Amanda deserved a little something extra.

With four active kids in school and their activities, plus church on Sundays and Wednesday, Amanda leads a demanding life. Exercise is her refuge. She never had body image issues until giving birth to and nursing her babies. Then, on the advice of friends, she turned to the stateof-the-art Plastic and Reconstructive Surgery Center at CHRISTUS and renowned plastic surgeon Dr. Mark Larson. We helped with a breast augmentation and lift, and a tummy tuck. And now? “I am extremely happy with the results.”

Thank you Gift of Life and all my new cancer survivor friends for helping me achieve confidence in myself and to continue this program as a forever way of life.

appy New Year! I hope everyone had a wonderful time celebrating the new year with friends and family. We will start to look ahead to the second half of our League year.

Our community committee members will be busy serving this spring and will host another Service Saturday. More information will be available soon.

First, we must look back at December and celebrate the success of Main Street Market. We couldn’t do it without our committee, sponsors, and the community that comes out to support us each year. The proceeds help us continue our work and mission in the community.

The past few years have had a significant impact on us, but I would like to thank you all for your support and dedication during these times. The year ahead will bring its uniqueness to us, but I am sure we will meet our goals by working together, focusing on our mission, and putting our community first.

We now turn our attention to the Dancing with the Stars event. Please visit our website and secure your tables today; they are selling fast! We are thankful for another great committee that is hard at work. The dancers and studios are preparing some great routines and will show them on March 4th, 2022.

Travel Tips: JLBers Go ON THE

t's no secret that traveling makes individuals happier, has been found to boost creativity, and broadens worldviews. So whether you resolved to travel more in the new year or just want to shake things up in a new place, we gathered some tips to make sure your trips are memorable in all the right ways.

Wake up early to avoid crowds.

Paris

You know the saying—the early bird gets the worm. Well, it's the same for tourists. Want to sightsee and actually be able to see the sights without others in the way? Set your alarm. You didn’t come all this way for a bunch of photo bombers to clog your camera lens. Spend more time in fewer places.

It's natural to want to cram in all the experiences and places in your trip, but challenge yourself to slow down a bit. Make the most of where you are and fully soak the experience in. Take time to just be, whether it means sipping a latte and people-watching or taking a breather on a park bench. Early bird gets the worm @ the Big Bend

Make sure to take photos —with you in them.

Most of us don't have to be reminded to take photos of picturesque views. However, we can be so busy soaking up the memories or pointing the camera in the opposite direction, that we forget to capture ourselves in these photos as well. Trust me—you're going to want these pictures with you in them later. Get out of your comfort zone.

Capture memories wherever you are (Greece)

Say yes to something new and/or different. This can come in the form of trying a foreign cuisine or saying yes to an activity you haven't done before (salsa dancing, etc.). Be open to new experiences—life happens at the end of your comfort zone. Traveling keeps you on your toes and delivers the neatest surprises—go with it. Get lost on purpose.

Yes, you read that right. Take the road less traveled and all that jazz. By doing this, you can discover places and meet people that you may have skipped over otherwise. Also, there's usually a good story or two that you can take home from the experience.

A few other tips for the road:

• Write down the address of where you're staying—the old memory bank aka your brain is sometimes not so helpful. • If traveling solo, let someone at home know where you are—for their peace of mind, as well as your own. • Take an extra credit card and some cash—be double-prepared. • Make copies of travel documents— store these in a different place than the original docs you are bringing with you. • Bring shoes you're comfortable walking in—your feet will thank you. • Pack less, not more—no, you won't wear all those shoes. Overall, like most things in life, travel is what you make of it. It is dreamy and gritty, exhilarating and terrifying, and it is always, always utterly life-changing.

Hi,

I'm Megan Mistric! I’m originally from Lake Charles, Louisiana, but I was raised mostly in Beaumont, Texas. My current title in life is Mom, Caregiver, Veteran’s Wife, and Daughter. I’m a proud graduate of Lamar University, where I met my husband, Nathan Mistric. I'm currently the Director of Client Services at Nutrition & Services for Seniors (Meals on Wheels). And I’m called “Mom” by three sweet kids named Forrest, Maverick, and AnnMarie. I was an essential worker during the beginning of the pandemic and I wanted something more than just being a mother, wife, and pandemicessential worker. So when the League started the registration for the coming year, I said why not...let's add this other role to the fun! I figured this would fill the void of wanting to help people outside of work and home. As soon as my provisional year started, I found out I was pregnant with my caboose. I laughed to myself, “Of course—why not add some FUN to this ride of a year!” In spite of all that 2020-2021 brought into my life, I had one of the MOST rewarding years of my life as a provisional member of the League. With all of this said, I welcomed this year as my first active year in the Junior League of Beaumont.

My day always begins with a very BIG cup of coffee and Christian music. I wake my kids up from oldest to youngest. WE TRY to start our day with laughter...usually with my youngest, Annie, clapping as she watches the weather report on the news—she loves that part! Maverick is usually found looking for a superhero to take with him to daycare; he pulls out all the stops to bring it with him. Forrest asks 50 trillion questions about life in the mornings. Even on our hard days, we try to laugh. If you want to see a joyful house at 6:00am, please come on over because our door is always open. My day at work involves all of the services that we provide at the care center. I work with our clients, making sure their needs are being taken care of. Working with senior citizens is my passion. I love to bring happiness and love to them, especially the veterans. Some programs we offer are The Grow to Share Garden, Animeals, Congregate Dining, Meals on Wheels, and Volunteer Center Transportation. During the day, if you can't find me in the office, I am usually in our Congregate Dining Hall and Grow to Share Garden. My job is fun and

flexible. I don't have to be at my desk all day to make an impact and bring happiness. Within the League, I’m currently the Star Liaison for Dancing with the Stars. This means I do a lot of communicating with the dancers and dance studios. This is an ongoing process until we reach the actual DWTS event on March 4, 2022. My CEO and President of Nutrition & Services for Seniors (Meals on Wheels) is actually a sustainer for the Junior League. She is very supportive when I have to make a phone call for Dancing with the Stars or other JLB opportunities. With that being said, I love to see my JLB sisters at my job volunteering! Do you know that there are several Junior League members that deliver meals regularly? You can too! Just call me at (409) 892-4455 and we can get you set up to deliver meals. Nathan and I decided when we started to have kids that we would sit down every night as a family and eat supper rather than focus on balancing bath time and reading books. It's my favorite part of the day to just sit on the couch with my family, enjoying the small moments. Our life isn't perfect, but it's wonderfully made.

alentine’s Day is definitely a day for all things pink, and this is the must-have pink drink that you’ve got to try! Whether you’re having a “Galentine’s” gathering with your favorite girlfriends or a romantic dinner at home for two, this Valentine’s Day themed drink is the perfect combination of cocktail and dessert in one! Made similarly to a traditional float, this drink is simple to create and takes few ingredients to make. You can let the sorbet melt as you sip on the champagne or dig right in with a spoon. It’s also perfect for a brunch, shower, or girls’ gathering and can be easily swapped for clear champagne and any color sorbet and fruit to fit a different theme. No matter what spin you put on it, this simple cocktail is festive, classy, and will be your new go-to party drink!

• 1-2 scoops raspberry sorbet • 1 cup pink champagne • Fresh raspberries for garnish

In a cocktail glass, place one or two scoops of raspberry sorbet. Pour the pink champagne directly over the sorbet to fill up the glass. Lastly, finish it off with some fresh raspberries. CHEERS!

n November, Mo Molfino was the guest speaker at the monthly Transitioning Youth gathering. He spoke to the kids about programs available to them after their transition out of foster care, such as living arrangements (specifically for the girls living at Girls’ Haven).

In December, Kenietha spoke to the kids about the importance of personal hygiene. All of the kids in attendance received several gift cards that were graciously donated by current committee members and sustainers. or most of my childhood and young teen years, I lived in Atlanta, Georgia, which is where I was born. My entire family is from Atlanta, so, although I have lived in Texas since I was sixteen years old, I still have a fondness for my home state of Georgia. After graduation from Hillcrest High School in Dallas, Texas, I attended Baylor University, where I was a music major in the study of organ performance. I furthered my passion for music and the study of organ by attending the University of North Texas, where I received my Master of Music Degree in Organ Performance. One day, while I was a student at UNT in Denton, classes were closed due to snow and ice. I met my husband, Michael, that day in a parking lot while scraping ice off my windshield. That was the most special day of my life! I have been married to Michael J. Truncale, United States District Judge, for over forty years! I have been fortunate to work in the field that has been my passion since my youth. Since the age of nineteen, I have been a church organist/pianist in various churches and denominations. I also served as a music teacher at Christ the King Catholic School in Dallas, St. Anne Catholic School in Beaumont, Trinity Preschool in Beaumont, and

in the Beaumont Independent School District. Mostly, I have enjoyed my career as a church organist/pianist, and, for the past twelve years, I have been the parish organist/pianist at St. Jude Thaddeus Catholic Church.

granddaughter, McKenna, and her parents, Lauren and Alex Weston. Additionally, I enjoy traveling with my husband. Recently, we traveled to French Polynesia to celebrate our fortieth anniversary.

Typically, I play for three services each weekend, choir rehearsal on Wednesday nights, special services, weddings, and funerals. Although my work as a church musician is employment, it has brought immense joy to my life more than I could ever express.

I joined the Junior League of Beaumont in 1988 and developed many friendships and fond memories. Two of my favorite placements were Chair of Reservations for Lagniappe and Chair of Arts Related Curriculum. In addition to my involvement in the League, I held offices in the Symphony League of Beaumont, including fourth vice-president and recording secretary. I was president of the Golden Triangle Republican Women and president of Delta Delta Delta Alumni of Beaumont. I was also active in the Greater Houston Federation of Republican Women and the Texas Federation of Republican Women.

When our daughters were young, I was heavily involved in their school and extracurricular activities. I also supported my husband’s professional and civic activities. Chicken No-Parmesan

t the start of a new year, people often look for ways to make healthier choices in their day to day lives, whether that means changing your diet, finding a fun physical activity, getting better quality sleep, taking time to practice better self-care, or even stepping away from your digital devices. The list of resolutions can be endless. When it comes to making healthier eating habits, no one makes it easier than the fabulous food blogger of “The Defined Dish” from Dallas, Texas, Alex Snodgrass. She has two cookbooks, a food blog, as well as an amazing Instagram account where you can find all kinds of healthy meals with grocery lists, ingredient substitutions, recipes, step-by-step instructions, and videos. One of her best dishes is the “Grain-Free Chicken No-Parmesan,” which is a much healthier version of the classic Italian chicken-parmesan entrée. This meal can also be adjusted to a paleo or Whole30 dish, so you can keep your dinner health-conscious without compromising on flavor! Paired with a side of veggies or salad, this dinner will be a hit in your kitchen!

Ingredients • • • • • • • • • • • •

4 (8oz.) boneless, skinless chicken breasts 2 large eggs ¾ cup almond flour ½ cup tapioca starch 1 tsp. dried parsley 1 tsp. garlic powder 1 ½ tsp. salt ½ tsp. black pepper ½ tsp. paprika ¼ cup extra virgin olive oil 1 cup store-bought marinara sauce 1 (8oz.) ball fresh mozzarella, torn into 1-in. pieces (omit for dairy-free, paleo, Whole30) • Fresh basil leaves for garnish

Instructions:

Preheat your oven to 375 degrees. In a medium bowl, whisk together the eggs and 1 tablespoon of water until well blended. In a separate medium bowl, combine the almond flour, tapioca starch, and spices. Cover each chicken breast with parchment paper, then use a meat mallet to tenderize each piece until approximately half inch thick. Once tenderized, dip each chicken breast in the egg mixture to coat, then dredge both sides in the almond flour mixture, shaking off excess. In a large skillet, heat olive oil over medium-high heat. Cook each chicken breast until golden brown and cooked through (approximately 4-5 minutes per side). Transfer cooked chicken breasts to an oven-safe dish or skillet. Ladle ¼ cup marinara sauce over the top of each piece of chicken, then sprinkle the cheese on top, if using. Cook in the oven for 12-15 minutes until the cheese is melted and the sauce is bubbly. You can broil at the very end to really melt the cheese! Remove from the oven, top with fresh basil, and serve immediately. ENJOY!

Letter from the Co-Chair ain Street Market wrapped up a successful year under the leadership of Katherine Williams. M The committee collaborated, bringing together new ideas and traditions to create a shopping environment that was both profitable for the vendors and exciting for the shoppers, while raising money to benefit the community programs that the Junior League of Beaumont supports.

Main Street Market opened the doors on Thursday afternoon, highlighting a wine and whiskey pull and the well-loved Dots for Diamonds drawing. On Friday, a luncheon was hosted at The Laurels and featured keynote speaker Eliza VanCort. Eliza focused on emotional intelligence, transformative communication, women empowerment, and authentic networking. On Saturday morning, children gathered in the lobby for Breakfast with Santa, and the afternoon was filled with performances from local dance studios and choirs. If you had to pick a cocktail/coffee that best describes you, what would it be and why? I think that my boldness makes me think about dark roast coffee. I have had to tame the boldness over the last several years. Anything you think others would be surprised to learn about you? I’m not sure what would surprise people about me, but I’m such an open book that whatever you want to know, just ask, and I’ll tell you.

Favorite thing about SETX: I love the small town feel of Beaumont. I feel a strong sense of connection and community here.

Favorite thing about SETX: There’s so many things I love about SETX, including our friendly culture. As an educator, my favorite thing is our strong higher education opportunities. We have a fast growing research university and several associate and technical institutions. Our higher education system has allowed our community to produce trailblazers and innovators that have made our area so resilient.

Which accomplishments are you the most proud of? I am proud of the foundation I set up for my children when they were younger, despite all of our hardships during that time. What is the best advice you’ve ever received? Parenting advice I’ll never forget is to “just love them.” What is the last show you binge watched? I love to binge watch House. Who would you want to play you in a movie about your life? I’m not sure what actress I would want to play me, but someone that could accurately show my genuineness along with a slightly smart mouth, lol. What inspired you to join the League? I joined the League to be a part of a group of women that supported each other and the community. 26

What are you currently watching/reading/listening to? I will not bore y’all with my doctoral books I am having to read, but my current book is The Many I Knew: The Amazing Story of George H.W. Bush’s Post-Presidency. I usually read a lot of historical and political books as a political scientist for “fun.” I also just binge watched Selling Sunset on Netflix. What are you looking forward to this year in the League? I am looking forward to us continuing our 75th Anniversary volunteer hours campaign. This goal is a fantastic reminder of why we are in the League. It allows us to encourage each other to get out in the community and make an impact. I am really excited to see how far we surpass our goal. I am also looking forward to seeing the O.N.E. take off. The past two committees have done a wonderful job and have represented the League’s mission so well.

What is one thing you cannot live without? I couldn’t live without my faith and my church, Encounter Church. I have found so much purpose and have developed such a deeper understanding of the Lord because of Encounter. I also KNOW this sounds silly, but I cannot live without my cat, Perry. I adopted Perry when I moved by myself to Austin to work for the Speaker of the House in the 84th legislative session. He’s been my best bud ever since then and I am 100% confident I could not live without him. What did you aspire to be as a child? I always wanted to be an educator or work in politics. I am so blessed that I’ve been able to do both! What is your dream vacation? I have been blessed to have already been to my dream vacation spots around the world. My current top vacation is a Mediterranean cruise with extended time in Italy. I am hoping to make this my graduation trip when I finish my doctorate. What is your favorite dessert? Anything chocolate, especially brownies! If you could sit down with anyone, fictional or historical, who would it be and why? Sandra Day O’Connor. Sandra was the first woman ever appointed to the United States Supreme Court, the first female majority leader in a state legislature, and was also the president of the Junior League of Phoenix. I would like to sit down with her and talk to her about her political and judicial careers, understand her challenges and success as a trailblazer, and understand her perspective on some of the landmark cases she ruled on. I would also love to talk to her about her philanthropic work and how she believes the Junior League could help our generations to come.

My mother Anna Maria Brown, Nancy Neild, Iris Nathan, Cinnie Norvell, Barbara Quinn, Susan Simmons, Barbara Barron, Sally Bundy, Marleen Swerdlow, and many more who were changing our world through their dedication to the Beaumont Art Museum, scholarships to Lamar, support of a children’s symphony concert, Schelsinger’s Geriatric Center, the JLB Horseshow, Lagniappe, and so much more. What projects/roles were you involved in when you were in the JLB? Lagniappe Chair, Southeast Texas Family Resource Center, Art Museum of Southeast Texas, Family Health Clinic, Texas Energy Museum, Spindletop Gladys City Museum, Community Emergency Funding. What was your most memorable service project/ favorite memory from your time in the JLB? The collaborative effort with ExxonMobil, City of Beaumont, Beaumont Independent School District, Rita Ashley, and Barbara Barron for creating the Southeast Texas Family Resource Center in the Charlton Pollard neighborhood. What community service organizations are you involved in currently? Junior League of Beaumont, PEO, I Have a Dream, Gift of Life, Leadership Southeast Texas, Spindletop Gladys City, Rotary Club of Beaumont. What leadership skills did you learn by serving in the Junior League of Beaumont, and how have you applied these skills to your current community service projects? The importance of strategic planning, transparency, documentation, partnerships, short meetings, and concise, solid meeting minutes. Why is community service important to you? Community service glorifies every entity that is already in existence, or in its planning stages. What advice would you have for someone looking to make a difference in their community? Join the Junior League of Beaumont!
