Josslyn Lee and Lucy Von Stanke are young chefs on the rise who already run their own catering business and take away street food cafe. Both started in the industry washing dishes but didn’t take long to realise food was their passion. With their apprenticeships completed and gaining some valuable experience under some of our region’s finest and most inventive chefs, this girls were looking for the next challenge in their culinary careers. Josslyn took on The Main – a catering project that spawned Presto by the Main – and after Lucy spent some time working for Josslyn, the opportunity arose for a business partnership to form and the girls have hit the ground running. Their shared passion for using local and seasonal produce has seen them create some stunning menus and cater for a number of small and large functions. Josslyn learnt her trade at both Mount Gambier and Regency TAFE, where she was given a superb grounding in French techniques. It has been a great building block for her as she has added the freshness of Asian flavours and the focus on local and seasonal produce to her cooking repertoire. Lucy is an award winning chef who sees food and cooking as a form of art, enjoying creating the look of the dish as much as she enjoys creating perfect flavour combinations.

It’s on again – the 2014 Limestone Coast Tattoo at Mount Gambier’s IceHouse Basketball Stadium. This theme of this year’s Limestone Coast Tattoo is “Fantasy and Folklore” and includes the introduction of the Cockatoo Valley song group, the Portland Citizen’s Brass Band and the African Drum Group. LOCAL WDEA Employment is moving interstate for the first time and expanding across regional Victoria after winning major new contracts to provide more employment services for people with disabilities. WDEA has won tenders to provide Disability Employment Services - Disability Management Service (DES-DMS) in southeast South Australia and will set up a permanent full-time site in Mount Gambier and a part-time office in Naracoorte. It is also moving into the mid-Murray region for the first time and will establish an office in Swan Hill. WDEA has also secured increased business share across most of its existing sites and is now the biggest provider of DES-DMS in all of the regions it operates in. The new and expanded contracts mean WDEA will provide services for 700 new clients. Once the new contracts start in March 2015, WDEA will offer disability employment services to nearly 3000 clients. WDEA already has fulltime offices in Ararat, Ballarat, Bendigo, Colac, Hamilton, Horsham, Portland, Shepparton, Stawell, and Warrnambool. It also has outreach services in Apollo Bay, Camperdown, Casterton, Castlemaine, Cobram, Daylesford, Echuca, Heywood, Kyneton, Maryborough, and Terang. WDEA Director of Employment Brett Orr said it was exciting for the organisation to forge new paths in regional Victoria and South Australia and to grow in existing service areas. “Employment is WDEA’s core business and Disability Employment Services is what WDEA was founded on more than 25 years ago,” Mr Orr said. The contracts became available after the Federal Government put the business held by CRS Australia to tender. The DES-DMS program delivers flexible assistance for people with temporary or permanent disability who do not require longterm ongoing support in the workplace to maintain sustainable employment in the local market.

LOCAL Merino Community Festival oﬀers another jam pakced program If you are looking for a fun day out for the whole family with entertainment for everyone at a low cost then the Merino Community Festival is for you. Following three very successful festivals, where more than 500 people passed through the gates each year, the committee is enthusiastically organising a bigger and better 2014 festival. This year’s festival will be held on Saturday, November 29, at the Merino Recreation Reserve. The kid’s entertainment will again be a highlight at a very affordable price. There will be an abundance of activities including Zorb balls, UFO Cars, sumo suits, a dunk tank, huge inflatable slide, jumping castles, gladiator challenge, mobile zoo, merry-go-round, face painting and since we will be in the spirit of Christmas there’s sure to be a visit from Santa. Once again the Hamilton Motorcycle Club will be holding a race day and non-members are able to pay a day member fee to join in the races and

enjoy the picturesque course at Merino. Last year the Quickshear had an outstanding number of entrants and there’s sure to be more competitors this year that will compete for a substantial amount of prize money. The very popular competition held by the Western Victoria Axe Man’s Association is happening again to display their strength and skill. There will be a large variety of market stalls to grab a bargain and lots of food stalls to tempt the taste buds, bar facilities and live music all day by local musicians. The success of the past three festivals has allowed the committee to donate more than $8000 to several community, school and sporting groups from Merino, Digby, Casterton and Hamilton who were involved in some way in the festival. Entry is $10 per adult and under 16 free, $12 wrist bands for under 16, which allows them unlimited access to all kids’ entertainment, and $5 for a single ride ticket. LOCAL Drivers get their questions answered Around 80 people took advantage of last month’s free driver awareness workshops hosted by the Grant District Council in Mount Gambier and Port MacDonnell. Participants gained an understanding of who is deemed at ‘high risk’ of being involved in a car accident and updated their skills so they can mentor their children or grandchildren when teaching them to drive. Workshops were presented by Senior Constable Nigel Allen from the SA Police Traffic Division with the aim to increase awareness of the new Australian road rules, road safety, factors that influence fitness to drive, online driving assessment updates, and how to self-regulate your driving. Some robust discussion was heard after the presentation with lots of questions being asked to clarify the Australian Road Rules. Participant feedback was that it was a real confidence booster and very informative. The sessions mean there is a new set of skilled drivers on the road promoting safe driving and starting conversations with their friends and family to promote the national road rules. The District Council of Grant has prepared a draft Urban Design Framework to guide the future development of the river and coastal communities within the Council area. This will include the river communities of Donovans, Dry Creek and Reed Bed, and the coastal communities of Browns Bay, Eight Mile Creek, Racecourse Bay, Cape Douglas, Nene Valley, Blackfellows Caves, Pelican Point and Carpenter Rocks. The plan links in and is complementary to the Port MacDonnell Master Plan which was completed earlier this year by the same consultant design team. Council’s chief executive officer Trevor Smart stated that following the first round of consultation conducted in August this year, the consultant team has now prepared a draft Urban Design Framework and Master Plan with a strategy on how to reinforce a sense of place and identity, to enhance and revitalise existing public spaces, and to recommend new public spaces and linkages within the study area.Two public meetings were held last week to give the community a chance to comment and ask questions. The draft consultation report is now available to view at the Port MacDonnell Community Complex and the Council offices in Mount Gambier. Submissions are invited to Council until this Friday. LOCAL Cake decorators celebrate milestone in style More than 40 cake decorators attended the South Eastern Cake Designers 30th Birthday celebrations earlier this month. Held on November 8 and 9, at the Mount Gambier Show Society Committee Room, two State Presidents attended. John Quai Hoi, the incoming State President for Cake Decorators Association of Victoria, and the Cake Decorators Association of South Australia President Helen Pumpa played pivotal roles on the weekend activities as well as demonstrating. John (pictured below) demonstrated three times, showing a Cheeky Girl, then lifelike Stiletto Shoes, a stained glass window effect and a poppy and then very quickly demonstrated the Scottish Terrier for his finale. Helen demonstrated the Jacobean Lily and quick cutter flowers and used moulds for impressions.Other demonstrators were Kathy Saltmarsh, doing modern

decorating of Silver Leaf cutter work on elegant three tiered cakes; Pamela Lane created a Delbard Sorbet Rose, a stripy pink and white rose, Art Deco type flowers designed on a rope basket and the tree from the State Display at the National 2013 and Mandy Lynn created cupcakes into Hamburger and fries, a Beer Mug, m and m’s, Minion and Mike from Monster Inc. Helen Pumpa also worked with SECD president Karen Stanbridge to present membership awards to club members. Rose Allen was recognised for 10 years, Rosemary Young for 20 years, Julia Cutting and Rhonda Earl for 25 year and Pat Jones, Lorna Thompson, June Jones and Christine Heness were recognised for their commitment to the club during the past 30 years. ForestrySA is continuing to prepare for the 2014-15 fire season, with fire training and firebreak maintenance currently underway in the Green Triangle. ForestrySA fire manager Justin Cook said he annual fire training was now underway across the Green Triangle. “A total of 22 firefighters are currently undergoing the CFS-run courses this week and next, focussing on fire suppression, equipment, map reading and navigation, fire behaviour and firefighter safety,” Mr Cook said. “ForestrySA is also running Priority One training for all of its firefighters to learn and practice a range of plantation firefighting skills.” As in previous seasons, ForestrySA has engaged seasonal fire crew to bolster the number of firefighters at each of its depots. ForestrySA also has a pool of contract firefighters for use during periods of high fire danger. While fire restrictions have only recently come into force,

ForestrySA crews have already been called to eight local fires in recent weeks. ForestrySA has activated its fire towers twice during recent days of Total Fire Ban. As the season develops, trained fire spotters will staff the seven towers on a daily basis. Fire break slashing and ploughing has been underway for a number of weeks to get firebreaks in shape for the season.

Wattle Range pools ready to keep you cool this summer With the warmer weather returning and summer fast approaching Wattle Range residents will welcome the news of council’s swimming lake and pools opening for the 2014/15 swimming season. “Favourable conditions have seen Millicent Swimming Lake filled and open to the public since late October, which is the earliest this facility has been open for a number of years,” said council’s engineering services director Peter Halton. “The Nangwarry Pool was opened on November 1, and following extensive renovations it is anticipated that the Penola Pool will open for use on the December 1.” The Nangwarry and Penola Pool operating hours have

changed slightly for this season. The facilities will open from 3pm until 5.30pm on week days, and from 1pm to 6pm on weekends, with hours extending to 8pm on days that the temperature reaches or exceeds 30 degrees. When the weather is forecast below a maximum temperature of 20 degrees the pools will not open. On days that the weather is forecast to reach or exceed 30 degrees council may also provide a security officer at the Millicent Swimming Lake, subject to availability. Patrons of the Lake are also reminded that this area and the adjoining car parks have now been declared a dry zone and penalties apply.

LOCAL Fundraiser supports critical medical service On a sunny Sunday earlier this month nmore than 50 women enjoyed an afternoon of fun and fine food thanks to a High Tea coordinated by Soroptimist International Mount Gambier to support the Hamlin Fistula Foundation. Pregnant women in rural Ethiopia have little or no access to emergency obstetric services. If they are among the five percent of women worldwide who will face obstructed labour, they will be in agonising labour for days and days. “My dream is to eradicate obstetric fistula from Ethiopia,” said Dr Catherine Hamlin AC, Hamlin Fistula Ethiopia. “Often it only takes one surgery to resolve a condition that destroys a woman’s happiness and livelihood. It costs $600 to fund a standard fistula operation in Ethiopia.” An Australian obstetrician-gynaecologist, Dr Catherine Hamlin AC is the co-founder of the Addis Ababa Fistula Hospital and the Hamlin College of Midwives. In the 1950s Catherine and her late husband Reg went to Ethiopia to train midwives, but their attention soon turned to the plight of the fistula sufferers. Together the Hamlins perfected the modern technique for obstetric fistula surgery and have treated more than 40,000

women, more than 90% of them cured. Reg died in 1993 but Catherine, now over 90, continues their life’s work. LOCAL Naracoorte Caves set to celebrate milestone Naracoorte Caves is among the world’s 10 greatest fossil sites. The Pleistocene fossil vertebrate deposits of Victoria Fossil Cave at Naracoorte are considered to be, in terms of both volume and diversity, Australia’s largest and best preserved and one of the richest deposits in the world. Naracoorte Caves was inscribed on the World Heritage list 18 December 1994, at the World Heritage committee in Phuket, Thailand. It is now 20 years since World Heritage listing was achieved. To celebrate this significant date the Naracoorte Lucindale Council is hosting a free community event this Friday- 20 years of World Heritage on our doorstep, A community celebration of World Heritage Listing for the Naracoorte Caves. The main focus of the Celebration is a School Program during the day consisting of a range of free concurrent activities targeted to primary aged school children, years 3 to 7. These activities will mostly be situated at the Naracoorte Town Hall and/or the Naracoorte Town Square. Professor Flint, the singing palaeontologist, will perform Dancing with Diprotodons in the Naracoorte Soundshell at lunchtime. Dancing with Diprotodons is the story of South Australia’s pre-history, and the role of the discoveries within the Naracoorte Caves, in the telling of that pre-history. The performance includes interactive songs, hands on fossil sharing and the latest science on all thing prehistoric. Activities in the evening will be held at the Naracoorte Town Hall and will be targeted to adults and families. It’s not fair that only the children have the fun of meeting Professor Flint, the singing palaeontologist, so it’s likely that Professor Flint will make a cameo appearance in the Town Hall in the evening. There is an opportunity for groups or businesses to be involved by hosting a display or event elsewhere in Naracoorte during the day and in the evening. Another week, another century It started with Jon Clayton in the opening round of Barber Shield and since then Matt McInerney, Jake Schutz and George Kidman have all made centuries as well and at the weekend Jason McCrae joined the party with an entertaining 109. The West top order batsman found the Malseed Park boundary on 11 occasions and cleared it three times as McCrae led the Roos to a competitive 218 against North Gambier. Some late order resistance from veteran Shane Dycer (20) and cameos from Paul Harding (13) and Justin DeJong (17) ensured West’s bowlers have a good target to defend. Tim Young was the pick of the Tigers attack, ending with 4/35, including eight maidens. The Yahl-Penola clash is also evenly poised with Yahl setting Penola a modest but defendable 132 for victory, the innings built on the back of Nick Walters’ 48. Penola skipper George Kidman was the pick of the Eagles with the ball, snaring 4/11 from 16.5 overs. Mil Lel and Kongorong also had a tense battle that sees Mil lel with 124 runs on the board, courtesy of a middle order half century from Tyson Currie. Mick Waters ran through Mil Lel’s top order and finished the day with the impressive figures of 4/13 from 9.1 overs. As with the Yahl-Penola clash, it is just one of those tricky totals to chase down. Reigning champions South Gambier has already banked its first innings points, dismissing Kalangadoo for 88. Things could have been much worse for the Magpies but for the determination of David Vine (32) who refused to surrender his wicket without a fight. A five wicket haul from Robbie Drenthen (5/48) set up the demolition before David Somerfield removed Vine and cleaned up the tail, finishing with 3/7 from 2.4 overs. Somerfield then came out swinging at the top of the order for a quickfire 35 and thanks to some big hitting from Jack Capewell 41no) and Drenthen (51no), South cruised to 5/169 before declaring. Kalangadoo is 1/20 from 10 overs as it looks to avoid an outright defeat.

Mac Ford in Millicent is all set to give the Royal Flying Doctor Service a major funding boost with an exciting new test-drive program. A new program, Go Further 4UR Community has Ford dealers participating in major local events and offering the host club or organisation a $40 donation for every on-the-spot test drive, with the total capped at $2000 per event. Mac Ford’s dealer principal Angus McDonald is excited about connecting with the local community and helping raise much needed funds. “The Royal Flying Doctor Service provides an essential service to our community and we like being able to help out with a few extra dollars,” Mr McDonald said. “We are very keen to show off our fresh range of cars in a fun environment like this event and we are happy to help fundraise for the privilege.” The Royal Flying Doctor Millicent Support Group has welcomed this offer with open arms. “The Mac Ford dealership has long been a part of our community and we look forward to hosting this event,” a Millicent group spokesperson said. “With one test drive per person allowed, I’m sure many
