Our Christmas order service makes it easy to plan, with fresh seafood, meats, and platters available to pre-order in store.
We’re also excited to host our Festive Food Showcases once again across four of our stores, evenings where our wonderful local suppliers join us in store to sample, share and celebrate their delicious products with our customers. These events have become a true highlight of the season, and we can’t wait to welcome you!

1 Whole Bone-In Noosa Wood Smoked Leg Ham
1 jar of Spoonfed Ham Jam
Handful of Spice & Co. Cloves
Method



























1. If you are doing a whole ham, the first thing you need to do is carefully remove the skin, leaving about the first 10cm of the shank still covered with skin so you have something to grip. Cut a line around the shank through the skin and then slowly with the tip of your knife, work the skin away from you trying not to remove any of the beautiful creamy fat.
2. Once the skin is removed, score the fat lightly across the ham on a diagonal about 2 cm apart, then back the other way to form diamond shapes, being careful not to cut too deep into the skin.
3. Next, stud each square with a whole clove, using the pointed end like the point of a nail, and pressing them in with your thumb.
4. Place the ham on a wire rack sitting inside a tray and add about a centimeter of water.
5. Brush the Spoonfed Ham Jam over the ham and place in a preheated 140 °C oven for 20 minutes.
6. Remove from the oven, brush with more glaze and return to the oven for another 15 minutes. Repeat until you finish the glaze.
7. Allow the ham to cool well, then wrap tightly with plastic wrap. It will keep well in the fridge for about one week.

Sandwich Ingredients
2 Slices Bread/Roll of your choice
Approx. 100g Shaved Leg Ham
2 Iceberg Lettuce Leaves
Approx. 40g of Brie Cheese, sliced
1 tablespoon Wholegrain Mustard
1 tablespoon Soft Butter
Lime to serve
Spiced Mango Salsa Ingredients
1/2 Mango, sliced
1/2 Lime Juiced, plus extra to serve
1/2 tablespoon White Sugar
1/2 tablespoon chopped Red Chilli
1 tablespoon Micro Herbs
Method
1. To make mango salsa, combine all ingredients. Stir and set aside.
2. Spread butter and wholegrain mustard on one side of your bread.
3. Layer lettuce, ham, and brie onto bread slice.
4. Top with micro herbs, mango salsa to taste and second slice.
5. Cut in half and serve with extra lime.

400g Ham off the Bone
1/2 Fresh Pineapple, peeled & diced
2 tablespoons Seeded Mustard
160g Pure Honey
1 Red Onion
1 Red Capsicum


Method
1. Soak 8 long skewers in water for 10 minutes; alternatively use 8 metal skewers.
2. Preheat the BBQ to medium low.
3. Slice your ham into cubes and alternately thread it and a piece of pineapple, onion and capsicum onto the skewer.
4. In a small bowl, whisk together the mustard and honey.
5. Place the skewers on the BBQ and cook, turning every minute until golden.
6. In the last minute, generously glaze with the honey-mustard mixture, turn, glaze, turn, glaze and turn to create a glossy coat of sticky sweet savoury flavour.

Ingredients
1.4-1.5kg Fresh Whole Chicken
5 Garlic cloves, crushed
1 cup Buttermilk
1 cup Natural Yogurt
1/2 bunch Dill, chopped plus extra to serve
3 tablespoons coarse Salt
1 small Orange cut into quarters
Method
1. Preheat the oven to 190C fan force. In a large bowl add the garlic, buttermilk, yoghurt, dill and salt. Mix to combine.
2. Season the chicken with salt and pepper then place into the bowl and massage in the marinade until well coated. Leave the chicken breast side down in the bowl, cover with a lid or plastic wrap and refrigerate for 6-24 hours.
3. Take the chicken out of the fridge an hour before cooking to bring it to room temp. Place the chicken in the baking tray, stuff it with the orange and coat it well with olive oil. Roast for an hour and 20 minutes, turning the tray every 30 minutes for even cooking. When the internal temperature of the chicken hits 75C, remove from the oven and let it rest for 15 minutes before carving.

1 kg Baby Potatoes, halved or quartered
2-3 tablespoons Thrive Foods Tallow, melted
1 teaspoon Olsson’s Sea Salt
1/2 teaspoon Black Pepper
1 tablespoon Fresh Rosemary, chopped
1 tablespoon Fresh Thyme
A squeeze of fresh Lemon Juice or Parsley to serve
Method
1. Preheat oven to 220 °C (425 °F).
2. Parboil potatoes in salted water for 5 minutes, then drain well.
3. Melt Thrive Foods Tallow in a roasting pan in the oven for 2–3 minutes, just until hot.
4. Toss potatoes in the melted tallow to coat evenly. Add garlic, herbs, salt, and pepper; toss again.
5. Roast for 35–45 minutes, turning halfway, until golden and crisp.

300g Huon Wood Roasted Tasmanian Salmon Blackened Spice
600g of Kipfler Potatoes
4 inner stalks Celery & Leaves
1 tablespoon Dill, chopped
1 small Red Onion, finely sliced
2 teaspoons of Whole Seed Mustard
50mL Lemon Juice
100mL Olive Oil
100g Crème Fraiche
Olsson’s Lemon Zest Salt
Method
1. Wash the potatoes and boil in their skins until they are just cooked.
2. Drain and allow to cool for 5 minutes. While they are still hot, use a small knife to scrape and peel the skins off. Allow to cool completely, then cut into 1cm thick slices.
3. Wash and slice the celery stalks finely.
4. Whisk together the mustard, lemon juice and olive oil.
5. Toss the potatoes, Huon Wood Roasted Tasmanian Salmon , celery, celery leaves, capers, dill and red onion together and dress with the lemon dressing.
6. Divide between 4 plates.
7. Spoon small dollops of crème fraiche on each salad.
8. Season with Olsson’s Lemon Zest Salt.

Ingredients
3 cups Fresh Cherries, pitted & halved
4 pitted Dates
1 cup Greek Yogurt
1 cup Blue Frog Granola
1. Dice 1 cup of cherries.
2. In a food processor or blender, combine the remaining 2 cups of sweet cherries along with the dates. Blend for 1-2 minutes or until smooth, stopping to scrape down the sides as needed.
3. Pour the cherry sauce into the base of 4 serving glasses.
4. Spoon in the Greek yogurt then top with the diced cherries. Sprinkle with granola.
5. Refrigerate for at least 1 hour or overnight for best results.

1. Place mango, coconut milk, crushed ice, and lime juice in a blender and blend until smooth.
2. In a saucer mix the sugar and lime zest. Run the juiced limes around the rim of your serving glasses to wet it and dip into the sugar mix.

200g Olympus Halloumi cut into 5mm slices
400g tin Chickpeas, drained & rinsed
1 Red Onion, cut into wedges

Method
1. Lightly rub the beets with vegetable oil and roast at 180° for 20 -25 minutes or until tender when pricked with a knife.
2. Rub off the skins with your hands or scrape off with a small knife and slice into circles or wedges.
3. On a separate tray combine the chickpeas and red onion and drizzle with olive oil and salt, and roast for 20 minutes or until the onions are soft.
4. Whisk together the Maggie Beer Seville Marmalade , mustard, vinegar and olive oil and season with salt and pepper.
5. Lightly oil the Olympus Halloumi slices and grill in a hot grill pan on both sides until crispy.
6. Ingredients
18 Vicenzi Vicenzovo Ladyfingers
3 Egg Yolks
125g Sugar
250g Mascarpone Cheese
500ml Fresh Cream
Method
50g chopped Pistachios
50g Pistachio Cream
1 glass of Milk
1 small glass of Marsala Wine


1: Beat egg yolks and sugar, then add the mascarpone cheese and blend the mixture until you will obtain a quite stable cream.
2: Whip the cream in another bowl. Blend the two mixtures delicately and let them stand in the refrigerator for 30 mins.
3: Divide the mascarpone cheese cream into two parts and add the pistachio cream to one of them.
4: Mix milk and Marsala wine with a fork and dip the Vicenzovo Ladyfingers
5: Cover the bottom of each glass with a layer of Vicenzovo Ladyfingers, continue with a layer of pistachio cream, add another layer of Vicenzovo Ladyfingers and finish with the mascarpone cheese cream. Finally, sprinkle with chopped pistachios.
6: Keep them in the refrigerator for at least 3 hours. Just before serving, add a little more chopped pistachios.
