Grilled Peach and Burrata Salad
INGREDIENTS:
• 4 ripe peaches, halved
• 8 oz. burrata cheese
• 4 c. arugula or mixed greens
• 2-3 slices of prosciutto
• 1/4 c. fresh basil torn
• 2 tbsp. olive oil
• 2 tbsp. balsamic glaze
• 2 tbsp. toasted pine nuts or pistachios
DIRECTIONS:
Preheat your grill to medium-high. Brush sides of peaches with olive oil. Place them cut-side down and grill for 4 minutes until caramelized. Arrange the arugula and basil on a platter. Layer with pieces of prosciutto. Place peach slices and burrata over greens. Sprinkle with nuts. Drizzle with olive oil and balsamic glaze, salt and pepper. Serve immediately.
Sparkling Strawberry Basil Lemonade
INGREDIENTS:
Strawberry-Basil Syrup
• 1 c. water
• 1 c. sugar
• 1 lb. strawberries
• 1 c. basil leaves
Lemonade Base & Sparkle
• 1 c. lemon juice (roughly 5 lemons)
• 4 c. cold sparkling water
• Extra strawberries, and lemon for garnish
DIRECTIONS:
In a pan over medium heat, combine water, sugar, strawberries, and basil leaves. Bring to a boil, simmer for 10 minutes. Remove from heat. Let syrup steep for 15 minutes. Cool completely. Pour mixture through a strainer into a bowl. Squeeze all of the juice out. In a pitcher, combine the strained syrup and lemon juice. Chill. Just before serving, pour cold sparkling water into pitcher and stir to combine with syrup. Fill glasses, garnish and serve.
