An Oscar isn’t the only gold that demonstrate Matthew’s success. In April 2018, Matthew introduced his own whisky, Wild Turkey Longbranch. This liquid gold is created using eight-year-old bourbon that has undergone a double filtration process of white oak and Texas mesquite charcoal.

Launched in 2009 and re-launched in 2014, Sauza 901 was named after Timberlake’s hometown postcode. It is claimed that Timberlake developed an interest in tequila on a trip to Mexico.

After purchasing Aviation Gin in 2018, the brand was featured across social media and even included a few posts with our very own Hugh Jackman. The gin is also served in Virgin Atlantic airlines after a deal was signed with Sir Richard Branson.

FARM HAND ORGANIC SHIRAZ The Farm Hand wines are grown by the Grigoriou family, fourth generation wine growers, from almost one hundred acres of Organic Vineyards in the Monash Valley of South Australia.

FERNGROVE BLACK LABEL MALBEC On the nose is bright red berry fruit, cherry rip and just a hint of fruitcake with a touch of spice. A mid-bodied Malbec with generous, full tannins and a slight herbal note. A typical Franklin River Malbec with an abundance of flavour and enjoyable persistence. BAROSSA VALLEY ESTATE GSM Grenache Shiraz Mourvèdre is a beautiful combination of these three majestic grape varieties perfected in a true Barossa Valley style. Upon completion of fermentation, the wine was racked and underwent malolactic fermentation. It was then aged for 12 months in French oak barrels to impart a softness and texture, and enhance bouquet, varietal character, elegance and structure.

ST AMAND CABERNET SAUVIGNON HENSCHKE PEGGY'S HILL RIESLING Peggy’s Hill Riesling from the famed Henschke family is bursting with vibrant citrus, white florals and zesty lime flavours. Its natural crisp acidity and fine mineral purity are developed over warm sunny days and cool nights in South Australia’s Eden Valley to reach perfect and delicious ripeness.

The nose is inviting and ripely fruited, all bright red-berried fruit, plums and sweet spice with a hint of savoury oak. The palate is medium bodied and approachable with a dark berry and cassis flavours framed by soft tannins.

St Amand Coonawarra Cabernet Sauvignon is showing good colour with distinctive Cabernet characters of cassis, blackberry and plum with minty notes, this classic regional varietal is characterised by velvety and elegant tannins that deliver a lingering and smooth finish.

SPRING VEGETABLES WITH POT-ROASTED PEPPER-CRUSTED LAMB SHANKS LAMB

PERFECT MATCH

INGREDIENTS (SERVES 4) • 1/4 cup (60ml) buttermilk • 1/4 cup (70g) low-fat thick Greek-style yoghurt • 1 tablespoon red wine vinegar • 1/4 cup (60ml) olive oil, plus extra to drizzle • 550g lamb backstrap • 1 tablespoon Dijon mustard • 1 tablespoon mixed peppercorns, coarsely ground • 100g broccolini • 100g green beans • 100g podded broad beans • 100g podded peas • 8 spring onions (white part only), sliced on an angle • 2 radishes, thinly sliced

ENZED PINOT NOIR

METHOD STEP 1 Preheat oven to 200°C. Place the buttermilk, yoghurt, vinegar and 2 tablespoons of oil in a bowl, season, then whisk to combine. Set aside.

STEP 3 Coat in pepper, then place on a baking tray and roast for 6-7 minutes until cooked through. Cover loosely with foil and rest for 5 minutes, then thickly slice.

STEP 2 Heat the remaining 1 tablespoon oil in a large frypan over high heat. Season the lamb and cook for 1-2 minutes each side until browned. Cool slightly, then brush all over with mustard.

STEP 4 Meanwhile, bring a large saucepan of water to the boil. Add broccolini, beans and peas, then cook for 4 minutes or until just tender. Drain, then toss with the spring onion and radish. Divide the salad and lamb among plates and serve with the dressing.

A full flavoured medium bodied wine, with great length and solid structure, offering soft cherry and plum like ripe Pinot Noir flavours, complemented by fine grained tannins and attractive lingering French oak characters. It provides immediate drinking pleasure, or alternatively, it will continue to gain complexity with up to 5 years cellaring.

The free-run juice is cold settled to partial clarity, followed by a slow, temperature controlled primary fermentation at 14°C for several weeks to develop the elegant, assertive flavours in the base wine. The base wine (Cuvée) is then inoculated with a neutral yeast to undertake a secondary pressure tank fermentation to develop the naturally delicate, finely bubbled palate and refreshing finish in the wine.

This wine displays rich dark cherry fruit characteristics with hints of spicy incense and underlying dusty oak aromas on the nose. This is a medium-bodied wine with flavours of maraschino cherry, plums and subtle spice along with well-integrated savoury French oak. There is a pleasing soft and silky texture to the mid palate and the wine has a long, persistent finish.

TASTY TRAVELS Eat, drink and be merry across the globe with these food and wine festivals that are mandatory on any self-respecting foodie’s bucket list.

SAN DIEGO BAY WINE & FOOD FESTIVAL Every November, some of the most passionate wine and food lovers head to Southern California for the region’s largest festival of its kind. This festival has a knack for attracting some of the best national chefs, local culinary stars and celebrated wine makers.

FOOD & WINE CLASSIC IN ASPEN For close to forty years, chefs, the media and devoted foodies have been travelling to Aspen, Colorado, for a culinary celebratory weekend in June. The festival features more than 80 cooking demos, culinary talks and wine seminars and you can peruse, taste and sample creations by some of the best new chefs.

VENICE FOOD AND WINE FESTIVAL If the fact that this food and wine festival is held on a private island in Venice isn’t enough to persuade you, the promise of Michelin-starred and James Beard Award winning chefs will. For four days in May, visitors enjoy chef-led demos, cooking academies, wine tastings and fabulous dinners by culinary luminaries.

SALON DU CHOCOLATE For five days in late October and early November, Paris hosts around 60 countries from five continents in this massive exposition dedicated to chocolate. Indulge your deepest chocolate fetish with some of the most renowned industry leaders and pastry chefs from around the world.

IT’S HARD TO BELIEVE THAT THIS WAS ONLY FIVE YEARS AGO. SINCE EDWARDS BLAZED THE TRAIL WITH ARCHIE ROSE, THERE’S BEEN A PLETHORA OF EXCEPTIONAL DISTILLERIES OPENING THEIR DOORS AND TREATING US TO THEIR SUBLIME SPIRITS. ARCHIE ROSE DISTILLERY ROSEBERY

DISTILLERY BOTANICA ERINA

During a time when craft beer was the toast of the town, Archie Rose Distillery went against the grain to open Sydney’s first new distillery since 1853. Since then, their limited-edition gins, vodkas and whiskies have gained a loyal following. These guys have perfected the art of pairing the time-honoured tradition of hand-crafted spirits with delicious eats from some of the city’s best producers.

Savouring his Distillery Botanica has been described as “feeling like strolling merrily through a summer garden”. This can be contributed to the fact that all the botanicals for this ingenious spirit is sourced from the distiller’s very own garden in Erina on the Central Coast of NSW. To get the most out of the plants, he uses a 1000-year-old technique known as ‘enfleurage’, which involves placing the flowers on a layer of coconut oil, into which their fragrance diffuses over two or three days, creating the purest possible perfume. You’ll appreciate the scent as soon as the glass reaches your hand.

BRIX DISTILLERS SURRY HILLS Brix is the first craft distillery dedicated to rum in Sydney’s inner city in a long time. It’s more than a bar - it features a fully working distillery with an Australianmade 1200-litre still. Apart from their own fabulous creations, the venue has a ‘rum wall’ with over 150 varieties from around the world on offer. Their cocktail list reflects their passion for rum with options like Mojitos, Piña Coladas and Daiquiris, and more inventive creations like the Bitter & Twisted and the Pash the Distillery.

MANLY SPIRITS CO. MANLY Since April 2017, Manly Spirits Co. has been bringing handcrafted Australian spirits to the northern beaches and beyond. Founding couple, David and Vanessa, spent 18 months visiting distilleries across the US, the UK and Europe before setting up their own place in Manly.

ARCHIE ROSE SIGNATURE DRY GIN Archie Rose's carefully crafted Signature Dry Gin uses fourteen traditional and native botanicals, each uniquely infused and individually distilled in their 300L handmade copper pot still.

The Manly Spirits range is inspired by Australian natives, especially those along Sydney’s coastline. The Marine Botanical Vodka, for example, features kelp and sea parsley foraged from local beaches, while the Coastal Citrus Gin is infused with lemon aspen, lemon myrtle, Meyer lemon, sea parsley and coriander. They also offer whiskies and liqueurs plus a snack menu in case you’re feeling peckish.

POOR TOMS GIN HALL MARRICKVILLE Since their inception in 2015, Marrickville’s Poor Toms Gin Distillery has been producing one of the best locally made spirits. It’s so good, that they crowdfunded over $25,000 in one day to make this liquor. But it’s only after three years of operation that owners Griffin Blumer and Jesse Kennedy opened their distillery to the inner west masses. All the drinks are centred around Poor Toms and each gin has its own signature cocktail, which is rotated weekly to keep the locals coming back for more.

Deep cherry colour that suggests a young and vibrant wine. Nose is rich in aromas and pronounced in intensity. We are struck by the ripe red fruit, later we get the wood nuances with gently sweet notes of vanilla to finish with other sweet spices. On the palate it is perfumed, soft and fresh with a long finish that leaves memories of red fruit, vanilla & cocoa.

Fruit is gently pressed to extract the most delicate juice. The pressed juice is fermented in both tank and cask for freshness and complexity and aged on lees to enhance the minerality and nuances of the base wine. Approximately 30% each of two vintages and 40% Reserve Wine. Base wines kept on fine lees, blended and Charmat to bottle.

COMING UP ROSES Blush is back! All around the world, rosé is becoming increasingly popular - especially over the warmer months. In France, it now eclipses the sale of white wine and, rumour has it, Sting gulps down litres of this pink elixir during his live performances. Here are a few things you might not have known about it.

THE WAY THEY MAKE ROSÉ

RED CARPET ROSÉ

Rosé is made from red wine grapes with the skin left on. The colour is determined by how long the juice remains in contact with the skins. Rosé can be made from most red wine grape varieties, however the most popular are Shiraz and Pinot Noir. The colour does not necessarily reflect its taste profile – in fact, it is unlikely to be able to guess the shade of a rosé while blindfolded.

Brad Pitt and Angelina Jolie Pitt acquired a French winemaking estate in 2012. Their first batch of Miraval Rosé sold out in five hours! They’re not the only celebrities with their names bedazzling rosé labels – other stars like Drew Barrymore, John Legend and Bon Jovi are also associated with this pink drink. In fact, Rosé is the beverage of choice for the infamous English personality, Lisa Vanderpump, which is claimed to be the reason behind the increasing popularity of Rosé in LA.

THE MIXER’S MATCH Rosé is commonly used as an ingredient in spring and summer cocktails. Rosé Spritzers, Sangria, Daiquiris and Cobblers are becoming increasingly popular among mixologists.

ANCIENT WISDOM Rosé may have been the first wine ever created in approximately 700BC. The Greeks believed that pink wine was superior to white or red.

DARE TO PAIR Rosé breaks the rules when it comes to flavour profiles. The versatility of Rosé means it can be paired with any kind of meal including fish, vegetables, chicken, pork and even chocolate.
