancer, auto-immune disorders, heart disease, reproductive problems, migraines, joint pain, hormone imbalance, neurological issues and more. ARUGULA AND FIG SALAD • • • • •

1 7-8oz. bag of organic arugula 1 small fennel bulb 6-8 fresh organic figs 3 oz. parmesan cheese Olive oil, Balsamic vinegar, pink Himalayan salt, cracked black pepper Place washed arugula on a large plate or platter. Layer chopped fennel on top, toss slightly. Cut figs into thirds or quarters and place them around the plate. Shave parmesan over the top. Drizzle with olive oil and balsamic vinegar. Sprinkle with pink salt, and fresh pepper. Serves 4.

GRAIN-FREE APPLE CRANBERRY CRUMBLE Filling (organic is best): • 4 lg. apples, sliced • 1 cup fresh or frozen cranberries • 1 T lemon juice • 1 T arrowroot flour • 1 t cinnamon • 2 T honey • Pinch of salt In a large bowl, combine the above ingredients. Let macerate for 30 minutes. Topping: • 1 + ¼ cup almond flour • 1/3 cup chopped pecans • ½ t cinnamon • Pinch of salt • ½ t vanilla extract • 2 T honey • 2 T cold grass-fed butter or coconut oil In a separate bowl, whisk together almond flour, pecans, cinnamon & salt. Add vanilla, honey & cold butter. Using a fork, mix until crumbly. Pour the fruit mixture into a 9 X 9 baking dish and top with the crumble mixture. Bake in a preheated 350° oven for 45-50 minutes. Let cool slightly and enjoy!

Today in Texas, flavor is truly on the move. What do we mean by this, you ask? Well, here in the Boerne area we enjoy a vibrant variety of cuisine from other cultures, which is not taken for granted. While Mexican and the Tex-Mex variety is prominent, we also have an abundance to offer from other cultures as well. So yes, flavor is very much on the move. But today, we mean something a little bit more literal: flavor on wheels, or commonly known as food trucks. After the explosion

of the ice cream truck in the 50s, America quickly understood the appeal of bringing food directly to the people. Then, the arrival of chip trucks in the early 60s created the perfect entry for the first taco trucks that came within the same decade. Now we fast forward to 2022 where there is a vast array of styles and tastes that come to you on wheels. So today, we will shed the spotlight on a few of the many unique and delicious flavors on wheels you can experience here in the Boerne area.

Owners Hector and Erica Perez, along with daughter Isabella opened the business in early Summer this year. And you can expect a truly original treat at Open Wide: all dishes are made from scratch. Farmers Market at Herff Farm CREATED TO GET PEOPLE CONNECTED TO NATURE AND JOIN IN CARING FOR OUR ENVIRONMENT

Farm to Market roads are everywhere in Texas. Historically, these roads were built to connect farmers and ranchers to their communities. Texas’ Farm to Market Road System is the most extensive secondary highway system in the United States. Permanent funding was established for FM roads in 1949; these roads now account for 41,000 miles of Texas’ 73,000 miles of highway. Today, farmers markets are a popular go-to for those looking to get outside and shop locally. But these markets do so much more; they help preserve farmlands, stimulate local economies, increase access to nutritious food, and promote sustainability. The Cibolo is proud to host a year-long weekly farmers market for the growing Boerne community and has for nearly ten years. Every Saturday morning at the Farmers Market at Herff Farm, vendors roll in with their trailers, tubs of goodies, and crates full of handmade crafts, ready to greet you with a smile. They sell everything from homemade soaps to handmade bread, fresh jams, locally roasted coffee, artisan crafts, leather goods, and beautiful native plants. The feeling of community at the Farmers Market has never been stronger. Our extended market season has been met with an outpouring of support from the Boerne community, and we’ve welcomed many new vendors. To better serve the growing population, we seek more produce vendors to add to our excellent market. Our Mission is to feed the Hungry in the Comfort area by providing meals and food assistance. The Comfort Table and Food Pantry is a 501c3 organization. Our Mission is to feed the Hungry in the Comfort area by providing meals and food assistance. Founded over 20 years ago by a group of Comfort area churches, the Table and Food Pantry provide food assistance to people in Comfort and surrounding areas. No one should have to go without food. Whether the person is elderly, and their social security check just will not stretch enough ... a single Mother trying to feed her kids ... layoffs happen ... homelessness ... even the working poor ... anything can happen to cause a need for assistance. The Comfort Food Pantry feeds approximately 130 families each month. The Comfort Table serves meals each week to approximately 75 people in-house and to-go. We send food home with approximately 50 students at Comfort Elementary each week via our Backpack Program so they will be fed on the weekends. As our mission grows, so does our determination to ensure that we can feed the hungry of Comfort and surrounding areas.

Comfort Food Pantry eligibility is income-based, and Comfort Table is open to all. Our community meal focus is on seniors, teachers, first responders and anyone that wants a meal. The Table is a place to share a meal and enjoy much-needed socialization for seniors. Meals are free, but donations are always accepted! We treasure our partnerships with H-E-B, the San Antonio Food Bank and Hill Country Family Services. We also welcome volunteers to assist at the Pantry, the Table and to unload trucks. Donations of nonperishable food items are always welcome! Boerne’s emerging beer scene is catching up with the town’s German heritage. Several local establishments are brewing a wide range and style of beers onsite. Some could stand toe-to-toe with their old-world European counterparts, while others are exploring the possibilities of modern craft brewing. Boerne now boasts four - and soon to be five - breweries within walking distance in the heart of town. One brewer told us that this gives Boerne the densest square mile of breweries in Texas, and second in the country to Boulder! Boerne’s local brewers are friends rather than competitors, sharing notes and building up a local beer culture together - making Boerne a beer destination.

THE DODGING DUCK BREWHAUS & RESTAURANT Our tour started at the Dodging Duck, the O.G. of the Boerne beer scene. The Duck celebrated its 20-year anniversary in August, making it one of the oldest micro-breweries in Texas. The Dodging Duck brews a wide mix of beers on their 10-barrel brewing system. The "Duck Juice" New England IPA was smooth and fruit-forward initially with a smooth finish. The "Artful Dodger" IPA had a light floral aroma with heavy hops on the front but with a nice west coast style that doesn't overpower. Overall, the Duck offers a solid and diverse selection of beer and food along with a great view of River Road Park and her many ducks.

BARRELMAN BREWING COMPANY On the opposite end of the spectrum from Dodging Duck is Barrelman Brewing Company, which is set in the back of a nondescript business park near IH-10 and John’s Road. Utilitarian and unpretentious, with no-frills bar food and consistently good music, this is a place to hang out with friends. Barrelman's focus is on nano-batch craft beers. The beer selection is limited by their smaller brewing system, though they bring in a few guest beers to diversify the selection. We liked their "So Hazy" New England IPA, which seemed to us like an East/West Coast composite boasting fruit and floral aromas up front like an East Coast IPA, with a West Coast bite at the end. The Dodging Duck Brewhaus & Restaurant

FREE ROAM BREWING COMPANY The newest brewery on the scene is Free Roam. Co-founder Jeremy Affeldt, former MLB pitcher and three-time World Champion with the San Francisco Giants, wanted to bring world-class craft beer home to Texas. You will see the homages to baseball - as well buffaloes, the brewery’s “spirit animal” - throughout. We loved "Bluff on the River", a rich and clear golden stout with hints of vanilla and tobacco and a smooth caramel finish. Their "Quick Clouds" Hazy IPA was also a standout, hoppy but not overpowering, with heavy citrus notes and a hint of passion fruit. The "Mike Mike" Texas Bock was smooth and well-balanced in a malty amber/bock style.

CIBOLO CREEK BREWING COMPANY Across from Free Roam is the bustling Cibolo Creek Brewing Company. It has outdoor seating and a backyard Biergarten with live music. A foodie-friendly menu boasting locally-sourced ingredients reflects a creative flair that we also saw in their beers. Among an interesting mix of small batch beers, we liked the Weiss's Blackberry Wheat: light on fruit and carbonation on the front with a berry punch at the end - tart without being sour. The Black Lager mixes big flavors like coffee, chocolate and cigar with a light body that was easy going down. Their "Beachside" IPL was a lightly hoppy lager that was "reminiscent of the last days of summer," as one of our drinking companions poetically put it.

TUSCULUM BREWING COMPANY Owners Tripp and Paige Mathews opened the brewery in the historic H.O. Adler building, spreading out across the 3-acre site that includes a Biergarten and brew house out back. Tripp - a trained chemist - sticks close to traditional brewing guidelines, mixing old-world techniques and ingredients like German malts and hops. From our view, this leads to very solid outcomes. Tusculum offers several light options, including the Radler and Tusculum Lite. The Marzen-style Oktoberfest was caramel-colored with a smooth, lingering finish. The clear golden "Chicago Typewriter" Pre-Prohibition Lager was smooth and crisp up front with a small hop bite that was easy to drink. We also enjoyed the creative Big Tex Belgian wheat beer, with hints of banana and citrus.

Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

A DAIQUIRI WITH A POBLANO KICK

Here is a fun drink recipe for Halloween. It is green, not too far off from a spicy margarita. Most Texans love their margaritas and this version is easy to make. Cheers!

INGREDIENTS • 1 oz Ancho Reyes Verde • 1 oz Light Rum • 1 oz Fresh Lime Juice • 1/2 oz Simple Syrup • 1 cup Ice
