A pintxos tour is the easiest way to tap into the local rhythm: you move from bar to bar, try one or two dishes at each spot and pair them with a small glass of cider or txakoli, the region’s crisp white wine. The Old Town is the heart of it, with places known for standout dishes like slow-cooked beef cheeks, fresh anchovies or grilled prawns done right in front of you. It is casual, social and full of flavour, and it shows why San Sebastián keeps topping lists for Europe’s best food experiences.

The Big Apple does Christmas better than anywhere else. Who were your travel buddies?

It is unlike anywhere else on the planet. We were drawn to its raw beauty — the white, the blues, the scale of it all. You think you know cold or quiet until you get there, then suddenly you realise you’ve never experienced anything like it. For us, it was about seeing wildlife in its purest environment and feeling that sense of “I can not believe I’m actually here.” It really is one of those bucket-list moments.

The atmosphere onboard was incredibly social — lots of well-travelled people, all buzzing with excitement. Most passengers were between forty and fifty, but it felt like a real mix of backgrounds and travel styles.

How do you get there from New Zealand? It is a journey. We started with a 12-hour flight to Santiago, then another two hours to Buenos Aires, and finally a 3.5-hour hop down to Ushuaia — the southernmost city in the world. From there we boarded the Seabourn Pursuit for our expedition cruise. I’d recommend breaking up the long travel days with overnight stays in Santiago and Buenos Aires because both cities are worth exploring. What is the Drake Passage really like? The Drake is famous for a reason, and you definitely feel it. We sailed out through the Beagle Channel and into the Drake the next morning. Normally the crossing takes two days but we made it in about 36 hours.

What happens once you reach Antarctica? Everything shifts the moment you see your first iceberg. From day three, our days followed a rhythm. If we landed on the ice in the morning, we’d be out on the zodiacs in the afternoon, and vice versa. It never got old — stepping off the zodiac onto the ice gave me goosebumps every single time.

The colours surprised me most. Antarctica isn’t just white; it is layers of soft turquoise, deep cobalt and icy silver. And the wildlife is right there. Our first Gentoo penguins waddled up to us on their “penguin highway” even though we were meant to keep about fifteen feet away. They were so curious, almost as if they were checking who had come to visit.

Surprise and delight around every corner. little classroom. And the daylight — that shocked us too. About twenty hours of sun a day, then four hours of gentle twilight. Even at -2°C, it felt surprisingly manageable because you’re so busy taking it all in.

Did you cross the Antarctic Circle? We were incredibly lucky. Seabourn’s route is flexible depending on weather and opportunities, and we managed to cross the Antarctic Circle. They even gave us a certificate which was such a cool memento. What were the standout activities? There were so many. Kayaking among the icebergs was surreal, like gliding through a sculpture garden. The submarine ride was a highlight too — seeing the world beneath the ice is something I’ll remember forever. And we did the Polar Plunge. “Refreshing” is an understatement. It is thirty seconds of pure adrenaline, but absolutely worth it for the bragging rights. Is there one moment that stands out most? Yes. During one zodiac outing our driver switched off the engine and asked everyone to stay silent. Suddenly you could hear the crackle of the ice and the soft flap of a gull’s wings. It felt like the world had paused just for us. That stillness is something I’ll carry forever.

The technical explanation … the lights occur when charged particles from the sun (thanks to solar winds) interact with Earth’s magnetic field. As these particles hit the atmosphere, they collide with gases like oxygen and nitrogen, causing them to emit light in a range of colours lighting up the night sky. And in layman’s terms … the Aurora Borealis are an otherworldly lightshow, a watercolour painting of vivid colours—greens, pinks, purples, and sometimes reds that light up the night skies and astonishes anyone lucky enough to stand beneath!

While the auroras can be unpredictable, there are certain times and conditions that increase your chances of witnessing this phenomenon. W H E N TO G O

Iceland’s location, just below the Arctic Circle and close to the North Pole, and with its vast open spaces and minimal light pollution, the chances of witnessing the lights are enhanced due to the optimal viewing conditions. While the Northern Lights can theoretically be seen from anywhere in Iceland, it’s best to get away from the bright city lights of Reykjavik.

CANADA

Norway is another top spot, and Tromsø known as the ‘Gateway to the Arctic,’ is a favourite offering some of the most reliable Northern Lights sightings. Tromsø is perfect for aurora hunters who are looking for both convenience and adventure – highly recommend taking the Fjellheisen cable car for panoramic views of the lights.

SWEDEN

ALASKA

Alaska is one of the best viewing places in North America and the town of Fairbanks, with its dedicated Aurora Ice Museum, is a prime spot. Or head to the top of Charlie Dome Mountain where you’ll have 360° unobstructed views from your Mongolian style yurt.

Sweden’s Abisko National Park, known for its ‘Blue Hole,’ a patch of sky that tends to stay clear even when surrounding areas are cloudy, is the place to be! Or choose to stay in the famous ice hotel in Jukkasjärvi or the small town of Kiruna, surrounded by wilderness, is another good option and offers plenty of other activities like snowmobiling and ice fishing.

A journey that stays with you

For House of Travel’s Dave Fordyce, Gallipoli was more than a trip, it was a personal pilgrimage. With a family connection to one of the Kiwi soldiers who fought there, Dave travelled to the Gallipoli Coast in Turkey (Türkiye) to experience the ANZAC commemorations firsthand. What he discovered was a place of deep emotion, respect, and connection that every New Zealander should experience at least once.

What made you want to visit Gallipoli? Since I found out my great-great-uncle Albert served at Gallipoli (and survived), I’ve always wanted to be there for dawn on the 25th of April. How did it feel arriving for the first time? Walking in around 1am felt incredible. But the real moment was reaching ANZAC Cove itself, where about 2,000 people were already set up, documentaries were playing, and both the New Zealand and Australian military bands were performing. True goosebump stuff. What was the atmosphere like at the ANZAC sites? Very reflective. While there were lots of people at ANZAC Cove, the ceremony was simply incredible. Walking up to Chunuk Bair, you had time to be on your own or with your family, visiting sites along the way and taking it all in.

Was there a particular spot or experience that moved you most? At Chunuk Bair, at the New Zealand memorial, there was first a haka and then Amazing Grace performed in both English and Māori. It tugged at the heartstrings and brought tears to my eyes — even now, I’m welling up thinking about it. You can’t help but reflect on what it must have been like for those “boys” on both sides, and the mutual respect our countries now share. It was also moving to think about how Gallipoli marked the beginning of our nation stepping out from under the umbrella of “Mother England”. Being there with my family made it even more special. Describe that goosebump moment. Watching ANZAC Cove slowly come from darkness to light over an hour or so — the stillness and calm really hit me. How did you get there and what was the journey like? We joined an overnight Intrepid tour from Istanbul, which was fantastic. For ANZAC Day itself, I think a tour is the only way to do it. They handle all the logistics — and there were plenty — and being part of a group made it even more special.

THE TEMPERATURE SWINGS ARE REAL — it’s freezing before dawn and warm by mid-morning, so pack layers you can peel off easily. DON’T FORGET THE ESSENTIALS — a hat, sunscreen, and comfortable walking shoes for exploring the memorial sites and rugged terrain.

What stood out about the landscape? I knew a bit about the Dardanelles, but the ruggedness of the terrain really stood out. And the pine trees … at one point I thought I could have been somewhere in the North Island. What surprised you most about being there? Just how many people were there. It was the 110th anniversary, and over 2,500 people were camped out in the cold under the stars, sharing the experience. They came from all walks of life and all ages, much like the ANZACs themselves. How did it feel seeing the Kiwi memorials in person? It was an honour to be there. A real pinch-me moment. I felt so proud at the New Zealand memorial at Chunuk Bair, and the service there was incredibly special. It left me feeling proud but also deeply sad. Was there a chance to learn more about the stories behind the names? There were a few documentaries before the dawn service that really brought it to life. And on the way up the hill, there’s a beautiful Turkish memorial that’s particularly poignant — we can’t forget that tens of thousands of Turks also died defending their homeland.

What’s the experience like outside the commemorative sites? Security is understandably tight — Princess Anne, the Australian Governor-General and our Prime Minister were all there — so there wasn’t much opportunity to explore outside the tour. But if you visit outside ANZAC Day, there’s plenty to see nearby. Çanakkale, across the Dardanelles, is a great little town, and the ancient city of Troy is also fantastic. Would you say Gallipoli is best experienced on ANZAC Day or another time of year? I’m lucky enough to have done both, but hands down, ANZAC Day was the best — an extraordinary experience. What other places in Türkiye did you combine with Gallipoli? Just Istanbul this time, but years ago I spent five weeks travelling around Türkiye. It’s one of my favourite countries in the world — the people are so hospitable, the food is superb, and the landscape and culture are amazing. How would you describe Gallipoli in three words? Lest we forget.

If you love an active holiday with a bit of fire in it, cycling the Dalmatian Coast in Croatia is as good as it gets. Over one unforgettable week you’ll pedal from Split to Dubrovnik, tracing a coastline of terracotta towns, island villages and the clear blue Adriatic. It starts in the seaside town of Kastel Kambelovac, where you can ease into the rhythm of the ride with views across the bay. South Australia’s Shiraz Trail is a McLaren Vale classic — an 8km ribbon of old rail corridor that meanders from McLaren Vale to Willunga through rows of vines and open countryside. Head northeast near Railway Terrace to join the Flat to Vale Trail, a 3.6 km scenic route perfect for families and easy riders, with cellar doors waiting along Foggo Road. With e-bikes, vineyard tastings, charming cellar doors and rolling hills, it’s hard to imagine a better way to spend the day. Toulouse is often referred to as ‘Paris in miniature,’ a maze-like city and a great place to start your canal boating adventure. Overflowing with art galleries and excellent food, make sure you shop for a picnic of local produce at Marche Victor Hugo or grab a cassoulet lunch at an eatery above the covered market before you set off. HOT TIP: The 9 locks of Fonseranes (also known as the Octuple) in Beziers is a Canal du Midi must-do and a great way to end your canal boating journey. Best to go outside of the height of Summer to avoid the crowds.

The Inca Trail in Peru is one of the world’s great walks, a high Andean journey that follows ancient stone paths once used by messengers of the Inca Empire. Over four days and three nights you will cover about 40 kilometres, much of it steep, and all of it unforgettable. The scenery shifts constantly as you climb: misty cloud forest, deep valleys carved by centuries of wind and water, and a string of Incan ruins that appear like breadcrumbs guiding you towards Machu Picchu. The higher you go, the more the Andes open up around you. It is challenging in parts, especially at altitude, but every person who completes it says the views and sense of achievement are worth each step.

In the mist-covered southwest of Uganda lies Bwindi Impenetrable Forest, ancient, untamed and breathtakingly beautiful. This remarkable rainforest is one of the last strongholds of the endangered mountain gorilla, and stepping into it feels like entering another world.

Your adventure begins in Cusco, a beautiful colonial city that deserves time. Stay a few days to acclimatise or settle in with a glass of chica, the traditional yellow maize brew that locals have enjoyed for generations.

Carefully protected and limited to small groups, you are not observing wildlife, you are being allowed into their world, briefly and respectfully. Gorilla trekking in Uganda is a rare privilege — some journeys inspire, others transform you. Uganda does both.

HOT TIP: Local law requires all trekkers to have a permit (which are limited) and a licensed guide. Tours can sell out a year in advance, so talk to us early to secure your spot. If you want the wonder without the hike, a scenic train from Ollantaytambo still delivers those soaring valley views.

Gorilla trekking here is nothing short of extraordinary. Guided by expert trackers, you hike through dense forest before coming face to face with a gorilla family in the wild. No barriers, no distractions, just a quiet, unforgettable hour spent in their presence. Watching a silverback guard his family or a young gorilla play in the foliage is deeply moving and impossible to forget.

There is something magical about skiing in Japan. With over 600 resorts from the mainland of Honshu, to the Island of Hokkaido, small parks, knee deep powder, quirky resorts (some with amusement parks) and the charm of resorts such as Nozawa Onsen which are steeped in tradition and history, it’s also home to Niseko, one of the snowiest resorts in the world, with an enviable 16 metres of annual snowfall. On the mountains you’ll enjoy light, dry powder and off them you’ll find remarkable culture and Japanese cuisine. As NZ’s closest country for a Northern Hemisphere snow season, ski December through to April without suffering the dreaded jet lag.

Caters for all ages and abilities One of the snowiest resorts in the world, averaging 15 metres of the lightest and driest powder.

The French Alps delivers a different kind of snow magic. Wide alpine bowls, charming stone villages and long runs define skiing here. Whether you base yourself in the Chamonix Valley an authentic town, home to the stunning Aiguille du Midi at 3842m and the highest mountain in Western Europe or tucked-away corners near the Italian border like Serre Chevalier in the Southeastern France, you’ll be in for a real treat. With lift networks that link entire valleys, you can ski for hours without repeating a run, then wander into a village for fondue, chocolat chaud and that unmistakable French mountain atmosphere. The season runs from December to April, making it an easy Northern Hemisphere escape and you may even bump into a celebrity or two!
