“CHAI PANI” TRANSLATES LITERALLY TO “TEA AND WATER,” BUT COLLOQUIALLY IT’S THE TREK ONE MAKES FOR A SNACK OR SIP, A CUP OF TEA OR PLATE OF SPICY VITTLES. That’s what you’ll find at downtown’s favored Indian haunt, Chai Pani. Decked in ornaments as colorful as the food on its plates, Chai Pani has become a culinary mainstay for locals and tourists alike since it was opened in 2009 by three-time James Beard nominee Meherwan Irani. Its menu features the stuff of chai pani, “chaat,” savory munchies to prep the palate, as well as thalis, family-style meals rife with color and flavor. "I’ve been in love with food and cooking and restaurants and the entire culture around food pretty much from when I arrived here," says the India native, who found his way to the US via an MBA program in San Francisco. When he arrived in the '90s, it was to a mecca of modern Californian cuisine that awakened his tastebuds. He also likens the emergence of the Food Network to the early days of MTV: "It was so informative for the way Americans think of food," he says with a laugh. But still, he found something lacking in the American food scene: authentic Indian cuisine. The north Indian curry buffets dotted around big cities seemed a muted representative of culinary culture to Irani, who instead sought out quiet hole-in-the-wall chaat houses. Irani moved east with a career in sales, but following the real estate crash in 2008, his wife Molly asked him a simple question: if he weren't tied by responsibility and sensibility, what would he do? The answer was simple: food. "It was one of those 'Eureka' moments, "I sat bolt upright, and the idea for Chai Pani was fully formed in my head." Within 30 minutes, he was showing the menu to Molly. Now he’s able to pursue his passion—food—via a series of restaurants (you’ll find others in Decatur and Atlanta), dishes, and spice mixes like this his Garam Masala (his latest venture includes Spicewalla Brand, a fresh, small-batch spice company).

MEHERWAN’S GARAM MASALA INGREDIENTS + 4 cinnamon sticks + 6 cloves + 1 T cumin seeds + 1 T green cardamon + 1 T black peppercorns + 4 star anise pods

INSTRUCTIONS Toast in a dry skillet/pan on medium heat until spices are warm to the touch and you can smell the distinctive fragrance of the roasted spices. Cool and grind coarsely in a coffee grinder.

“Garam Masala goes well with dark leafy green braises and with meat dishes. At Chai Pani, we use it as a last minute addition to our Saag Paneer & Butter Chicken,” Irani says of the spices. “It’s typically used as a finishing spice to add aromatics to the dish in the last stage of cooking. It’s a useful addition to your home kitchen, as well, as he points out: “At home I’d recommend using it in a beef or vegetable stew, any kind of chickpea or lentil soup or stew, chilis, roasted shoulder or leg of lamb, and even when cooking rice (add a pinch to the water to infuse the rice with fragrance).”

“It actually takes a lot of calculation as far as timing, understanding budget analysis, and understanding different people,” he argues. “I made something from nothing in these so-called ‘sexy’ industries, not because I had anything, but because I cared.” He cared about the details, the final product, and the emotions he evoked enough to make it. Now he’s paving the way for the next generation. He’s producing a web series for the NC School of Science and Math (his alma mater) as they create a new western campus, he's on the Board of the YMI, and he collaborates with local, youthful artists: “No matter how busy, I schedule time to work with them because I care about the quality of visual content in Asheville.”

t h e o pt i m i st Kenny Capps Founder, Throwing Bones for a Cure, Inc.

WHEN KENNY CAPPS WAS DIAGNOSED WITH MYELOMA, HE DIDN’T LET IT SLOW HIM DOWN. The local (and we mean local— his ancestors have been in WNC since the late 1700s) founded Throwing Bones for a Cure, Inc., a nonprofit dedicated to helping find a cure for cancer. This spring, Capps took off on a 1,175-mile run of the Mountains to Sea Trail in support of Throwing Bones for a Cure, an incredible support crew at his side. When he’s not running for a cure, Capps supports Asheville’s blooming art scene; his wife, Murphy Capps, even founded Asheville’s Front Porch Theater. When asked if he had any advice for local aspirational men, Capps offered an eloquent assertion: “Make decisions that positively impact individuals in our community. Don't think of it as good karma. the entrepreneur Chad Slagle Co-Founder RAS - Rapid Whiskey Aging Technology CHAD SLAGLE IS THE EPITOME OF AN ENTREPRENEUR. The co-mastermind behind Climax Wood-Fired Whiskey has never had a boss. Instead, he chose a path of startups and inventions. “My business partner [Keith Mort] and myself (we have been best friends since high school) created a technology that ages whiskey, rum, bourbon, etc. in less than a day, compared to the traditional 5-7 years in a barrel. We get a chance to work together, create new technology, and of course drink whiskey—what is there not to like about this?!” he said with a grin. It’s just the latest in a string of entrepreneurial endeavors for Slagle, who also helped found Hatch AVL, a non-profit foundation for high-growth startups. Even in light of his abounding success in business, his greatest triumph is a personal one: “My biggest accomplishment has definitely been marrying my best friend.” June 2018 | Asheville Lifestyle

FRIED CHICKEN SANDWICH WITH JALAPEÑO SLAW INGREDIENTS (SANDWICH) 1 cup all-purpose flour 1/2 teaspoon ground paprika 1/2 teaspoon garlic powder Cayenne pepper, to taste Boneless, skinless chicken breasts Vegetable oil (as needed) Sesame seed bun Pickles

DIRECTIONS 1. Mix the flour, paprika, garlic powder and cayenne pepper together in a shallow bowl. 2. Fill your skillet with oil to about 1-inch deep and heat to 350 degrees. 3. Coat your chicken breasts in the flour and seasoning mixture, then carefully place them into the heated oil. 4. Cook until golden brown with an internal temperature of 165 degrees. 5. Lightly toast your sesame seed bun, then top with pickles, fried chicken breast and slaw to taste.

FOR THE SLAW Combine mayo, hot sauce, garlic and dill pickle juice with shredded red cabbage, pickled onions and candied jalapeños.

DIRECTIONS 1. Blend the red onion, garlic, adobo sauce, olive oil and seasoning in a food processor or blender, adding water as needed until smooth. 2.
