Step 1: CHOOSE YOUR SURFACE I’ve chosen a rectangular, treated, oak cheese board. Depending on the event or occasion, you could use many variations. Sometimes I use a more contemporary white, square, bistro tray or one of Grandmother’s silver trays. I like to mix rustic woods with contemporary and classic serving pieces. Just make sure you pick a surface with plenty of room for all the goodies that make a cheese board so much fun!
Step 2: SELECT YOUR CHEESES Cheeses are classified by several criteria: fresh, moisture (soft to hard), source of milk (cow, sheep, goat), mold (soft-ripened, washed-rind, smear-ripened, blue), brined and processed. When deciding what cheeses to serve, start by deciding what groups you would like to represent. Also, you may want to pick cheeses based on a particular country or region. For this tutorial, I’ve chosen my favorites from all over the globe.

Step 3: CHOOSE ACCOMPANIMENTS THAT COMPLIMENT YOUR CHEESE SELECTION These accompaniments should be based on personal taste, current season and region of choice. As you can tell from my selections, I prefer the “savory vs. sweet” battle. Here are a few combinations to explore:
+ Thomasville Tomme with strawberry preserves and cherries
+ Humboldt Fog with roasted pecans, local honey and honeycomb
+ Bleu d’Auvergne with grapes, summer figs, soppressata salami and olives
+ La Tur with blackberries
Step 4: PROVIDE AN ARRAY OF CRACKERS, BAGUETTE, FLATBREADS AND BREADSTICKS
Step 5: BUILD YOUR BOARD. When placing your cheeses on the board, spread them out. If any need to be cut, do this while they are still cold. Once your cheeses are where you want them, start piling on the accessories! You can put jams in small bowls or leave them in the cute jars they came in. Pickles and olives should go in bowls in order to keep their juice contained. Pile nuts, berries, veggies, salamis and sausages, and crackers around the cheeses they accompany. Do this 30 minutes before serving, as cheese should be served at room temperature.

Andy Colbert and his wife, Amy, started Outdoor Augusta in 2013 as an outdoor consignment store offering kayaks, tents, outdoor gear, and more. After three years, they decided to move their location to the scenic Betty’s Branch. Wanting to keep water safety in mind this season, Andy shares some tips to remember. “Bring a buddy,” Andy says. If you’re new to kayaking, always bring a friend, or at least let others know where you are. “Know the land,” he says. 22

Make sure you know the area and are familiar with your surroundings. Outdoor Augusta provides laminated maps that are easy to understand to help guide you while you’re out. “Wear your life jacket,” he shares. Make sure to bring a life jacket with you when you are out on the water, even if you’re an expert swimmer. “Bring a whistle,” Andy says. Having a whistle with you can be a lifesaving tool. If you’re ever lost or in trouble, having a whistle could help others find you. In addition to that, Andy shares some precautions that Outdoor Augusta takes to ensure safety. Whenever Andy notices that it is someone’s first time at Betty’s Branch, he makes sure to keep an eye out for them. Or if he notices someone

has been gone longer than expected, he gets in his boat to check that they are fine. “We have a history and we know about the land and the animals,” says Andy. “We try to be extremely informative of the area,” he shares. Some of the things Outdoor Augusta offers are guided tours, laminated maps, and sunset and moonlight tours. “We also give free high fives and hugs,” says Andy. Another popular thing that Outdoor Augusta offers is a summer camp program. This adventurous camp is for kids ages 10-14. ZION NATIONAL PARK Zion National Park’s colorful sandstone cliffs, lush plateaus covered in pine and junipers, narrow canyons, the Virgin River, plus seeps, springs and waterfalls are just some of the scenic wonders here. One of Zion’s most popular hikes is known as the Narrows, the slimmest section of Zion Canyon. Other popular attractions include the Zion Canyon Scenic Drive, Angels Landing, Observation Point and Canyon Overlook Trail.
7. GRAND TETON NATIONAL PARK Wyoming’s Grand Teton National Park spans 310,000 acres and towers above the Jackson Hole Valley. The Teton Mountains, the youngest in the Rockies, are reflected majestically on the surfaces of six pristine lakes and the Snake River. Experienced climbers can summit the 13,770-foot Grand Teton, and long-distance hikers can take the Paintbrush CanyonCascade Canyon Loop for impressive views of the mountain.

GRAND CANYON NATIONAL PARK This UNESCO World Heritage Site is 277 river miles long, up to 18 miles wide and 1 mile deep. The South Rim is home to Grand Canyon Village and Bright Angel Trail. The West Rim is home to the Grand Canyon Skywalk, a glass bridge that extends 70 feet over the edge of a cliff. The North Rim is the most remote access point, allowing visitors to experience the park firsthand through intense hiking and backpacking and thrilling river rafting.

Hikers can take advantage of Arches National Park’s numerous trails ranging from short hikes to Balanced Rock and the Double Arch to more strenuous routes through the Fiery Furnace and up to the Delicate Arch. Visitors may spot a variety of desert animals, including lizards, birds and snakes, depending on the time of day.
10. HALEAKALA NATIONAL PARK To visit one of the country’s best national parks, journey to Maui’s Haleakala National Park. The name of this national park translates to “House of the Sun.” Legend goes that the demigod Maui lassoed the sun from its journey across the sky as he stood at the volcano’s summit, slowing its descent to make the days last longer. The Haleakala Crater is a dormant volcano that sits at 10,000 feet above sea level, and visitors flock to this location to view one of the most spectacular sunrises on Earth. Perhaps just as impressive are the park’s sunsets, which give way to star-studded skies. Haleakala National Park spans more than 30,000 acres and includes red deserts and rock gardens near the summit and waterfalls and streams in coastal Kipahulu. The park has beautiful hiking trails that can be traveled by foot or by horseback, and it is also home to more endangered species than any other park in the National Park Service.
