Where Science Meets Nature Katie Uilk, CEO of K&K Skin Products, and Kristina Trujillo, Chief Science Officer, are sisters-in-law in a skincare company where science meets nature. Katie has a background in business & psychology—but it was her struggle with severe skin conditions all her life which led her to discover the healing properties of essential oils. She began to formulate products with different benefits and give them away as gifts. “Making your products for other people is a very vulnerable process,” Katie says. “I was really unsure about releasing [them] but with Kristina and her entrepreneur spirit, it gave me the confidence [that] we could do this […] and people would benefit from these products.” Cue Kristina, the duo’s scientist. Kristina has her PhD in molecular biology and spent over ten years in cancer research at the UNM School of Medicine. While there, she worked with a molecule with impressive antioxidant and anti-inflammatory properties. “Even though it didn’t work that well for cancer or my research,” Kristina says, “it stuck in the back of my mind because it had such impressive properties.” Both women have trailblazing entrepreneurial spirits. Katie observed her dad’s success growing up. “From a young age I saw the power of owning your own business.”

HOW TWO SISTERS-IN-LAW BUILT A THRIVING SKINCARE BUSINESS
And Kristina wanted to use castoff lab discoveries to help others. She left UNM to pursue an entrepreneur in residence in San Francisco at a Venture Capital firm while Katie perfected her products. Their combined knowledge base and experiences turned out to be invaluable years later. Their entrepreneurial journey illustrates how dots can sometimes only connect when looking back rather than forward. K&K’s beginnings were not in a fancy research lab or with VC backing—but in the humble space of Katie’s kitchen. “We were making oils for fun,” Kristina says, “and the light bulb came on. That molecule [BioVer-X™️] had just been in the back of my head. When I was researching ingredients, it clicked.” The two women started doing science experiments regularly in Katie’s kitchen. They ordered different pipettes and glassware—basic lab supplies—and got to work on their new formula. “Katie already had her oils perfected, thank goodness,” Kristina says. So the next step was to add in the molecule, and Kristina offered to be the guinea pig. After about a week, the side of her face using the product with the BioVer-X™️ molecule saw impressive results. “The wrinkles around my eyes start[ed] to fade and not be
as deep,” Kristina says. “After a couple of weeks, it was looking so different from the left side to the right side. Before launching, she was working full-time while raising kids. “It’s scary to go from a job with benefits and security and build a business with no money, no backing, because we believe in it,” Katie says. She was craving the freedom that comes with being an entrepreneur—and something was telling her to jump in the deep end, “not knowing if you could swim, but believing you could,” as she puts it. And swam, they have. Their advice? Know what you want and be okay conveying that to people. And know you can do it, because you can.

1. preheat oven to 325F. butter and lightly sugar 4 ramekins (about 1-cup size).
1 tablespoon unsalted butter 2/3 cup superfine sugar, plus more for dusting 2 eggs, separated 2/3 cup reduced fat buttermilk 2 tablespoons lemon juice 1 tablespoon lemon zest 1/4 cup all-purpose flour 1/4 teaspoon salt

2. in a mixer, add egg yolks, buttermilk, lemon juice and lemon zest and beat until well combined. reduce the speed to low and sift in flour, sugar and salt. continue to mix until combined. beat egg whites until you get stiff peaks then combine the 2 mixtures by gently folding them together, a little at a time. divide evenly amongst ramekins then bake in a water bath - set ramekins in a roasting tray and fill with water halfway up the sides of the ramekins.

3. bake for 45 minutes until the top springs back when gently pressed and the cakes have a nice golden brown color. allow to cool slightly, then carefully invert onto a plate. serve with fresh berries and dust with powdered sugar.

ingredients: • • • • • •
1 package (6 ounces) Driscoll’s Raspberries, plus more for garnish 1/4 cup granulated sugar 1/4 cup water 1/4 cup orange juice 1 bottle champagne or prosecco Fresh mint for garnish
directions: 1. Place raspberries into a small saucepan. 2. Add 1/4 cup sugar and 1/4 cup water. 3. Bring to medium heat and SIMMER until raspberries are just broken down. 4. Strain raspberry syrup through a fine mesh strainer and discard seeds. 5. Set aside raspberry syrup to cool. 6. Pour 1 tablespoon (1/2 ounce) orange juice into a champagne flute or wine glass. 7. Stir in 2 tablespoons (1 ounce) raspberry syrup. 8. Top mixture with about 1 ⁄2 cup (4 ounces) Champagne or prosecco. 9. Adjust ingredients as desired to make your favorite raspberry mimosa. 10. Repeat with remaining ingredients to make a total of five cocktails. 11. Garnish each drink with raspberries and fresh mint as desired. 12. Serve the Raspberry Mimosa immediately.

Jason Ryberg, General Manager of Albuquerque Florist, says that, “In our minds, we really don’t just sell flowers—we sell emotion. We talk about this a lot with our staff. We can help you express your love for somebody, or give people a sense of comfort when they lose someone. Celebrations, happy times, sad times—we’re here for all of it.” The first thing that you notice when you enter Albuquerque Florist is the sheer quantity of product. Floral bouquets, house plants, stuffed toys, cards, and event decorations are floor to ceiling in the large shop. There is a sizeable staff processing flowers, designing
arrangements, and watering plants. They also have large cooler facilities that enable them to service multiple big events with their considerable stock of flowers. This allows them to provide quick turnaround as well. Jason says, “We can provide same-day delivery if they place an order before 2:00 PM. Also, I tell the staff that we need to provide especially attentive service for funerals. If we get a call that someone needs funeral arrangements 20 minutes ago because arranging flowers was overlooked, we will invent a time machine to get it there as fast as possible. service set-up go out the door in 20 minutes. It is pretty impressive when we all stand together to do something like that.” According to Jason, business actually increased by 30% during the pandemic. “People weren’t able to visit friends and family, so they tended to reach out to each other with flowers. It’s a way to express something without physically being there. Although our events business suffered, we were slammed with our bouquet deliveries.” Jason’s career in the flower business started 10 years ago when he was just out of high school. A friend offered him a delivery job at a small florist shop to cover the Valentine’s Day crunch. They ended up keeping him on afterwards, and he eventually worked his way to management at his current position. “This shop has been in Albuquerque for 23 years. The owner was a fantastic mentor. He taught me the business and gave me a lot of opportunity to work my way up. The owner’s family has run the business for two generations, and has another shop in Phoenix, “ Jason says. Albuquerque Florist has its own wedding and events coordinator, and also services many corporate customers—hotels, car dealerships, and casinos. Jason says “We often do really elaborate weddings like you see on TV or in magazines. Hundreds of table centerpieces, large arch pieces—flowers everywhere. We have our own crew that does the set-up. We also provide floral arrangements for conventions, business meetings, and companies that just want to create a pleasant atmosphere for attendees and customers.” In addition to bouquet design, Jason handles the daily business activity of running a busy shop, but says that staff training is one the most important parts of his management responsibilities.

“There’s a lot a new employee has to learn. In addition to designing floral arrangements, they have to know how to properly sell bouquets. You’re providing a service where you’re creating art to accommodate the customer’s taste. You have to interpret someone’s words into a design and capture the emotion that they want to express. Don’t be fooled by the unassuming front of Tikka Hut’s new Indian School Road location. Inside, you’ll find an almost entirely from-scratch kitchen creating delicious dishes that embrace the Islamic influence on Indian food. The word “tikka” means “small pieces”—it’s essentially the Middle Eastern version of jerky. Travelers would cook food on an open flame and chew tikka on long, arduous journeys. The owner, Hanif Mohamed, is a storyteller and creative at heart. He aims to tell the stories of those who came before him while developing unique culinary creations with his team. Hanif is from both India and Kenya—and takes these influences seriously. When we’re on the phone, I feel like I’m getting a short History lesson (in a good way) on the influences the Portuguese, British, and Arabs had on the east coast of Africa. “When you eat here, you’re getting a hint of Indian spices, but it’s not over powering.” And I couldn’t agree more—the food at Tikka Hut is perfectly spiced. Frankly, it’s unlike any food I’ve tried—a mouthwatering blend of Persian, Indian, and Swahili spices. The chicken is juicy. The pita is warm. I had the pleasure of speaking with Chef Dennis Apodaca, who jokes, “I’m just a dishwasher.” That’s how it is here at Tikka Hut—everyone pitches in. “I make the ice creams by hand,” says Dennis. “They’re kulfi inspired.” (Kulfi is a dense, Indian ice cream.) Try Indian-inspired flavors infused with saffron, cardamom, or cumin, or a traditional flavor, like guava. Dennis also makes lassi by hand, an Indian yogurt drink. “We try to be as much of a scratch kitchen as we can,” he says. “Maria makes all the pita, pizza dough, and tortillas by hand every day.” (Both flour and corn tortillas are offered.)
It’s clear one thing above all is important to the team—delicious, fresh food. Arguably the most impressive thing about Tikka Hut, aside from the freshness and quality of its ingredients, is the innovation infused in every dish. I got the impression the recipes at Tikka Hut are somewhat fluid— Dennis is currently trying to perfect the art of making a gluten free pakora, a type of Indian street food, doused in chickpea flour and then deep fried. The texture and flavor of the mushroom pakora is utterly satisfying. Dennis says it isn’t quite as crispy as he wants it to be—but I beg to differ. Other must-try dishes at Tikka Hut include the chicken tikka pizza and the roast chicken. Indian pizza? Who ever heard of such a thing? And I asked Hanif just that. What was the influence behind making Indian pizza? “[The] pizza oven was here when we took over the new location,” he says. So he posed himself a seemingly simple question: We’ve got this pizza oven… Now what do we do with it? Hanif and Dennis may be creative with their dishes, but they’re practical, too. Hanif wanted to incorporate the items they already had on hand into the pizza. “[So] that’s what we did,” he says. “And it all works.” “You just knew how to make pizza dough?” I ask. Not quite. He got a hold of the original owner who opened a pizza restaurant in that location thirteen years ago—and asked him to teach the team how to make pizza. “He came in and spent a couple of days training us.” Hanif said. And as previously mentioned, it’s made from scratch. Every single day. No wonder it’s so good. My only regret was eating only one slice, instead of buying a whole pie. A UNIVERSE OF MUSIC IN A LOCAL SHOWROOM 88 KEYS PIANO WAREHOUSE BRINGS MUSIC INTO THE HOME The English classical pianist James Rhoads said, “There are eighty-eight keys on a piano and within that, an entire universe.” 88 Keys Piano Warehouse’s Owner Alexander D’Von Boggs aims to bring that universe into Albuquerque homes with his selection of fine pianos. According to Alexander, his goal is to find good homes for his quality instruments where they can provide years of musical enhancement for the family and expand their children’s horizons. The showroom has a boutique ambience in a Turkish style and features an impressive selection of quality pre-owned pianos in addition to new Boston & Essex brands - members of the Steinway family of pianos. In addition to the showroom is a massive shop complete with staff dedicated to restoring vintage instruments. “People send us pianos from all over, and we make them like new again", says Alexander. At any given time over a dozen projects are in progress - including
a rare Grotrian-Steinweg grand manufactured in the early 1860's in what was then Prussia. The techs relish the opportunity to bring such special pianos back to life. All work is done in-house, which is a big advantage for his business. Alexander has a lifelong interest in pianos and started playing at 10 years old. He says, “Being from the deep south, I was inspired by New Orleans jazz, blues, soul, and country music.” His showroom is decorated with elegant photos of music legends that give the place a refined setting. He has been restoring pianos for 25 years and running his dealership for eight years. 88 Keys Piano Warehouse also provides in-home repair and tuning service, as well as rentals for events.
