From Thailand’s Isan region to the international fashion spotlight, Phajaranat Nobantao—known professionally as Mimi Tao—has built a career defined by courage, reinvention, and remarkable visibility. As Bangkok leans into the dry season’s brightest days, Chef Montri at The House of Smooth Curry is bringing back one of Thailand’s most elegant culinary traditions: Khao Chae, prepared from now until 30 April 2026 using an ancient royal recipe. Light yet layered, this revered summer dish is as much about restraint as it is about craft—an exercise in purity, fragrance, and the quiet precision that defines Thailand’s heritage cuisine at its most refined.

The foundation begins with organic rice sourced directly from local farmers in Amnat Charoen Province. Each grain is carefully rinsed, then soaked overnight in cool jasmine-scented water, allowing the rice to take on a clean, aromatic freshness that feels almost weightless on the palate. Served chilled,

it becomes the perfect antidote to Bangkok heat—delicate, soothing, and subtly perfumed, with a calm elegance that invites slow eating.

Khao Chae’s true magic, however, lives in its accompaniments. Typhoon shelter cooking traces its origins to fishing communities who sought refuge in protected inlets during seasonal storms. Out of that pragmatic beginning came a bold, aromatic style

At Michelin-recommended Yu Ting Yuan, spring arrives in a form that feels quietly poetic. The restaurant’s Passages of Spring presentation is built around Steamed Thai Sand-Goby with Tangerine Peel, a dish that reflects the kitchen’s gift for balance, restraint, and clarity of flavour. Gently cooked to

Joining forces with Chef Tommy Cheung, the pair present a four-hands dinner that celebrates Cantonese technique through the lens of the season. The menu moves through delicate appetisers, double-boiled quail soup, beautifully steamed sea bass, braised pork with spring bamboo, and a dessert pairing durian with pandan in a finish that is both thoughtful and distinctly regional. This year’s lineup is deliberately global. Chef Thierry Drapeau, whose modern French and floral cuisine is shaped
