T R I C K S O F T H E T R A DE Have you ever looked around a room and wondered why it looked so good? Interior designers have a couple tricks to help make the most of any space. Most of these tips may seem small; however, they can have a huge impact in the overall design. Of course, with the Georgian Project, Joe Jennings is guiding the entire process and ensuring that it looks fresh and elegant. Joe says that one of the biggest mistakes in a renovation project is making everything look shiny and new. He believes that using natural elements or reusing existing architectural features can keep it classic, clean, and not feel like a model home. In the Georgian Project, Joe’s inspiration for the sunroom was everything outside the wall of windows. He selected the greens from the yard in several fabric choices, elegant, stained wood on the ceiling, and a sea glass light fixture to compliment the overall space. By bringing in these natural elements, the home feels more unique and personal to the homeowner. Another trick of the trade is surprisingly easy. Paint colors. Joe says that if you don’t want the millwork to be a focal point in the room, paint it a lighter color. Additionally, the ceiling should be painted a light color as well, white if you have a low ceiling, so natural light can reflect into the room. A designer trick for a low ceiling is to add a drop of blue to flat white paint. Not only will it create a visually taller room, but it will also be more reflective. These tricks help make a room feel lighter and brighter without drastically changing the architecture of the home. Even in rooms that do not have much architectural interest, using the same paint color on trim and walls, but in different sheens, can make the furniture in the room the focal point. Joe is bringing these tricks and more into the Georgian Project to not only accent the great architectural features, but also to provide the homeowners with personal spaces that they love! BARKING UP THE RIGHT TREES Belle Meade-area Nashville Tree Foundation is a nonprofit whose supporters are dedicated to preserving and enhancing Nashville’s urban forests by planting trees in urban areas, identifying the oldest and largest trees in Davidson County, and educating the public about the value of trees. Foundation representatives plant a variety of trees that will survive the soil and weather conditions in Middle Tennessee. Since its founding in 1986, they've planted more than 10,000 trees of significant size with the help of community volunteers, recognized 800-plus winners of the Big Old Tree Contest, designated 26 arboretum sites throughout Davidson County, and informed the

"We knew importers with extensive Italian wine lists in America, for example, but they weren't physically located in Nashville. Getting Italian wines during the pandemic from warehouses in New Jersey, New York and California became tricky," he adds. "Local distributors eventually embraced the idea of securing more rare, controlled wines for us." Next, Tony and his team worked on securing other genuine products direct from Italy, such as ParmigianoReggiano. "All the effort paid off in getting the right ingredients into Nashville, because diners really enjoy the in-house pastas we make. We're just being ourselves, preparing food like they would in Rome, not trying to conform to any other types of menus, and people seem to appreciate that," he says. One of Yolan's most popular dishes, Tony says, is a breaded veal chop, the Cotoletta alla Milanese. He says the run-away success ingredient, however, is white truffles from Northern Italy. "They are incredibly rare, found in the wild and can't be replicated. Their aroma and flavor are intoxicating, and we sell out quickly when we have them." At home, he says they prepare uncomplicated "food for the soul with incredible flavors." Tony assures they definitely have another book or two marinating, all seasoned with abundant culinary love. "We're also considering opening a retail/wholesale grocery store in Nashville to fill the void of authentic

Covid forced many companies and individuals to completely rethink culinary experiences. He started Cater615 to service large social events. Cater615, along with Take Away Catering, falls under the umbrella of Sova Catering, owned by Nashville culiary veteran Kevin Alexandroni. Chef Burke notes the increase in corporate box lunches for employee picnics, corporate board meetings, new employee orientations and annual meetings keeps them busy. “The rise of Nashville as a culinary city is expanding the need for more complex culinary items,” says Chef Burke, adding that as consumers become exposed to different types of food, they often request such items for social catering events.

Can You Make Chicken Any Hotter? Born from Aqui Hines’ love for iconic Prince’s Hot Chicken, everything that comes from her 400 Degrees kitchens pays homage to the original Nashville Hot Chicken. She even sells her own authentic hot chicken seasoning and flaming merchandise online. “My recipe originated from me wanting Prince’s chicken when they were closed,” she says, but notes that they don’t use precise measurements when making food to order. Starting with a food truck, this native Nashvillian -- known as “your hometown hottie” -- now has a restaurant at 3704 Clarksville Pike and since this March also can be found at Concourse/Terminal C at the Nashville International Airport (BNA).

The name comes from the “400 degrees” spice level, the hottest chicken she offers, which even leaves fingers tingling. Some customers indicate the 400-degree chicken is a memory that will last forever. They also have the 100-degree level, which they consider mild, and the 200-level, which is viewed as medium. Even her fries are sprinkled with fiery spices. Customers also like the baked beans, potato salad and coleslaw. “The thicker the coating, the hotter the chicken is,” she explains. Aqui’s hot chicken recipe calls for deep-frying rather than pan- or skillet-frying the chicken, and her thicker-coated version is consistently touted among the best in Nashville. She delights in sharing alluring images of her creations on social media, and even created a video to coach people how to make their own versions of hot chicken, which includes the following approach:

1. Aqui starts with fresh (never frozen) chicken, with individual pieces washed in a large bowl of cold water. 2. Chicken pieces are rolled in flour that’s seasoned with garlic and Morton’s seasoning salt. 3. Her dry spice combo is cayenne, paprika, cumin, onion powder, garlic powder and allspice. 4. Fry each order fresh, which takes at least 20 minutes. 5. Put “a bunch” of the spices in a deep rectangular pan, place the freshly-fried chicken on top and scoop a small ladle of hot oil in the pan. Toss the combo until well coated. 6. For hotter chicken, use more spice and less oil. 7. For really hot chicken — the “400 degrees” level — Aqui adds a little dry habanero to the spice mix. 8. For the extra-hot levels — 800 degrees or 900 degrees — Aqui adds hotter powdered peppers, such as dragon’s breath, scorpion powder or ghost pepper. Her eat-at-your-own risk chicken has caught the attention of national television, such as the Travel Channel’s “Food Paradise” and ABC News. In addition to chicken quarters, wings and tenders, 400 Degrees offers seasoned pork chops, fish and shrimp. “Our food is crunchy, tender and juicy. And spicy. You need to have an explosion in your mouth,” she suggests. The restaurant is open Tuesdays through Fridays from 11 a.m. to 4 p.m., and Saturdays from noon to 5 p.m.

With family roots in Yemen, Anas’ father and two uncles purchased a Hispanic supermarket in Nashville, just before he says the local Latino population grew exponentially. He then became familiar with Nashville’s “International Corridor” off of Nolensville Road. While attending Belmont University, he served as an Airbnb experience host to share this culturally rich part of Nashville with locals and visitors. Belle Meade Lifestyle enjoyed securing some of Anas’ recommendations of distinctly creative eateries to try.

dishes such as yuca fries with kimchi overtop, rice noods, Korean-fried chicken, sushi rice and rotating desserts. They claim their food will hit all taste buds. SOY CUBANO — Cuban pop-up with a regular schedule. Twists on true Latin cuisine keeps Anas returning for more. He says each dish is a must try, and that they all pack flavor. For example, they combine the magic of Mojo pork with crispy Cuban bread, ham and melty Swiss cheese to get one satisfying sanguish (sandwich). Or try a Cuban Jerk dinner.

They prepare hot spicy chicken at several heat levels.

Anas says it’s nice that they offer both fried and grilled options; he suggests consider ordering ahead. They also serve hot fish, shrimp, smoked chicken, fried pork, waffles and Hot Butt Sandwiches.

CAFÉ RAKKA — Live fresh, eat fresh, refreshing difference.

This family-oriented café serves Mediterranean food

with olive oil and no MSG. Anas likes its emphasis on natural, healthy eating. Everything is made fresh in-house, including yogurt and cheeses, using family recipes perfected for generations in the upper Euphrates region. Even the hummus is made fresh daily.
