GIVING BACK

Dobra Te a ARTICLE TORI CARRASCO PHOTOGRAPHY STEPHAN PRUITT

“I WANT PEOPLE TO COME HERE FOR HEALING AND WELLNESS. This town is filled with healers, and the community needs a public space that is family-friendly, alcohol-free and a place where people are able to have a true, open-hearted experience connecting through tea,” Andrew Snavely says. The tea expert and owner of Dobra Tea began his journey of tea knowledge while in college in Vermont. In 2005, Andrew began annual trips to Asia to source tea from organic tea gardeners. He has traveled all over Asia to meet farmers and continue positive buying relationships and introduce new varieties. 12

GIVING BACK

(CON TI N U ED)

Dobra Tea began as a Czech tea house in Burlington, Vermont, in 2003. Since then, Andrew has successfully established locations downtown on Lexington Avenue as well as on Haywood Road in West Asheville. “We love to learn traditions and culture of tea and bring it back to the tea house,” Andrew says. “Our staff training is a twoweek period of learning the world of teas in each category. Our team learns the teas by variety, preparation and service.” The walls of Dobra Tea are filled with different sizes and shapes of teapots and varieties of teas for sale to take home. Supporting local artists is a passion of the Dobra Tea team, and much of the pottery for sale is created by artists such as Akira Satake and Covington Pottery. Dobra Tea also offers classes for the general public about tea preparation and history. The next class— Discover Green Teas from China, Korea and Japan—will be held Jan. 6 at Dobra Tea in Downtown Asheville from 9 to 11 a.m.

GIVING BACK

(CON TI N U ED)

Andrew says his goal is to continue to educate and turn people into regular tea drinkers. They are selling more than just tea; they are selling an experience. Everything from the presentation to the perfect temperature of the tea allows for an almost magical gathering place for people of all cultures and backgrounds to come together and share a wonderful experience. In their 15-year anniversary catalog, there is a beautiful quote that seems to capture the essence of what Dobra Tea brings to Asheville: “It is important to remind ourselves…that many kindred levels meet in the tea room. It is important to remember that there is a confluence of quite diverse influences, be they creative, cultural, social, religious or other. The teacup reflects traces of cultural traditions of the Chinese, Japanese or sub-continental India nations. The tea’s surface mirrors the richly colored carpet of customs from the Arabian world, old Europe and young America. Those who know how to listen can distinguish the song of the Indian gurus mixed with the sound of a Shakuhachi Japanese flute or the throat singing of the Tibetan lamas in the gurgling water. This intersection occurs in the tea room!” 16

MINDFULNESS IN MEDITATION

(CON TI N U ED)

Children are welcomed as part of the community at Asheville Community Yoga. To make yoga more accessible for parents, Asheville Community Yoga now offers donation-based childcare most days. There are toys and games for children, and the times coincide with yoga classes for convenience. A kids' yoga class is offered weekly as well! Unlike some yoga studios where the focus is on quick and rapid movements to work a sweat by moving through yoga poses rapidly, the classes at Asheville Community Yoga are instructed with intention and purpose, with a focus on breathing and mindfulness. Perhaps you have tried yoga before and were not sure it was for you. There are so many types of yoga, each with a different style and pace. At Asheville Community Yoga, they offer Qigong and Tai Chi, Jin Shin Jyutsu, Vinyasa Flow, Gentle Flow, Yoga for Seniors, Bhakti Flow, Yoga for a Healthy Spine, Prenatal Yoga, Warm Vinyasa Flow, Meditation, Yoga Nidra, Align & Stretch, Chair Yoga, Anxiety-Releasing Yoga, Kids Yoga, Yoga for Women, Yoga for Men, Hot Flow, Yoga for Veterans, Slow Power Flow, Yoga en Espanol, Restorative Yoga with Digeridoo Meditation, Gentle Kundalini Yoga, Nia Dance and Healing Arts Classes. Another recent addition to the healing modalities of Asheville Community Yoga is the Healing Arts Center. The center operates on a good karma pricing system, with tiered-level donations to make services accessible and affordable for all people, regardless of income level. The level system allows those who wish to “pay it forward” to contribute more for their service to allow those who cannot afford it to have access. The Healing Arts Center has ayurvedic wellness consultations, acupuncture, massage, cupping, herbal consultation, holistic health coaching, integrative physical therapy, reiki and reflexology. “We have seen people come in with Crohn’s disease or chronic pain and after receiving therapy have seen their joy at actually beginning to feel well and without pain. It brings us joy to witness these transformations,” says a therapist in the Healing Arts Center. Moving forward, Asheville Community Yoga intends to broaden its outreach program to the community in local schools and rehabilitation centers, providing lowcost childcare, cooking classes, healthy eating classes and support groups. They plan to continue to expand on their land to create a campus and institute for healing arts. Their focus on giving back to the community continues to grow due to the participation of so many volunteers and donors. “The center strives to be a demonstration of what service is and encourages its members to get involved in any way they can.” 8 Brookdale Road, Asheville, 828.255.5575,

TRAVEL DESTINATION

southern california girls’ getaway ARTICLE | ANGELA SOUTHARD WINTHER @GETOUTOFTOWNGIRL

DREAMING ABOUT YOUR NEXT GIRLS’ GETAWAY? I’ve found the ideal place for you and your friends: Laguna Beach, California, a charming community nestled between San Diego and Los Angeles along the southern coast of Orange County. The weather is close to perfect year-round, and there are 7 miles of beautiful coastline. There are many luxurious oceanfront hotels with pampering spas, incredible restaurants, charming art galleries, local retail stores and world-class shopping centers a short drive away. If you’re an art lover, the area will especially appeal to you. There are more than 100 galleries for exploring, and 80 pieces of public art are on display. Laguna Beach has been an artists’ colony for more than a century, and summer is a wonderful time to visit when the town’s renowned festivals take place. During Festival of Arts, Sawdust Art Festival and Pageant of the Masters, visitors and locals participate in demonstrations and classes; enjoy recreations of famous works of art; and have the opportunity to purchase unique, locally made goods. A great place to start getting acquainted with the area is Main Beach, the centerpiece of town and located along the famous Pacific Coast Highway. It’s a treasure trove for soaking in the beaming California sunshine, walking on the beach and enjoying people watching. 22

Less than 10 miles away from downtown Laguna is one of my favorite shopping areas, Fashion Island. It’s a pristine, open-air center with world-class shopping, exclusive boutiques and a wide range of cafés and restaurants. Fashion Island is home to the area’s only Neiman Marcus, as well as Nordstrom and Bloomingdale’s If you’re looking for delicious California cuisine, Laguna Beach has its fair share. From quaint cafés to upscale beachfront dining, there is an abundance of outstanding restaurants in Laguna Beach, and most are independently owned. On my last visit, we discovered a new favorite, Nick’s. It’s centrally located in one of the liveliest blocks and offers indoor and outdoor dining, impeccable service, mouthwatering food and handcrafted cocktails. Menu offerings include specialty salads, pan-seared salmon and fried chicken that’s so good you’ll think you’re back in the South. Nick’s is open daily for lunch and dinner and serves breakfast on the weekends. The perfect place to start or end any evening with your friends is at Las Brisas. The views are breathtaking here, and the specialty margaritas are some of the best you’ll ever enjoy. The bustling California landmark also serves lunch, dinner and brunch.

There are many options of where to stay when visiting, but my recommendation is Ritz-Carlton, Laguna Niguel, just a few miles from Laguna Beach. The four-story oceanfront property has all of the bells and whistles of the luxury hotel chain, but the view puts this property in a class by itself. pampering spa and two outdoor pools. The hotel is also home to five restaurants, including a poolside café; an outdoor lounge that overlooks the Pacific and specializes in small plates and unique cocktails; an upscale steakhouse; and a market that is open for breakfast, lunch and to-go items. The spa at the Ritz-Carlton is the perfect spot to enjoy the day with your favorite friends. Treatments such as the Pacific Wave and Coastal Illuminating Facial are ocean-inspired and incorporate elements of the sea. It’s easy to get to this idyllic seaside community, as there are several nearby airports. John Wayne Airport Orange County (SNA) is the closest, but other options include Long Beach Airport (LGB), Los Angeles International Airport (LAX) and San Diego International Airport (SAN). “EXPERIENCING GOOD FOOD SHOULD BE TRANSFORMATIVE, MARKED BY CHANGE, AND INSPIRING...AT ONCE SENSUOUS AND CEREBRAL,” CHEF JASON SELLARS SAYS. The restauranteur and chef of Plant on Merrimon Avenue is completely in love with his job. His love of food is apparent in every dish he creates. Jason provides a completely different experience

than

typically

meat-heavy

restaurants. Plant celebrated its seventh anniversary in August and continues to delight guests with artistically plated farm-to-table ingredients. “Living in a region rich in farmers with such interesting ingredients, we are able to use seasonal and local vegetables to create a vegetable-centric menu,” Jason says. From wild mushrooms to local heirloom tomatoes and fresh herbs, dishes are intensely flavorful and far from boring. For those who are uncertain about vegan cuisine and what a meal would be like without dairy or meat, the plant cheese plate is sure to delight your taste buds. The dish consists of cashews blended with vegetable brines and ferments to develop flavor and a cheesy, tangy taste that is similar to feta but less salty. Combine that with the softest almond cheese—similar to ricotta—and a cheese roll with herbs, walnuts and flower petals for a trio of delicious cheesy spreads. The dish is served with pickled vegetables, rosemary amber and fruit and focaccia bread. The cheese plate, along with every dish at Plant, is plated to impress even the finest of Instagram photo connoisseurs. Fig’arelli—the name given to Plant's sweet-savory cheese plate accompaniment—is in the tradition of the fig log. The smoky chipotle chile is roasted to elicit its aroma and spice. It's best with aged cashew cheese and herbed crackers, but pair it with any vegan cheese arrangement where you need spice and a pungent pop. Yields 1 pound.

FIG’ARELLI (SMOKEY FIG) INGREDIENTS

+ 1 chipotle chile + 1 tablespoon neutral oil (sunflower) + 2 tablespoons yellow onion, small dice + 1 teaspoon smoked paprika + 1 teaspoon dried sage + 1 teaspoon ground fennel + 1/2 teaspoon good-quality salt + 1/4 teaspoon black pepper + 1 teaspoon minced garlic + 1 pound dried mission figs + 1 teaspoon raw apple cider vinegar DIRECTIONS

Split the chipotle open; destem, deseed and cook over a flame or in a cast-iron pan until dark and aromatic. While charring the chipotle, heat the oil over medium-high heat in a small sauté pan. Add the onion, and cook for 5 minutes, until sweating and soft. Add the paprika, sage and fennel, salt, pepper and garlic, and cook for another 10 minutes. While onions are cooking, destem the figs, and put them in a large bowl. Once onions have cooked and slightly browned, add pan mixture and apple cider vinegar to the bowl with figs. Process in a food processor until the mixture balls around the blade and becomes smooth. Roll into one large log or smaller logs, depending on your use. Store at room temperature in a perforated pan or in cheesecloth; as it cures, it gets better.
