Artichoke and Lemon Pasta Ingredients: 2-1/2 tsp. salt, divided 1/2 lb. asparagus, cut into 1-1/2-in. pieces 4 cups bow tie pasta (about 12 oz.) 3 tbsp. olive oil, divided 1 can (14 oz.) quartered artichoke hearts, drained 2 garlic cloves, minced
1 cup crumbled goat cheese 2 tbsp. minced fresh parsley 1 tbsp. grated lemon zest 1/3 cup grated Parmesan cheese 2 to 3 tbsp. lemon juice
Directions: Bring water to a boil in 6-qt. stockpot. Add asparagus; cook, uncovered, 1-2 minutes. Remove asparagus and drop into ice water. Drain and pat dry. In same pot of water, cook pasta according to package directions. Drain, reserving 1 cup pasta water. Return pasta to pot. In a large skillet, heat 1 tbsp. oil over medium-high heat. Add artichoke hearts; cook and stir 3-4 minutes. Add garlic; cook 1 minute longer. Add to pasta. Add asparagus, goat cheese, parsley, lemon peel, lemon juice and the remaining salt and oil; toss to combine, adding enough reserved pasta water to coat. Heat through. Serve with Parmesan cheese.
