Instructions - Loaf Cake

1. Preheat oven to 350°F. Grease and line a standard loaf pan with parchment paper. 2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. 3. Add eggs one at a time, mixing well after each addition. 4. Stir in sour cream, milk, lemon juice, lemon zest, and vanilla extract. 5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. 6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. 7. Toss the blueberries with 1 tablespoon of flour to help prevent sinking, then gently fold them into the batter. 8. Pour the batter into the prepared loaf pan and smooth the top. 9. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean. If the top browns too quickly, loosely cover with foil during the final 15 minutes. 10. Preheat a grill or grill pan to medium-high heat. Brush the chicken breasts with olive oil and season with salt and black pepper.
