As summer begins to wind down and the start of school commences, the carefree days of slower morning routines and spending more time adventuring is exchanged for busier school and sport routines and schedules. The summers tend to progressively feel like they fly by the older we get, as do the years, but the simple pleasures of summer never get old. Although the routine of school for our children is often a welcome friend by the time August rolls around, it is generally a little bittersweet. Our August issue focuses on building legacy. In this issue, we celebrate those leading by example: Jeff Druek, building Outer Reef Yachts from the ground up and Sasha Kaufman, a high school student empowering others to give back. We also give you tips and recipes for cooking with your kids, building lasting memories and critical skills. There are certain qualities one needs to be truly successful in business. Drive, work ethic, vision, and the ability to see opportunities where others may see merely obstacles. Such qualities are clearly defined in Jeff Druek, CEO and founder of Outer Reef Yachts. Most people ask why, Jeff asks, “Why not?”

Jeff’s entrepreneurial spirit was launched during his school days in Long Island. While taking a shop class at age 13, he decided to build a boat while all his classmates were building items like shoeboxes. He kept the boat and used it to start his first business, digging for clams after school. His father worked at MIT, but it wasn’t long before young Jeff was making more money than his father, buying his first pickup truck and 45 acres of land with cash at age 16. This early success was something of a double-edged sword. Jeff’s 4.0 average qualified him for a full-ride scholarship with MIT, but his commercial fishing business was doing so well, that he opted to continue working. Jeff has effectively used his cumulative experience to parlay into new ventures, learning from his successes along the way. At one point, he was running seven businesses simultaneously, including contracting, property management and custom home building for luxury homes in the Hamptons. It was this last business that started his foray into yachts. We caught up with Jeff to hear in his own words how Outer Reef Yachts was launched and what has made it the success it is.
HOW DID YOU BECOME INTERESTED IN YACHT DESIGN? I’ve always loved long-range cruiser yachts, so when it came time to move from a production boat to a long-range cruiser, I knew what I wanted. I went to a high-end yacht manufacturer with my wish list, and it was just like Henry Ford saying, “You can have any color you want as long as it's black.” The Aha! moment came when I realized I was spending $1.2 million on a boat and couldn’t get exactly what I wanted. This would be unheard of in the custom home building business. I put myself on a plane to Taiwan and started looking for a shipyard to build a boat for myself. Three weeks later, I contracted with a shipyard, built the boat for myself, and it was sort of an experiment. I built a 60-footer and brought it back to the States. I put in a boat show, sold it, and made a profit. Then I took that money and built a 75-footer for myself at another shipyard in Taiwan. I began to see a business model at play here. Within three years I had 17 offices worldwide. At first my custom home architect started drawing my boat designs on AutoCAD, but he eventually left to start his own business. I could not let down clients depending on custom designs, so I had to learn AutoCAD in a weekend, pulling from my memory all I observed my architect doing over the years. Now I do all the drawings myself. I currently have around 2,000 drawings in my portfolio.

WHAT IS YOUR FAVORITE MODEL AND WHY? My favorite probably is the 72-footer in the Classic series. It's an easy handling boat and it can take you anywhere in the world nonstop for 3,500 miles. You can go trans-Atlantic, or trans-Pacific.
WHAT DIFFERENTIATES YOUR YACHTS FROM THOSE OF YOUR COMPETITORS? Our customization is paramount. People can have basically anything they want. Anything their mind can dream up or their heart desires, we will build for them. That really sets us aside from everyone else. Our quality is top-notch. We compete against the best of the best in the industry. It’s business 101 that if you keep the customer happy, they keep coming back. We have just recently sold our fifth Outer Reef to the same client. And we have several customers that are on their second or third boats with us. Clients love our boats because they're very seaworthy and extremely safe. We've had clients come from other manufacturers because they know our boats are unquestionably capable, particularly if you want to cross an ocean or the Gulf Stream.
WHAT DO YOU LOVE MOST ABOUT RUNNING OUTER REEF YACHTS? Seeing a smile on people's faces when we deliver the yacht to them. They’ve waited all their life to build their dream boat, and the joy they have when they finally take delivery, or they take their first cruise is contagious. Our clients send us photos from all over the world, including the Bahamas, Alaska or Cape Horn.

SO ARE THERE ANY MUST HAVE NEW FEATURES THAT YOU'D RECOMMEND TO YOUR CLIENTS THAT WERE NOT AVAILABLE BEFORE?
WHAT RECOMMENDATIONS WOULD YOU HAVE FOR THOSE BOATING, WITH PETS OR YOUNG KIDS?
When I started the company 23 years ago, the average age of our client, was about 65 years old. Right now, I would say our average age is about 50 to 52 years old. We just sold to a client who is 43 years old, and I attribute that to some of the more modern features we’ve incorporated. For example, we’ve added a Bridgeview Deck™ which is a little sitting area in front of the steering station. We also started adding the Serenity Foredeck Lounge™, which was inspired by European boats, where boats in the marina have their stern facing the dock and they're sandwiched in side by side. The Serenity Foredeck Lounge™ is a big U-shaped lounge with a dining table on it. You can fit about 15 people up on the foredeck of the boat now. You can sit and dine anchoring out and looking into the sunset.
Most of our clients have pets. They will often bring aboard artificial grass and put it on the aft deck on the swim platform. After the dog does his business, they wash it off. Or we've had clients that train their dogs to go in litterboxes like cats. Our boats are very safe for kids, because the bulwarks are high and there are gates all over the place. So, you can send a toddler out on one of our boats, he can walk all the way around, and you never have to worry about him falling off. So yes, they're very kid-friendly.

Teaching your kids to cook and cooking with them can be one of the most rewarding things. Not only can it help you strengthen your connection, but it gives them a sense of accomplishment and builds memories that will last a lifetime.

HERE ARE SOME TIPS TO START COOKING WITH YOUR LITTLE ONES, FROM TODDLERS ON UP:
1. Start small. Your little one’s first foray into cooking doesn’t have to be a full-blown recipe. Give them small tasks that they can easily handle, like sprinkling spice or cheese in a dish, stirring dishes or measuring out ingredients. 2. Embrace the mess. Just prepare yourself. It’s likely to get messy and that’s fine. There are going to be lessons learned and it should be fun. Ask them to help with clearing up a few things after so they start to connect cooking with clean-up. 3. Celebrate imperfection. Everything is not going to go exactly as planned, and that’s fine. Give them ample praise on what they do right and accept the rest. 4. Stay calm and make it fun. This isn’t the time to yell. Be cheerful, calm and in control but give them as much freedom as you can.
5. Engage their senses. Have them smell the herbs or the bacon sizzling in the pan. Let them knead the dough and feel the textures of different ingredients. Invite them to taste along the way but don’t make it a big deal for picky eaters. 6. Give them power. Let them choose as many things as possible. The shape of the pasta. The toppings for the pizza. The color for the icing. 7. Pick an easy recipe to start. The first time you cook with your kid is not the time to break out Julia Child’s Coq a Vin, or any recipe that demands absolute precision. 8. Take pictures. These are the moments you and your kids will want to remember years later.

YOGURT UNICORN BARK Source: Babyfoode.com This Yogurt Unicorn Bark is a fun and easy recipe to make with your toddlers or kids and uses only 3-ingredients.
Here are some ways they can help: • Measure 1/2 cup of yogurt into 3 separate bowls. • Squeeze a couple of drops of plantbased food dye into each bowl. • Mix the food dye into each yogurt. • Drop the yogurt into a baking dish in any order they prefer. • Swirl the yogurt colors together. • Add the sprinkles. • Pop the baking dish into the freezer.
ingredients: • 1 1/2 cups yogurt • 2 tbsp sprinkles • food dye
directions: • Line a 9×9 baking dish with parchment paper. • Divide the yogurt into 3 separate bowls. • In one bowl, add 4-6 drops of red or pink food dye to the yogurt, stir until completely mixed. • In another bowl, add 4 drops of red and 4 drops of blue food dye to the yogurt, stir until completely mixed. You can also use any color combinations you want with your sprinkles. • Drop spoonfuls of the different color yogurts into the baking dish in a random fashion. Using a spoon, swirl the yogurts together and gently smooth out. You don’t want to over-stir or your colors will get completely mixed together. • Pour the sprinkles on top. • Place the baking dish in the freezer and let chill for 4 hours or until completely frozen. • Once frozen, take the baking dish out of the freezer and break the yogurt pieces into hand size chunks. Serve and enjoy.

ELEPHANT EARS ingredients: • 500g puff pastry (in a block, not the already rolled kind • 1 cup golden granulated sugar • 4 tsp cinnamon • A few tbsp of flour • A bit of butter for the tray (optional)

CINNAMON WHITE HOT CHOCOLATE ingredients:
• In a bowl mix the sugar with the cinnamon. In a big and wellfloured surface roll out the pastry into a rectangular shape until it’s about 4mm thick. Sprinkle with half the sugar mix and roll out more with the rolling pin, making sure the sugar gets embedded into the dough. Turn upside down, sprinkle the other half of the sugar and embed it again into the dough by rolling further. • At the end of this you should have a 2mm-thick long rectangular dough. Grab one of the long sides and start rolling it tightly with your hands towards the centre, creating a little “snail” shape. Stop when you get to the middle and roll in the same way from the other side. You’ll get a very long tightly rolled together “double snail”. With a sharp knife cut off 4mm-wide pieces from the rolled dough and place them on a very lightly buttered tray (or if you have a very good non-stick one, you can skip the butter). You need to make sure that you place them in the tray very near each other, leaving not much space, otherwise they will grow to immense proportions and “uncurl” (I learnt that the hard way the first time I tried to make them!) • Finally, put the tray in a preheated oven and bake at 350 degrees F for 25-30 minutes. They’re ready when they’re golden brown.

4 (3”) cinnamon sticks 1/8 teaspoon kosher salt 2 1/2 cups whole milk, divided 2 teaspoons cornstarch 2 ounces white chocolate chips (about 1/3 cup) or white chocolate, chopped • Unsweetened whipped cream and ground cinnamon (for serving
directions: • Toast cinnamon sticks in a medium dry saucepan over medium heat until fragrant, about 1 minute. Add salt and 2 cups milk and bring to a simmer. Remove from heat and let steep 10 minutes. • Whisk cornstarch and remaining 1/2 cup milk in a small bowl. Add to warm milk mixture and heat over medium. Bring to a simmer and cook, stirring constantly, until warmed through, about 1 minute. Remove from heat and add chocolate and vanilla. Let sit until chocolate is melted, about 30 seconds, then stir to combine. Discard cinnamon sticks. • Divide hot chocolate between mugs. Top with whipped cream and dust with ground cinnamon. What does it mean to be generous? Many of us have made some contribution to those less fortunate in one way or another, whether it be through donations, a charity run, or perhaps even serving at a soup kitchen during the holidays. But there are those of us who do charity, and then there are the few who live it. Sasha Kaufman, a high school student at Pine Crest School is undoubtedly the latter. I got to sit down with this very impressive young lady to ask her about her charity work, her special charity event, Hearts of Gold, which she started with friend and classmate Samantha Port, and her website, which she designed to guide other students looking for a way to give back.
EARLY BEGINNINGS Sasha started her charity work very early on – in fifth grade – helping her mother Jennifer Kaufman, the executive director of Touch a Heart Foundation. Watching her mom work hard organizing events for the charity was a master class for Sasha not just in dedication, but motivation. As she got more involved in her mother’s charity projects over the years, Sasha discovered how much she enjoyed helping people, and it helped her hone her own formidable organizational skills.
PET PROJECTS Sasha, along with Samantha Port, started Hearts of Gold in 2020 during the first year of the pandemic as a way to give people the opportunity to volunteer, when many things were shut down. The event has multiple interactive stations – each run by a student – with activities that benefit children and families in South Florida. They are now planning their fourth Hearts of Gold event. Another event that has special meaning to Sasha is Adopt-a-Family (run by her mother’s charity), a holiday family adoption program, where local families in need are matched up with sponsors. Sponsors receive a profile of their family with a wish list of gifts and household

items and then get to meet their family in person, bringing gifts and a holiday meal. Sasha began adopting a family in 6th grade. She loved the experience so much that she stuck with the same family year after year, building a relationship with them, and even attended the eldest son’s wedding.
GUIDING OTHERS IN GIVING BACK As a known charity expert at school, Sasha was approached by other students looking to fulfill their community service obligations about where to volunteer or how to organize an event. She then created her website, Community Service Ideas to Benefit Less Fortunate Children and Families in South Florida: The What, Where and How to Volunteer. On it she has listed more than 25 community service ideas, a guideline on how to market projects, and links to roughly 50 charitable organizations to work with. It’s a wonderful stepby-step resource for anyone – not just students – who wants to get more involved in charity work. Her advice to students thinking of volunteering: ““Find something that you enjoy and really take to heart. Something that you feel is impactful to other people and on your own life. Lots of people will buy something to donate and that’s it. But really giving of your time and talents has a lasting impact on not just your life but others.” I asked Sasha who her hero was, and with a smile she looked over at her mother. “My mom is my hero. I feel like everything I do just stems from her. We have always done crafting and projects together since I was little and the love of community service I got from her. She’s definitely has had the biggest impact on my life.” As I wrapped up my conversation with this modest, but quietly confident young lady who has given freely of so much of her talents, effort and time to help not only the less fortunate, but other people looking for guidance on how to give, I smiled. What a beautiful example for us all.
