Mount Horeb Lutheran Church Blueberries, Butterflies, and Buttercups A favorite song from Porgy and Bess is “Summertime and the livin’ is easy,” Yet all too often the livin’ is not easy as we experience the stressors of life. A calming pass time for me is spending time in our garden and taking a walk through the fields around our home. I am struck by how we are surrounded by a living breathing sermon of God’s extravagant care. I am drawn to the buttercups that blanket the fields in brilliant, backdrops of gold. They do not worry about the rain or become anxious for sunlight. They simply exist, trusting in God’s daily nourishment. In the 6th chapter of Matthew Jesus teaches us that, if God provides us with abundant beauty from a humble flower that pops up today and is gone tomorrow, just imagine how much more he cares for each of us. On those walks through the fields, I appreciate the delicate butterflies dancing from bloom to bloom. These fascinating creatures remind me of Psalm 104:27-28, which notes that all creatures look to the Lord for their food, and from God’s open hand they are satisfied. These fragile winged creatures do not worry what they will eat or when they will eat next; they simply rest assured in the rhythm of God’s provision. Our garden has four new blueberry bushes this year. Blueberry bushes have been a tradition for my wife and me since the first home we owned. We are reminded of God’s divine providence extending to us and the birds who like to pick them clean too. Those sturdy resilient bushes grow patiently and are a testament to God’s earth being “full of His riches” (Psalm 104:24), offering us both physical sustenance and a reminder of His rich, unending grace. Whenever the heavy weight of tomorrow threatens to overwhelm you, let the buttercups, butterflies, and blueberries be your visual anchors. You are deeply loved by the Creator who nourishes them. You do not need to labor endlessly in your own anxious strength to be provided for or to be beautiful in His sight. Rest today, knowing that God knows exactly what you need. Let’s pray: Dear Lord, thank You for reminders of your beauty and provision in these blueberries, butterflies, and buttercups. Help me to remember that when you provide for the least of these you will do so for me too. Inspire me to help others bloom and grow in faith and service to you. Amen. n

Lindsey Esterdahl Lindsey Esterdahl finds music inspirational, and she wants everyone to have the chance to sing. “I believe everyone should have the opportunity to make music,” said Esterdahl, who currently serves as the artistic director of the Dutch Fork Choral Society. The Dutch Fork Choral Society is a community choir that welcomes singers of all skill levels. “We are a non-audition ensemble. That was part of the reason why I was so interested in working with them as someone who has been a music educator,” said Esterdahl, who taught an adaptive music class in high school for students in a self-contained autism class. “There shouldn’t be barriers to music. So, the fact that they don’t have an audition process, and that they’re not going to turn anybody away – I was really drawn to that.” Esterdahl determines the repertoire of each concert. “My role is to decide on the music selections for the concerts. I typically set concerts around a central theme, then work in conjunction with the board for other decisions like the location of performances,” she explained. Esterdahl enjoys selecting music for concerts, while acknowledging that the process comes with challenges. “Selecting the music is probably one of the things that I love to do the most and is simultaneously the most difficult thing to do because there’s such a vast selection to choose from. I try to see what would be a great experience and meaningful for the singers in the ensemble and also for the audience.” She also takes many factors, such as themes and composers, into consideration when selecting music for performances. “I consider the difficulty level of the repertoire, because you want to pick pieces that are within the range of the singers, while at the same time wanting to challenge them a little bit.” For their spring concert, Esterdahl said she is focused on the theme of journey. irmochapinlife.com

“We did a set of seven pieces that were composed by Randall Thompson, all on poems written by Robert Frost. There is this idea of community, journey, and navigating life. It was fun to put it together.” Esterdahl sang in the choir in high school, then majored in music education in college. She said she wasn’t sure if she wanted to teach when she graduated, so she worked managing a restaurant before deciding to pursue teaching. “I went back to school, finished my degree, and I taught high school choir for eight years,” said Esterdahl, noting that she got her master’s degree in music education during that time. When she’s not with the Dutch Fork Choral Society, she enjoys going to local coffee shops and singing in a group called Limited Time Only. “It’s a group that’s based out of the Columbia area under the direction of Dr. Alicia Walker, who’s the director of choral studies at the University of South Carolina. It started about 10 years ago as a part of a recital she was putting on for a presentation, and it just sort of stayed,” said Esterdahl. When asked about one of her favorite parts about the Dutch Fork Choral Society, she said its inclusiveness. “Our members range all the way from early their twenties to mid-eighties. And I think that that’s something really special –anyone who wants the opportunity to sing is welcome to join.” n

The New Faces and Tastes of by Captain Tyler Ryan

There is no doubt that the one constant thing about Lake Murray over the last ninety-some-odd years has been change. From the Dam itself, which started as an earthen structure and is now a full hydroelectric power station with a backup, to the 600 miles of shoreline that surrounds the billions of gallons of lake water.

Lake Murray Over the last few years, however, the region has undergone significant changes, and each spring offers new and diverse experiences, from restaurants and marinas to public spaces, for the ever-growing population of Lake Murray. Capital City Lake Murray Country Executive Director Vickie Davis said, “The changes over the last fifteen years have been significant, but over the last couple, they have been transformative. The growth in tourism dollars will help save taxpayer burden,” pointing to many new and reimagined restaurants around the area. One notable change that people are looking forward to is Pine Island, which had been owned by Dominion Energy, however, they transferred it to the State of South Carolina as part of a tax agreement. The island, which had been a private retreat for the power company, is now known as Pine Island State Park, near the Irmo side of the Dam, and is open to the public. Pine Island offers twenty-seven acres of lakefront to guests, a beach, picnic areas, and even boat slip rentals.

Another sight visitors have seen over the last couple of seasons is the return of the Spirit of Lake Murray. The 80-foot dinner cruise boat has been a staple on the Lake since 2009, however, in 2022, she was purchased by Norm Agnew and Rick Crout, given a full makeover, and returned to service offering a full bar, a full menu, and even dockside dining in 2024. Speaking of dining on the lake, there is an increasing number of restaurants and bars, from brand new to fully reimagined.

In Prosperity, the former Buffalo Creek has been transformed into Martin’s Landing, which offers inside and outside dining, a marina store, fuel, and, of course, if Mexican is your mood, you’ll find Nacho Margarita. You will also find one of the four boat club options, Freedom Boat Club, that has two locations on the Lake. Also in Prosperity, you will find Fat Frog’s Marina. Matt Lyons, one of the owners of Lake Murray Boat Fun, said his group has several options, including the restaurant formally known as the Frayed Knot. Fat Frog’s offers fuel, docking, and Doolittle’s Watering Hole. It is also the location of two music festivals each year, Floatchella Lake Murray and Lake Murray Palooza. Across the pond, in Leesville, you will find Lake Murray Resort, which, according to Lyons, also offers fuel, boat slips, the Driftwood Smokehouse, and a Carefree Boat Club location. Lyon’s Team recently purchased Shealy’s Landing in Ballentine, where you will find the boat dealership Lake Life Marine and a second Carefree Boat Club location. Even with new services, one thing that won’t change is the name, noting that the community has known it as Shealy’s for years, and “it should remain that way forever.” Putnam’s Harbor is another familiar name for generations of “lake lifers,” although if it has been a while since you were

there, you may not recognize it. General Manager Craig Baird said the location went through an “absolute overhaul.” He said that throughout the seven-acre property, you will find both 90 and 93 non-ethanol fuel, a full-service marina store, and 325 slips, both wet and dry. Baird said you will find food trucks, a boat ramp, and excellent customer service. With the changes also come many new owners to Lake Murray businesses, including Bowline Marina, which recently purchased Lake Murray Marina, where you find Liberty on the Lake, Nautical Boat Club, and lake-side condos. According to General Manager Chris Bellinger, they are planning several upgrades, including a new gas dock with a ship store. Liberty also reopened after a kitchen area renovation. Bowline Marina purchased Southshore Marina, and they have created dry boat stacks, offering more options for storage. Bellinger said that you’ll also find Freedom Boat Club’s second location, and the Southshore Grocery and Grill. Another Lake staple, The Rusty Anchor and Catfish Johnny’s, is under new ownership, and with that comes a few changes, including the rebranding of the latter to the Nauti Turtle. One notable change is that the bars will remain open year-round, rather than seasonally. Like Shealy’s, the Rusty Anchor name will remain unchanged. It isn’t just on the shore that you will find entertainment options. You have seen the SunDogs boat over the years. Owner Tom Shealy has upped his hot dog game, with an updated 26’ Tritoon boat, and extended hours all summer long, so you can look for the SunDogs Concession Vessel to come to you all summer. Even with all the new owners, renovated entertainment options, and general changes, some tried and true locations remain, irmochapinlife.com

Siesta Cove, with fuel, a marina store, slip rentals, and RV parking, remains another long-standing marina, and of course, Big Man’s, with some of the best burgers on the lake. “I think the lake is changing in a good way, bringing positive energy, geared toward customer service and helping out the people on the lake,” Bellinger shared. n

BoHo Links A Place for Family and Friends to Gather by Kim Becknell Williams Just the name of it sounds like a cool, laid-back place. BoHo Links is a local golf complex that has a lot of options for golf entertainment and more. It has been open a little over half a year and is well on its way to gaining popularity. It is like a golf lover’s dream, only better, because it’s not just for golfers. In fact, there’s so much to do, visitors might stay all day. Get in some practice swings at the driving range, play a little golf, or enjoy a relaxed game of putt-putt with the family. Grab some food and a cold beer, then call it a day. Unless there’s live music. Then you might want to stick around.

How it Evolved Owner Ben Hooker explained how the golf center got to where it is today. The former Lake Murray Golf Center was abandoned for years. He and his business partners purchased the 33-acre property in August 2026. “We started a massive transformation project to bring it back to life,”

Hooker said. Being vacant for so long, it needed a lot of work. After months of renovating, they opened BoHo Links in December 2026. Updates are on-going with recent attention to the greens. “It’s now a fully reimagined driving range with Toptracer technology, a revitalized Par 3 course, and a brand new puttputt experience built for families, friends, and anyone looking to have a good time,” he said. “This isn’t just a reopening—it’s a transformation.” He described the center as very family-centric and suitable for all ages and different golf skill levels. “We’ve created a space where beginners feel welcome, experienced players can sharpen their game, and the community has a place to gather,” Hooker said. “Lights are on, music is playing, and every night feels like something is happening.” Daily events, plenty of outside space, and live music are part of the vibe. Bring a group of friends, the family, or go by yourself.

BoHo Links offers golf, entertainment, food, and drinks. “It’s supposed to be an epicenter,” he said. “You don’t have to be a golfer to come hang with us. There are a lot of different elements.” Some of the scheduled events have been a Hole in One Challenge, A Toptracer Golf League, and Music Bingo. In April, following the Masters tournament, they held a green jacket competition at the Par 3 course. The fun keeps on going.

Car Clubs Since pistons and spark have combusted fuel, powering the horseless carriage, car clubs have been a thing. And, although these days, there is a lot more pageantry and fellowship, the first clubs were born out of necessity. by Tyler Ryan

If you think many of our roads could use a bit of TLC, imagine riding down a dirt road that had been the travel route of horses and buggies, and largely still were. Simply put, roads were rough and cars were unreliable, requiring mechanical expertise to keep them running. With the lack of YouTube, shared knowledge, experience, and even tools were essential. In order to support each other, those who actually had cars began forming social clubs in order to provide support and help to others who had traded in hay for petrol. The first car club, as we think of them, the Automobile Club of America, was founded in 1899 in New York, as a way to provide that needed support, but to also promote vehicle ownership in general. The Big Apple, however, did not have the market cornered, as clubs in France, Great Britain, and other places in the word. In fact, within a few years of the ACA forming, there were over 50 clubs in the United States, which led to the eventual formation of the American Automobile Association, which we all know as AAA. It should be noted that the early versions of clubs were less about bragging rights and more about simple survival drivers often traveled together so that they could help each other out when one broke down. Keep in mind that cell phones were eighty-five years away.

As the initial decades passed, and we entered the post-World War II era, families were becoming more “nuclear” and familiar to today, where, as a society, we began to focus on homes, families, vacations, and yes, vehicle ownership. As suburban life started growing, providing novelties like driveways and garages, people discovered home workshops were the perfect place to restore classics, customize rides, and even build some from scratch. In fact, it was the whole “hot rod” idea that really kicked off the modern love of car clubs, with a strong movement in Southern California. Quickly reaching across the country, the 1950s and 1960s are often referred to as the “golden age” of car clubs, where the cars themselves became the central social focus of “meetings,” which were often held in parking lots, garages, and even places like diners where enthusiast would show off their works of art, and of course, exchange ideas, tricks, and hacks. Although the “golden age” may be thought of in James Dean terms, fast-forward a few more decades, according to the Three Rivers Region Porsche Club of America President, Melissa Sprouse Browne, they are very much a vibrant, growing community, regardless of the nameplate on the motor or trunk. She said that car people know they are

car people, with many of us having poster size dream cars on our bedroom walls as kids. “It’s pretty basic really,” she said, “At its core, you are getting together and sharing an appreciation of something.” Browne said that clubs are very much families, but it is more than just a saying; they are a family affair that often starts with parents and their kids.

Many times, it comes down to a shared experience, where “Dad or Grandad had a car in the garage that needed repairs, and it is a way for them to do something together, to build that bond.” She said that historically, it has been popular with fathers and sons, but the car club lifestyle is certainly not just a boy’s club. “For me, I was always interested in cars, and my dad would take me driving, and let me shift,

and it was cool.” Browne pointed out that there are even clubs that are for ladies, such as Charlotte’s Porsche and Pearls Club. As far as what the clubs “do,” there is a wide range of community and fellowship. Browne said that there are certainly shows where people do just that, show off. Then there are meet-ups, which harken back to the golden age, where you just enjoyed fellowship, and many events are tied to raising money for various charities in the Community where they are based. Generally, the clubs, regardless of the car owners that are members, have guidelines and rules that govern the organization. They outline event rules, for shows, meetings, and even organized drives, where a group of members might drive to Charleston for lunch. There are many different types of car clubs, including classic and antique, off-road, modified clubs, and of course make and model specific clubs, like the Porsche Club in Columbia, which requires you to own a Porsche to become a member. Browne does point out that one thing that is a common thread amongst car enthusiasts is that although there has been a

push for electronic vehicles over the last decade or so, most clubs focus on old school. “A lot of the car owners I know are not a fan of EVs and want to collect internal combustion cars.” Online forums, social media groups, and even specific websites have created hybrid communities that pull together all the aspects of the clubs of days gone by, continuing to push them into the future. Regardless of the type of club or engine, luxury, classic, off-road, or modified, car clubs remain big business, with the North American car club enthusiast market reaching over nine billion dollars over the next five to eight years. This is being powered by the old school Saturday car meets at a local restaurant, and of course, with “the socials.” And it would appear that with the number of car clubs, nearly one for each brand, in the Midlands, car clubs will continue to grow here at home as well. Even with the quickly growing interest in car clubs, Browne said that “it takes a lot of effort, dedication, and often money to maintain a high-end vehicle. You’ve got to really want to do it.” n

Wildflowers That Attract Pollinators to Your Garden by Timothy Andrews

Pollinators like bees, butterflies, and hummingbirds are essential to both natural ecosystems and global food systems. Unfortunately, their populations have been steadily declining due to habitat destruction, pesticide use, invasive species, and climate change. One of the simplest and most impactful ways individuals can help is by planting native wildflowers. Unlike ornamental cultivars bred primarily for looks, native species offer exactly what local pollinators need: nutrient-rich nectar, seasonally appropriate blooms, and suitable habitat for reproduction and shelter. In addition to supporting biodiversity, native plants are generally more drought-tolerant and require less maintenance. Purple Coneflower These daisy-like blooms flower from early summer into fall, drawing bees, butterflies, and goldfinches. Purple coneflowers are drought-tolerant, love full sun, and provide critical winter food through their seed heads. They also bring bold texture and structure to perennial beds. Over time, they naturalize easily, forming clumps that expand without becoming invasive. Their deep roots not only make them resilient but also improve soil structure, contributing to overall garden health. Butterfly Weed This bright orange milkweed is a key larval food plant for monarchs and a nectar source for many other butterflies. rabbits. With its deep taproot and resistance to drought, it’s ideal for sunny, low-maintenance gardens. Though slow to establish, butterfly weed returns reliably each year and thrives in even the leanest soils, making it a hardy choice for wildflower meadows. Black-Eyed Susan These cheerful yellow blooms are loved by pollinators and songbirds alike. Easy to grow from seed and tolerant of poor soil, they offer nectar through summer and seed heads for birds in fall and winter. Blackeyed Susans also serve as host plants for several moth species and help fill in bare spots in garden beds with their clumping growth. Their long blooming season and adaptability make them a favorite in both formal and naturalistic designs. Wild Bergamot With fragrant leaves and pale lavender blooms, wild bergamot is a magnet for hummingbirds, native bees, and butterflies. It spreads gently by rhizomes, adds a pleasant minty scent, and thrives in both garden beds and open areas. Pollinators are drawn to its complex tubular flowers, which provide rich nectar. As a member of the mint family, it also possesses mild resistance to deer and supports diverse insect populations, including specialist pollinators. Joe-Pye Weed This towering late-summer bloomer is a favorite among migrating butterflies and native bees. and moist borders. In addition to pollinators, its hollow stems provide overwintering sites for beneficial insects. JoePye weed is a structural plant that adds vertical interest to the garden and can reach heights of six feet or more, making it a dramatic seasonal focal point. Blue Lobelia Best for shady or moist soils, blue lobelia blooms in late summer when many other flowers are winding down. It provides important late-season nectar for bumblebees and pairs beautifully with red cardinal flower for a vivid color contrast. Its striking blue hue stands out in partially shaded areas, and it readily reseeds if conditions are favorable. Although short-lived, its self-sowing habit helps it persist and contribute to long-term biodiversity. Serviceberry This small tree or shrub offers yearround benefits: spring flowers for early pollinators, summer berries for birds and

mammals, and stunning fall color. Its adaptability to various soil types makes it an ideal native anchor plant. Serviceberries support dozens of insect species, including mason bees and mining bees, and are an excellent replacement for non-native ornamentals. The fruit is also edible for humans - sweet and slightly nutty - and is often used in jams and baked goods. Its multi-season interest and ecological value make it a must-have for native plant enthusiasts. Final Tip To truly support pollinators, think beyond just flowers. Incorporate native grasses, leave patches of bare ground for ground-nesting bees, and provide a shallow water source with stones for safe drinking. Group plantings in clusters or drifts to make them more visible to insects and minimize or eliminate pesticide use. Including structural features like brush piles, logs, or rock borders can provide additional shelter for insects and other small creatures. n

South Carolina Hidden Gems by Kim Becknell Williams

Sometimes you have to take the detour. Whether it’s a day trip, an overnighter, a unique place to grab lunch, or a chance to step off the beaten path, check out some of these hidden gems in South Carolina. McLeod Farms McLeod Farms in McBee, SC, is a great stop for grabbing fresh produce, baked goods, and gift items at any time of the year. You walk through the market door, and the smell of fresh bread baking permeates the air. Peach bread is a favorite for many customers. The family-owned business has been around for decades. Travelers often stop in for an ice cream cone or a sweet treat, or an opportunity to stock up on locally grown produce. Depending on the season, you might find watermelons, tomatoes, peaches, strawberries, onions, okra, and pumpkins. Kathy Hindman is a frequent customer. “I love stopping at McLeod’s on the way home from Myrtle Beach,” she said. “I look forward to their peach ice cream. I usually treat myself to some of their peaches, fresh fruit, jams, and honey. They have clean bathrooms and picnic tables to take a break and enjoy their goodies.” Helpful Tip: Grocery carts are available to assist customers who might want to stock up. Captain Archie’s Tucked off the road and situated along the Intracoastal Waterway in North Myrtle Beach, SC, Captain Archie’s has seating and views right along the water where boats go by. Lots of good food, great waterway view, good music, happy people, and great beverages.” Helpful Tip: The tables along the edge of the waterway usually have a nice breeze and waterside views. Riverwalk Greenway Trail The Riverwalk Greenway Trail, also known as the Piedmont Medical Center Trail, runs along the Catawba River in Rock Hill, SC. The paved trail is easily walkable and has mile markers to help track distance. Off the beaten path, there are the Carhartt Ruins with remnants from the former estate. Karen Triplett said this trail is one of her favorites and goes there once a week. “The well-maintained trail is wide, fully paved, and has a good mix of flat and hills. It’s great for many levels of hikers and is also open to cyclists, and runners,” she said. “I also love seeing lots of cute, friendly dogs. The main attraction for me is the peacefulness of having the Catawba River wind alongside the trail for the entire walk. For those needing rest breaks, there are benches and swings along the route.” There’s plenty of wildlife too. “Usually, there are turtles sunning themselves, and I’ve even seen a herd of deer swim down the river, get out, irmochapinlife.com

and cross back over the trail,” Triplett said. She has ventured off the trail to see the Carhartt Ruins. “About a mile or so down the trail, if you’re feeling adventurous, you can cut through the woods, hike up a hill, and see the ruins of the Carhartt mansion, built around 1912,” she said. “It is fascinating to see the remnants of Italian tile in the former bathroom and the stones used for the porch and the cellar.” After walking if you’re hungry, nearby restaurants include Blend Riverwalk, Richie’s Italian Bistro, Grapevine, Tony’s Cantina, and The Pump House. Helpful Tip: Park in designated trail parking areas.

The Shem Creek Boardwalk The Shem Creek Boardwalk in Mt. Pleasant, SC, allows visitors to take in the view of the marsh while getting a little outdoor exercise. Stroll along the wooden boardwalk, and you’ll likely see pelicans and herons grabbing fish and enjoying the marshy area. You may also see dolphins swimming by. Shrimp boats, leisure boats, and kayaks come and go. Some people fish and others just take in the natural scenery. Be sure to catch a stunning sunset as it slides into the night sky reflecting over the water. As the sun goes down, grab a cocktail at one of the spots along the creek. Many restaurants and bars are within walking distance of the boardwalk, including Tavern and Table, Saltwater Cowboys, and Water’s Edge. Cindy Barringer visits the Shem Creek area often. “Shem Creek is such a peaceful place for me. It soothes my soul,” she said. “I love to sit by the creek late at night, when everything is quiet, and enjoy the lights shimmering across the water.” Helpful Tip: Remember sunscreen as the boardwalk has limited covered areas. Subscriptions make spending feel easy. Music platforms, streaming bundles, fitness apps, cloud storage, and premium memberships can all feel inexpensive on their own. However, the combined total can quietly consume a surprising amount of money every month. Many people do not realize how much they spend on recurring digital services until they look at the total. Learning how to evaluate subscription costs can prevent waste without eliminating enjoyment. Here is a simple three-step process that works. List Every Subscription and Note the Billing Frequency Start with a full inventory. Look at your bank or card statements for the last two months. Write down every recurring charge, the exact amount, and how often it renews. Some subscriptions renew monthly. Others renew annually. Annual subscriptions often feel cheaper because they bill less frequently. When the total annual cost is divided by twelve months, the number may actually be higher than expected. removes emotional attachment and focuses on present value. Use the One Month Rule for borderline cases: keep it for one more month, mark the calendar, and decide again next month. If you do not use it in that month, cancel it immediately. This avoids impulsive cancellations while still promoting rational judgment. Bottom Line Recurring charges are easy to ignore because they feel small and automatic. Evaluating subscriptions one by one creates awareness and choice. A simple three-step process makes it easier to see what is useful, what is enjoyable, and what is no longer worth the money. People often think budget improvement requires major sacrifice. Chicken Salad Wraps 4 tortillas romaine lettuce, chopped 2 cherry tomatoes, thinly sliced ½ avocado, thinly sliced 8 oz cooked chicken breast, cubed 1 stalk celery, thinly sliced 4 Tbsp plain Greek yogurt 1 tsp honey 1 tsp Dijon mustard ½ tsp lemon juice Combine and mix chicken, celery, yogurt, honey, and mustard. Squeeze in lemon juice and add salt and pepper. Spread the tortillas and layer lettuce, tomatoes, and avocados. Add the chicken salad, roll the wrap up, and serve immediately. Ham and Cheese Sliders 12 dinner rolls 9 oz deli ham, thinly sliced 8 oz Swiss cheese, thinly sliced 2 Tbsp mayonnaise ¾ cup butter, melted 1 Tbsp Dijon mustard 1 tsp Worcestershire sauce 1 tsp brown sugar 1 Tbsp poppy seeds 2 tsp minced onion Preheat the oven to 350°F. Mix the butter, mustard, Worcestershire sauce, sugar, poppy seeds, and minced onion to create the sauce mixture. Slice the rolls in half and place the bottom halves into a prepared 9×13-inch baking dish. Spread mayonnaise on the top of the cut side, then layer the ham and cheese. Place the top halves of the rolls back onto the sliders and pour the sauce over the top of all the sliders. Pimento Cheese Sandwiches 2 cups sharp cheddar cheese, shredded 8 oz cream cheese, softened 4 oz pimento peppers, drained & chopped 2 Tbsp mayonnaise ¼ tsp garlic powder ¼ tsp cayenne pepper ¼ tsp pepper 12 slices of bread Mix all ingredients until it is thoroughly combined. Spoon the mixture onto 6 slices of bread and top with the remaining slices. Chicken Tenders 1½ lbs boneless, skinless chicken tenders 1½ cups honey mustard dressing 1½ cups honey mustard pretzels non-stick cooking spray Marinate the chicken tenders in the honey mustard dressing for about an hour. Crush the pretzels into crumbs and coat the tenders. Place the chicken tenders in the air fryer, spray the tops lightly with cooking spray, and cook for 5 minutes at 400°F. Turn them over, spray again, and cook for another 5 minutes. Serve with ranch or honey mustard as a dipping sauce.

Pigs in a Blanket 1 tube (8 oz) crescent rolls 1 apple, peeled & cut into thin slices 6 slices Gouda cheese, quartered 24 miniature smoked sausages Honey mustard dressing Preheat the oven to 375°F. Unroll the crescent dough and separate it into triangles. On the wide end of each triangle place one slice of apple, one folded piece of cheese, and one sausage; roll up tightly. Place one inch apart on a prepared baking sheet, point side down. Bake until golden brown, 10-12 minutes, and serve with dressing. Pinwheels 8 oz cream cheese, softened ⅔ cup roasted red peppers, thinly chopped ¼ tsp Italian seasoning 4 corn tortillas 8 slices Provolone cheese 16 slices salami 48 slices pepperoni 1 yellow bell pepper, thinly sliced 8 lettuce leaves Mix the cream cheese, red peppers, and Italian seasoning and spread onto the tortillas. Place 2 slices of cheese in the center, next to each other. Lay 4 salami slices all over the tortilla and then 12 pepperonis. Lay bell pepper and lettuce in the center to finish. Tightly roll up the tortilla and refrigerate for at least 1 hour. When ready to serve, remove and slice into pinwheels. irmochapinlife.com

Thread the fruit pieces onto a wooden skewer, starting with a strawberry and alternating with other fruits. Serve immediately with a dip such as yogurt or chocolate sauce. Veggie Cups 6 celery stalks 6 carrots 2 cucumbers 2 bell peppers 1 pint cherry tomatoes 2 cups Ranch dressing Wash, prepare, and cut the vegetables. Place about 2 Tbsp of Ranch dressing in the bottom of each plastic cup. Fill up with vegetables and serve. Boiled Peanuts 1 lb raw peanuts in shells 10 cups water 2 Tbsp salt, adjust to taste 2 Tbsp Cajun seasoning 1 tsp garlic powder 1 tsp chili powder Being a large pot or Dutch oven filled with water to a rolling boil. Stir in the peanuts alongside the salt, Cajun seasoning, garlic powder, and chili powder to the boiling water. Ensure everything is well mixed. Reduce the heat to maintain a gentle simmer. Pina Colada Popsicles 1 cup pineapple juice 1 cup coconut milk ¼ cup granulated sugar ½ cup fresh pineapple, chopped into pieces ¼ cup white rum (optional) Combine the pineapple juice and sugar in a small saucepan over medium heat. Stir until the sugar has completely dissolved, then remove it from the heat and let it cool. In a blender, blend the pineapple until smooth. Add the cooled pineapple juice mixture, coconut milk, and rum (if using) to the blender and pulse until well combined. Pour the mixture into popsicle molds, insert popsicle sticks into the molds, and freeze for at least 6 hours or overnight.
