The organization delivers medically-altered meals to feed the sick and their families while accommodating their illness-induced food restrictions. Since certain ingredients can affect treatment, and cancer patients experience dampened taste buds, the group works to cook meals with specific needs and taste in mind. Project Angel Heart

delivers these meals on a weekly basis to any child in need, no matter their income, employment status, or diagnosis. They currently cater to the Denver Metro and Colorado Springs areas and serve over 60 routes through volunteers who cook, package, and deliver each meal personally. Despite her many professional accolades, Corrie hosts a series of memories reflective of a truly fulfilling life. An example of this is her almost cinematic love story, which began with a trip to Mexico alongside some old friends. She soon noticed Greg, who turned out to be her future husband. After hitting it off and going back to their homes in Arizona and Colorado at the time, the two became loyal pen pals, with Corrie sending him a love letter a year after their introduction. She never heard back, assuming his disinterest - until he called. It took him two years to call due to a slight mail slip-up; apparently, the letter had been misplaced by his roommate. The happy 17-year couple are now parents to two active children, Greg and Alivia, who fill their time with motocross and school. Alivia is currently the only girl in the state’s top 10 rankings, sitting at 9th place for 50cc riders. The dedication which Corrie Francis holds towards the fight against terminal illness is a fitting reflection of this season’s generous, uplifting atmosphere. Her final national competition will take place on November 19th of this year, which will be her fourth national pageant. Her message to young pageantry participants is to exercise steadfast persistence. Francis began competing on and off at the age of 15, and after six years of competing for the Mrs. Colorado American title, she claimed her victory. It’s a pure example of the sweetest victories resulting from unwavering determination. INGREDIENTS + 5 lbs red potatoes, cut into chunks + 1-2 tbsp minced garlic + 3 cubes chicken bouillon, chicken broth or Better Than Bouillon + 1 (8 oz) container sour cream + 1 (8 oz) pkg cream cheese, softened + ½ cup butter

DIRECTIONS 01 In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender. Drain, reserving some of the water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water if needed to attain desired consistency. 02 Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste

It’s a classic tale of rising to the occasion after humble beginnings, as she quickly transcended her dishwashing duties to become Restaurant 415’s sous chef. After working in Fort Collins for a while and feeling a bit unchallenged, Jenica received an offer to work at Warner Bros. in Los Angeles. The young chef soon found herself in a foreign city with no familiar faces in sight, living out of a cramped studio in the heart of Koreatown. Jenica regards her position at Warner Bros. as the most insightful and experiential role she’s taken thus far. She worked alongside over

FOR CENTURIES, AMERICANS HAVE GATHERED IN LATE NOVEMBER TO REMEMBER EARLY AMERICAN HISTORY AND SHARE FEELINGS OF GRATITUDE WHILE EATING A FESTIVE MEAL. Even when my travels took me abroad, I found a way to celebrate this harvest festival. Due to circumstances beyond my control, my plans for an expat Thanksgiving in India did not come to fruition. Instead of joining my family at a makeshift feast, I spent the night in a Delhi hospital awaiting surgery the next day. A little more than a decade ago, I had the once in a lifetime opportunity to work as a teacher in a highly respected international school in Bangalore, India. Unlike my expat colleagues who were single and in their 20s, I was married and had four adult children. Most of my American friends and extended family members felt I was crazy to leave behind my suburban Denver life. While my trepidations were overwhelming, I stepped outside of my comfort zone when I accepted the job offer to teach 5th graders at The International School Bangalore (TISB). After arriving in India, waves of unrelenting culture shock knocked me off balance. It was challenging to adapt to an unfamiliar environment when a tsunami of bewilderment engulfed me. Eventually, I learned to adjust and accept my new life. However, I must admit that I never reached the stage where I felt completely comfortable with my surroundings. CONTINUED >

My expat life in India was the antithesis of my former life in Colorado. Despite the physical and emotional challenges, I remain grateful for the opportunity to live and teach abroad. This experience expanded my understanding of another culture and simultaneously intensified my gratitude for being an American citizen. Living as an expat cannot be compared to being a visitor. My expat commitment was for two years and not limited to a handful of weeks. From my Bangalore accommodations, I took a solo day trip to the Hoysala temples—Belur and Halebeedu, explored the Golden Triangle with family members, enjoyed weekends with my son and future daughter-in-law in Delhi, traveled with my husband to Pune on a business trip, chaperoned my fifth-grade class for a multi-day stay at the Kabini River Lodge, and joined two expat teaching colleagues for a memorable trip to Cochin and Munnar during our Dussehra school break. My travels throughout India opened my eyes to architectural landmarks like the Taj Mahal, the Agra Fort, and the 16th century Paradesi Synagogue. I observed regional differences in customs and foods while also learning bits and pieces of Indian history. Few motorcycles and cars obeyed any basic rules of the road. Stoplights, one way street signs, and street lanes were frequently ignored. It was not uncommon to see motorcycles driving erratically on the sidewalk. After seeing the lack of decorum on the city streets, I had no interest in driving in India. Without a car, I lost my independence and became dependent on rickshaw drivers, taxis, and people who had cars. In addition to cows wandering freely, I also came across goats, chickens, and packs of wild dogs on the public streets. Most troubling were the families of wild monkeys who were frequent visitors to my guestroom and classroom. + Use pie crust in dairy case (or make your own) and press into pie pan. Use fork and prick lots of holes in bottom and sides of crust. Bake crust according to directions on box. + In medium saucepan, combine sugar, cornstarch, chocolate, and salt and mix well. + Gradually stir in milk, mixing until smooth. + Cook over medium heat, stirring constantly. Bring to boil, boil 1 minute. + Put egg yolks in bowl and beat slightly. + Stir about half of the hot mixture into the egg yolks, mixing well.

Running for a Cause: Ju s t i n A n d ra d e’s 280-Mile Fundraising ON THE MORNING OF DECEMBER 7, 2019, 17 YEAR-OLD DAVID CAMERON HOLLAND LOST HIS LIFE IN A TRAGIC CAR ACCIDENT. The senior at Ralston Valley High School was beloved by the community and on track to graduate in 2020, with his final football season in the books. In the wake of his passing, Cameron’s friends and family created a mission-driven scholarship defined by his academic achievements, athletic endeavors, and shining personality. Among these supportive friends was Justin Andrade, who called Cameron’s sister in May of 2020 with a seemingly outlandish proposal.
