Noosa was our destination of choice for our spring photoshoot this year, with a jaw-dropping background and beautiful weather, it was magical to say the least. Here are our favourite things to do, stay and eat in Noosa. STAY: You can either stay in Noosa for a reasonable price or go for the budgetbuster route. Whichever option you choose there are plenty of worthy options to lure you into the beautiful destination. For a reasonably priced stay on Hastings St, the Ocean Breeze resort has all your getaway needs covered. If you’re looking for more of a luxe getaway, Peppers, the Sofitel or Seahaven are our top picks EAT: There’s an abundance of options for food in Noosa, and it is oh so hard to decide on which cuisine to dine on each night. For the iconic Noosa dining experience, head to Bistro C, located metres from the beach. If you’re craving pizza, El Capitano serves up the most delicious flavours, with a side of chilled tunes and breezy, beachy vibes. With elegant riverside dining where all ingredients are fresh and direct from Australian shores, you won’t be disappointed with Ricky’s river bar and restaurant on the Noosa river. Don’t go past the spanner crab spaghettini, it is world class. DO: Whether you have relaxation or action on your agenda for your getaway, Noosa offers both! If you’re looking to relax and unwind, laze by the beach or pool for the day and enjoy a cocktail or two. You could also unwind with some retail therapy, with plenty of beautiful shops along Hastings St, but don’t forget to browse Noosa Junction and Noosaville for some wonderful fashion, food and lifestyle stores. A visit to Noosa cannot be complete without a walk through the iconic Noosa national park where you will discover some of the world’s most stunning secluded beaches.

S M O K E D E G G P L A N T & P O T A T O C U R R Y R E C I P E
INGREDIENTS 1 jar of church farm general store homestyle indian paste 300 ml organic coconut cream 1 cup veg stock or water 4 x thin lebanese eggplants or 2 medium eggplants - smoked 12 x baby potatoes - boiled 2 large tomatoes - cut in large wedges handful coriander olive oil / ghee tempering spices - 1/2 tsp cumin, 1/2 tsp urid dal (optional), 1/2 tsp asafoetida (hing), 1 sprig curry leaves good pinch of salt 1 heaped tsp coconut sugar (optional) METHOD 1. pre heat your oven to 200 degrees celsius 2. scrub the potatoes if they’re dirty, leaving the skin on. bring them to boil in a pot of water (add a few generous pinches of salt). You’ll know they’re ready when a fork or chopstick can go through the flesh. 3. drain the water and toss them in ghee / olive oil and a pinch of salt. bake them for 15 or so minutes until golden and crispy. check and turn the potatoes whilst they bake. leave aside. 4. to smoke eggplants - place over a direct gas flame turning every minute or so to different positions to ensure the whole eggplant is cooked. some juice may ooze out, this is okay. once they feel soft when you push them, leave to cool on a plate (they’ll keep cooking in their own heat). 5. in a pot - add 1 jar of homestyle church farm general store curry paste, 300 ml of coconut cream, 2 largely chopped tomatoes, 8 curry leaves & a small handful of coriander. bring to the boil. once boiling, turn down to simmer for 5 minutes. 6. peel the skin off the eggplant, keeping the eggplants whole and line them into the serving bowl. sprinkle them with a pinch of salt. add potatoes too. (you can also add the eggplant & potato into the pot). 7. pour curry sauce into the serving bowl. 8. add 1 tbsp coconut oil or ghee into a fry pan, on high heat. when oil is hot, add the tempering spices and cook for 30 seconds or so until the urid dal has browned. Quickly tip over the curry, making sure you don’t burn the spices. 9. garnish with fresh coriander and serve with steamed basmati rice, flatbread & some greens!
