2026 Visiting Practitioners
Alex Scrimgeour, Dien Chan Facial Reflexology and Acupuncture United Kingdom, 5-15 February 2026
Alex is a highly trained bodywork therapist specialising in Dien Chan Facial Reflexology. After completing a degree in Acupuncture, he undertook clinical internships at the Institute of Traditional Vietnamese Medicine in Saigon, where he first discovered Dien Chan. Over the years, Alex has also studied a wide range of therapeutic modalities, from Tuina and Thai Massage to deep tissue techniques and Qigong, and is passionate about helping people achieve optimum health and wellbeing.
Alex’s signature Dien Chan treatment creates a profound sense of relaxation. By releasing the micro-pressure points of the face, a unique shift occurs within the mind and nervous system, easing hidden tension and emotional stress that often build up in the background of modern life. The treatment offers numerous health benefits and can be experienced for deep relaxation or tailored to address specific health concerns. During his residency, Alex will offer a range of treatments and workshops, including Dien Chan Facial
Reflexology, Five Jewels Massage, as well as teachings from his newly published book, Facial Reflexology for Emotional Wellbeing. Other treatments include Deep Healing Massage, Inner Healing Massage, Acupuncture, and a Private Tai Chi Qigong Tuition.
Dr Leonard McGill, Developer of Structural/Energetic Integration Therapy USA, 5-15 March 2026
Dr McGill’s techniques draw on Taoist energy practices – traditions grounded in ancient Chinese philosophy that emphasise cultivating, balancing, and harmonising the body to support physical, mental, and spiritual wellbeing. His methods encompass chakra balancing, myofascial release, dry needling, and spinal alignment. Returning to Langkawi after a highly sought after residency in 2025, Dr McGill offers treatments such as ReAlign and Energise, a session aimed at easing pain, improving mobility, and restoring overall vitality. Through his Structural/Energetic Integration Therapy, Dr McGill works to uncover and resolve the underlying causes of pain and dysfunction, offering lasting relief. His distinctive approach weaves together chiropractic adjustments, intuitive healing, reflexology, triggerpoint release, Chi Nei Tsang abdominal massage, and cranial-sacral therapy. Together, these modalities stimulate the body’s innate healing capacity, leaving participants feeling looser, lighter, and more balanced.
Shilpa Ghatalia, Integrative Yoga, Malaysia, 2-12 April 2026
Shilpa Ghatalia is a respected leader in the yoga community with more than thirty years of experience. Over the years, she has studied a range of Hatha Yoga styles including Iyengar, Anusara and Yin Yoga, in her search for a system that naturally led to spontaneous meditation. This journey culminated in the creation of Integrative Yoga, a Hatha Yoga style that synthesises the teachings and influences she has embraced over three decades.

Ghatalia founded Yogshakti, an awardwinning studio and a registered Yoga Alliance (USA) school licenced to provide 200 and 300 hour teacher training programmes in Kuala Lumpur, Malaysia. During her residency at The Datai Langkawi, Shilpa welcomes all levels of experience, from complete beginners to seasoned practitioners. He has won multiple awards for his signature podiatrist studio and services. A Paris-trained podiatrist, Bastien was one of the first practitioners to pioneer an integrated approach to hands, nails and feet, combining health and natural beauty in his treatment protocol. His unique treatments employ medical-grade care of the nails, whilst incorporating deep massage, relieving any muscle tension or heaviness from toe-to-knee or finger-to-elbow. RIU OPENS ITS SECOND HOTEL IN LONDON
RIU Hotels & Resorts adds a new property to its RIU Plaza portfolio:
The Westminster
The new hotel builds on the success of the Hotel Riu Plaza London Victoria, which RIU opened in July 2023.
The strong demand for this asset has been instrumental in the hotel group’s decision to expand its presence in the city with a second property. The Hotel Riu Plaza London The Westminster features 464 rooms and is located just one minute from the River Thames and Tate Britain, and within walking distance of the historic Westminster Abbey, the Houses of Parliament and the iconic Big Ben.
The new hotel is also close to Buckingham Palace, St James’s Park and the London Eye, and offers guests a full buffet breakfast, a hallmark of RIU’s city offerings, along with a lobby café bar, meeting rooms and a fully equipped gym open 24 hours a day.
Originally built in 2003, the hotel underwent a complete renovation in 2021, at which point it joined the Curio Collection by Hilton. Following RIU’s acquisition of the property, it has become part of the chain’s RIU Plaza portfolio of city hotels. Thanks to the recent refurbishment, the hotel will not require major adaptation works.
The new hotel is located around a 15-minute walk from the Hotel Riu Plaza London Victoria and, as a point
of interest, its décor features numerous nods to the mysterious world of spies, reflecting its proximity to the headquarters of MI5 and MI6, the British intelligence services.
The Hotel Riu Plaza London The Westminster thus becomes the thirteenth property in RIU’s urban portfolio, joining those already operating in Panama, Guadalajara (México), Madrid, Miami, Chicago, San Francisco, New York, Berlin, London, Dublin and Toronto. RIU continues to focus on expanding in the world’s major cities and is currently building its third hotel in New York while continuing to explore new opportunities in Europe’s major capitals.

From 3rd February 2026, LUNA will now offer two sittings at 6pm and 8.30pm, Tuesday to Saturday, opening greater access to one of London’s most sought-after dining experiences. The entire menu at LUNA is also glutenand nut-free, marking London’s only gluten-free omakase experience.
Located on the ninth floor of 100 Broadgate, LUNA is also London’s highest omakase, pairing an intimate chef’s-table setting with sweeping views across St Paul’s Cathedral and the London skyline. The introduction of a second sitting marks a new chapter for the restaurant, allowing more guests to experience an omakase that has quickly established itself as one of the capital’s most exclusive reservations.
At the heart of LUNA is Executive Chef Leonard Tanyag, whose Sosaku-style Edomae omakase reflects more than
two decades of international mastery. Each menu unfolds across twelve meticulously composed courses, guided by seasonality, sourcing and technique. The experience centres on exceptional, rare produce, including prized cuts of Bluefin Otoro, line-caught seasonal white fish, sweet Hokkaido Scallops, premium King Crab, live shellfish and specialist Japanese imports flown in multiple times a week.
Dishes such as Otoro Tartare crowned with Oscietra Caviar, sweet King Crab Leg Nigiri, Masu Toro, Kuro-Dai Nigiri and Hotate Aburi showcase the purity, precision and restraint that define LUNA.
Signature courses, including Chef Leonard’s Hamachi Yaki Onigiri, inspired by childhood memories, introduce a personal layer to the experience, balancing technical mastery with warmth and storytelling. The setting is deliberately minimal and immersive. Designed by Oms Rocha, the twelve-seat counter is framed by his bespoke lunar artworks reflecting

A New Benchmark in Hotel Fitness Design
In today’s experience driven hospitality market, wellness is no longer a secondary
It is central to how guests judge quality, value and brand credibility.
From international five star destinations to compact city hotels, fitness spaces are now expected to be intuitive, well equipped and thoughtfully designed.
Modern hotel gyms combine architectural calm with commercial grade performance. Clean layouts, controlled acoustics and layered lighting create environments that feel welcoming rather than intimidating, while durable finishes ensure longevity under daily guest use. Equipment selection plays a pivotal role: high quality cardiovascular and strength systems provide reliability, digital connectivity and refined aesthetics, while functional rigs, free weight solutions and intelligent storage introduce versatility, colour and efficient use of space.
This balanced approach can be seen in leading properties where fitness suites match the standard of the wider hotel experience. At the same time, the same design principles can be applied to projects with tighter budgets and smaller footprints. By prioritising layout, zoning and scalable equipment packages, hotels can achieve strong visual impact and excellent functionality without unnecessary cost.
Our approach is flexible and commercially grounded, supporting hotels at every level of the market:
• Luxury turnkey facilities – full design, specification and delivery for flagship and five star properties.
• Value driven gym solutions –carefully curated layouts and equipment packages for budget conscious hotels.
• High quality specification – trusted, durable equipment tailored to guest profiles and space constraints.
• Space planning & refurbishment – transforming underused rooms into efficient, attractive training environments.
• Manufacturer agnostic specification – brand neutral equipment selection, with both purchase and leasing options available.
For hotel operators considering a new fitness facility or the refurbishment of an existing one, early design and equipment planning can significantly improve both guest experience and long term value. With the right balance of layout, specification and budget control, even compact spaces can be transformed into standout amenities.

PoB Hotels is like a beautifully curated British anthology—each hotel with its own personality. Can you walk us through seven properties that showcase the range of the collection, from Now & Then heritage hotels to coastal escapes and Art of the Garden gems?
“This is always a tough one because the beauty of the collection is the sheer variety, you could genuinely pick a different seven every day depending on your mood and the season. But today, here’s what I’m in the mood for.
For heritage with a modern twist, Bovey Castle is a wonderful example of grandeur blended with contemporary comfort.
For a coastal escape, The Headland Hotel is iconic, sitting proudly above the Atlantic with incredible views and a real sense of British seaside charm.
For wellness, Sopwell House is a standout, combining an exceptional spa offering with elegant surroundings.
For dining-led excellence, Northcote remains a destination in its own right.
For extensive grounds and gardens, Gravetye Manor is simply extraordinary.
For a small, intimate hideaway, The Painswick offers understated elegance and tranquillity.
And for a city experience steeped in heritage, The Royal Crescent Hotel & Spa is hard to beat.”
Who Today’s Luxury Traveller Really Is
Your research shows that modern luxury is about warmth, comfort, and authenticity rather than flash. Who do you see returning again and again across your hotels—weekend escapists, wellness-focused families, multigenerational travellers, or those seeking history-rich hideaways?
“We really see all of those groups, which is what makes the collection so dynamic.
The Royal Crescent Hotel & Spa
Young couples are often drawn to design-led boutique properties like Homewood Hotel & Spa.
Food lovers plan entire trips around hotels such as Whatley Manor and Northcote, where dining is a true highlight of the stay.
Families love countryside estates like Calcot & Spa, where there’s space, activities and a relaxed atmosphere. And retirees or those seeking peace often gravitate towards properties like The Nare, where comfort, calm and exceptional service are central.”
Whatley Manor
The Loyalty Alchemy
PoB guests are famously loyal. What keeps them coming back? Is it the dining, the staff, the sense of place, or those hyper-local touches—from kitchen gardens to house-made soaps?
“Honestly, it’s all of those reasons combined.
Our independent hotels put such a strong focus on the guest experience, every stay feels personal and thoughtful rather than formulaic.
Dining plays a huge role, as does the warmth of the teams who genuinely get to know their guests.
And those hyper-local touches are incredibly important too, you really feel where you are, whether it’s through local produce, regional design influences, or experiences rooted in the destination itself.”
Heritage as an Experience, Not a Museum
Heritage is the top motivator for domestic travel. How do your Now & Then hotels let guests “live inside history” without feeling like they’re staying in a museum?
“Heritage today doesn’t have to feel stuffy or museum-like.
It’s really about blending modern comforts with an appreciation of the stories of the past. Guests want to enjoy beautiful historic surroundings while still having contemporary design, great food and relaxed service.
Look at places like Glenapp Castle, Matfen Hall or Cromlix, where history is celebrated but the experience feels fresh, warm and welcoming.”
Glenapp Castle
Dining as the New Destination
Your white paper makes it clear that dining is the “make-or-break” element of a luxury stay. Which PoB Hotels are leading the way in provenance-led cuisine, kitchen gardens, or immersive food experiences?
“This is another tough one because really, it’s who isn’t.
Provenance and quality of food are key factors we look for across all our hotels, so it’s always centre stage within the collection.
That said, I absolutely love what The Torridon is doing with local sourcing and immersive experiences, Gilpin Hotel & Lake House with its refined yet relaxed dining, and The Vineyard for its incredible wine-led food journeys.”
Quiet Luxury in Practice
Comfort, calm, and space are the new status symbols. Which PoB properties are best embodying this “quiet luxury” movement—whether through expansive suites, wellness sanctuaries, or serene grounds?
For me, quiet luxury is about being truly pampered without any gilded pomp or show.
It’s that effortless comfort, exceptional service and sense of calm.
I love what Grove of Narberth is doing with its warm, intimate feel, and The Fife Arms with its blend of art, heritage and understated indulgence.”
The Rise of the Spontaneous Traveller
The data shows a surge in spontaneous getaways. How are your hotels adapting to the “book today, escape tomorrow” mindset?
“We’re absolutely seeing a rise in spontaneous travel, people wanting to escape at short notice for a change of scenery, wellness reset or indulgent break.
Our hotels have adapted by making late booking journeys smoother, being more flexible with availability, and creating curated short stays that are easy to plan quickly.
What’s lovely is how teams now specialise in turning last-minute stays into memorable experiences, whether that’s arranging spa treatments, special dinners or unique local activities with very little notice.
PoB Breaks and the Art of the
Curated Escape
PoB Breaks have become the cheat code for discovering the best of the UK. Which hotels shine brightest for couples seeking romance, families planning adventures, or solo travellers craving restoration?
“PoB Hotels is the one place people should come to discover exceptional independent British hotels. There really is a hotel for every mood, every season and every type of escape.
For romance and ultimate indulgence, today I’d choose Grantley Hall.
For families, Ellenborough Park is fantastic with its space and activities.
Gilpin Hotel and Lakes
The Fife Arms
Ellenborough Park
For solo travellers seeking peace and grounding, Penmaenuchaf Hall is a beautiful retreat.
PoB Breaks really help curate those perfect escapes and itineraries by destination or preferences, making it easy for guests to find exactly what they’re looking for.
AI, Technology & The PoB Future
AI is creeping into travel planning— sometimes gracefully, sometimes with a dramatic flourish. How do you see AI enhancing the PoB guest experience while keeping that irreplaceable human warmth?
“We’re really embracing AI in several ways to improve the ultimate stay and guest experience.
We’re already seeing its potential in improving the discovery phase, the booking journey, and enhancing guest communication before, during and after stays.
It can also support so many operational systems, from sustainability to forecasting and efficiency.”
What’s Next for PoB Hotels?
Looking ahead, what excites you most? Are you exploring new categories—wellness-led properties, heritage restorations, immersive outdoor experiences, or deeper digital innovation?
“What excites me most is how experiential luxury continues to evolve. We’re seeing more wellness-led stays beyond traditional spas, deeper storytelling around heritage, stronger sustainability initiatives, and increasingly immersive local experiences.
We’re also continuing to grow the collection thoughtfully, alongside major digital innovation that will enhance guest journeys and loyalty across PoB Hotels.”
Your Personal PoB Ritual
When you check into a PoB Hotel as a guest, what’s your ritual?
“My ritual always starts with a long walk. I love immersing myself in the surroundings and grounding myself in the destination, whether that’s countryside, coastline or gardens. Food plays a huge part in every stay too, so the walk certainly helps balance the indulgence.
Almost 70% of our hotels have a spa, so that’s an absolute must for me. I’m obsessed with spa time, discovering new rituals and enjoying moments of quiet.
I also love taking advantage of the immersive local experiences, from a trip to Ailsa Craig to see the seals at Glenapp Castle, to folklore walks with the ghillies at The Fife Arms, yoga in the gardens at The Priory Hotel, garden tours at Gravetye Manor, or beach activities at The Atlantic Hotel The list really is endless.”
The “Celebrity Stress Test”
Last question: if a high-profile guest— let’s say someone with Beyoncé-level logistics—needed a PoB stay tonight, which hotel would you send her to and why?
Honestly, I’d send them to any PoB hotel local to where they’d like to be. Every property in the collection would pass the stress test, with exceptional service, discretion, comfort and attention to detail.
That’s really the beauty of PoB Hotels, wherever you choose, you’re in incredibly safe hands.

With this acquisition, H10 Hotels strengthens its presence in the urban luxury segment, opening its fourth establishment under The One Hotels brand in a destination where it did not yet operate. This hotel joins The One Palácio da Anunciada in Lisbon, The One Barcelona, and The One Alma Paris, acquired in May 2025.

HOTEL CAFÉ ROYAL
Hotel Café Royal Celebrates David Bowie’s Legacy with a New Afternoon Tea Experience
Hotel Café Royal unveils a new Afternoon Tea inspired by the life, work and enduring influence of David Bowie, marking the hotel’s deep-rooted connection to one of Britain’s most important cultural figures. Launching on 14th January 2026 at Café Royal Grill, the Afternoon Tea features a curated selection of savoury sandwiches, patisserie creations and bespoke Bowiebranded
scones, paying tribute to his creativity and groundbreaking artistry.
The launch commemorates a defining moment in music history that took place at Café Royal on 3rd July 1973, when Bowie retired his otherworldly alter ego, Ziggy Stardust, with a legendary farewell party, the Last Supper, following his final performance at the Hammersmith Odeon.
Photographs from the event capture Bowie alongside fellow cultural icons including Mick Jagger, Lou Reed, Lulu and Ringo Starr.
A playful expression of flavour, fantasy and flair, this Afternoon Tea has been created as an anniversary tribute to Bowie, marking ten years since his passing and nodding to the many eras and incarnations that defined his career. It includes a selection of finger sandwiches which reference Bowie’s career: the Thin White Duke, cucumber, cream cheese and poppy seeds; the Stardust Caesar, egg mayonnaise with anchovy; A Study of Spice, with coronation chicken, almonds and coriander; and The Berlin Years, with beef pastrami, gherkin and sweet mustard.
Sweet creations follow, including: the Velvet Goldmine, red velvet cake with berries and vanilla Chantilly; the Green Suit, a cake with pistachio sponge, praline and whipped ganache, a nod to the green suit Bowie wore for the Tin Machine concert at The Pier in 1991; the Lemon Static, featuring a madeleine with lemon mousse sporting Bowie’s signature lightning bolt, and finally, the Midnight Orange cake with a chocolate éclair and chocolate orange caramel, representing the Kansai Yamamoto jumpsuit worn to promote the Aladdin Sane tour in 1973.
Bowie-branded plain and raisin scones will also be served, accompanied by jams and preserves.
Famously, Bowie was partial to Japanese green tea, and an expertly sourced selection has been curated to accompany the Afternoon Tea, appearing alongside a collection of loose-leaf Oolongs, Darjeelings and the finest French champagnes. A special Bowie Gin & Olive cocktail, made with Café Royal Gin, will also be available, inspired by the singer’s penchant for gin martinis with two green olives.
Bowie is honoured within Café Royal’s Music Roll of Honour, which recognises him as one of the illustrious musicians who ‘strolled and strutted through the marble entrance hall’ of the famed venue.
The David Bowie Afternoon Tea at Café Royal Grill offers guests the opportunity to experience his legacy first-hand, acknowledging one of the most influential artists of the 20th century in the very setting where one of his most defining chapters came to a close.
The David Bowie Afternoon Tea at Café Royal Grill launches on 14th January 2026 and will be available until 29th March (with the exception of 13th-15th February when the Valentine’s Day Tea will be served, and 15th March when the Mother’s Day Tea will be served).

AFTERNOON TEA RETURNS TO THE WALDORF ASTORIA, NY
Yoshoku at Waldorf Astoria New York Introduces Elevated Japanese Afternoon Tea
New York, NY – December 16, 2025 – Yoshoku, the intimate kaiseki-inspired, fine dining destination at Waldorf Astoria New York, has unveiled a modern Japanese Afternoon Tea that marries the hotel’s legendary afternoon tea tradition with the inventive spirit of Yoshoku’s cuisine. Under the guidance of Executive Chef Ry Nitzkowski, this distinctive service combines seasonal flavors, artisanal teas, and curated indulgences to offer guests a refined and immersive journey.
“At Yoshoku, we’ve reimagined the storied tradition of afternoon tea through a Japanese lens, blending the elegant service guests expect from Waldorf Astoria New York with the seasonality, precision, and sense of discovery that define the restaurant,” said Nicholas Bathurst, Director of Food & Beverage at Waldorf Astoria New York. “It’s a thoughtful Western interpretation of Japanese cuisine that honors the evolution of an iconic New York ritual.”
The Japanese tea service at Yoshoku blends the elegance of Waldorf Astoria New York with the thoughtful simplicity of Japanese craft. More than a classic afternoon tea, the experience takes quiet cues from kaiseki, emphasizing balance, seasonality, and artful presentation. Guests enjoy Japanese-inspired tea sandwiches, warm scones, and delicate pastries. Standout bites include the wagyu pastrami with yuzu pickle, 1000 island, shaved cabbage, and Havarti cheese; tsukemono, featuring house pickles and whipped sudachi cream cheese; and warm scones such as a cream scone brightened with sudachi zest. For an added touch of indulgence, guests may opt for a caviar service featuring Oscietra or White Sturgeon, accompanied by warm nori taiyaki, potato chawanmushi, and yuzu miso tofu cream.
The pastry tier, created by Executive Pastry Chef Jennie Chiu, continues the narrative with matcha yuzu cake, soba cha maple verrine, and houjicha hazelnut choux. These desserts are presented on an artful seasonal tower adorned with soft greenery and foliage. Designed to evolve throughout the year alongside the menu, the display pays homage to kaiseki’s deep appreciation for nature and the shifting seasons.
Complementing the bites, Yoshoku offers a curated selection of looseleaf teas from Kettl, sourced directly from distinguished growers across Japan. Tea options include Kumamoto Blended Wakoucha with honey and citrus notes; Uji Genmaimatcha with nutty, toasty flavors; Miyabi Sencha infused with toasted almond and wild grass; and Shizuku Gyokuro, which evokes dashi stock and pine.
Guests may also enhance their experience with matcha lattes or traditional ceremonial matcha for an additional fee.
Yoshoku’s Afternoon Tea can be further elevated with thoughtfully paired libations from the restaurant’s beverage menu.
Guests may choose from premium Champagne, including Krug Grand Cuvee and Laurent Perrier Grand Siècle, artisanal Japanese sake, or signature cocktails such as the Kirakira, made with Komasa Gin, lemon, and Champagne. Nonalcoholic options, including the Shikoku, feature inventive ingredients like red shiso-yuzu cordial and Kimino sparkling yuzu.
Priced at $135 per person for the core tea service, the Japanese Afternoon Tea at Yoshoku invites guests to enjoy a contemplative, artful, and playful reinterpretation of a classic New York tradition. South Asian Expansion
South Asian dining shows no sign of slowing, with venues exploring the diversity of Indian, Pakistani, Sri Lankan, Bangladeshi, and Nepalese cuisines. From modern fine dining to street food and thali concepts, the focus is on bold flavours, layered spices, and vibrant presentation. Courtyard-centric layouts, intricate carvings, jali screens, and ornate textiles create an immersive atmosphere, while traditional earthenware like Dudson’s Harvest Flare enhances authenticity.
South American Flair
South American-inspired concepts are rising in prominence, offering vibrant, flavour-packed experiences from Peruvian ceviche bars to Brazilian churrasco and Latin street food. Interiors favour open, social layouts that encourage communal dining, with rustic textures, earthy ceramics, and vibrant colour palettes reflecting tropical produce and indigenous heritage. Decorative elements often
reference the landscape, sun, and water, while music, scent, and lively service create an energetic yet grounded atmosphere. Shared platters, natural textures, and bold plating like Churchill’s Inked Cascade continue to be a hallmark of the style.
Stars, Stripes & Smoke – American BBQ
Anglo-American dining culture remains a mainstay, particularly in casual and experiential settings. Exposed brick, steel, and reclaimed wood interiors, along with open kitchens and smokers, showcase the artistry of slowcooked meats. Presentation prioritises utility and abundance, with steel serveware such as GenWare’s Vintage Steel collection, cast-iron skillets, and rustic glassware reinforcing the generous, relaxed ethos.

Guest experience and selective expansion
After its first year of operation, JOIA Aruba by Iberostar has excelled, consolidating its luxury offering and connection to the destination. Furthermore, the new Iberostar Selection Es Trenc and Iberostar Selection Fuerteventura Palace, which reopened after comprehensive renovation, have been warmly welcomed by guests and exemplify the core attributes of the Iberostar Selection segment. At the end of 2025, Iberostar strengthened its presence in Mexico with the opening of Iberostar Selection Riviera Cancun, its twelfth hotel in the country. Operated under a management contract, the hotel reflects the company’s strategy to complement owned assets in America with an asset-light growth model. Looking ahead to 2026, Iberostar will continue its strategy of selective expansion in strategic destinations with the opening of two new five-star hotels. Iberostar Selection Montenegro will open on the southern coast of Montenegro, offering 290 suites and villas facing the sea. Additionally, the company will reach a milestone in its international trajectory by opening its first hotel in East Africa: Iberostar Selection Zanzibar (Tanzania), located on Muyuni Beach.
Iberostar continues to invest in the transformation of its facilities. The chain is working on the comprehensive renovation of Iberostar Waves Tucán and Iberostar Waves Quetzal (Mexico), which will become the flagships of the Waves segment in the Americas. In Jamaica, JOIA Rose Hall by Iberostar will undergo a complete renovation between June and November 2026 to enhance the guest experience and consolidate its position as a luxury benchmark.
Iberostar Wave of Change, a model of responsible tourism integrated into the business Iberostar is advancing its commitment to a responsible tourism model through its Iberostar Wave of Change movement, structured around seven focus areas ranging from caring for people, commitment to local communities, protecting nature, promoting responsible consumption of fish and seafood, climate action, moving towards a more circular experience, and responsible growth.
In a year of significant challenges in talent management, Iberostar continues to work on professional development, physical and emotional well-being, and equal opportunities, with a special focus on youth employment: more than 400 apprentices participated in 2025 in its Dual Vocational Training program in Spain, Mexico, Jamaica, and the Dominican Republic—a number the company aims to boost significantly in the years ahead.
At the end of the year, circular economy initiatives had reduced waste sent to landfill by more than 80% compared to 2021, thanks to the continuous improvement in waste separation, a collaborative vision and a clear commitment to public-private partnerships to develop local solutions. Some examples implemented in 2025 include composting projects in Brazil and the Dominican Republic, textile recycling in Mexico, and organic waste management in the Canary Islands
and Fuerteventura. In addition, the company continues to work steadily and continuously to move toward climate neutrality, with a roadmap that includes scopes 1, 2, and 3.
Furthermore, 93% of the fish and seafood served in hotels comes from responsible sources, thanks to work with certified suppliers and the promotion of local initiatives that support artisanal fisheries, strengthen coastal communities, and provide training to improve practices and livelihoods. Markets including Spain, Mexico and Portugal have already reached 100% responsible seafood sourcing, whilst the most established program markets are operating at an average of 98%.
During 2025, Iberostar strengthened pre-competitive alliances aimed at boosting not only its impact, but also the tourism sector’s collaboration towards social and environmental issues. Key initiatives include the Grange Pen Marine Sanctuary in Jamaica, the first co-management partnership developed with the local community and government to protect marine ecosystem and generate local employment; the Shocos Sanctuary in Aruba; and a pioneering public-private cross-sector agreement on blue carbon in the province of Cadiz, Spain. Responsible growth is woven into the company’s strategy, embedding scalable initiatives that generate long-term benefits for the company, stakeholders and destinations in which it operates.

STANLEY’S: THE RED CARNATION HOTEL COLLECTION
Unveils rooftop
Bar at the Chesterfield hotel Mayfair
Red Carnation Hotels is delighted to introduce Stanley’s, a brand new rooftop bar now open at The Chesterfield Mayfair Hotel. Inspired by the legacy of the collection’s founder, Stanley Tollman, Stanley’s offers a relaxed yet refined hideaway above the rooftops of Mayfair. Welcoming guests year-round, gracious hospitality is poured into every glass and plated with care. With expansive views unique to this prestigious corner of London, guests can enjoy expertly crafted cocktails and seasonal dishes, combined with the signature warmth and character that define every Red Carnation hotel.
A Legacy of Hospitality
Stanley’s is a celebration of the values and spirit of the family-run brand’s founder, whose deep love for hospitality, food and genuine connection continues to shape the ethos of Red Carnation Hotels.
Inspired by Stanley Tollman’s quiet gift for making people feel at home, the bar opens atop the very first Red Carnation property - now a beloved Mayfair landmark with over 40 years of history. This elegant rooftop retreat features a fully retractable roof and offers space for up to 60 guests, blending refined design with a warm,
welcoming atmosphere. Guests are invited to enjoy signature drinks and curated menus in the spirit of relaxed conversation and good company.
“Red Carnation Hotels began with my parents, Bea and Stanley, who welcomed guests in the same way they welcomed friends into our home,” comments Vicki Tollman, President of Red Carnation Hotels. “The red carnation was my father’s signature flower – a simple yet powerful symbol of warmth, generosity and genuine care.
Stanley’s is a tribute to that spirit – a place where every guest feels personally looked after and truly at home. It embodies the heart of who we are as a family and as a brand: creating spaces filled with character, comfort and connection, where every detail reflects a deep love of hospitality.”
“This is a landmark year for Red Carnation Hotels,” adds Jonathan Raggett, CEO of the collection. “With significant enhancements underway across our global properties, the opening of Stanley’s is particularly meaningful. It celebrates the man who inspired a tradition of hospitality that spans generations and reflects our ongoing commitment to thoughtful investment. As we look ahead, we are shaping our next chapter with new
developments that create exceptional guest experiences, evoking a sense of place, celebrating cultural heritage, and forming lasting memories, while honouring the traditions and values that define us.”
Design that Tells a Story
Renowned for its distinctive and vibrant in-house design, Red Carnation reveals its signature creativity with this latest opening, infusing personality into every detail.
Guests are welcomed by a striking walkway lined with Saudade in Yellow, a bold, cubist-inspired design featuring interwoven facial profiles and vibrant hues that set the tone for the rooftop oasis beyond.
The rooftop itself is framed by warm burnt-cedar decking, gentle lighting, and a bespoke mosaic of Stanley Tollman crafted by Maggy Howarth Studio - Britain’s leading specialist in mosaic design. Known for her intricate, handcrafted work using natural stone and traditional techniques, Howarth’s creation forms a captivating visual tribute that embodies a lifetime of hospitality marked by grace and warmth. Anchorin the space is a marble bar stretching along one side of the rooftop.
“The Chesterfield Mayfair has always been a hotel with deep heritage and a loyal following,” comments Adam Lake, General Manager of The Chesterfield Mayfair. “We’re proud to be building on that tradition with a new space that feels both rooted and refreshing. Stanley’s is more than just a rooftop bar – it’s a statement of who we are today and where we’re going. It’s intimate, elegant, and unlike anything else in Mayfair.”
A Culinary Celebration
Seasonal menus have been crafted for Stanley’s to complement the exclusive rooftop setting, combining refined simplicity with relaxed elegance. The cocktail list features refreshing spritzes, elevated gin and tonics, and Stanley’s Signature Cocktails – from the crisp Stanley’s Martini to Thymes in Paris, a fragrant blend of gin, thyme, blackberry liqueur and foam, and the bold Passion for Chilis, a mix of chiliinfused vodka, passion fruit and lime.
A sharing-style menu highlights standout dishes such as grilled chicken satay skewers with a classic peanut sauce, native lobster rolls in toasted brioche, and the indulgent Neal’s Yard aged cheddar toastie – all prepared using the finest locally sourced ingredients.
Opening Hours
Stanley’s is open daily from 11am to 11pm, offering guests and locals alike an intimate escape that feels worlds away from the bustle below – yet remains just moments from Shepherd’s Market and Berkeley Square.
The bar is also available for exclusive or semi-private hire, providing an elegant venue for private celebrations or corporate gatherings in one of London’s most iconic neighbourhoods.
A New Era for Red Carnation Hotels
As Red Carnation continues to evolve and invest in its global portfolio – with recent openings such as 100 Princes Street in Edinburgh and extensive refurbishments across the collection – Stanley’s stands as a bold expression of the brand’s founding ideals.
Rooted in legacy but designed for today’s guest, the rooftop captures the essence of a hospitality journey that began over four decades ago in the heart of Mayfair and continues to be shaped by care, character and a belief in the transformative power of human connection.
Stanley’s is now open and available for bookings at The Chesterfield Mayfair, part of The Red Carnation Hotel Collection.
Set in the heart of Mayfair, Stanley’s invites guests to discover a new rooftop destination where timeless hospitality meets modern elegance. Guests are kindly asked to reserve in advance.
