DAVID SQUIRES, WHOSE PASSION FOR HELPING OTHERS FUELS HIS DESIRE TO BREATHE NEW LIFE INTO SEVERAL DOWNTOWN NEIGHBORHOODS. This month, he shares with us details about the revitalization efforts. WHAT IS YOUR CONNECTION TO DOWNTOWN AUGUSTA? I moved to Augusta eighteen years ago specifically to work with Augusta Oncology as a medical oncologist. I’ve seen over 10,000 patients since then, and many of the patients are from this community. So I know the people in this area well and I care about them and love them. HOW DID YOU BECOME AWARE OF THE LEVEL OF NEED IN AUGUSTA’S DOWNTOWN NEIGHBORHOODS? In my role as the Augusta Stake President of the Church of Jesus Christ of Latter-Day Saints and oncologist associated with University Hospital, I have visited many people in their homes and have felt that despite being right next to an impressive medical complex, it was a very depressing place to live. There are more unhealthy, condemned, abandoned & dilapidated properties here than anywhere in the CSRA. It is discouraging for youth to grow up with such blight surrounding them. I wanted to help those in this area

SWEET, SPICY, AND FINGER LICKING GOOD! These Honey-Lime Sriracha Chicken Thighs bring the heat, and they’re the perfect recipe to kickstart your summer. If heat isn’t your thing, don’t worry; just leave out the Sriracha or substitute a milder hot sauce. This is one of those chicken recipes that goes quick when you have company over! I think the key is to start with farm-raised bone-in, skin-on chicken thighs. The richer, dark meat pairs well with the lime and cilantro. You can substitute chicken breasts or boneless, skinless thighs, but you’re really missing out on the flavor that both the bone and skin bring to the table. The sauce for this chicken is a showstopper. You likely already have all of the ingredients in some form in your pantry or refrigerator. It can also be used as a marinade. If you choose to marinate your chicken, place it in a Glad bag and marinate in your refrigerator for at least 6 hours. Make sure to set some aside for use as a dipping sauce. I just love the flavor of grilled chicken thighs... My grill of choice is my RT-700 pellet grill from recteq. I also really like pairing Kingsford Cherrywood pellets with this dish because it helps add some extra sweetness and color to the chicken that rounds out all of the flavors

we’re packing in. My grill lights itself, maintains the temperature, and even imparts incredible smoke flavor all while I’m inside playing with my kids. With its built in WiFi, I can even monitor my cook from anywhere in the world on my recteq app. It’s the way of the future y’all! While most folks take the chicken off the grill at 165ºF internal (which is totally safe to do), I like to take the internal temperature up to 175-180ºF. This allows you to render more fat in the protein, thereby creating a juicier end product. Make sure you have a reliable thermometer in order to ensure food safety; I used the meat probes that came standard with my recteq. This dish pairs well with an ice cold Shiner Bock beer and a fresh arugula salad or Asian style veggies. Enjoy, and follow me on all social media @bbqdadjody!

Serves: 4-5 Prep Time: 10 minutes Cook Time: 45 minutes INGREDIENTS + 6-8 Bone-in, skin-on chicken thighs + 1 tbsp Jody’s Asian Persuasion Rub available at recteq.com

+ 2 tbsp roughly cut cilantro SAUCE INGREDIENTS + 6 tbsp unsalted butter + 2 tbsp minced ginger + 2 tbsp minced garlic + 2 tbsp brown sugar + 1 tsp Jody’s Asian Persuasion Rub + 1/2 cup honey + 1/2 cup Sriracha sauce + 1 lime juiced PROCESS 1 Preheat recteq pellet grill to 450 ºF with a medium saucepan inside

2 Melt butter in pan and add garlic and ginger. 3 When the garlic and ginger becomes fragrant add the remaining ingredients and mix well.

4 Bring to a boil, remove from heat and set aside. 5 Turn grill down to 375ºF. 6 Trim excess skin and fat from chicken thighs and season thighs with Jody’s Rub.

7 Place chicken on grill skin side down. 8 Cook until an internal temperature of 160ºF internal has been reached. (About 35 minutes)

9 Flip chicken, apply sauce, and cook chicken until an internal of 170ºF. (About 15 more minutes)

10 Plate and garnish with cilantro.

SCOTT STALLINGS DISCOVERED HIS INTEREST IN GOLF AT THE YOUNG AGE OF 3. But it was the “aha moment” for his love of the game that came in 1997 when Tiger Woods won the Masters and would forever change the entire landscape of the industry, as well as what Stallings would aspire to achieve in his future professional endeavors. Little did he know at the time, however, not just how successful he would become, but also how an unforeseen health compromise would also rock his world, and his cross training, for the better. He was a seven-time tournament winner and was an All-American while attending Tennessee Tech, and he has won on the PGA Tour three times as a professional golfer. Flash forward to the year 2016: It became a life-changing year he never would have anticipated; one filled with strife as he learned he had been diagnosed with obstructive sleep apnea and acute adrenal fatigue. It was a result of some unhealthy nutritional habits, both of which affected his ability to continue effectively as a professional athlete. With the guidance of doctors, surgeons, and his good friend Rich Froning, a four-time Crossfit champion, Scott developed a workout to trim 60 pounds, boasting 10% body fat, revising his daily eating habits, and sleeping healthily through the night. Had Scott not gone to the doctor because of that innate fear, he never would have known the diagnosis of sleep apnea that needed to be addressed. Luckily for Scott, he didn’t have an overwhelming, crazy life overhaul. Instead, he was able to find one small thing, delivering simple systematic changes in his workout that led to his improvement in fitness and quality of life. “You only get one body,” he says. “Golf is a grind, but don’t let physicality get in the way of your game,” Scott says.
