Blue Spiral 1's 'Eat Your ART Out' The winter 2019 installment of "Eat Your ART Out!" was a huge success, raising more than $3,700 to support the Asheville Symphony. I

n a city full of breweries, a new wine shop is a welcome sight for those hunting down a healthier sip. Crocodile Wine is sure to pique the interests of wine enthusiasts as well as the casual drinker. John Hale recently opened his shop on Biltmore Avenue and is ready

to introduce you to the budding world of natural wine. Thought all wine was natural? Think

again. The wine housed in his shop is made using an ancient process and yields only small batches, so it’s wise to stop in often and see what new flavors you can experience. DO YOU REMEMBER THE FIRST TIME YOU EXPERIENCED NATURAL WINE? HOW DID IT COMPARE? It was maybe 2005. I had a wine called Coenobium which is made by nuns in a monastery in Lazio, outside of Rome. It’s an unfiltered skin-contact (orange) wine that’s earthy, full of citrus rind and herbs and just blew my mind. It told a story; it was alive and technicolor.

WHAT IS THE MAIN DIFFERENCE IN TECHNIQUE AND PRODUCTION OF SMALL-BATCH, NATURAL WINE?

THOUGHT ALL WINE WAS NATURAL? THINK AGAIN. THE WINE HOUSED IN HIS SHOP IS MADE USING AN ANCIENT PROCESS AND YIELDS ONLY SMALL BATCHES, SO IT’S WISE TO STOP IN OFTEN AND SEE WHAT NEW FLAVORS YOU CAN EXPERIENCE.

Natural wine is the method used for thousands of years—keep your soil clean, grow healthy vines, harvest grapes by hand. Ferment only with wild yeast (yeast that’s in the air and on the grape) and do as little as possible after that (maybe a tiny amount of filtering or sulfur at bottling, but if you can avoid even that, then great). HAVE YOU EVER MADE YOUR OWN NATURAL WINE? No way! I’ll leave that to the experts. I’d love to help work a harvest sometime. WHEN GUESTS ASK FOR RECOMMENDATIONS, HOW DO YOU GUIDE THEM TO ENHANCE THEIR EXPERIENCE? For recommendations, I like to ask our guests what their favorite foods are, and what they drink that’s not wine—what kind of beer, soda, juice, whiskey etc.—in order to get a better read on their palette. Then I can suggest a few things— someone who likes spicy food or sour beers is going to like the funkier stuff. A person who likes Coke or margaritas might want a little more body, fruit and acid. I hesitate to mention specific wines because our allocations are very small, and we may not have the same wines in stock for more than a month or so at a time. Our Instagram page is constantly updated with new wines, so that’s a good place to start! IS THERE A CERTAIN DESTINATION YOU’D LOVE TO VISIT FOR THE NATURAL WINE? The natural-wine scene is so strong in New York and Paris that it’s nice to be there and have so many more wines to try that aren’t available in most of the U.S. I want to go to Baja, Mexico, and hang with the Bichi crew. I’d love to spend time more time in Catalonia and Basque. Some rad wine is coming out of Burgenland, Austria, right now from producers like Tschida, Gut Oggau and Claus Preisinger. DID YOU HAVE ANY LEARNING CURVES WHEN STARTING THIS BUSINESS? IF SO, CAN YOU EXPLAIN WHAT YOU’D DO DIFFERENTLY AND WHAT WORKED BEST FOR YOU? I feel fortunate to have worked for amazing people like Andrew Tarlow in Brooklyn, who taught me that hospitality starts with a product you believe in, creating a healthy and fun workspace, and then inviting guests to share it and help mold the culture of the business. It’s kind of counterintuitive to traditional retail models, but it feels right for what my beliefs are and the kind of place where I want to spend time. Our daughter was born five days before we opened, and our toddler has been spending a lot of time helping in the shop. We are very lucky to be here in Asheville; the community has been super supportive. I do miss the camaraderie of restaurant work… but not the late nights.

AT THE END OF THE DAY, WHAT KIND OF SPACE ARE YOU HOPING TO CREATE WITH YOUR BUSINESS? Crocodile Wine is a retail shop that also serves wine by the glass and bottle. We love natural wine, so it feels normal and honest to only sell natural wine. The space is not intended for high-end wine expert sales. We want a newcomer to feel comfortable and excited about discovering a new bottle each time they come in. We have communal tables to hang out, and warm weather will bring even more seating options. We have a daily-changing selection of glass pours and can open any bottle in the shop for consumption on-premise. This month, we did our first pop-up with Farewell Espresso and Walnut Schoolhouse, and we’re excited for more events and dinners with guest chefs in the works for spring and summer. RIGHT OUTSIDE CHARLOTTE, N.C., LIES A SMALL TOWN OF APPROXIMATELY 2,700 PEOPLE, SOME MONKEYS, A FEW LEMURS AND A COUPLE GIRAFFES. This town is called Troutman, and these delightful creatures can be found at Zootastic Park, a family-owned zoo boasting safaris and one-on-one encounters with exotic animals. Those aren’t the only animals one can find at the park, either. Ever wanted to hang out with a kinkajou? Zootastic can make that happen. (Do you even know what a kinkajou is? Hint: They’re super cute.) These unique animal encounters are fun for everyone, from kid to adult, which is just what Scottie Brown, the owner, had envisioned from the start. A conversation with Rae Kalenka, Zootastic’s senior zoo crew member, camp coordinator and Scottie’s right-hand woman, revealed just how much this park means to many people. And just down the road, there’s an experience waiting for you, too!

WHAT MADE SCOTTIE WANT TO START A ZOO? He’s been working with animals for more than 40 years, and his dream had always been to have a zoo, so he and his son started it from the ground up. He built the park and had experience transporting animals, and from that, it just all came together. WHAT IS YOUR FAVORITE THING ABOUT THE JOB? My favorite part is watching the adults’ reactions—kids reactions are expected, but adults don’t always realize how much fun they’re going to have. We’ve witnessed multiple life events, too, from marriage proposals to anniversary celebrations! It’s cute to watch a kid experience petting a tiger, but there’s something extra magical when you see someone’s 90-year-old grandma holding a monkey for her birthday when it’s something she’s always wanted to do.

It’s such a beautiful interaction and makes me hopeful for bridging the distance between animals and humans. WHAT’S ONE ANIMAL YOU HAVE YET TO MEET BUT REALLY WANT TO MEET? As a zoo, we would really like to have an okapi, but they’re super rare, so that’s really just a dream. Personally, I’d love to bring in some penguins! And we are actively trying to add on elephants. It takes considerable funds to keep an elephant, though, so we’re trying to build up for that.

WHAT DO YOU RECOMMEND FOR FAMILIES VISITING? COUPLES? For small families and couples, I’d recommend the 15-minute encounter packages. For larger groups, and especially those celebrating a life event, I highly recommend the 60-minute

safari encounters! It’s such a fun way to get hands-on with creatures you don’t typically get to see. We see quite a few people who swing by while they’re in town for business and just want something fun to do! The 15-minute encounters are perfect to get away from meetings and de-stress a little with some cute baby animals. Visitors can find a list of the animals we have available for the encounters on our website. ANY FUN EVENTS COMING UP IN THE SPRING OR SUMMER? We purchased the 16 acres with a new wagon trail in mind, and that’s just about ready and open to our visitors! We also have a summer camp that runs for 11 weeks throughout the summer for interested kids and parents. Last year, we hosted “Breakfast with the Beasts” on a few different Sunday mornings. We had a lot of fun with this—we allow a select number of people in the park to enjoy breakfast next to the lions, and they even get a show, too! We’re also ironing out the details for our Christmas in July series. It’ll go through the month of July, and one can expect a Santa Claus in his best Hawaiian garb, Christmas lights and outdoor movies on the big screen. We haven’t done this in the past, but we’re super excited to get it started this year! There’s no denying that there’s something for everyone at Zootastic. Asheville local Mariah Gunther surprised her mom for her 70th birthday with a family trip to Zootastic earlier this year. They all spent the day hanging out with the different animals and making lasting memories together. When asked about her experience, Mariah said:
