But, with that the airport is becoming a lot busier - so build arriving early and spending some time at the airport into your travel plans. Here, travelers can soak up the sounds of the Live Music Capital of the World visiting one of the many stages in the airport where local musicians perform live Monday through Friday. Or, admire our city’s creativity by exploring the art installations and galleries sprinkled throughout the building, featuring works from both local and internationally renowned artists. Then, enjoy some of Austin eats from a variety of the city’s most beloved restaurants. The Peached Tortilla was once a simple food truck and has now become an Austin favorite known for its playful and vibrant flavors. Find them across from Gates 16 and 17, serving a limited menu of tacos and bowls, including their Korean Steak and Chinese BBQ Chicken. You can also find JuiceLand in the airport, a solid choice for more health-conscious. Located in Gate 16, JuiceLand offers a limited menu of fresh, plant-forward juices and smoothies. Don’t miss the Peachy Green. Parkside is Austin’s first gastropub and brings its delectable, locally sourced, farm-to-table eats to the departure lounge. Enjoy classic American fare with a variety of breakfast foods, salads, sandwiches, cocktails, and more. Parkside is located near Gate 3. JO’s Coffee is located near Gate 19 for weary travelers needing to refuel with a delicious cup of the famous coffee Austinites know and love. You can also f ind Austin institution Amy’s Ice Creams, which has been ser ving artisan,

super-premium ice creams, frozen yogurt, and dair y-free fruit ices in Austin since 1984, near Gate 21. Or, swing by East Side Pies. Grab yourself a slice of heaven before your flight. East Side Pies serves a variety of specialty thin crust pizzas and sides. Their pizzas are topped with locally sourced farm-to-table veggies and sauces in all kinds of glorious combinations. It’s located near Gate 22. For those wanting a barbecue fix, The Salt Lick’s world-renowned Hill Country barbecue offers a trust taste of Texas - that they’ve been serving since 1967. Enjoy barbecue, sandwiches, and baked potatoes all smothered in their original BBQ sauce that’s the perfect balance of sweetness and tang — you’ll be licking your fingers clean. Find it located between Gates 20 and 21. De Nada Tacos is the holy grail of the South Terminal, where people typically have very low expectations for finding quality food. This taco truck serves reasonably priced, great-tasting tacos on an outdoor patio area with plenty of seating. Soak up some sun and munch on a variety of breakfast and lunch options while you wait for your next flight. It’s located outside near Gate 1 in the South Terminal. At 24 Diner, take a seat on one of those famous red stools and enjoy some chef-inspired, farm-to-table comfort food. 24 Diner is located near Gate 11 and has a classic 50s diner vibe. Savor a plate of chicken and waffles accompanied by sweet brown sugar butter or munch on some loaded fries. Berry Austin, near Gate 17 is a great way to cool off from the Austin heat with berry delicious frozen treats! Berry Austin offers a selection of frozen yogurt, smoothies, shakes, and acai bowls to help satisfy your sweet tooth and get your fruit fix. So, what we’re saying is... Safe travels with a full belly!

Twin brothers Gabe and Sal Baldinucci have been in the pizza business for a long time. Their parents opened a pizza restaurant in Long Island, New York in 1977 and Gabe tells us their parents put them to work early, doing their homework at the restaurant after school and then folding boxes, prepping food and making dough. After high school Gabe, Sal and their brother Ed opened five pizza places within a few years, which they eventually sold. Gabe would transition into tech and Ed would go to law school, but Sal has never stopped making pizza full-time. Now, living in the same city again for the first time in years, Gabe and Sal are back in business. Along with Sal’s wife Patricia, they brothers opened Baldinucci Pizza Romana in Westlake earlier this month and have been operating a cloud kitchen since March where they host private tastings and provide delivery to surrounding area. We caught up with Gabe to learn more. CONTINUED >

WHY DID YOU AND SAL RELOCATE TO AUSTIN? I’d been working in the startup space and come to Austin every few years for SXSW. On a visit early 2019 I saw how much the city had grown and realized I wanted to live here and build my venture studio here. I was looking to move somewhere with a better quality of life after leaving my company in Silicon Valley and I thought it would be a great place to attract talent as well. I also realized that there was a huge opportunity for Sal and Patricia to bring their New York pizza expertise here, and for us to also introduce Roman-style to Austin, so I convinced them to move down as well so we could start this together.

WHAT ARE EACH OF YOUR ROLES IN THE BUSINESS? Sal and Patricia operate the business day-today and I focus on strategy, marketing, finance and legal. Sal can taste a pizza and tell you where they got the ingredients from and how they cooked it - he is the equivalent of a second generation forty-year BBQ pitmaster, but the pizza version of that guy. Patricia complements him in the kitchen and in managing the front of the house.

WHEN DID THE GHOST KITCHEN OPEN AND WHERE DOES IT SERVICE? We opened early March. From the Ghostline Kitchen we can deliver to a roughly 5-mile radius from the airport to Bouldin Creek and from East Austin down to Onion Creek. You can also pickup and we can do catering orders for downtown Austin.

DO YOU HAVE PLANS TO OPEN MORE GHOST KITCHENS IN AUSTIN? RESTAURANTS? We just finished our first casual dining location at the Westbank Market in West Lake Hills and we’re excited for people to see it. We hired Gensler for the design and they did a great job creating a beautiful space. You’ll be able to walk

in and choose from an unprecedented selection of artisan Roman and New York pizza slices along with salads, panini, beer and wine, gelato, and more. We have a few other locations we think would be great and we are planning to grow so we can serve more of Austin.

WHAT DO YOU FORESEE BECOMING YOUR SIGNATURE PIZZA? I believe Roman-style pizza is going to be the next big thing in pizza. Its dough offers something no other pizza dough does - in the flavor, the texture, and the versatility, but it takes a real expert to make it, which is why you can only find it in a few cities in the U.S.

TELL ME MORE ABOUT ROMAN-STYLE PIZZA? We wanted to create a truly authentic Romanstyle pizza experience and import our Caputo flour for the dough from Italy. It’s a finely milled Italian flour with very high hydration that’s cold fermented for 72 hours. This produces a unique crust that is crispy and chewy, yet light and airy with lots of big bubbles, and it is also easier to digest. The closest dough to it is ciabatta. It is baked in square pans and sold by the slice in Italy, where it is called pizza al taglio, which translates to pizza “by the cut”. Roman style pizza typically also uses more specialty gourmet toppings than New York pizza. We’ll serve both by the pie and by the slice.

Greece, one of the most ancient civilizations, is seeped in history and home to some of the world’s bluest waters and most magical sunsets. Planning a trip island hopping can be daunting, with Mykonos’ legendary beach bars and Santorini’s sun-drenched shores - and many other islands in between, all boasting their own unique appeal. Drive just more than an hour from Central Austin and you can find yourself in Texas Hill Country where you can immerse yourself in days and nights of wine tasting, peach picking and disconnecting. Whether to rest your head after a day drinking wine or as a destination unto itself, Walden Retreats, which opened Memorial Day weekend, is situated on 96 acres along the Pedernales River and a perfect place to book a night or few and reemerge feeling refreshed. Walden is comprised of 15 individual high-end lodgings. There are eight 550 square foot suites that sleep 2-4 and seven 440 square foot studios that sleep 2 people. They all allow you to be surrounded by nature with wrap around decks, floor to ceiling ‘windows’ and the comforts of a luxury stay. Family vacations… the stuff that dreams are made of, right? Except the reality of taking a break en masse with relatives, with their varying interests, needs and schedules, will often leave everyone feeling like they need another vacation, not like they’ve just had a good time filled with rest and relaxation. Grandma wants to eat breakfast at 7am every morning, but little ones would love to chill in the room watching cartoons, eating Cheerios in the hotel bed, while their mum would love to take an alfresco yoga class, but then who’d entertain her dad (who can’t sit by a pool and do nothing without grumbling) or her partner, who wants to play golf and dump the kids on her. And don’t even start thinking about dinner plans! Do the grandparents even eat sushi? Will the kids become tantrum-throwing monsters if they stay up for a lobster dinner at the fancy restaurant your in-laws have booked? I had similar nerves recently when I booked a trip to La Cantera, a resort outside of San Antonio in glorious Hill Country, for my Septuagenarian parents and pre-teen children. I was prepared to be the buffer between all things kid-like and all things acceptable to well-traveled 73-year-olds, but didn’t know how much of a break it would really be for me. I needn’t have worried. If you’re looking for holiday vibes to suit every generation, there is enough here to not only give everyone the entertainment they desire, but the space too!

The most wonderful thing about the resort is the vast area it covers – and with it the different locations for pools, bars, gardens and sunbathing spots, depending on your fancy. While my ten- and eight-year-old disappeared happily for hours together, sliding into the shallow depths of the kid’s splash zone, taking part in water horse races – riding inflatable seahorses – along the lazy river - and playing Giant Pong on the lawn, my parents disappeared with their books into the over 21 only adult infinity pool, where anyone looking suspiciously fresh-faced would be discreetly withdrawn by staff. They got to nap in the sun without being awoken by the excited squeals of children hurtling down water slides, and my kids got to escape their tutting and disapproving glances. I, stuck in the middle, was content – because in the middle at La Cantera, is yet another infinity pool, for all ages, with waiters in fuchsia polo shirts bringing Pina Coladas and nachos on silver trays, while I waited for my JetPeel facial at their award-winning spa, Loma de Vida – which means hill of life. It was a great way to be together… without being in each other’s pockets – the downfall of too many family vacations. This also meant we had plenty to meet up and chat about as we s’mores-ed by the firepit, a universally joyful activity which has no age limit this vacation proved, and over dinner. There are numerous upscale dining experiences, where hand crafted cocktails and Texas-inspired cuisine with a Hill Country twist can be enjoyed by the gourmands of the group, while children are sated with kids’ menus and mocktails. The one thing we all agree should not be missed by anyone is the Toasted Brioche and Bourbon Bread pudding, served with vanilla bean ice cream and a caramel sauce at the resort’s Sweetfire Kitchen. One portion is large enough to feed four – not that you’ll want to share. My mother and I fought over every spoonful, it was such pure delightful decadence, as we silently celebrated that we seemed to have this multi-generational vacation thing licked, thanks to a place that offered so many different ways to be happy, all high atop a glorious hill. HOW DID YOU FALL IN LOVE WITH FLY FISHING AND WOODWORKING? I guess I fell in love with fly fishing, woodworking, and the outdoors from my father. When I was younger, he always took the traditional approach to the outdoors. So, if we were fishing, it was fly fishing. If we were hunting, it was bow hunting…which was kind of difficult for a kid because fly fishing is difficult and takes a lot of practice, patience, and focus.

I was like, “I’m gonna commit to it, and I’m gonna learn it.” And when I do things, I go kind of hard at them, so I bought gear, and I started watching YouTube videos and reading things…and I went down to New Braunfels…and I didn’t know what I was doing, so I just went down there and… I caught a fish and I was like, “That’s crazy!” I got into it after that.

WHEN YOU BOOKED A FLY FISHING TRIP TO ARKANSAS AND THE GUIDE SUGGESTED YOU BRING A NET, BUT YOU DIDN’T HAVE ONE! I had some woodworking gear, and I inherited some from [my father]. I bought some wood and got my camera. I drew everything out to scale and had it printed…After that I cut this wood and tried to bend it, and it all snapped in half and the cuts weren’t straight and I was really frustrated, but I consulted some people and asked more questions and did more research, bought better wood that would bend easier instead of, like, all this exotic crap that I thought I could make something really pretty with, you know? The second one I made actually came out decent, and I was able to take it to the fishing trip and actually put some trout in a net that I made, which I thought was pretty cool. After that, I kept fishing and I made more nets.

I was like, “I’m gonna commit to it, and I’m gonna learn it.” WHAT INSPIRED YOU TO START HEART WOOD TRADE? It was a fun experiment to make a nice website and have decent branding for something that kind of merges the things that I like, which is the outdoors, fly fishing, woodworking, photography, and video. And that’s kind of been my outlet to showcase that without any restrictions. I named it Heart Wood Trade because it’s from the heart, which is sort of cheesy, but heartwood is also the center of a tree even though it’s one word… And you know, wood, obviously, then woodworking is a trade, but I do a lot of trade.

WHAT MAKES YOUR NETS UNIQUE? The detail I put into the handle, which is some kind of figurative knurling that gives relief, so that your fingers can wrap in a comfortable way around the wood to where it feels kind of ergonomically nice in your hand. And that sort of came from me in my past, playing competitive golf throughout high school and going to college to play. Holding a golf club is just something that feels good, and you want to feel good fly fishing. Like when you have a fly rod, you want it to feel nice and balanced, and I was like, “Why can’t a net feel that way?”

WHERE ARE YOUR FAVORITE SPOTS TO FISH AROUND AUSTIN? You can get a guide if you want to and fish for trout in the Guadalupe River, which is an hour away. You can also fish the lower Colorado just below the Longhorn Dam—that’s really cool. I have a friend that owns a really nice fly shop out of Round Rock called Living Waters Fly Fishing, and he fishes Brushy Creek. That’s a great spot to fish because they have Texas’ state fish, which is the Guadalupe bass. DEEP IN THE ART OF TEXAS Taking a stroll along Main Street, Salado, is like walking back in time, through history, to another world – and not just the world you might expect from the plethora of protected 19th century buildings that line the road; the saloons, jails, school, law offices that persuade any visitor a cowboy with a grudge could bump into them at any time. No, its more recent than that.
