As we move into May and the full rhythm of the season begins to take shape, I’d like to reflect on another of the Club’s guiding value statements:

Exclusive and Inclusive

Exclusive and inclusive are not mutually exclusive. While the Club values exclusivity in its membership, amenities, and services, it also fosters a strong sense of belonging, camaraderie, and connection by embracing diversebackgrounds,experiences,andinterests.

At first glance, those two words exclusive and inclusive may seem at odds. In practice, they are what make Hound Ears so special.

Exclusivity is reflected in the exceptional quality of what we offer. It is seen in the thoughtful reinvestment in our golf course, which many of you are now enjoying following its recent renovation. The attention to detail, playability enhancements, and long-term stewardship of the course reinforce our commitment to delivering a premier golf experience one that is distinctly Hound Ears.

It is also reflected in the caliber of our team.

This month, we are especially proud to recognize a significant professional achievement by our Executive Chef, Nick Davis, who has earned the Certified Executive Chef (CEC) designation from the American Culinary Federation. This is not simply a title—it is one of the most respected and rigorous certifications in the culinary profession.

Few chefs achieve this level of certification, and it represents a commitment not just to skill, but to discipline, consistency, and excellence over time. It is, in every sense, an exclusive accomplishment—and one that elevates the culinary experience for all of us at the Club.

At the same time, inclusivity is what brings our community to life.

This season, we are welcoming a talented group of H2B visa culinarians to support our culinary team. These individuals bring with them diverse training, backgrounds, techniques, and perspectives that enrich

PROPERTY OWNERS’ ASSOCIATION NEWS

Happy Spring! All of the Hound Ears departments have been working diligently around our community to prepare for the spring and summer season. Many thanks to Tom O’Neil, Darryl Eggers, Allen Storie, Sheldon Anderson, Wes Green, and Joe McGuire! Snow removal has been a big project this winter. Even with shortages of salt, the roads were cleared in record time. Landscaping and tree removal are ongoing.

In response to speeding concerns from the community, the POA board has tackled this concern with diligence this year. In addition to using the speed limit signs and flashing speed detector that are in place now, we have visited other clubs and neighborhoods in the area to gain insight and information. Speed humps, not speed bumps, have been recognized as the gold standard for reducing speed in residential neighborhoods. A new community paving plan has been adopted with speed humps to accompany each stage of the plan where necessary. The first two will be installed with the current paving on Dogwood near the Clubhouse.

The POA board is excited to join the Hound Ears Club board in a spectacular decorating project for the entire community in honor of our country’s 250th birthday! We are also encouraging everyone to decorate their home for the occasion. Purchase your decorations early as they are selling quickly! Watch for details to follow.

As a reminder, the POA offers limited Community Appearance grants to “spiff up” areas in the community which are not on private property, but are considered common area. The proposal form can be found on the Hound Ears website under My Club for Members and My Community for Residents and then Club Resources/POA/Community Appearance Proposals.

The annual Hound Ears Community Clean-Up provides an opportunity for residents to tidy their properties and clear out storage areas.

Please note: Paint and chemicals cannot be collected. Residents should place debris piles and unwanted items in their driveway or near the road on their property. Do not place items in the road.

Guidelines:

Bag items when possible

Set items out no more than 24 hours before pickup

Items left after June 11 will incur a charge

Ashton Blume brings a diverse background in nonprofit leadership, real estate, and client service that aligns strongly with the Membership & Marketing AssociateroleatHoundEarsClub.OriginallyfromLexington,SouthCarolina, Ashton recently relocated to the mountains after a successful real estate career and most recently served as Executive Director of a one of South Carolina’s largestwildliferehabilitationnonprofitsinColumbia.Inthatrole,shemanaged donor relationships, developed fundraising campaigns, created social media content, and presented financial and organizational reports to board members, demonstratingbothstrongcommunicationskillsandattentiontodetail.

Throughout her career, Ashton has built a reputation for professionalism, organization, and relationship-building. Her experience managing donor databases, creating marketing content, and coordinating campaigns closely mirrors the marketing and communications responsibilities of this position. In addition, her years as a Realtor required guiding clients through complex transactions while delivering exceptional service skills that translate well to assisting prospective members, conducting tours, and ensuring a welcoming experienceforclubmembersandguests.

Beyond her professional experience, Ashton’s enthusiasm for community and hospitalitymakesheranaturalfitforthecultureofaprivateclubenvironment likeHoundEars.Sheenjoysgardening,DIYhomeprojects,andspendingtime with her fiancé and their fifteen rescue animals, interests that reflect the same appreciation for nature, community, and lifestyle that members value in a mountain club setting. Spring Greetings!

The Golf Shop is excited to kick off the 2026 season. We are well stocked with many of the latest fashions and a full selection of golf equipment and balls. Please stop in for a visit when possible. As before, starting times can be made online, or you may call the Golf Shop at 828-963-5831.

Golf Members can make starting times for themselves and accompanied guests seven days in advance (eight days in advance for Sunday). Regular Members can make starting times five days in advance (six days in advance for Sunday). Golf Members are defined as members who have paid annual golf dues. Regular Members have not paid annual golf dues.

Starting times for member-sponsored guests and family guests not accompanied by the member can be made five days in advance (six days in advance for Sunday). Beginning May 22, a Golf or Regular Member must be included in any starting time until 12:00 p.m. on Friday, Saturday, and Sunday.

Be on the lookout for informative videos throughout the season. In these videos, we will highlight various topics on golf maintenance practices, ranging from proper divot replacement, ball mark repair, and golf cart usage. Additionally, we’ll restart filmed segments on the golf swing and the Rules of Golf. It is our hope that these efforts will be helpful as we continually strive for improvement.

Tournaments of note for May are the Crazy Cobb and a Couples Mixer. The Crazy Cobb is scheduled for May 21. The format is a par-3 challenge, with dinner to follow. Mike and Rene Miller are chairing, so expect another fantastic experience. The Golf Shop will host a Couples’ Mixer on May 31. In this event, pick your own foursome and tee it up in a straight scramble format with the usual fun twists. Guests are welcome, and dinner will follow the competition.

Rule of the Month

USGA Maximum Hole Score – Rule 3.1b: For a player with an established Handicap Index, the maximum score for each hole played is limited to a net double bogey, calculated as follows: par of the hole plus two strokes, plus handicap allowance for the hole.

Example: A player with a course handicap of 17 would have a maximum hole score of triple bogey on every hole except the 18th-ranked hole. On the 18th handicap hole, the player’s maximum score is double bogey. For players without an established Handicap Index, the maximum score per hole is par plus five. The maximum score applies to the highest score allowed for handicap posting purposes, while a maximum score in competition may have no limit.

Tip of the Month

In golf, putting has been referred to as the “great equalizer.”Effective putting can certainly enhance one’s score. While there seem to be endless suggestions on how to become a better putter, the following is a condensed list of common attributes for success:

Set up – Eyes over the ball or the line of the putt. This can be achieved by bending from the hips, with arms relaxed against the body.

Alignment – As with all alignment, aim the putter face in the direction you want the ball to start. Using a line on the ball can aid greatly in this task.

Foundation – Most great putters are very still with the lower body. When watching professionals on TV, they rarely move their legs. If they do, they likely missed the putt.

Even stroke – This implies matching the length and speed of the back and forward motion during the stroke. Achieving an even stroke greatly enhances distance control.

Stay in address position as the ball rolls to the cup. While it is tempting to stand up in anticipation of the outcome, moving early is a major mistake. Being disciplined enough to remain in the address position as the ball rolls out can pay significant dividends.

Exclusive and Inclusive: Fitness That Fits Everyone

Fitness spaces can feel intimidating. If you’ve ever walked into a gym and immediately looked around to figure out if you’re in the right place, you’re not alone.

At Hound Ears, we’re trying to do things a little differently. We talk about being both exclusive and inclusive, which can sound like a contradiction at first. In reality, it just means we care about the quality of what we offer while also making sure people feel comfortable being here, whether it’s their first workout in a while or their thousandth.

On any given day, you’ll see a wide range of people in the fitness center. Some are pushing hard, others are easing back into a routine, and a few are just trying to remember where they left their water bottle. All of that is part of the same environment, and it works because everyone is supported in a way that suits them. That carries over into how we approach programming. Workouts aren’t one-size-fits-all. We can adjust for injuries, experience level, or just how someone is feeling that day. Some days you’re ready to go, some days you’re negotiating with yourself just to get through it. Both count.

A big part of making that work comes down to our staff. They pay close attention, adjust as needed, and ensure everyone feels both comfortable and challenged.

At the end of the day, the goal is simple. We want this to be a place where you can walk in, feel at home, and get a great workout without any pressure to be someone you’re not.

From the Kitchen

As we head into the 2026 season, I am as excited as ever about where we are as a culinary program. We have made significant investments in our kitchen that will directly translate into better execution and consistency for our membership. These improvements include upgraded electrical and drainage systems, a new Rational combi oven, a completely redesigned dish area, and more than triple our previous refrigeration space. While not every piece of equipment was replaced, the overall workflow of the kitchen is now far more streamlined and efficient, setting our team up to perform at a much higher level.

Another major investment this year is the implementation of the H 2B workforce program. We will be welcoming seven culinarians and one front-of-house manager from around the world to complement our core team. This initiative brings not only additional support, but also a wealth of knowledge, diverse culinary perspectives, and renewed energy into our operation.

This program also beautifully reflects one of our Club’s core values: exclusive and inclusive are not mutually exclusive. While the Club values exclusivity in its membership, amenities, and services, it also fosters a strong sense of belonging, camaraderie, and connection. By embracing individuals from diverse backgrounds, we strengthen our culture and enrich the overall member experience. Welcoming team members from around the world reinforces that spirit within our culinary department and allows varied talents and perspectives to come together in service of our membership.

With these improvements, we are positioned to deliver one of the most memorable seasons yet. Our focus remains firmly on quality, consistency, creativity, and hospitality, and we look forward to showcasing that commitment in every dish and every experience we create.

On April 18, our Sous Chef, Michael Villiers, and I traveled to Roanoke, Virginia, to complete our practical exams at the Pollard Culinary Arts School. There, we cooked for four Certified Culinary Educators, two of whom are members of the U.S. Olympic Culinary Team. The examination consisted of three hours of live cooking, during which we were evaluated on sanitation, workflow, knife skills, plating and presentation, and flavor profiles.

The process was anything but easy. Our menus were developed in accordance with ACF testing guidelines and presented to the evaluators prior to the start of the exam. We were given staggered start times and then had three hours to produce our menus completely from scratch. Once time was called, we had a 15 minute window to plate our courses in five-minute increments. The finished dishes were taken to a

separate room for evaluation, after which we were called in individually to review our results. The educators provided detailed feedback—what we did well, where we could improve, and their impressions of the overall composition, appearance, and flavors of our dishes.

I am extremely proud to share that I am now a Certified Executive Chef (CEC), the first at Hound Ears in decades. Additionally, Michael Villiers has earned his Certified Chef de Cuisine (CCC) designationthe first at the Club.

These accomplishments are the result of long hours, dedication, and a deep commitment to our craft. I am incredibly proud of what we achieved together, and sincerely grateful to the membership and the Board for believing in us and supporting us on this educational journey.

Employee Highlight: Wolfgang Melang

Entering his sixth season at Hound Ears, Wolfgang Melang values most the creativefreedomhehasearnedthroughyearsof dedicationandgrowthwithin theClub.

A native of Winston-Salem, North Carolina, Wolfgang relocated to Boone with his family in 2014, drawn by a shared passion for snow sports and mountain living—an enthusiasm for the outdoors that continues to shape his lifestyle today. Inspired by his father, a self-taught culinary enthusiast, Wolfgangdevelopedanearlyinterestincooking.HebeganhiscareeratBeech MountainClubasadishwasher,steadilyadvancingthroughthekitchen.After joining Hound Ears, he followed a similar path of progression, moving from salad preparation to mastering each station, with a strong preference for hands-onlearning.

Exciting Events in 2026

We are looking forward to welcoming Frances Carol King to Hound Ears – early May through end of October for the season. Frances is originally from Strand, Cape Town, South Africa and has had many yearsexperienceworkingseasonallyatfineandwellrespectedclubsaroundthecountry.

Wehavestartedmeetingvendorsandtastingwinesfortheupcomingseason.Sofar,wehavefoundafew deliciouswinesthatweareexcitedtosharewithyouall.Asalways,welookforthesmallerboutiquewines andrevisittheheavyhittersthatareHEMemberfavorites.

Frances King is a hospitality professional with over a decade of experience in high-end dining and event operations. Born in Cape Town, South Africa, she studied Business and Events Management before following her curiosity and sense of adventure to the United States—a decision that shaped the trajectory of her career and personal growth.

Since 2012, Frances has built a strong foundation in luxury hospitality, beginning as a server in prestigious country clubs and steadily advancing through roles including captain, catering coordinator, and dining room manager. Her career reflects a commitment to excellence in guest experience, team leadership, and seamless event execution, with a reputation for professionalism, attention to detail, and a warm, engaging presence. Driven by a love of discovery, Frances spends her free time exploring new cities and cuisines, road-tripping across diverse landscapes, and continuously learning. Whether traveling or at home, she is often drawn to the outdoors, seeking out new trails and the rewarding challenge of reaching the summit. Frances brings a global perspective, operational expertise, and a genuine passion for hospitality to every role she takes on.

Employee Highlight

Hello everyone! My name is Jorihan Rivera, though many know me as Jojo. I am the new Events Coordinator and am so excited for this upcoming season. This will be my fourth season at Hound Ears Club, and it truly feels like coming home.

I began my journey here as a server, having no prior experience and feeling a bit intimidated at first. However, after my first day, I quickly built connections with Rhys, my coworkers, and our members, and I soon felt a strong sense of belonging. During my second season, I continued serving while stepping into more leadership roles, helping train new staff and assisting at the Fitness Center.

I am a military child who moved from Puerto Rico at six years old with my parents and a year later I had a little sister. I have spent most of my life in Raeford, North Carolina. I grew up playing volleyball and soccer. I enlisted in the Army Reserves at 17 and am now proud to serve as a Human Resource Officer. I earned my Bachelor of Science in Exercise Science from Appalachian State University, where I also participated in ROTC, and I am currently pursuing my master’s degree in Hospitality Management at Johnson & Wales University.

Outside of work, I enjoy staying active through CrossFit and spending quality time with my family, who are a big part of my life. My faith is also an important foundation for me and continues to guide me both personally and professionally.

I am truly grateful to be part of the Hound Ears community and look forward to creating memorable experiences for our members and team this season. Please feel free to say hello if you see me around the club, I look forward to seeing everyone again!
