BUCK ‘NAKED’ CHOCOLATE

Bold and complex with deep roasted flavors. A Colorado Malt collaboration, grown and malted by Root Shoot Malting and roasted by Troubadour Maltings. Contributes rich notes of chocolate, coffee, and toasted bread. ʻNakedʼ barley refers to a variety where the hull naturally separates from the grain during harvest. Lacking a husk, Buck eliminates tannin contribution and harsh acrid flavors, resulting in a smoother, cleaner finish. Malted from Buck variety 6-row winter barley.

BUCK ‘NAKED’ PILSNER

Clean and powerful, this Colorado-grown naked barley showcases the pure expression of the grain. With the hull naturally separating at harvest, it offers a smooth, tannin-free character. High in extract and low in protein, it provides excellent brewhouse efficiency. Ideal for distillers using on-grain fermentation for Single Malt or any spirit that would benefit from reduced tannin as well as lagers, Kölsch or pale ales. Due to the lack of husk, it may lead to poor lauter filtration; we recommend avoiding high grist percentages without the use of rice hulls. Malted from Buck variety 6-row winter barley.

DISTILLERS MALT

High diastatic power and low kiln temperatures. Enzymatic malt best used for distilling. Malted from Odyssey variety 2-row spring barley, which is a non-GN producing barley variety.

ENGLISH PALE ALE

Root Shootʼs version of a Maris Otter or Golden Promise base malt. Biscuity, nutty, and a touch of saltine cracker. Light roast flavor with a slightly darker color that creates a dry, clean beer. Balances well with a hop bitterness for crafting IPAs or English-style beer. Malted from Genie variety 2-row spring barley.

Grapefruit tart sweetness, finishing with a bread crust flavor, and pretzel aroma. Reminiscent of honeycomb. Lower PH, resulting in a slightly acidic, raisin finish without being overly roasty or astringent. Very distinct malting process places Honey Malt most closely in a family with melanoidin malt. Malted from Genie variety 2-row spring barley.

LIGHT MUNICH 4 BASE MALT

Lightly toasted and mildly sweet flavor with a golden color. An excellent base malt for a variety of beer styles. A robust malt with rich flavor and strong enzymatic power, ideal for distillers crafting bourbon with depth and character.

Sweet, smooth and flavorful with a pale straw hue. Enhances fermentability while adding a clea, slightly sweet backbone. Ideal for North American and Mexican-style lagers, pre-Prohibition lagers, cream ales, Bourbon and Whiskey. Malted for improved conversation and flavor development. Fully available for extract, making it an eddicient and versitile ingredient in any brew. Malted from non-GMO Yellow Dent corn.

Significant body, mouthfeel, and a slight grainy character. Perfect for Stout, Porter, and other robust British style ales. A candidate for increasing protein haze, haze retention, and foam stability. Excellent addition to Hazy IPAs. Malted from Monida variety spring oats.

MALTED OLAND WHEAT

Higher protein, heritage soft wheat grain which is open-source and non-GMO. Full-bodied character is great for lower grist ratios where haze is desired, and higher grist ratios appropriate for Farmhouse, Hefeweizen and other wheat beers. Malted from Olandsvete variety spring wheat. Oland Wheat is prized for bread making characteristics.

MALTED RYE

Traditional rye spiciness. Earthy and nutty sunflower seed flavors with subtle bread crust tasting notes. Great for brewing and distilling. Malted from Guardian variety winter rye.

MALTED WHITE WHEAT

Sweet, bready, doughy, and malty. Versatile for traditional wheat beers and hazy American-style ales. Increases head retention and mouthfeel. Malted from Huffman variety winter wheat.

APPROPRIATE UP TO 50% + OF GRIST IN HEFEWEIZEN, WITBIER AND OTHER WHEAT BEERS. GREAT ADDITION AT LOWER RATIOS FOR COMPLEXITY AND BODY IN ANY NUMBER OF STYLES.

Moderately sweet, with notes of caramel, honey, and brown sugar. With an orange hue in color, this malt finishes with cracker and bread crust flavors. Malted from Genie variety 2-row spring barley.

MUNICH WHEAT MALT

A different take on typical malted wheat. Longer kiln time and higher temperature imparts a rich, complex, toasty flavor and mildly elevated color Malted from Huffman variety winter wheat.

Kilned to a slightly darker color than traditional examples of Vienna malt, Root Shootʼs Vienna exhibits rich and toasty cereal flavor with hints of graham cracker, and Grape Nuts. As 5th-generation Loveland, Colorado farmers, respect for the heritage and land, and a deep- rooted understanding of the region’s agriculture are in our blood. Pride and family values are an essential part of the process at Root Shoot Malting. We take what we learned from the farmers, and family, before us, while using today’s most innovative agricultural equipment, to make the least impact on the Earth and keep the land healthy for the next generation of Root Shoot Farmers.

Located on the Olander Farms’ 112-acre farm, and approximately 1500 leased acres, Root Shoot is working to ensure that farmland remains available to grow grain for the beers and spirits of tomorrow.

Root Shoot Malting is in the unique position to control the entire malting process from seed variety and growth, to harvest and final kilning.

Founded by Todd and Steve Olander in 2016, Root Shoot Malting is deeply grounded and invested in Northern Colorado.

We carefully cultivated the operation to specialize in providing the highest quality of local grain and malt to the craft brewing and distilling industries.

Root Shoot Malting was the first craft malthouse in the United States to operate the Kaspar Schulz malting system.

Manufactured in Bamberg, Germany, our equipment is composed of a steeping vessel and germination-kiln combo drums that are capable of producing 30 tons of craft malt per week.

With this advanced technology, we are able to deliver incomparable malt flavor and the promise of high-quality consistency. We offer fresh, unique, made-to-order malts that are truly local.

CONSERVATION

The livelihood of our small business depends on land, a commodity that for us and so many others is scarce and exponentially depleting.

In December of 2022, Olander Farms and Root Shoot Malting together finalized a Conservation Easement with Colorado Open Lands, an agreement that permanently limits the use of our land, 112 acres, and will ensure the continued pace, quality, and permanence of protected agriculture in our region.

We’re here to tell our story to raise awareness far beyond our own farmland, and we’re campaigning to keep farmers on farms – a future that supports the rural agricultural communities, families, and wildlife.

Olander Farms is implementing practices associated with the regenerative agriculture movement.

We’re taking creative approaches to increase and maintain soil health, retain and reuse water, bio-sequester carbon, and promote biodiversity in our region.

We need your support to help us preserve and regenerate Colorado agriculture, allowing us to continue growing and producing local grains on our farmland.
