Two Ways
Thai Chicken DIRECTIONS Heat olive oil in skillet over medium-high heat, until oil is shimmering. Add ground chicken, and cook the chicken until it browns. Add red curry paste, ginger, garlic, peppers, and cabbage, and stir-fry for 3 minutes. Add hoisin sauce and green onions, and toss ingredients. Remove the skillet from the heat. Add chopped basil. Place spoonfuls of chicken into the lettuce leaves, and eat like tacos. *Optional: Serve with lime wedges and Siracha sauce.

• 1 cup cabbage (shredded)
• 1 pound ground chicken
• 1/4 cup hoisin sauce
• 1 tablespoon olive oil
• 1/4 teaspoon salt
• 2 tablespoons red curry paste
• 1/4 teaspoon pepper
• 1 tablespoon ginger (minced)
• 5 leaves basil (chopped)
• 4 cloves garlic (minced)
• 1/2 head Iceberg lettuce, separated into leaves, rinsed and patted dry
• 1 red bell pepper (thinly sliced) • 4 green onions (chopped)
Teriyaki Salmon DIRECTIONS Preheat oven to 400 F. Whisk teriyaki sauce, soy sauce, brown sugar, garlic, olive oil, and rice vinegar in a bowl. Place salmon in a dish, pour marinade over the salmon, and let it marinate in the refrigerator for 20 minutes. Spray cooking spray in baking dish. Remove salmon from marinade, and put marinade aside. Arrange salmon in baking dish, and bake for 15 minutes. Pour marinade into saucepan and bring to a boil. Reduce heat, and stir until sauce thickens. Remove salmon from the oven. Pour thickened sauce over each salmon piece and garnish with sesame seeds. Arrange 8 lettuce cups on a platter and place a portion of salmon in each. Drizzle with Creamy Ginger Soy Sauce.

• 8 lettuce leaves (Butter or Romaine), rinsed and patted dry
• 2 teaspoons garlic (minced) CREAMY GINGER SOY SAUCE • 1/2 cup mayonnaise
• 2 tablespoons honey
• 2 tablespoons soy sauce
• 1/2 teaspoon ground ginger
Whisk all ingredients for the sauce in a small bowl until emulsified and creamy.

In an ideal world, you’ll have sold your old home and purchased a new one hand in hand — yet that’s just not the case right now. Whether it’s just for a week or for several months, it is quite possible that you’ll sell your home before you buy a new one. Does this mean you’ll be stranded on the streets? Will you be homeless? Fortunately, that won’t be the case. There are several ways to still have a roof over your head, even if your home is in the process of being sold.
The Leaseback Maneuver
Leasebacks (aka “rent-backs”) are a popular way to profit from a home sale without having to move out immediately. In a leaseback, you sell your home like you normally would and then lease back the property from the new homeowner. This grace period typically lasts for up to 90 days, but you do need to come to an agreement with the new homeowner prior to the sale.
Try to Buy Before Selling
Here’s a bit of advice. According to Zillow, home prices will now spike up 16% in the next few
months. Many experts predicted that home prices would decrease this year — but as things are currently unfolding — that is not the case. If you have the means to do so, consider working with a real estate agent to buy a home first. Once that’s done, you’ll most likely still have time to sell your home at a great price.
Friends or Family
This answer is straightforward, but you could always rely on friends or family in the meantime. The big advantage of this option is that it’s relatively free. The cost of living is free, but you will still need to rent a storage unit to house your items in the interim. Try your best to not stay with friends and family for too long — especially if you have a larger family with children. One downside; however, is you will have to move twice.
Short-Term Rental
Renting an apartment or hotel for the intervening time is always an option. You won’t have to rush the home-buying process, and you won’t have to rely on those around you. However, the price of a shortterm rental could possibly start eating away at your next mortgage payment. Again, just like when living with friends and family, you will have to move twice.
