AH, MAY. The scent of flower blooms wafts delicately in the air. Chilled bones have begun to thaw. What better time to celebrate the maternal role models in our lives? I had the pleasure of speaking to many outstanding women for this issue, and I know you'll find them as inspiring as the new season. From women in medicine and healthcare to women on the screen, our city is full of ladies who are moving mountains. As you read about them, I urge you to support them in the ways you see fit. Our families and communities are often carried on the backs of women, and that is something worth celebrating. The brewing industry in Asheville could only lead to one thing: a craft drinking mecca. We don’t love beer, but we do love a good craft cocktail. Being Asheville natives, we wanted to bring something of value, with a unique flavor to our favorite city. The idea grew over the course of a few years, and we launched H&H Distillery. We are privileged to be able to extend our brand to Cultivated Cocktails, a perfect addition for our thriving craft city. WHAT CHALLENGES DO YOU FACE AS A WOMAN IN A MALE-DOMINATED INDUSTRY? I have to say, this industry has been most welcoming to me as a female. I currently serve on the board for the Distillers Association of North Carolina, speak as a voice of knowledge to prominent entities across the state and have made life-long friends. If ever there was an industry that chooses to see hard work and knowledge rather than gender, in my experience, it’s the distilling industry. That being said, 10

An Authentic Taste of Japan HOW WAKUWAKU EATERY IS ADDING TO THE CULTURE OF ASHEVILLE'S FOOD SCENE

IF YOU’VE HAD THE PLEASURE OF VISITING WAKUWAKU EATERY ON MERRIMON AVENUE, YOU ALREADY KNOW THE AMOUNT OF LOVE AND CARE THAT GOES INTO EACH DISH. The owner, Naomi Mikami, has poured her heart into this popular spot, and she’s excited to share a bit of her culture with Asheville. If you haven’t tried the okonomiyaki yet, finish reading this then make your way her restaurant for a real treat. WHAT WAS YOUR BIGGEST LIFE-CHANGING MOMENT? The Great East Japan Earthquake (2011) and the Great Hanshin Earthquake (1995). After the Great East Japan Earthquake, I thought I could do something to help people who suffered damages because I had experience from Hanshin. I was living in Akashi and was working in Kobe at that time. But I soon realized and was disappointed that my experience was not helpful, especially considering the damage from the tsunami. I felt the powerlessness of human beings and the ephemerality of human life against natural disasters. But at the same time, I felt the great power of people trying to help each other and revive quickly. Those experiences made me think I should try anything I wanted to try.

WHY DID YOU GET INVOLVED IN THE FOOD INDUSTRY? I spent about 30 years in total in the sporting goods industry at both Asics and Nike. I was happy to work at a company that helped people to be healthier via sports, but while exercise is one source of health, nutrition is another. I suffered from ITP [idiopathic thrombocytopenic purpura] at the age of 5. The foods my grandma and mom made saved me from this illness. My grandmother always said, “To spend money on good, quality ingredients is much better than to spend money on medicine.” Another theme of balance, which led me to take the leap into the restaurant business. Okonomiyaki Serves 6

INGREDIENTS Vegetables: + 2.40 pounds shredded cabbage + 0.12 pound chopped green onion + 0.12 pound julienned carrot Batter: + 5 eggs + 40 milliliters soy sauce + 25 milliliters mirin (sweet cooking sake) + 60 milliliters cooking sake + 180 milliliters kombu stock + 1 1/2 cups all-purpose flour Topping options ("okonomi" = "as you like"): + Bacon + Mushrooms + Kimchi + Natto + Cheese Sauce and Toppings: + WAKUWAKU Sauce (or okonomiyaki sauce, Worcestershire sauce, soy sauce, etc.) + Mayonnaise + Katsuobushi (dried bonito flakes) + Pickled red ginger DIRECTIONS 1

STEP 1 In a mixing bowl, combine all batter ingredients. Using an electric mixer on low speed, mix well. In a small bowl, prepare the vegetables by layering: + 50 milliliters mixed batter + 0.3 pound shredded cabbage + 0.02 pound chopped green onion + 0.02 pound julienned carrot + 30-milliliter sprinkle batter + 0.1 pound covered with shredded cabbage + 50 milliliters covered with batterSet aside.

STEP 2 + Heat oil on medium heat on a griddle or frying pan. + When the griddle or frying pan is hot (400 F/200 C), flip the small bowl onto the heated surface. Spread ingredients into a circle. + Place toppings on top of okonomiyaki (I recommend adding a little additional batter on the topping for mushroom, kimchi and/or natto.) + When the bottom side is nicely browned, flip over. + Cook for another 4 to 5 minutes. + Flip over one last time, making sure the cabbage is well cooked. + If you like crispy texture, cook for another 1 to 2 minutes.

STEP 3 (SERVING) + Apply WAKUWAKU sauce or okonomiyaki sauce. + Add mayonnaise. + Sprinkle dried benito flakes. + Add pickled red ginger. Note: "Okonomiyaki" means “grilled as you like it,” and the Japanese enjoy cooking at home. Each family has a different recipe and preference of ingredients.

“THE WORLD IS FILLED WITH PEOPLE THAT ARE GONNA TRY TO TELL YOU WHO YOU ARE, BUT THAT’S FOR YOU TO DECIDE, YOU HEAR ME?” –Aunt Lucy, Dumplin’ These words ring true throughout local comedian Hilliary Begley’s debut film, Dumplin’, a must-see Netflix original boasting themes of body positivity and self-discovery. Hilliary landed the much-deserved role with a few breakthroughs that happened simultaneously. She graced CONTINUED >

the stage as comedian Jon Reep’s opener at The Orange Peel, and around this time, a tape of her performing stand-up made its way to one of Jennifer Aniston’s casting agents, Meagan Lewis. Both Meagan and Jennifer found Hilliary’s humor undeniably honest and humorous. Megan reached out through social media, and within just a few days, Hilliary found herself in Atlanta auditioning for the role of Aunt Lucy. Despite only having a few scenes, Aunt Lucy dominates the film as an ever-present influence to her niece (Danielle Macdonald), a teenager struggling with her body image and a pageant-obsessed mother (Jennifer Aniston). Despite almost missing the audition, Hilliary was deemed perfect for the role, and she began work on Dumplin’, her first film, in August 2017. Hilliary says she doesn’t listen to a lot of stand-up in order to keep her act fresh and authentically her brand. However, Richard Pryor was an early influence for her. “When I saw him, he was so real with what he said that I not only laughed but I cried. It was like I could feel him. There were parts that weren’t even funny; it was just him being raw and honest. That’s when I fell in love with it [comedy] completely. I thought, if I ever do this, this is what I would want it to be.” And so it has been. Hilliary recalled the first time she did stand-up in Asheville at The Bar of Soap (now Del Vecchios). “I was such a chicken about doing comedy, and I almost backed out, but my friend said I had to come, so I asked for the address and it was 333 Merrimon Ave. This is going to sound weird, but 333 follows me around, and so when she told me the address, I was like, ‘I’ll be damned. I have to go now.’” Since that fateful night, she’s been regularly contributing to Asheville’s stand-up scene with her raw, personal and never-political humor. When she was given the script for Aunt Lucy’s part in Dumplin’, she realized just how much it mirrored her own life experiences.

“I have a strange relationship with my mother, but I’ve been surrounded by women my whole life. My aunts and my grandmother have been the ones to build me up as a woman, ya know?” In fact, Hilliary says the most life-changing decision she ever made was to move out of her mom’s house in South Carolina and in with her grandparents in North Carolina. “If I hadn’t done that then I’d probably be barefoot in a backyard with a baby on my hip, not pursuing my career in comedy and acting,” she says. “That was a decision I shouldn’t have been given to make at the age of 13, but I did, and I blossomed.” Upon transferring to a new school in Asheville, Hilliary discovered theater. “I tried to take a strings class, but I couldn’t even scratch out ‘Mary Had a Little Lamb,’ and I had a friend who told me I shouldn’t be in strings,” she says. “At the end of the day, he took me to the theater classroom and introduced me to the teacher. I read an excerpt from Taming of the Shrew, and the teacher loved me, so the next week I got switched over to theater from strings, and we were already halfway through the semester. “I was in eighth grade, and I learned I could

If I hadn’t moved, I don’t know who I would be.” Fresh out of her job as a server at Fairview Tavern in Asheville, she’s recently wrapped up acting for another film, When We Last Spoke, coming out later this year, and she is actively auditioning for some exciting roles. “Cross your fingers and your toes; I just did an audition with NatGeo, and if I get that, I’ll be filming in Quebec for six months,” she says. Walking into Dr. Stefanacci’s office, you feel an instant sense of calm. It’s unlike the traditional doctor’s office and feels much more like a spa; there’s no stuffy waiting room, and warm lighting and healing energy fill the space. It’s here where you become immersed in functional medicine. “Functional medicine involves finding the root cause of chronic symptoms, fatigue, digestive issues, hormone imbalance, brain fog while asking why those symptoms are happening and then addressing the root cause of those symptoms without drugs and surgery,” she explains. Dr. Stefanacci’s unique background and education qualify her to address the physical and biochemical aspects of the body; she is a doctor of chiropractic medicine with a certification in functional medicine, but it’s her singular perspective of gaining an understanding of the whole person and finding the source of the issue that identifies her as an innovator in her field. Dr. Stefanacci acknowledges the importance of medication and traditional medicine but believes that many chronic conditions are currently treated with the “BandAid approach.” She knew there was a better way to take time to find the root of the problem, enabling clients to heal naturally. Through personal life experience and a passion for addressing chronic disease before it starts, she found her niche in functional medicine. It’s your body’s way of saying something is off.” Even making small, personalized changes can make significant impacts, especially with chronic symptoms. Dr. Stefanacci is currently accepting new patients from childhood into the golden years. “When you turn 50, if you have three true friends you can depend your life on, you’ll be lucky. And the biggest thing in life you have to learn is that you can say no. You don’t have to please everybody.”

However, she wasn’t always making magic happen for brides-to-be. Before her career in event planning, Shay was a lobbyist in D.C., learning what she wanted in a career—and what she didn’t. Upon reflection, she realized she loved planning Governor’s balls, itineraries, galas and teas and that she was really good at it, too. “It’s something you have to believe in and love,” she says. It’s not all bouquets and blushing brides, though. As is with any job, no matter how much you love it, there are frustrating moments. For Shay, it was realizing she couldn’t accept every client request. After striving to make every detail perfect, she realized it was OK to say no to some people and send them to someone who may be able to support them better. “For me, the determining moment in my life was realizing I don’t have to please everyone,” she says. “As a business owner, you feel like you have to say yes to everything. It’s not just in saying no; it’s OK to put limits on the requests. I’d rather say no to someone than have a client that is not a perfect fit for what we do as a company. When I realized that the power is in me, that changed my life. I control the end decisions of everything that happens to me; it resides within me.” Shay also learned two valuable life lessons in her lobbying years. “Two things in life: When you turn 50, if you have three true friends you can depend your life on, you’ll be lucky. And the biggest thing in life you have to learn is that you can say no. You don’t have to please everybody.” It took years for her to take it to heart, but once she did, her life and business changed for the better. For Shay and her team, the most fun they have when planning events is when there is no expectation, just an idea. “We did a wedding for a big YouTube celebrity who just said, ‘We want lots of flowers,’ so that’s what we had to go off of, and it was so much fun.
