Inside The Fox at Oddington with maître d’ Vincent Lecointe

You’re French, yet somehow completely at home in the Cotswolds. How did that happen?

I moved to the Cotswolds in the early 2000s with my English wife, who has connections to the area. Before that, we had spent nearly eight years living in London, but we both felt ready for a different pace of life.

We settled in Churchill near Kingham in 2003 and very quickly felt it was the right place for us. Our children were born here and went to school locally, so our lives became firmly rooted in the area.

Earlier in my career, I travelled constantly for work across Europe and Asia, but living here offered the balance we wanted - beautiful countryside, a strong sense of community and a wonderful quality of life. After more than twenty years, it truly feels like home.

What got you into hospitality?

Before hospitality, I spent more than twenty years working in textiles, entertaining clients around the world. Food and wine were always central to those relationships, and I was able to experience many different styles of hospitality along the way.

I’m originally from Lyon and grew up in a family where meals were an important part of everyday life, so the appreciation was always there. When I reached a point where I wanted to travel less, hospitality felt like a natural step. It allowed me to combine my experience hosting people with something I genuinely lovegood food, good wine and bringing people together.

Describe your role in three words? Caring, Welcoming, Attentive.

What makes The Fox at Oddington so special?

The Fox has a wonderful character that always remains central. It’s a historic pub that has been beautifully extended and restored, while taking care to retain the charm of the original building.

Being part of the wider Daylesford Estate also makes a real difference. Most of the ingredients we use come directly from the farm on our estate - the meat, vegetables, bread, cheeses, alongside olive oil from our sister estate Léoube in Provence, giving the kitchen exceptional ingredients to work with.

It’s also a place that feels lively and welcoming. You have locals, guests staying in cottages, people walking over from Daylesford Farm and visitors discovering the area for the first time. It has the atmosphere of a proper village pub, combined with a strong focus on seasonal food and service.

What’s your signature touch when guests walk through the door?

A genuine welcome.

We train the team to greet guests with warmth and positivity. Even if we’re very busy and there isn’t a table immediately available, we always try to find a solution, such as inviting them to have a drink at the bar.

People might not remember every detail of their evening, but they always remember how they felt when they arrived and how they were treated. That first impression is incredibly important.

What does the perfect Cotswold evening look like…?

At The Fox, the perfect evening begins at the bar with a lively atmosphere. Guests might start with a beer or cocktail before moving to their table for dinner. We encourage people to take their time and enjoy the evening.

In winter, the fireplaces and low ceilings make the pub feel wonderfully cosy. In summer, the garden and terrace come alive, with long evenings and guests enjoying drinks outside as the sun goes down.

What do guests love most about staying with Daylesford Stays?

What guests really love is that Daylesford feels like a destination in its own right. When you stay within the collection, you’re not just booking accommodationyou’re stepping into everything the estate offers, from the farm shop and spa to cookery classes and several restaurants.

Guests can spend a few days exploring the estate, perhaps starting the morning at the farm, walking across the fields for lunch at The Fox and trying another restaurant in the evening. It feels very connected to the landscape and surrounding villages.

There’s also a clear consistency across the properties. Whether guests stay at The Wild Rabbit, The Fox, The Bell, or one of the cottages, they recognise the same style and attention to detail while still discovering something slightly different in each place.

What’s the biggest difference between French and English diners?

French diners tend to be very direct. If something isn’t right, they will say so straight away.

British diners are often more reserved and sometimes hesitant to mention a problem. Personally, I always encourage guests to tell us if something isn’t quite right so we can improve their experience. Feedback is extremely valuable in hospitality.

Your desert island wine?

A Burgundy called Vosne-Romanée. It was one of the first great wines my wife and I shared when we were young. We ordered it slightly by mistake, and it turned into a wonderful evening, so it has always had sentimental value for us.

How do you take your steak?

Blue - but warm.

This is actually more difficult than it sounds. The meat needs to be brought gently to temperature before it goes on the grill, otherwise you end up with something that’s cooked on the outside but cold in the centre.

When it’s done properly, it’s perfect.

What exactly is Private Clients?

Led by Gareth Jones, who brings nearly 40 years of experience in the property industry, our Private Clients division specialises in off-market opportunities, including prime residences, estates, and land, as well as advisory services on planning and complex transactions.

At this level, many properties are transacted discreetly and never reach the open market. Our clients often UHNW individuals or family offices value privacy above all else. While we maintain rigorous due diligence and proof-of-funds procedures, both buyers and sellers typically prefer to keep their affairs out of the public domain.

Due to the nature of these transactions, we are frequently bound by strict NDAs and are therefore unable to publicly share many of our successes. However, we fully understand the importance of discretion and take great pride in operating with the utmost confidentiality and professionalism.

My career spans nearly four decades, during which I have gained extensive experience across all aspects of the property market. I began in Notting Hill, London, where I owned and ran one of the largest independent estate agencies in prime central London before selling and relocating to the Cotswolds.

Upon arriving here, it became clear there was a gap in the market for a more modern, forward-thinking agency - so Harvey Holland was born. Since then, we have built an exceptional team, from our managing director Emma to our in-house marketing specialists overseen by our Creative Director Dio.
