AROUND TOWN THE NILE’S 50TH ANNIVERSARY The

International
Livestock
Exposition (NILE) is celebrating its 50th anniversary this month. The Nile Stock Show & Rodeo takes place at MetraPark from October 14 through October 21, and this annual event provides education and fun for the entire family. The NILE is a nonprofit organization dedicated to preserving and embracing the Western way of life through the promotion of livestock, youth education and respect for Western ag culture. Hundreds of exhibitors from across the region and 38 different states bring livestock to show and sell. Hundreds of horses are also used in competitions and sold that week. The NILE has a long-standing tradition of top-notch rodeo performances, and the weeklong event includes four nights of rodeo, so buckle up and strap on your boots because the NILE Rodeo is ready and waiting for you! SECOND CHANCES FOR COMPANION ANIMALS Yellowstone Valley Animal Shelter is having their fall gala “Second Chances for Companion Animals” on October 7 at the Northern Hotel. This will be an evening of celebration with great food, a “Black Box Music Event” by Wes Urbaniak and an opportunity to learn about the amazing services this great organization brings to our community for all companion animals and their people. A silent auction will showcase original work of up-and-coming artists along with lots of other fun and wonderful auction items. An exciting, mysterious piece of artwork will be completed during the Black Box Event and presented as one of the live auction items. Yellowstone Valley Animal Shelter wants to thank you for your years of trust and support for this evening of celebration, conversation, music and, oh yes, a little bit of fundraising. Experts have determined that coffee has around 800 detectable flavor characteristics, more than twice the number of wine. These complex tastes may be difficult to discern for the average coffee drinker, yet even an untrained palate will benefit from proper pairings. Joel breaks coffee into three simple groups: acidic, fruity and bittersweet. Here are a few of his pairing suggestions for these main coffee types to help you accentuate your brew. • Acidity refers to a sharp, bright aftertaste. This is often present with coffees that have citrus notes. Acidic coffees pair well with fatty foods such as pastries and muffins. • A variety of coffees have fruity overtones, yet are not acidic. For example, Ethiopian coffees are known for their distinct berry flavors. Fruity coffee pairs well with bitter foods such as dark chocolate. • Bittersweet refers to a strong, desirable taste sensation. Bittersweet coffee pairs well with creamy desserts and beef. Beignets A traditional New Orleans recipe. YIELD: 4 DOZEN PREP: 25 MINUTES + CHILLING COOK: 5 MINUTES PER BATCH
INGREDIENTS 1 1/4 ounce package active dry yeast 1/4 cup warm water (110 F to 115 F) 1 cup evaporated milk 1/2 cup canola oil 1/4 cup sugar 1 large egg 4-1/2 cups self-rising flour Oil for deep-fat frying Powdered sugar
INSTRUCTIONS 1. In a large bowl, dissolve yeast in warm water. Add milk, oil, sugar, egg and 2 cups flour. Beat until smooth. 2. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and refrigerate overnight. 3. Punch dough down. Turn onto a floured surface; roll into a 16-by-12-inch rectangle. Cut into 2-inch squares. 4. In an electric skillet or deep-fat fryer, heat oil to 375 degrees. Fry squares, a few at a time, until golden brown on both sides. Drain on paper towels. 5. Roll warm beignets in powdered sugar. Tiramisu Italian decadence. YIELD: 6 SERVINGS PREP: 25 MINUTES CHILL: 2 HOURS
INGREDIENTS 6 egg yolks 3 tablespoons sugar 1 pound mascarpone cheese 1 1/2 cups strong espresso, cooled 2 teaspoons dark rum 24 packaged ladyfingers 1/2 cup bittersweet chocolate shavings, for garnish
INSTRUCTIONS 1. In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes. Add mascarpone cheese and beat until smooth. Add 1 tablespoon of espresso and mix until thoroughly combined. 2. In a small shallow dish, add remaining espresso and rum. Dip each ladyfinger into espresso for only 5 seconds. (If soaked too long they will fall apart.) Place the soaked ladyfinger on the bottom of a 13-by-9-inch baking dish. 3. Spread evenly 1/2 of the mascarpone mixture over the ladyfingers. Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture. 4. Cover tiramisu with plastic wrap and refrigerate for at least 2 hours, up to 8 hours. 5. This time of the year can be a lonely time, but it’s also the time of year families have many gatherings surrounding the holiday season. Make sure your senior gets a chance to take part in the celebrations and enjoy time with loved ones.
