From our estate to your plate

The Byzantine manor of Kinsterna, drawing on its spring water and fertile land, has long been self-sufficient. Today, we continue this same philosophy, cultivating our estate with respect for nature and the cycle of the seasons. Our vegetable gardens produce a daily abundance of fruits and vegetables, including citrus fruits, figs, apricots, berries, prickly pears, and many more.

From the estate also come our table olives, extra virgin olive oil, wines from our private vineyard, tsipouro, honey, eggs from the barn, and our own mushrooms. This self-sufficiency forms the foundation of the gastronomy across all Kinsterna restaurants and reflects a more balanced approach to nourishment and wellbeing.

At the same time, we complement our ingredients with carefully selected local products from small producers in the region: cured meats and fresh meats from the villages of Parnonas (Mr Andromidas), dairy products and cheeses (Mr Kyriazakos), traditional cheeses from the village Koulentia, freshly baked goods from Monemvasia Mr Angelakos), as well as smoked trout, salmon, and sturgeon from the springs of Mount Taygetos (Mr Gerontidis).

Our dishes have been developed in collaboration with Spondi and are guided by purity of ingredients, seasonality, and traditional flavours.

Our menus may be adapted to dietary requirements or preferences upon request, in keeping with the personal care that defines Kinsterna’s philosophy.
