LIFESTYLE LETTER

Weighty Issues & Healthy Habits I hate to brag but 2025 was a good year for me on the physical fitness front. I lost 15 pounds and found only 20. Then, my doctor had to temper my enthusiasm by telling me that’s not necessarily the best way to interpret the results. Yes, it’s the new year and it comes with hope and optimism that should be embraced, because they are very real. It’s a great time to set or renew goals because most of us know–either intuitively or intellectually–that establishing healthy habits sets the tone for everything we do. It’s also one area of our lives in which most of us have complete control. The best way to establish healthy habits is as simple as taking the first step, figuratively and/or literally. If you like to unwind with a few minutes of screen time, consider doing so while walking for 10 minutes. Or 20. Or 30. Instead of a cocktail and dessert every evening, consider cutting back to weekends only. Conservatively speaking, the calories saved are the equivalent of about 50 days of a 2,000-calorie diet! (Uh-oh. Looks like I’ve painted myself into a corner with my unsolicited– though very public–advice. I’ll report back in a few months and let you know how it’s going.) Of course, there are many ways to get on the right track and just as many professionals in the Bellevue area that are here to help. Alison Ryan recently opened Sweat Plunge Repeat, a wellness spa that utilizes infrared technology and cold plunges that can enhance wellness and alleviate pain. Nutritional Therapy Practitioner Erin Stricklin of Food Feelings can show you how preparing healthier meals is not only easy, but a family-fun activity. Then there are the numerous healthcare providers throughout the community that all of us turn to from timeto-time. We’ll help you identify ones that are best for your situation. We hope you enjoy reading about them this month.

I showed up to Sweat Plunge Repeat, on assignment on a particularly stressful day– one of those where everything in life was topsy-turvy and everything in my body ached. But I’m a steadfast professional, so there I was, committed to the experience. Inside, there are private suites with infrared saunas, cold-plunge tubs, and heated pods. I chose the heated pod first, climbed onto the table, pulled the dome over me, queued up my Spotify Wrapped playlist, and snuggled up for 20 minutes. The heat was so lovely that by the time my session ended, I was actually bummed. I followed with five minutes of red-light therapy and then faced the main event: the cold plunge. A neon sign above the tub advises to "just breathe,” so, alas, I took a breath and dropped in. I lasted 45 seconds, but it was worth the plunge. Walking out, I genuinely felt more positive and more energized and, most importantly, my aches and pains were nearly gone. I wasn’t necessarily skeptical about the therapies' benefits after my interview with owner Alison Ryan, but I certainly didn’t think they would take hold so quickly.

Ryan didn't set out to open a wellness studio. She's a hairdresser who spent years running a salon with Cassidy Bentley and kept pushing her business partner to consider infrared saunas. She finally got a yes, found a space at 7097 Old Harding Pike in Bellevue, and built the space she envisioned. "I started doing my journey a year ago, four times a week, and I'm down 14 pounds,” Ryan shares. “It's one of the only things that I changed.” But weight loss was secondary to everything else. Studies have shown that infrared sauna use is associated with improved cardiovascular function, reduced inflammation, and relief from chronic pain conditions. Cold water immersion has been shown to reduce muscle soreness, improve circulation, and elevate mood. "There's a huge dopamine release when you could plunge,” Ryan adds. “For me, I've never felt better." Infrared sauna, which uses wavelengths to penetrate deeper into your tissue to aid with pain and inflammation, is also available here. CONTINUED >

“I STARTED DOING MY JOURNEY A YEAR AGO, FOUR TIMES A WEEK, AND I’M DOWN 14 POUNDS. IT’S ONE OF THE ONLY THINGS THAT I CHANGED.”

“You don't have to sweat,” Ryan says. “You go in for a longer period of time for a lesser intensity.” For first-timers, Ryan has a handful of recommendations for a successful visit. First, hydration is key, but maintaining electrolytes is just as important as regular water intake. She recommends hydration sticks, like Waterboy, to help replenish nutrients you’ll sweat out. As for attire, some opt for swimsuits, while others go with their birthday suit—with completely private suites, the choice is entirely yours.

“(Olympic champion) Michael Phelps designed our cold plunge; it’s self-regulating every 10 minutes,” Ryan adds, noting its cleanliness. Sweat Plunge Repeat provides robes, towels, and plastic bags for wet suits. As for timing, Ryan recommends, "do the cabana for 35 or 40 minutes, then up to five minutes in the cold plunge. That’s an awesome regimen for your week." There are several add-ons you can choose from as well. For example, the facility offers halo therapy—a pure saline mist you inhale during sessions, like a humidifier. "This treatment breaks up any old trauma that your lungs dealt with," Ryan explains, noting it’s excellent for aiding illnesses like pneumonia or for smokers. Ryan and her husband—a Nashville native and veteran who helped open the studio—offer specials for students and first responders. Originally from New Jersey, Ryan’s dad and grandmother were raised in Nashville, and she found herself relocating to the area when her grandmother was ill. "We're huge on community, we love Bellevue," Ryan says. Now, Ryan has built something she genuinely uses herself and that offers the community a new wellness option. It’s made a believer out of me. ON E-PA N TAC O SK I L L E T

A Fun, Festive, Family-Friendly Fiesta

One of the easiest ways to encourage kids to try new foods is to let them take part in making dinner. This one-pan taco skillet is perfect for the whole family— everyone can customize their toppings and build a plate that feels fun and familiar. The next time you’re at the store, wander through the produce section with your kids and let them explore the colors, shapes, and textures. See what sparks their curiosity and invite them to add it to their taco skillet creation. The ingredients in this recipe are simple, nutrient-dense, and intentionally chosen. A balanced meal needs protein, fats, and carbohydrates—each

with a purpose. Protein helps the brain recognize fullness, fat keeps blood sugar steady and makes food taste amazing, and carbohydrates provide quick fuel and satisfy natural cravings. The toppings add a boost of vitamins and minerals and give kids a sense of ownership in the meal. The dish stands on its own with plenty of flavor and reheats beautifully for leftovers. It’s a straightforward dinner that starts on the stovetop and finishes in the oven. With about 20 minutes of prep and a 30-minute bake, you’ll have time to check something off your list before everyone gathers at the table.

C ULIN A RY C R E AT ION S | F OOD + BE VE RAGE

INGREDIENTS • 2 Tbsp olive oil • 1.5 pounds boneless, skinless chicken thighs • Chili powder, salt, pepper, cumin, and garlic powder (1 tsp each) • 1 leek, diced (remove the green top and freeze it for homemade broth) • 1 bell pepper, diced (let the kids choose the color) • 1 Tbsp tomato paste • 1 cup rice • 3/4 can full-fat, unsweetened coconut milk (I love the Trader Joe’s brand but Thai Kitchen is great, too.) • 1.5 cups chicken broth • Juice from 1/2 lime • Optional toppings: avocado, cheese, green onion, cilantro, sour cream, tomatoes, salsa, etc.

INSTRUCTIONS • Preheat oven to 350 degrees. • Pat the chicken dry and season it with dry seasonings. • Add 1 Tbsp olive oil to an oven-safe pan. (cast iron works beautifully, but any oven-safe pan at least 10 inches wide will do). Set heat to medium. • Sear the chicken on both sides for 3-5 minutes. It doesn’t need to cook through. Set chicken aside and keep the heat on medium. • Add the bell pepper and leek to the pan with another tablespoon of olive oil and a generous pinch of salt. Cook, stirring often, for about 10 minutes, until softened. • Add tomato paste and rice and stir until fully incorporated. Turn off the heat. • Nestle the chicken back into the skillet so it’s mostly covered by the liquid. • Carefully transfer the skillet to the oven and bake for about 30 minutes. • Remove from the oven. The rice should be tender and most of the liquid absorbed. Let the dish rest for 10 minutes. Finish with lime juice, add toppings, and enjoy. U N D E R S TA N D I N G T H E “WHY” BEHIND WELLNESS ARTICLE BY ANGELA BROOCKERD PHOTOGRAPHY BY JANIE JONES AND PROVIDED

The New Frontier of Health AN INTERVIEW WITH DR. KYLE GILLETT

Why do so many people feel exhausted, foggy, or unwell, even when their medical tests insist everything is “fine”? Why are we prescribed quick fixes instead of being given real answers? Across modern medicine, a shift is happening. More patients are demanding real explanations, and more clinicians are rethinking what “healthcare” should actually mean. Leading that shift is Dr. Kyle Gillett, a dual board-certified physician in Family Medicine and Obesity Medicine and an expert in metabolic, hormonal, and preventive health. Through his clinic, research, and The Gillett Health Podcast, he’s become a trusted voice for people seeking science-based, root-cause solutions rather than symptom-based band-aids. “Functional medicine is really ‘root cause medicine,’” Dr. Gillett often says. “It’s about asking why the problem exists and not just quieting the noise.” In this Q&A, Dr. Gillett breaks down the most common questions he hears from patients and offers simple, actionable guidance anyone can begin using today.

1. “WHY DO I FEEL AWFUL EVEN THOUGH MY LABS ARE ‘NORMAL’?”

Dr. Gillett: I like to say, “There is no such thing as ‘we’ve done everything.’” We can always dig deeper. Often, the labs ordered are the wrong type of assay, or important markers like ferritin or SHBG—which binds testosterone and estrogen—are completely missed. Beyond lab work, there are other factors: mitochondrial health, sleep quality, mental health, and even how sensitive your dopamine and serotonin receptors are. “Normal” labs do not always equal normal physiology for you.

2. “HOW DO I FIX MY ENERGY, BRAIN FOG, OR SLEEP WITHOUT 20 MEDICATIONS?”

Dr. Gillett: Start with a good, comprehensive lab panel to assess nutrients and hormones. Then build the foundation with sleep. My favorite tool is the 10/3/2/1/0 rule: • 10 hours before bed: No caffeine • 3 hours: Avoid large meals and alcohol • 2 hours: No vigorous exercise • 1 hour: No bright blue or white light • 0: No snoozing and no inconsistent sleep/wake times Aim for 7+ hours of high-quality sleep. When sleep improves, energy almost always follows. CONTINUED >

29

3. “IS MY GUT ACTUALLY CAUSING ALL THESE OTHER PROBLEMS?”

Dr. Gillett: Gut health influences most major health issues, but it’s rarely the only problem. Diet is my second pillar of health for a reason. Exercise, sleep, and stress reduction all improve gut function too. Even simple tools like self-hypnotherapy apps can reduce gut-related symptoms.

4. “WHAT CAN I DO RIGHT NOW, TODAY, TO START FEELING BETTER?”

Dr. Gillett: Focus on the pillars of health: diet, exercise, sleep, stress, sunlight, social connection, and spiritual health. Treat them like habits and find ways to make them enjoyable or easy to start. Supplements and medications are supportive tools, not substitutes. Think of them like turbo chargers: they enhance a system that’s already functioning.

5. “WHAT DOES FUNCTIONAL MEDICINE ACTUALLY DO DIFFERENTLY?”

Dr. Gillett: True functional medicine is root-cause medicine, not cookie-cutter supplement regimens. Imagine an older adult with cognitive symptoms who receives multiple prescriptions from a conventional doctor. A functional approach might uncover something entirely different: B12 deficiency, hearing loss, and vision impairment. Fix those, and cognition often improves dramatically with no medications required.

6. “WHEN SHOULD SOMEONE TEST THEIR HORMONES, AND WHICH TESTS MATTER MOST?”

Dr. Gillett: Most adults should get a baseline hormone panel between ages 18 and 28, or earlier if they have symptoms like poor sleep, unexplained fatigue, or changes in heart rate. A proper panel includes testosterone, estradiol, fasting insulin, CMP, lipids (including Lp(a)), A1C, morning cortisol, IGF-1, DHEA-S, vitamin D, and ferritin. These markers catch metabolic and hormonal issues long before symptoms become severe.

New Year. New Chapter. Unfiltered conversations for designing what’s next– in family, lifestyle, and business.

7. “WHAT LONG-TERM TESTS ACTUALLY HELP PREVENT DISEASE, NOT JUST DIAGNOSE IT?”

Dr. Gillett: Preventive care is evolving rapidly. For heart health, I recommend Coronary Artery CT Angiography (CCTA) because it detects soft plaque that calcium scores miss. Knowing this data early informs you what is needed to prevent a heart attack. Instead of asking your doctor “Do I need cholesterol medication?” ask “Do I have plaque in my arteries?”. Full-body MRIs can be useful too, but they often find harmless abnormalities, which can lead to unnecessary stress or testing. Always weigh the pros and cons with a clinician who understands your goals.

A FINAL WORD FROM DR. GILLETT

“The goal isn’t to tell people what to do, rather it’s to give them the information they need to decide what’s best for themselves.” By understanding the why behind your symptoms, labs, and lifestyle choices, you become the driver, not the passenger, of your health journey.

“I believe that true innovation requires a commitment to constructive self-criticism to continuously raise the standard of care.”
