Herb Roasted Asparagus
• 1 lb Fresh Asparagus, woody ends trimmed
• 2 tbsp Olive Oil
• 1 tbsp Fresh Herbs (Thyme, Rosemary, or Parsley)
• 1 clove Garlic, minced
• 1 Lemon (for zest and 2 tbsp juice)
• Salt and Pepper to taste
Optional: ¼ cup Grated Parmesan
Spring Pea Pasta Lemon
Light and Fresh and Full of Flavor
DIRECTIONS:
Preheat oven to 425° F. Toss asparagus with olive oil, garlic, herbs, salt, and pepper on a baking sheet. Bake for 10-15 minutes until tender-crisp. Top with fresh lemon juice, zest, and Parmesan before serving.
INGREDIENTS:
• 10 oz frozen peas thawed
• ½ cup sugar snap peas
• 10 oz pasta
• 2 cloves garlic chopped
• ⅓ cup grated parmesan
• 2 tbsp olive oil
• 1 lemon juiced
• ¼ tsp red pepper flakes
• 6 oz burrata cheese
DIRECTIONS:
Add peas to pot of boiling water, boil until tender, remove and rinse. To the same boiling water, add pasta and cook until done. In a bowl smash half of the peas, stir in the garlic, parmesan, olive oil, lemon zest and juice, a pinch of red pepper flakes, salt and pepper. Drain cooked pasta and add to peas. Stir in small pieces of burrata. Garnish with mint leaves.
