SAVOR THE SEASON
Bethel's Summer & Fall Dining Scene is Serving Up More Than Great Food
by Meryl Kelly

Mountain Social
From golden-hour farm dinners to lively happy hours and community feasts, Bethel's summer dining scene offers far more than a meal. It's a celebration of local farms, talented chefs, and the people who gather around the table.
Bethel's farm-to-table dining culture continues to grow, with chefs and farmers creating experiences that go beyond a traditional restaurant meal. For its sixth season, A Longer Table Homestead will partner with some of our area's best farms to curate dinners celebrating the region's seasonal abundance. This year's lineup includes a joyful mix of Italian-inspired menus at Morning Glory Farm in West Bethel, New Spoke Farm in West Paris and A Longer Table Homestead in Bethel.
Le Mu Eats has also helped shape this growing dining culture, returning to its roots through its recently concluded Reflection Series of farm-totable dinners. While the series has wrapped up for the season, food lovers should keep an eye on the restaurant's future dining experiences. And, of course, a little "wink, wink, nudge, nudge" for more private dinners never hurts.
During the growing season, Bethel's dining scene comes alive alongside its agricultural community through farmers’ markets, seasonal farm stands, and annual events that invite visitors to experience the people, places, and traditions behind Maine's food culture.
This year marks the 6th Annual Mahoosuc Agriculture & Arts Tour. Participants can explore local farms on a family-friendly, selfguided adventure. Guests can pet cows, enjoy wood-fired pizza, shop for fresh produce, and participate in hands-on farm activities. What makes the event especially memorable is the presence of local artists stationed at each farm. Live demonstrations, interactive experiences, and artwork for sale make for a day packed with creativity and community.

Valentine Farm, home to the Mahoosuc Land Trust, will welcome visitors back for the Homegrown Food Festival, an annual celebration of sustainable living and traditional foodways. The event offers experienced gardeners and the agro-curious alike an opportunity to explore wild foods, learn new skills, and connect with others interested in growing, preserving, and preparing food. The day concludes with a community potluck that perfectly reflects the festival's spirit of sharing knowledge, food, and friendship.
Saturday, September 19, brings a full day of opportunities to gather, including the 28th Annual HarvestFest. This year, organizers are

putting a new spin on the longtime event by showcasing more Bethel-based businesses and vendors. Later that same evening, Pleasant Valley Commons in West Bethel will host the region's first Shared Tables, Shared Stories community potluck. This statewide initiative is designed to convene Maine residents in meaningful, placebased conversations about the past, present, and future of this place we call home. The program is a partnership between Community Plate, the Maine Arts Commission, and Maine Humanities that weaves food, storytelling, and the arts to create a series of community potluck suppers held across the state. Tickets are limited, but owner Celina Adams hopes the event sparks a tradition of regular community gatherings, helping Pleasant Valley Commons reclaim its historic role
as a place where neighbors come together.
Of course, no celebration of summer dining would be complete without happy hours, live music, and evenings that stretch beyond the sunset.
Mountain Social on Main street in Bethel hosts a happy hour with discounted cocktails, craft beers, wines + small plates Tuesday thru Saturday. Nearby, at the at the Bethel Inn, happy hour runs daily with half-price appetizers, wine and beer for all. Beer lovers should also check out the Brook & Barrel Mug Club. Annual members receive a custom 22-ounce stein, happy-hour pricing every Thirsty Thursday, and exclusive perks throughout the year. Keep an eye on the everevolving calendar of events as the Inn's new general manager, Keith Rasnake, introduces additional specialty events in the months ahead, including the return of the $40 Lobster Boil at this year’s Mollyockett Day Celebration.
No discussion of Bethel nightlife is complete without Suds Pub, where live music fills the room Thursday through Saturday. Thursday's legendary Hoot Night open mic continues to showcase some of the area's most talented local musicians in an atmosphere that's equal parts entertaining and unmistakably local.
At ChoSun, Sundays have become synonymous with fun thanks to ChoSunday Karaoke, paired with sushi and drink specials, making it an ideal way to close out the weekend.
At Modern Barn, cocktail enthusiasts can join the new Martini Club, which debuted this summer.
Members enjoy exclusive family-style dinners on select Monday evenings, $5 off martinis yearround, and invitations to specialty chef dinners announced throughout the season.
Even during Sunday River's quieter months,
Visit Suds Pub for Hoot Night

Ember continues serving guests weekly Tuesday through Saturday. A summer special allows guests to choose from a menu of $10 small plates, wine and Maine craft beer. Tuesdays add an extra treat with $2 oysters. Wednesdays and Thursdays are designated date night with couples sharing a three course meal for just $89.
The Mayville Union House offers one of the area's best outdoor options with cozy porches to enjoy their daily Happy Hour, which features $5 drink and appetizer specials. Every Thursday evening, a live jazz trio creates a cool and sophisticated soundtrack for the evening.
An added bonus is Chef Harding’s ongoing commitment to featuring locally raised meats and seasonal produce whenever possible.
Because here, a great dining experience is rarely just about what's on the plate. It's about the farmers who grew it, the chefs who prepared it, the musicians who set the mood, and the neighbors gathered around the table. That's what makes dining in Bethel something worth savoring. Whether you're planning a weekend getaway or are lucky enough to call Bethel home, this season offers countless reasons to pull up a chair, raise a glass, and savor the best of Western Maine.

Growing Maine Cannabis with Heart—and Now Crafting Betty’s Eddies All-Natural Fruit Chews

With Owners Mike & Jodi Everett and General Manager Jamie Patneaude
by Laurie Ann Knowles
What began as a small medical cannabis operation has grown into one of western Maine's most innovative cannabis businesses. Today, The Stoned Moose is not only cultivating premium flower and creating its own line of award-worthy edibles, but has also become the exclusive Maine manufacturing and distribution partner for the nationally recognized Betty's Eddies all-natural fruit chews.
The journey began in 2016, when Mike and Jodi Everett opened Moosehead Farms, a medical marijuana cultivation business in a renovated farmhouse on East Bethel Road. As Maine's cannabis industry continued to evolve, so did their vision. Two years later, they purchased property across from Sunday River Brewing Company and began building a new cultivation facility and retail store. The new location opened in 2020, with cultivation eventually moving from the original farm to the modern grow facility in Bethel.
In 2022, The Stoned Moose received its adultuse (recreational) cannabis license, allowing the business to serve both medical patients
and recreational customers. Today, cultivation is evenly split between the two markets.
Cannabis enthusiasts know that every strain offers its own unique combination of aromas, flavors, and effects thanks to naturally occurring compounds called terpenes and cannabinoids. Among The Stoned Moose's customer favorites are Lilac Diesel, Purple Urkle, Acapulco Gold, Super Silver Haze, and Cookie Spice—each offering its own distinctive experience.
As demand grew, Mike and Jodi realized they wanted more control over the quality of the edibles they offered. Rather than simply stocking products from other manufacturers, they decided to create their own. In 2024, they built a state-of-the-art commercial kitchen dedicated to producing premium cannabisinfused gummies and chocolate bars.
Quality ingredients are the cornerstone of every recipe. Their gummies are made with pure cane sugar, real fruit, and naturally derived colors from fruits and vegetables— never artificial dyes or flavors. Bursting with authentic fruit taste, they're available in Pink
Lemonade, Watermelon, Grape, Tangerine, Cherry, Green Apple, Mango, Strawberry, Blueberry, Blue Raspberry, and Tropical Fruit. Customers can also choose between sativa, indica, or hybrid formulations depending on their desired experience.
Their handcrafted chocolate bars are equally impressive, featuring only four core ingredients: raw Guatemalan cacao, cacao butter, granulated honey, and organic milk powder. Flavor varieties include Coffee, Raspberry, Orange, and Dark Milk, enhanced with premium ingredients such as raw coffee, freeze-dried raspberries, and blood orange peel. The raw cacao is even available for purchase for home bakers and chocolate lovers.
SWEET SUCCESS WITH BETTY'S EDDIES
The newest chapter in The Stoned Moose story began in June 2025, when the company partnered with leading cannabis operator and consumer products company MariMed as the exclusive Maine manufacturer and distributor of Betty's Eddies TM all-natural fruit chews, among the top-selling edibles in the states they're available.
These soft chews are made with real fruit and wholesome ingredients, making them gluten-free, dairy-free, and vegan. Production combines old-fashioned candy-making techniques with proprietary processes. Betty’s Eddies chews are precision dosed, individually wrapped, packaged, and shipped throughout Maine.
Every Betty's Eddies flavor features specific end effects, including Bedtime Betty's for restful nights, Take It Easy Eddies for stress relief, Go Betty Go for an energy boost, Ache Away Eddies for pain relief, Ache Away Eddies PM for a painfree night, Betty's Caramelt Away for cozy melty moments of mellow, and more.
Today, Betty's Eddies are sold in 6 states, with approximately 85 retail locations throughout Maine carrying these popular fruit chews—all proudly manufactured right here in Bethel.
Unlike many cannabis edibles made with distilled THC, The Stoned Moose uses fullspectrum cured resin, preserving a wider range of naturally occurring cannabinoids and terpenes. Many cannabis consumers appreciate full-spectrum products because these compounds work together in what researchers often call the "entourage effect," potentially creating a more balanced and complete experience than THC alone.
Each gummy and each chocolate square contains a carefully measured 10 milligrams of THC, with most packages totaling 200 milligrams. Their edibles have become so popular that they're now available in more than 15 retail locations throughout Maine.

LOOKING AHEAD
Innovation never stops at The Stoned Moose. Future plans include expanding their in-house edible lineup with handcrafted chocolatecovered caramels made from their own recipe using pure cane sugar, maple syrup, premium cream, raw cacao butter, and rich cacao chocolate. Raspberry chocolate creations are also on the horizon.
Beyond their own products, The Stoned Moose offers one of the area's largest selections of cannabis products. Customers will find THC and CBD beverages including seltzers, iced teas, juices, sodas, powdered drink mixes, and mini shooters, along with candies such as Nerd Ropes, mints, lollipops, fudge, ice pops, and many other sweet treats.
Their best-selling products remain pre-rolls, especially the new Moose Fatty 2-gram prerolls featuring a wooden tip. Their housemade full-spectrum vape cartridges, available in more than 30 flavors, are another customer favorite.
Whether you're a longtime medical patient or exploring Maine's recreational cannabis market, The Stoned Moose has built its reputation on knowledgeable service, carefully crafted products, and an unwavering commitment to quality. Stop in and discover why this hometown business continues to grow, innovate, and sweeten Maine's cannabis scene—one flower, gummy, chocolate bar, and Betty's Eddie at a time.

Neighbors Feeding Neighbors
How Samantha Mullen Is Building Community, One Meal at a Time
by Elba Sacris-Bove
When you sit down with Samantha Mullen, it becomes clear that Neighbors Feeding Neighbors is more than a community meal. It is an act of care, built one conversation, one donation, and one shared plate at a time.
Sam, as she prefers to be called, launched the grassroots initiative in August 2025 after seeing a growing need in the community: food insecurity. She did not come to the project with nonprofit experience, a background in organizing, or a detailed plan. What she had was a sense that waiting for someone else to step in was no longer an option.
Inspired by the book “Starting Somewhere: Community Organizing for Socially Awkward People Who’ve Had Enough”, Sam realized that action mattered more than credentials. “I needed to do something,” she says. “You don’t have to have credentials or know all the right people to help and grow your community.”
That belief became the heart of Neighbors Feeding Neighbors.
The first community meal, held in August 2025, surpassed expectations. About 30 people came together to share food, bring donations for the local food pantry, and

meet neighbors they might never have known otherwise. The event was more than about dinner; it was about creating a place where people could feel seen, supported, and connected.
One small donation has stayed with Sam ever since. “There was a single quarter in the donation jar,” she recalls. “It may not seem like much, but to the person who gave it, it was a meaningful gift.”
For Sam, that quarter represents the spirit behind the project. Generosity is not only measured in dollars. It can be a casserole dropped off after work, a bag of canned goods, or spare change offered with intention. Every contribution is a choice to care for someone else, and every act of kindness helps strengthen the network around the table.
Since that first gathering, the effort has continued to grow. More volunteers have stepped forward, more families have found support, and more people have discovered that community is something built together. What began as one meal has become a steady reminder that neighbors can meet real needs when they choose to show up for one another.
“We are doing what we can to make life

easier,” Sam says. “And if tough times come to you directly, know that there are people who will help.”
Her enthusiasm is easy to hear and even easier to see. The warmth in her smile and the energy in her voice reflect someone who truly believes neighbors can make a difference for one another.
Throughout our conversation, it was obvious that this isn’t simply a volunteer project to her—it is a commitment to making sure everyone has a seat at the table. In a world where it is easy to feel disconnected, Sam is proving that small acts of kindness can create lasting change.
People often say it takes a village. Through Neighbors Feeding Neighbors, Sam and her team are helping create one: a place where everyone belongs, everyone is welcome, and everyone has access not only to food, but also to friendship, dignity, and hope.
JOIN THE TABLE
Neighbors Feeding Neighbors meets on the second Tuesday of every month at Bethel Methodist Church, 75 Main Street, from 4:30 to 6:30 p.m.
Each gathering features a different local organization or individual making a positive impact in the community. Guests are encouraged to bring a dish to share, nonperishable food items for the food pantry, or a monetary donation to help fund future meals.
Sometimes changing a community doesn’t begin with a grand plan. Sometimes, it simply begins with one person deciding to set another place at the table.
Those who would like to contribute financially can donate through Venmo at @bethelneighbors. Every dollar helps provide meals and keeps the program growing.

SUMMER Recipes

Anna Sysko treats us to some of her favorite Smoky Summer Treats!
DIRECTIONS:

FLAVOR FROM FIRE!

Fire Roasted Alder
Smoked Salsa
INGREDIENTS:
• 8 paste tomatoes, whole
• 2 big fresh chili peppers, whole
• 1 head garlic, left whole and wrapped in foil
• 1 medium white onion, sliced into rounds
• 1 juicy lime, zest and juice
• 1 small bunch cilantro, minced
• Salt to taste
• Freshly cut alder wood sticks, optional
1. Build up a good hot coal bed in a charcoal or wood fired grill if you have one. Totally fine to use your gas grill, but the wood fire will have the best flavor with the smoke from the alder.
2. To the wood/charcoal coals only, add a few fresh alder sticks to the fire to start them smoking. Place a grate over the live coals and ready your cooking area with tongs and a tray for the finished veggies.
3. Grill the whole tomatoes and peppers till blackened. Tomatoes will exude some juices, but that's okay. You are looking for good color on a few sides and the flesh starting to cook slightly. Put them all on the tray
4. Next, put the onion slices on the grill and using tongs, grill both sides. If you have a cooler spot, place the garlic head on for a low and slow roast till soft when you squeeze it. Alternatively, use a sturdy cast iron pan on the side and slowly roast whole unpeeled garlic cloves on the dry pan until they soften in their skins.
5. After all the veggies have been cooked, slip the tomatoes and peel the peppers out of their skins and chop them along with the grilled onion and roasted garlic.
6. Add lime juice, zest and cilantro. Salt to taste!
Dressed Up Grilled Peaches
INGREDIENTS:
• 1-2 peaches per person
• Yogurt
• Local honey (or dulce de leche!)
• Toasted sliced almonds
• Smoked sea salt
DIRECTIONS:
1. Prepare a med-hot coal bed or put a glass grill on medium high
2. Split peaches in half and place on grill face down
3. Cook until grill marks appear and juices start running, then flp and cook a little more to soften the fruit.
4. Place the grilled peach halves on a serving tray
5. Put a dollop of yogurt into each peach half, drizzle with honey and sprinkle almonds and a little smoked sea salt, then serve warm

Smokey Baba Ganoush
INGREDIENTS:
• 1 large or 2 medium whole eggplant, pierced a couple times with a fork
• 1 tbsp garlic, minced
• 1 lemon, juiced
• 2 Tbsp EVOO
• 1 small bunch parsley leaves, minced
• Salt & freshly ground pepper to taste
DIRECTIONS:
1. Using tongs, place the whole eggplant over a medium-high gas grill flame or hot coal bed
2. Fully blacken (really!) all sides of the eggplant and roast until it starts to shrink into itself, telling you that it's cooked inside. Set the shrunken eggplant in a bowl to cool a bit and prepare the other ingredients.
3. Once eggplant is cool, cut open the top and open it up. It should be cooked inside and juicy. Using a fork, scrape the flesh from the inside and place in another bowl until all that remains is the blackened skin. Pour any accumulated juices in with the flesh, fishing out any big bits of blacked skin. Little pieces are okay.
4. Add the remaining ingredients to the still warm eggplant and try not to eat it all before dinner!

DIRECTIONS:

RECIPES PROVIDED by Anna Sysko of Gemini Cafe & Bakery

Creamy Herbed Cabbage Salad
VEGGIES:
• 1 head cabbage, thinly shredded
• 2 small cucumbers, thinly sliced
• 1 carrot, shredded
• 6 large scallions, minced
• 6 radishes, thinly sliced
1. Toss all the prepared veggies in a serving bowl to combine
2. Whisk together all dressing ingredients until thoroughly incorporated. Season with salt and pepper.
3. When ready to serve the salad, pour dressing over salad ingredients and toss together.
4. Top with optional garnishes for some added flair!
DRESSING:
• ½ cup sour cream
• ½ cup yogurt
• 2 Tbsp mayonnaise or EVOO
• ½ lemon, zest & juice
• 2-3 fresh garlic cloves, minced
• 1-2 Tbsp chile crisp (if you don't mind some spice!)
• Salt & pepper to taste
• Optional garnish and toppings:
• Cilantro microgreens
• Toasted pepitas
• Crumbled soft salty cheese like cotija, farmers’ cheese, or feta

Message from the Executive Director
Introducing Bethel's New Chamber Executive Director
It is a privilege to introduce myself as the new Executive Director of the Bethel Area Chamber of Commerce. Whether you've called Bethel home for generations, recently put down roots here, or are discovering our community for the first time, I look forward to connecting with you.
Over the past 17 years, I've been fortunate to build my career here in Western Maine. My journey began at the University of Maine 4-H Camp and Learning Center in Bryant Pond, where I worked as an outdoor educator and developed a deeper appreciation for the mountains, forests, and communities that make this region so special. My years at Sunday River then gave me the opportunity to welcome guests from around the world and understand what draws people back to the Bethel area year after year. Most recently, I worked with Maine Adaptive, helping create opportunities for people of all abilities to experience the outdoors that we treasure.

As I begin this new role, I'm excited to listen, learn, and build relationships throughout our community. The Chamber's mission is not only to support local businesses but also to strengthen the partnerships that make Bethel a vibrant place to live, work, and visit. When our businesses succeed, our entire community benefits.
Looking ahead, our annual Harvest Fest is coming up on September 19. Harvest Fest is one of Bethel's signature community events, bringing together residents and visitors to celebrate our local businesses, talented makers, unique downtown, and beautiful fall season. Please visit bethelmaine. com to learn more and discover how you can celebrate what makes Bethel great. We're still looking for vendors, volunteers, and anyone who wants to bring fresh ideas to this event.
Whether you find me at Harvest Fest or around town, please introduce yourself. I'd love to hear what you love most about Bethel, what inspires you, and your ideas for Harvest Fest, other community events, and our community's future. Together, we can continue building on the qualities that make this corner of Maine such a remarkable place.
I look forward to seeing you around Bethel.
