Fresh produce should look as good as it tastes. But the moment you cut, peel, or slice it, nature fights back: browning, softening, water loss, cracks, bruises. Shelf-life shrinks. Quality drops.
The culprit? Polyphenol oxidase (PPO) — the enzyme that sparks those unappealing browning reactions.
For years, the industry relied on sulphites and antioxidants like ascorbic acid. They worked, but at a cost: allergens, off-flavours, compromised texture. Hardly the recipe for consumer confidence.
