"Liquid gold" or "liquid bread" - those are loving, nearly poetic names for the weakly alcoholic drink of the typically bitter taste made by fermentation. lts basic ingredient is water. lts consumption is surprisingly higher than what corresponds to the quantity of the produced drink - statistics say that one litre of the end product consumes up to eight litres of water. Not for the brewing itself, but also for washing the equipment and bottles, and for disinfecting all that is in contact with the beer. Another necessary ingredient lending its name to one of the brewing professions is malt. Malt is budded and dried grain, most often of barley. Malt is the main ingredient responsible for the taste, colour, strength, and density of the product. Hence light and dark malt, as well as caramel, colourful, smoked etc. Combinations of these malts make an infinite number of beer types. Beer cannot be made without yeast responsible for the fermentation. Fermentation is a process transforming sugars to alcohol with the simultaneous development of carbon dioxide. Fermentation produces the final taste of beer.

MANUFACTURING PROCE DU RE The magie process of brewing the "liquid gold'' begins in the malt house where the malt is prepared: barley grains are first soaked for several dozen hours to absorb water and bud. Budding then takes place over several days in a cold, dark place. Buddi ng starts aco mpIex biochemical process causing the release of major enzymes in the grains. These enzymes (olpha and beto-amylase) decompose complex starches to simple sugars in the course of brewing. The resulting sugars then produce alcohol during fermentation. The budding must however be stopped at an exact moment (usuolly after five to seven doys) -this isachieved by malt drying. At this moment, the malt may also be roasted at temperatures high above 100°(, which produces dark malt. After this the malt ingredient is ready. Now the malt is left to settle (for up to severol weeks) and then (after the bud removal) carefully crushed in a grain crusher. Then the crushed grain is mixed
with water in a process called mashing resulting in a pulpy mash. The mash is then heated for further split of complex to simple sugars. Then the liquid is separated from the solid component of the mash (mashed malt). The filtered solid component is called spent grains and the liquid component is wort, a pleasantly sweet solution - the basis offuture beer.

~ ~ The Lužiny Brewery (est. 2013) is an independent microbrewery with technology for an an nual output of up to 2,500 hl of beer and is probably the first microbrewery in the Czech Republic which was based in a classic shopping center. The operation of the brewery, brewery restaurant, and beer bar with terrace are located on three floors of the Lužiny Shopping Center near the Lužiny metro station in Prague. The Staropramen Brewery was founded in 1869. ln May of 2016, exactly 145 years passed since the ceremonial opening and the consecration of the first batch of beer. ln its first year of production, the brewery brewed 10,000 hectoliters of beer, which is the amount that today would categorize it as a microbrewery. Since then, however, much has changed. Today, the brewery annually brews up more than 2.5 million hectoliters of beer and the Pivovary Staropramen company, which operates the brewery, is the second largest beer producer in the Czech Republic and also a major exporter. Staropramen beer today can be found in nearly 35 countries. Pivovary Staropramen is a member of the Molson Coors concern, one of the largest brewing companies in the world. A broad portfolio of ten beers is available in the Czech Republic under the Staropramen brand, regularly placing high at Czech beer competitions.
