Your favorite holiday season delights are not always the most nutritious, but maintaining a healthy diet during the holiday season is important. Marinades blend science and savory to help you create new holiday dining traditions that are delicious and good for you. Marinades tenderize meat, usually with an acidic ingredient such as lemon or lime juice, wine, vinegar or yogurt. Herbs and spices add flavor, zest and cancer fighting phytochemicals. Ingredients in marinades also add moisture. Then, all that’s needed is time for the marinade to work. “Eating healthy during the holidays is important, and we encourage everyone to be creative and introduce new cancer-fighting recipes into their menus,” said Melissa Crawley, M.D., at Texas Oncology–Boerne. “Marinades add flavor and tenderness to foods, and can include ingredients known to cut cancer risk, such as garlic and herbs. They can also inhibit the formation of certain unhealthy chemical compounds that occur when the protein in meats is cooked at high temperatures.“ 26

Marinating meats before cooking or grilling can reduce the amount of these chemical compounds known as heterocyclic amines (HCAs), that form on meat cooked at high temperatures. American Institute for Cancer Research (AICR) studies have shown that in some cases, even briefly marinating foods can reduce HCAs by as much as 92 to 99 percent. According to the AICR, vinegar, citrus juice, herbs, spices and olive oil all seem to contribute to the prevention of HCA formation. Yogurt as a marinade also has cancer-fighting properties. It can help tenderize meat and poultry even more than using other acidic ingredients, while serving as an excellent source of calcium and vitamin D, which may be protective against colon cancer. Yogurt intake has also been linked with lower levels of chronic inflammation. It’s important to use marinades safely. If you are planning on using some of the marinade as a sauce, put the additional marinade aside in a separate container before you put any raw meat, poultry or fish into the marinade. Then store it in the refrigerator. Once the marinade has come into contact with raw meat, fish or poultry, it should not be eaten unless it is thoroughly cooked. It is safest to discard marinade that has come in contact with raw meat, chicken, fish or poultry. + Plan on 6 to 24 hours of marinating time for chicken and meat. + Thin fish usually needs about 30 minutes in the marinade with thick fish needing one hour. + Food you are marinating should be completely covered by the marinade. + Marinate in a nonmetal container like a glass bowl or resealable plastic bag. Variety of spicy marinades, sauces and dressings
+ Always store marinade in the refrigerator and remember to marinate foods in the refrigerator in order to practice good food safety around the holidays and all year long.

ABOUT SIX YEARS AGO ANNA SAROL, THE DAUGHTER OF A SINGLE MOTHER, WAS PARALYZED IN A GYMNASTICS ACCIDENT WHEN SHE WAS A FRESHMAN IN HIGH SCHOOL, BUT UNTIL LAST YEAR SHE DID NOT HAVE A STAIRLIFT IN HER HOME. The money for Anna’s stairlift was part of a giveaway campaign from the company during the 2020 Christmas season that benefited more than 80 recipients across the country with a final distribution of $250,000 throughout the year. When the company opened nominations, they were flooded with submissions. Community leaders such as judges, police officers, teachers, nurses, social workers, mentors and readers like you nominated people that were in need of assistance. As the eyes and ears of the community, these readers were able to help identify people who might have

otherwise gone unnoticed or unrecognized. One such nominee was Kathy*, an aunt who is raising her three young relatives. The children came from an abusive situation, and Kathy, a single guardian, works tirelessly to provide for them. Nevertheless, the family was already living in poverty despite her working seven days a week when Kathy lost her job during the pandemic. She resorted to selling tamales to help pay the rent. When a case manager with a Big Brothers Big Sisters foster youth mentoring program heard about Lifestyle’s campaign and call for nominations, she quickly thought of Kathy. “When I shared the news that Kathy was selected and would be receiving $3,000, she cried, screamed, and was in disbelief,” the case manager said. “She immediately wanted to give back to me and the donor by providing endless tamales. This funding allowed the children to have a small Christmas tree for the first time ever. Kathy was able to pay her rent and utilities for three months, and the children were able to experience a holiday season in peace without financial stressors.” In yet another case, Emily* who worked as a janitor at a school, was a recipient and was struggling to afford simply buying groceries for her children. Before the ongoing difficulties of the pandemic even started, a tornado destroyed the school she worked at just a couple weeks before the initial shutdown in March 2020 which resulted in a loss of income for her. Emily was incredibly surprised and grateful to receive assistance from the giveaway. *Names changed for privacy

NESTLED AMONG THE OAKS AND CEDAR ON A HILLSIDE NORTHEAST OF BOERNE, IS A TREASURE OF UNIQUE POTTERY. In front of the Sunrise Pottery buildings are beautiful one-of-a-kind wind chimes, statues, bird feeders and plant holders designed and created by life-time potter Doug Oian. Inside the buildings are where the magic happens. Doug works, or rather enjoys, being in his workshop creating his own brand of pottery and creating custom orders for clients. All of his pieces in the shop are for sale. He truly enjoys passing on his craft to others and with patience and encouragement, he instructs adults, children from the age of seven, groups and families in the pursuit of creation. Lessons on the Potter’s Wheel are $100 for a four-lesson package plus the clay purchase. He will take groups of four to nine people at $30 for each lesson, which includes the clay and glazes. He not only shows his students how to turn pottery but will explain the process and materials used in the process. Students will then return to the studio to fire the pieces. Doug had a retail shop in San Antonio for years and then moved to the Boerne area and opened his workshop here. Go to www.sunrisepottery.com for more information.
