Cook, Executive Director RISE Augusta RISE Augusta works to increase literacy rates within schools by formulating the best solutions for local students. “In partnership with schools, we provide remediation and tutoring. We work closely with teachers to get kids back on track because if kids don’t read on grade level by the end of third grade, it gets harder and harder for them to do well in school,” shares Laurie. “In addition to the literacy tutoring, we provide wraparound supports for children. If a child needs shoes or clothes, or maybe the family needs food, we'll take care of those needs. Amy Breitmann Golden Harvest Food Bank Amy serves as President & CEO at Golden Harvest Food Bank, which distributes over 12 million meals a year across 25 counties in Georgia and South Carolina. She’s spearheading two construction projects that will help the Food Bank and its partner agencies get more food out into the communities they serve. “One is a volunteer and administration center, which will open late next spring and greatly increase the number of volunteers we can bring to our campus,” shares Amy. “The other is the demolition of our current food sorting facility which will be replaced with a Produce Rescue Center. RECIPES TO M A K E T H IS FA LL

Y U M M Y BU T T ER N U T SQUA SH SOU P INGREDIENTS • 2 tablespoons extra-virgin olive oil • 1 large yellow onion, chopped • ½ teaspoon sea salt • 1 (3 pound) butternut squash, peeled, seeded, and cubed • 3 garlic cloves, chopped • 1 tablespoon chopped fresh sage • ½ tablespoon minced fresh rosemary • 1 teaspoon grated fresh ginger • 3 to 4 cups vegetable broth • Freshly ground black pepper FOR SERVING • Chopped parsley • Toasted pepitas • Crusty bread INSTRUCTIONS 1. Heat the oil in a large pot over medium heat. Add the onion, salt, and several grinds of fresh pepper and saute until soft. Add the squash and cook until it begins to soften, stirring occasionally. 2. Add the garlic, sage, rosemary, and ginger. Stir and cook until fragrant, then add three cups of the broth. Bring to a boil, cover, and reduce heat to a simmer. Cook for twenty minutes or until the squash is tender. 3. Let cool slightly and pour the soup into a blender and blend until smooth. HOM E M A DE A PPLE CI DE R INGREDIENTS • 10-12 medium apples, quartered • 2 oranges, quartered (if you would like your cider less tart, peel the oranges) • 4 cinnamon sticks • 1 tablespoon whole cloves • 16 cups of water • ½ cup of sweetener (brown sugar or maple syrup is recommended) • Optional extra seasonings, 1 teaspoon allspice, 1 whole nutmeg, and/or 1 inch fresh ginger

INSTRUCTIONS 1. Combine all the ingredients in a stock pot. 2. Heat the cider on high heat until it begins to simmer. Cover and reduce the heat to medium-low and cook for two hours or until the apples are soft. 3. Mash the apples and oranges to release more flavor, then cover and simmer for a few minutes. 4. Strain the apples, oranges, and spices and press them to release more flavor. 5. Add your sweetener of choice and stir. 6. Serve warm with cinnamon sticks.

A Family Legacy THE THOMPSON FAMILY HAS BEEN CLEARING STRUCTURES AND SALVAGING ANTIQUE MATERIALS FOR OVER SIXTY YEARS

Marcus Thompson and his brother, Tyson, currently serve alongside their father, Hiram, as the second and third generations of Thompsons running Thompson Building Wrecking Company, which was founded by Marcus’ grandfather, Edward Thompson, in 1961. “It’s interesting how it all started,” explains Marcus. “Although my grandfather worked at the Savannah River Site (SRS), he still farmed and always had tractors. One day somebody asked him to take down a whole building with a piece of his equipment. Then, someone else asked him to do the same thing and he did a good job at it. It got to the point where he started taking on more than he could do while still working at SRS, so he


started doing this full time with my grandmother helping him run the office out of their house.” As time passed and the business grew, so did the family working with the business, including Marcus’ dad and later, Marcus and Tyson. “As my brother and I grew up, we basically did the same thing after finishing school,” says Marcus. “My dad believed in not just giving us an office job; he wanted us to learn every aspect of the company. So, we both got our CDL licenses and drove trucks for a long time prior to us moving into the office and starting to bid projects.” From the very beginning, the Thompson family excelled at bringing down old structures and preserving what can be salvaged and recycled at each site. “In the early days of this company, my grandfather didn't really get a fee for tearing things down; he just got the salvage portion of it,” says Marcus. “He was able to sell the salvage out of the old buildings and make money on the old antique lumber, antique brick, and things like that which people were, and still are, very interested in. Even now, when we go in to take down a building, whether it be a school or restaurant or shopping mall, the very first thing we do is look around and salvage as many things as possible to reduce the waste stream and to recycle the material, to reuse it, or just to recycle as a scrap material.” In addition to salvaging popular items like antique brick and heart pine lumber, crews salvage items such as large pieces of restaurant equipment. The company also operates two large portable concrete crushers, which allows for concrete to be crushed on-site and used for future projects. CONTINUED >

Along with selling salvaged items, Thompson Building Wrecking Company also rents roll-off containers. “Back in the 90’s, we purchased our first roll-off container truck to use for our own demolition projects, but as other contractors saw the container sitting on our jobs, they started asking to rent a container from us. Today, we own about 400 roll-off containers and a fleet of rolloff container trucks that service the CSRA.” Marcus shares that he’s thankful for so many things. “I love working with my dad and brother on a daily basis,” shares Marcus. “As a company, we are thankful for the many clients who call on us over and over, and we strive to do a great job every time. • Build a menu around the season. “In November, people crave turkey, sage stuffing and cranberry sauce,” Chef Kyle says. “Autumn dinners mean bigger-course meals with varied proteins, like turkey, duck and sirloin, hearty starches, and good fall produce, especially root vegetables such as butternut squash and pumpkin.” • Always greet guests with a beverage and appetizers. “Offer champagne for wine-lovers or a sparkling drink or signature cocktail. It’s all about serving guests to the highest caliber,” Kyle says. • Draw inspiration from the season’s changing colors, cooler temps and lower humidity to move back outdoors. “Think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.” • “You can’t go wrong with fresh flowers,” Hannah says, “but keep bouquets low to not interfere with conversation flowing. I vary glass vases with burnished brass for warm fall vibes.” • An easy but thoughtful detail is to put a simple menu at each place setting, so guests know what to expect. “Add a pen, so guests can jot tasting notes, especially for wine pairings or multiple courses,” Hannah says. “Guests can share comments, then take the menu home as a sweet reminder of the event.” • Follow the French principle of mise en place or everything in place before your event. “This is actually our company’s name,” Kyle says. “It’s that important to us. Make sure the wines are all open, cocktails are pre-made, place settings are out, candles are lit and music is playing. When guests arrive, it gives that wow-factor and shows you intentionally made them feel special.” • To build confidence as a host, start small and practice. “Keep the menu and guest list small,” Kyle says. “Choose recipes you already have confidence in. If you make a great Beef Stroganoff, then go with that. DESSERT • Traditional Pumpkin Pie, Whipped Cream

FRESH ROASTED BRUSSELS SPROUTS & HARDWOOD SMOKED BACON Yield: 6 servings • 4 cups Brussels sprouts, raw, halved • 1-2 tablespoons olive oil • ¼ cup yellow onion, sliced • 1 tablespoon garlic, sliced thin • 1-2 cups bacon, smoked, thick cut, large dice • Salt, pepper to taste • 2 tablespoons real butter, unsalted • Optional garnish: 1 tablespoon parsley, chopped

METHOD OF PREPARATION: 1. Preheat oven to 400 °F for convection setting, (425 °F conventional). 2. In mixing bowl, add oil and cut raw Brussels sprouts. Season with salt and pepper. 3. Place seasoned sprouts on baking sheet and bake in oven until done, about 20-40 minutes (soft yet still with good texture and crispy edges with some dark brown color). Remove from oven. 4. Place large sauté pan on medium heat and render bacon. Add a splash of olive oil to get it going, if needed. Cook until bacon is crispy and golden brown, 5-10 minutes. 5. Add onions to pan and cook until soft, 5-8 minutes. 6. Turn heat to high and add garlic and butter and cook for 1 minute. 7. Add roasted Brussels sprouts to pan and toss all together. Season to taste with salt and pepper. 8. For optional garnishes, add fresh chopped parsley. 9. Serve and enjoy!

According to Savor & Swirl, wine pairing doesn’t need to be overly complicated for a casual outdoor dinner party. Have a lighter and fuller body style of white and red available with some sparkling thrown in. “Lighter to medium-bodied wines from Rhône Valley, Italy or California would be a good place to start,” they state. “Viognier is one of our favorite wines that goes great with fall-inspired cuisines. Pinot Noir wine goes great with just about any food. Lean towards California or Willamette Valley for a new-world style and go with France for a more earthy, old-world style. A big bold Napa Cab would fall in perfectly for the grilled ribeye steak! Cheers!”
