SINCE ITS OPENING LAST YEAR, AUX BAR HAS BECOME A POPULAR DINING DESTINATION IN DOWNTOWN ASHEVILLE. Offering a creative interpretation of modern American cuisine, the menu features well-constructed dishes that push culinary boundaries. The fun, eclectic space creates a welcoming atmosphere where guests can share small and large plates like duck wings with sweet potato Buffalo sauce and braised pork cheeks with heirloom grits. Equally impressive are the expertly crafted cocktails and whimsical libations like Cheerwine sangria. Driving the success of Aux Bar are the owners: two husband and wife teams who have extensive experience in the restaurant industry. Mike and Darlene Moore founded The Blind Pig Supper Club, and Steve and Samantha Goff launched Brinehaus Meat + Provisions. We spoke with Executive Chef and Co-Owner Steve Goff to learn more about Aux Bar and how it is enriching Asheville’s food scene. HOW DID AUX BAR GET ITS NAME? Aux Bar came from the fact that it’s the auxiliary kitchen for the Brinehaus food truck and The Blind Pig Supper Club. Originally, we wanted to name it Ox, but that name was taken by a restaurant in Portland, Oregon. We knew—in order to survive in the over-saturated Asheville restaurant scene—we would have to be strong like an ox. Also, the ox is the most blue-collar animal in the world. It made sense for us as my partners and I grew up in blue-collar families. Add to that the fact that working in a restaurant, especially a kitchen, is so much work. We’re a year in, and I’m still working 80-hour weeks. WHAT INFLUENCED YOUR DECISION TO ESTABLISH AUX BAR IN ASHEVILLE? I have been part of the Asheville restaurant scene since 2003. I have put a lot of love and effort into this community. It means the world to me. It’s just home. I met and married my wife here; I went to school here; I had my daughter here. At this point, Asheville is more my home than any other city I have lived in, including my hometown. I travel frequently. After spending two years in Raleigh, it reminded me that I’m just really Asheville. I love the place, the people. It fits me, and I fit it.

HOW ABOUT THE RESTAURANT’S LOCATION ON LEXINGTON AVENUE? It’s one of Asheville’s most important community spots in recent history. The day I got off the train here, [the former Vincent’s Ear] was the first place I went. The alley—where our patio is—was a gathering place for locals, artists, punks and the weird (in a good way). The patrons of Vincent’s would hang out there all day. It was an epicenter for that time in Asheville’s history. I wanted to pay tribute to such an iconic place and bring the space back as a community center for locals to come. We also wanted to create a space for hospitality workers that they would enjoy. That is one reason we don’t close midday, and we have food until 2 a.m. We cater to the times when stray servers, cooks or whoever is looking for a meal, and hopefully, we can be there for them! WHAT DIFFERENTIATES YOUR RESTAURANT? That’s a hard question in a city full of great restaurants! I think we do well riding the line between upscale and casual. When you walk into a restaurant, you should get a very specific feeling. The space should feel like the chef’s or owner’s personal touch. It should have depth and personality; it should be its own thing. I think we have accomplished that. The same thing should be said about food: a particular chef’s dish should feel like his or her own fingerprint. Our dishes are approachable and familiar with personal flourishes that match the feel of the restaurant itself. WHO CREATES THE DISHES? HOW OFTEN DOES YOUR MENU CHANGE? I create the dishes. We change as frequently as we can, usually every couple weeks. We also have a core menu that never gets taken off (e.g. duck wings, burger, fried chicken, etc.) WHAT ARE YOUR GOALS FOR 2019, AND WHAT’S NEXT FOR AUX BAR? I want to get involved with as many community-oriented projects as I can and build stronger relations within our community. Keep doing the best we can to be the best restaurant we can be! AUX BAR’S PIMENTO CHEESE INGREDIENTS + 3 pounds grated sharp cheddar + 16 ounces softened cream cheese + 1/2 cup yogurt + 1/4 cup Duke’s mayonnaise + 1 cup charred and pureed red peppers (substitute with roasted red peppers in jar) + 1/4 cup Lusty Monk’s grainy mustard + 1/4 cup Texas Pete hot sauce + King Cobra Premium Malt Liquor + Salt and freshly ground pepper to taste DIRECTIONS In a large mixing bowl, combine all ingredients except malt liquor. Use an electric mixer on medium speed and beat until well blended. Season to taste with salt and black pepper. IN 1988, MATT OSADA, JUST A BOY AT THE TIME, HELPED HIS DAD COMPLETE A ROOM IN THE BASEMENT OF THEIR FAMILY HOME. During this project, a passion for design was lit, and that spark led him to pursue his career as a civil and environmental engineer, first for commercial spaces, now for dream homes. With 20-plus years of experience under his tool belt, he has become one of the most known and trusted names in design around Asheville. In fact, he’s been named “Builder of the Year” and “Best in Show,” and he has received multiple Craftsmanship and Green Certification awards from Parade of Homes, a National Home Builders Association dedicated to showcasing excellence in the field. When it comes to making the homebuilder’s vision a reality, Matt and his crew first take the future homeowner to the open lot so they can get an idea of where the house will stand. They then show them some similar homes in the desired style to get the wheels turning. Each client is encouraged to build a Pinterest board so the design can begin to come to life. “We ask them to compile a wishlist of what’s important to them, and then we engage with architects until we’ve found the right match for the owner,” Matt says. Osada Construction orchestrates the meetings between owner and designer, and together, they walk through the process of building a custom home, down to the last detail. The Osada portfolio is extensive, and these four homes show off a wide range of that vision and skill put to the test.

Throughout the home, the modern design emphasizes clean lines and open spaces without sacrificing functionality and flow. With a trend toward open floor plans, the kitchen is now the showpiece of a modern home. This house is no exception. The expertly designed kitchen combines beauty and function with style and efficiency. High-end appliances, custom cabinets and stone countertops have elevated the kitchen into real estate’s most valuable room. For the appliance package, Lauren and Mike initially narrowed their selection based on a current color trend: black stainless steel. When they walked into Haywood Appliance, a locally owned and operated retailer, they were instantly drawn to the Dacor appliance display. Dacor’s designs are contemporary, sleek and durable. All of the products are crafted to be installed flush to the surrounding cabinetry for a fully integrated look. Lauren and Mike chose the Modernist collection for their kitchen appliances, which gives a sophisticated makeover to stainless steel. The dramatic graphite color presents a nice contrast to the Verge porcelain backsplash. The hexagonal tiles were crafted by a collection of artists from Red Rock Tileworks in Nashville, Tennessee. In the age of automation, it may seem anachronistic that each Dacor appliance is hand-built in Industry, California. However, their approach speaks to the craftsmanship, skill and artistry of a high-end luxury brand. Dacor’s appliances integrate design, function and technology to create high-performing, intuitive products for the modern kitchen. “My favorite feature is the cooktop that is connected to the hood. Every time I use it, the hood automatically turns on and adjusts itself to the required speed, [which is] based on the level of heat. As someone who is bothered by white noise, it’s a big deal that I’m saying that,” Lauren says. Her dishwasher, also a Dacor model, is a durable performer with a subtle and elegant design. The appliance has filtration systems, Energy Star-rated power management and ultra-quiet WhisperWash. The Dacor oven’s most innovative and energy-efficient feature is instant start. Instead of preheating, the appliance automatically begins at the desired temperature. Cook different types of food without odor transfer or uneven cool and hot zones. Pre-programmed timers simplify cooking multiple items set at different times. “All I have to do is hit start,” Lauren says. All of the Modernist appliances have integrated Wi-Fi to communicate with the Dacor iQ app. With this innovation, consumers can access the most popular feature of the refrigerator: iQ Remote View. Imagine being able to check your fridge for an item while standing in a grocery aisle. No more rushing back home or calling someone to confirm if there’s enough milk. “It has proved helpful on many occasions,” Lauren says. The iQ app also enables users to remotely control their other kitchen appliances including the oven, cooktop and dishwasher. The dashboard gives a quick glimpse of each and its current status (e.g., preheating, two burners are on), as well as the option to turn off/on features. This gives one the ability to cook different types of food without odor transfer or uneven cool and hot zones. Pre-programmed timers simplify cooking multiple items set at different times. HOW DO YOU THINK ART CAN TRANSFORM A HOME? It's such an honor to be able to have my artwork in someone's home. I especially love when folks send me a picture of how my sculptures are now "living." I enjoy the feedback from them about how the piece can transform the whole room and change the feeling with the seasons. WHAT'S YOUR FAVORITE THING ABOUT BEING AN ARTIST? It can be incredibly challenging, and I love that. I enjoy having a problem that I have to solve and feeling satisfied with my solutions. WHAT'S THE MOST DIFFICULT PIECE YOU HAVE EVER CREATED? Last year I made an installation piece that consisted of 15 individual sculptures. It was intended to represent the Blue Ridge Mountain Range. It was a tremendous amount of work and took more than six months to complete. I was very satisfied with the results and thrilled that it was actually purchased by a wonderful couple in Florida. work can be recognized for its shifting, tonal, creative depth and is on display at Blue Spiral gallery in downtown Asheville. Tamie received her MFA from the University of Cincinnati. In addition to having works exhibited extensively in the U.S., Tamie is also an associate professor at the University of North Carolina Asheville. When asked about becoming an artist, Tamie described a childhood in which she used any medium she could find in nature to draw. She would find wood, scraps, rocks and create artwork. By the time she was in fifth grade, Tamie received an art award. At this point, she wasn’t set on becoming an artist, but she began to understand that art was one of her talents. By the time she was in high school, she was drawing more and more often out of pure desire. As time progressed, Tamie has shifted toward a focus of examining the 28

abstract and investigating new approaches. Her works have great depth and tone and seem to push the boundaries of art. WHAT ATTRACTED YOU TO BLUE SPIRAL? Having moved to Asheville in 2008, I wanted a gallery in the place of my residence to begin a relationship with. Blue Spiral was already on my radar, even from when I lived in Ohio, as being known for its commitment to excellence in fine art and contemporary craft. Between that and their dedication to artists specifically from this region, it made it easy to approach them. I have had such a positive and trusting relationship with Blue Spiral since 2013. They have yet to disappoint! HOW DO YOU THINK ART CAN TRANSFORM A HOME? My home is filled with artwork that I have collected throughout the years. I am constantly engaging with the work. I did that from an early age in my parents’ home. Instead of watching the TV that my family was watching, I would be staring at the painting above the TV. There is a strong presence with art-

work, the originality and creative investment from the artist. To me, artwork is as important and personal as the family photos—without having to know the subject.
