Spring is in the Air MARCH is the time of year to begin enjoying the Wonders of Nature. Winter is beginning its exit and Spring is beginning to make its entrance. If you live here year round or just visit for a short period of time, a couple of the ways to enjoy this transition are within a day’s drive or a weekend stay. Enjoyable choices to see nature begin to bloom again are: Verde Canyon Railroad in Clarkdale an easy drive up I-17 for the day. It is still prime-time eagle season with an abundance of high flying activity. Other things you will see and experience are towering crimson cliffs; near ancient Indian ruins, and a 680-foot man-made dark tunnel as you make your way to the deserted Perkinsville Ranch and back on this 4 hour round trip ride. Take a week end trip along Route 60 going east. Things to see and visit include the Boyce-Thompson Arboretum where you can explore the gardens and trails, and the Globe-Miami area located at the foothills of the Pinal Mountains where mining began in the late 1860’s. Mining history, Old West traditions and the Native American culture offers a wide range of the Southwestern experience. Proceed along Route 60 through the Salt River Canyon which offers beautiful views and spots to pull off the highway to take photographs or just look. Continue into Show Low and spend the rest of the weekend exploring the White Mountain area. Wishing you a Happy St. Patrick’s with this Irish Blessing:

IRISH BEEF STEW 1-1/2 lb. boneless beef round steak, trimmed, cut into bite size pieces 2 Tbsp. oil 1 Large onion, coarsely chopped 1 can (14-1/2 oz.) beef broth 1 can (14-1/2 oz.) stewed tomatoes, undrained 1 env. (0.8 oz.) GOOD SEASONS Garlic & Herb Dressing Mix 1 lb. red potatoes (about 3), cut into 3/4-inch chunks 3 carrots, cut into 1/2-inch-thick slices 4 cups hot cooked noodles
Make It...
COAT meat with flour. Heat oil in Dutch oven or large deep skillet on medium-high heat. Add meat and onions; cook and stir 5 to 8 min. or until meat is evenly browned. Stir in broth, tomatoes and dressing mix. Bring to boil, stirring occasionally; cover. Simmer on low heat 15 min., stirring occasionally. ADD potatoes and carrots; simmer, covered, 45 min. or until meat is tender and sauce is thickened, uncovering after 30 min. and stirring occasionally. SERVE over noodles. 2014 Kraft Foods

Diagnosed with Cancer – What’s Next? Receiving a cancer diagnosis often comes as a shock, for the person who is diagnosed as well as family and friends. It can be challenging to know the right questions to ask, or how to get the right information heading in to treatment. Erica Campbell can attest to this experience, as she was diagnosed with stage IV Hodgkin lymphoma, after a routine doctor’s visit last year. “When I was first diagnosed, I was scared and there were a lot of unknowns,” said Erica. “But soon, I realized that I’m not alone – my friends and family are 100 percent behind me, and my doctor made sure I had access to detailed information about Hodgkin lymphoma and understood my treatment options.” A new resource, ARCH, was created recently to help the nearly 80,000 people each year who are diagnosed with lymphoma, and those who care for them, find information and support.2
