Warm Up With This Side... The best holiday meals have sides that are warm, comforting and satisfying — like your family’s favorite mashed potatoes. This year, bring potatoes to the table with a recipe that can be easily made with little fuss. Gathering everyone together is easy when you serve side dishes prepared with quality ingredients, such as Hungry Jack potatoes. Invite guests to taste the traditional flavors of the season in a whole new light with this crowd-pleasing recipe: Festive Loaded Mashed Potatoes Prep time: 15 minutes Bake time: 25 minutes Servings: 8 2 1/2 cups water 3 tablespoons butter 3/4 teaspoon salt 1/4 teaspoon pepper 1 1/4 cups milk 2 2/3 cups Hungry Jack Mashed Potato Flakes 1 cup sour cream 1 1/2 cups shredded cheddar cheese 6 strips bacon, cooked and crumbled Heat oven to 350°F. Lightly grease or coat with cooking spray 9-inch-by-9-inch or 2-quart baking dish. Heat water, butter, salt and pepper until simmering in large saucepan. Remove pan from heat. Stir in milk and potato flakes until blended. Let stand 1 minute. Stir in sour cream. Spread half potatoes in prepared baking dish. Top with cheddar cheese and bacon. Spread remaining potatoes on top and sprinkle with red pepper and green onion Cover and bake until heated through, 25–30 minutes. Nutrition information per serving: 320 calories; 20 g fat (12 g saturated fat); 11 g protein; 23 g carbohydrate; 1 g fiber; 55 mg cholesterol; 520 mg sodium. Yummm... the perfect dessert This year, resist the urge to dust off those same old recipe cards and spread some holiday cheer with a creative, new recipe that features the fruity goodness of Lucky Leaf Pie Filling. This sweet treat is the perfect dessert to bring to a holiday gathering, or use it as inspiration to start your own family tradition of baking together any time of the year. Ingredients • 1 cup butter, softened • 2 cups white sugar • 2 eggs • 2 teaspoon vanilla • 3 cups flour • 1 cup cocoa • 1/2 teaspoon salt • 1/2 teaspoon baking soda • 1/2 teaspoon baking powder • 1 (21-ounce) can Lucky Leaf Cherry Pie Filling • 1/2 cup chocolate chips Preparation Preheat oven to 350°F. 1. Cream butter and sugar until light and fluffy. Mix in eggs, one at a time. Add vanilla and mix until combined. Add flour, cocoa, salt, baking soda and baking powder. Mix until combined. 2. Roll dough into two-inch balls. Place on greased baking sheet or baking sheet lined with parchment paper. Press thumb into center of cookie to make well. Place cherries into each cookie. 3. Bake for 12 minutes. Allow cookies to cool. 4. Melt chocolate according to package directions. Drizzle over cookies. Let chocolate set and serve immediately or store in airtight container. 5. A Must Visit Event in the West Valley When we first visited Arizona it was in December. We had never experienced Christmas in the desert. Our first holiday event to visit was Glendale Glitters and have gone every year since. The displays are unbelievable and the event is always enjoyable. Take time to experience this event this holiday. It is worth the time and is a free event. Glendale’s award-winning holiday lighting event has become a family tradition across the Valley and state, and this year marks the city’s 20th year of this joyous holiday celebration. The stunning display of 1.5 million lights illuminates 16 blocks of Historic Downtown Glendale, making it the largest free holiday light display in Arizona. Free admission makes Glendale Glitters one of the best-loved festivals for Arizona families year after year. In fact, the event was named azcentral.com’s Critics’ Choice for the Best Kid Event in the state in 2012.
