that has been catering quality food for more than twenty years. It’s always a little hard to let summer go, but what makes that goodbye a little easier is the fact that fall is on the other side—ready to embrace us with turtlenecks, leather jackets and flannel-clad arms. After a fun-filled summer, fall gives us the ability to slow down, get cozy and catch our breaths. Aside from the autumn holidays and changing leaves, it’s easy to understand how so many writers and creative types have been inspired by this evocative season. Fall is basically synonymous with pumpkins—but have you ever wondered why we're all so obsessed with them? We spend a lot of money buying them, decorating with them, carving them, eating them...and apparently it has nothing to do with the taste.

A CHANCE MEETING AT A DUMPSTER HAS LED TO A LIFETIME OF PARTNERSHIP AND CULINARY EXCELLENCE FOR BILL AND SHANNY APODACA, THE OWNER-CHEFS AT SIMPLY GOOD KITCHEN IN BIRMINGHAM. Bill was raised in Oregon and Shanny grew up in Michigan. The two met while attending the Culinary Institute of America in Hyde Park, New York, in 1994. They each excelled at their studies, being chosen from a student body of 2,000 to represent the institute at the National Restaurant Show in Chicago in 1995. Later that year, they and a third student had the honor of preparing (under the guidance of Chefs Metz and Rogers) a luncheon for U.S. President Bill Clinton and Russian President Boris Yeltsin. After graduating in 1996, Bill and Shanny moved to Santa Fe, New Mexico, to start their professions at Mark Miller’s Coyote Café. By 1997, they relocated to Royal Oak and launched their entrepreneurial careers. Their first business card simply read “Simply Good / Catering. Cookies. Cooking Lessons.” Time has been good to the pair. They have taught cooking for some 15 years, published two cookbooks and, in 2006, opened a retail storefront in Birmingham that employs 22 people. Simply Good prepares delicious takeout food – along with those amazing cookies. The couple can be seen sharing tips and recipes on their own channel, YouTube.com/simplygoodkitchen.

Simply Good offers a vast selection of bistro-style food that is all natural and made from scratch. In addition to scrumptious soups, salads, sandwiches, entrees and desserts, they offer frozen favorites like chicken stock, Thai chicken wings, sloppy joes, chicken pot pies and sausages. Everything is hand-prepared on site in small quantities to ensure freshness and weekly seasonal additions add variety. All meals come with easy-to-follow heating and serving directions. Customers can walk in during business hours or, on Wednesdays from 10:30 a.m. until 1:30 p.m., have their order delivered to their car. Bill’s and Shanny’s greatest joy is sharing a meal with their customers and students. BACKYARD

ENVY

CREATE THE PERFECT OUTDOOR SPACE TO ENTERTAIN GUESTS THIS SEASON AND BEYOND. MATT MOSHER, PRESIDENT OF MOSHER DESIGN CO. AND DZINLY.COM, USES HIS CREATIVITY AND EXPERT KNOWLEDGE TO DESIGN AMAZING SPACES AND HOME FACADES FOR HIS CLIENTS ALL OVER THE METRO DETROIT AREA. He knows how to create a truly enviable backyard that’s sure to catch your guests and neighbors’ eye. Backyards are an often underutilized space that when given ARTICLE RAYNA SOUTHART PHOTOGRAPHY ALY DARIN

a little attention can become a focal point of your home. Fall is an excellent season for entertaining guests; the red, yellow and orange scenery is unmatched and you can often catch the last bits of warmer weather. Whether you’re hosting a football Sunday watch party, weekend bonfire, autumn themed dinner party or a Halloween extravaganza, you can use your outdoor space (no matter big or small) to enhance the experience. Matt has given us his top tips to transform your backyard from untouched or unrefined to enviable and balanced.

24

Birmingham Life | October 2021

1. SCALE AND PROPORTION The proper scale and proportion of a space will make or break it. As humans, when a space is not proportioned correctly it unknowingly causes anxiety in our mind. That’s why some spaces that have all the bells and whistles still don’t feel good, while others that have even the most minor of features do. It’s not This project was a collaboration between Matt Mosher and Chris Longe Architects

about the features. It’s about scale and proportion.

2. HEIGHTS Creating balanced height around a space is a big factor in making it feel good. Having proper height within a space, whether it is done with pots, plantings, furniture pieces or a pergola, will make the area feel much more intimate. CONTINUED >

RENOVATE & REFINE (CONTINUED)

3. LESS IS MORE We see a lot of houses that “have the farm” in terms of features. This is okay, but organization of spaces that edit down the amount of elements within it are generally more comfortable and pleasing to the eye. You can have all of the cool features, but they need to be organized correctly so things don’t feel cluttered.

4. CAREFUL USE OF COLOR Color is a powerful thing and has a large influence on how people feel in a space. In outdoor spaces, we generally design them to have very edited color palettes in the foreground landscape such as greens and whites. We use color within the actual living space through both potted plantings and furniture to make it feel warm and inviting.

26

Birmingham Life | October 2021

5. MATERIALS AND ACCENT ELEMENTS Materials and certain features such as fire have a huge impact on how a space feels. We generally design our flooring material to be neutral earth tones so it doesn’t become distracting. The furniture and accessory elements are used to bring the space to life above the floor. Elements such as fire or water are naturally mesmerizing to us as humans. Adding these elements can make a big difference in how a space feels.

beaten path, Chef ‘Dennis The Prescott’ is a culinary change maker whose feed you’ll want to feast on Originally an aspiring musician, Canadian-born Dennis Prescott’s journey began while in university with a single invitation from another solo musician who asked him to tour with them around the US. This eventually took him to Nashville where they began making records and pursuing their musical dreams. Yet, in the midst of all of this, Dennis was not taking care of himself — eating take out, dollar menus, etc, had become a way of life. A friend had a “come to Jesus” moment with him and stressed that he needed to start taking care of himself. Having no idea exactly what that meant or how to do so, the advice was simple: “You need to start eating better.”

28

Birmingham Life | October 2021

The St a r t “Go to the library and borrow some cookbooks,” his friend suggested. Dennis went to a nearby library and borrowed three books only to have his friend ask why he chose those in particular. Dennis remembers saying verbatim, “I don’t know? The guy on the cover looks kinda good looking, and I feel like I could probably pull these recipes off, and he seems really happy too!” As it turned out they were three books by Jamie Oliver; it’s just that he had no idea who Jamie Oliver was at the time. Flash forward and Dennis’ first dinner-hosting experiment was made up of twenty people from the music studio, all sitting in camping chairs with beer koozies and makeshift tables in his apartment. “I remember at the time this moment of, okay, the food is on the table, it’s a stressful thing, and then everybody tucks in and they take their first bite, and there’s a moment of hush that kind of came over everyone; it got really quiet just for a second, and then everyone started talking and getting into it and I fell in love with food right there at that moment. What eventually followed were 13 episodes over nine months where the Restaurants on the Edge team traveled to and filmed restaurant revivals that included three in Canada, one in the continental US, one in Hawaii, and others outside of North America, including Hong Kong, Slovenia, Austria, Malta, St. Lucia and Finland. T r avel R ecom mend at ion s for Food ies “Slovenia borders Italy and Croatia, which is to say there are a lot of shared values in and around food; they have really great cheese, dairy, beef, pasta, but very few tourists, hardly any. So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.” Dennis also highly recommends Costa Rica, Hawaii and Finland. “Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.” Restaurants on the Edge is important and meaningful to Chef Prescott because it tells stories of hope and joy and redemption around the kitchen. Oftentimes the food space can be very stressful, but he believes that at the end of the day, people just want to spend time with other people that they love. One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start? I don’t know how to get going, so I just don’t.’ Rather than overcomplicating it, Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there. “Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you. Bring joy back into the kitchen.”
