Chef Benjamin Chmura, the renowned culinary artist from TANTRIS Restaurant, will bring his exceptional gastronomic expertise to the InterContinental Maldives from 14th to 20th February 2025. Known for his innovative approach to blending traditional and contemporary flavors, Chef Chmur’s residency promises a unique culinary experience.

Thanos Feskos, Delta’s head chef, excels in experimental cuisine. Over the festive season, he will exclusively be cooking at Intercontinental Maldives, bringing his innovative cuisine to the paradise destination. He leads a team presenting a 12-stage menu featuring innovative fermentation and Scandinavian preservation techniques.
Originally studying financial economics, Thanos discovered his passion for cooking during his military service. After culinary studies and local restaurant jobs, he interned at a restaurant aspiring for a MICHELIN Star. He then worked at the MICHELIN- starred Geranium for three years in various kitchen roles, including patisserie. Following a brief stint at Hytra in Athens, he returned to Geranium as Assistant Head Chef. Now, he oversees the menu at Michelin Star Delta Restaurant.

UK-born Chef Nelly Robinson joins the resort’s culinary team this September.
No stranger to the critiques of The Guide Michelin and Gault & Millau, Robinson creates mouthwatering dishes with innovation and local hooks in his well- accolated restaurant ‘NEL’ in Sydney. His dishes leave room for imagination and anticipation when innocent names of a dish turn into an explosive culinary journey, not just for the taste buds but also for the eye:
Indulge in Kingfish Firebark, Wildfire Spiced Barramundi, or Chef Nelly’s take on Kedgeree, to name just a few of them, naturally fusing into the ocean-inspired setting. Also, lamb, local lobster and truly interesting vegetarian creations are on his delectable menu set at The Lighthouse.

Guests of Maamunagau Island can look forward to be amazed by some serious sushi art, brought to InterContinental Maldives by Pepi Anevski. Chef Pepi is one of the Sushi Rockstars, being awarded with the title of World Sushi Champion and World’s most creative Sushi Master. He has been making – or rather crafting – Sushi all around the world and is visiting our shores this April.
“Sushi is much more than a food creation. Its more of an art which by understanding and respecting the core products gives you amazing results,” Chef Pepi. During his residency from 2nd to 8th April 2023 Sushi Master Chef Pepi will offer an exciting Sushi focused a la carte menu at Café Umi.

Her cuisine is full of stories, a passion for excellent ingredients and a love for food. Her dishes are inspired by her upbringing on the Mediterranean shores, combining traditional flavours with modern cooking. Chef Cristina Figueira, a Michelin-starred powerhouse, raised a small local restaurant in Alicante to culinary heights, and will share her passion for good food with Maamunagau’s guests during several dinner events.
