Over the past decade, their popularity has soared, but navigating the terminology can be tricky. Different manufacturers often use varying terms for similar features, making comparisons difficult. Don’t worry—we’re here to decode the jargon and guide you in selecting the perfect steam oven for your needs.
Think of combi steam ovens as a 3-in-1 appliance, offering the functionality of a traditional fan-forced oven, or a steamer, or a combination of both! That combination, where steam is added to fan-forced oven heat, results in perfectly juicy or moist food with a golden, crispy exterior. It’s the ultimate oven for any passionate cook or entertaining-loving household.

adjustable and fixed steam depends on whether you prefer simplicity or precision. Combi steam is excellent for preventing dryness in lean meats, fish, and muffins, and it's especially popular among bakers for creating perfect bread.
This refers to settings that maintain a steady 100°C (or lower) with 100% humidity, similar to a stovetop steamer but with precise temperature control and ample

cooking space. Full steam makes preparing fish, chicken, vegetables, and rice effortless. However, some full steam ovens lack conventional oven features, reducing versatility. Additionally, some brands use “full steam” to describe combi steam ovens, so be sure to clarify the capabilities of your chosen model before purchasing.
These refer to a type of steam oven that introduces a small amount of steam into regular cooking functions. Steam assist ovens don’t produce the steam output of combi steam ovens and can’t perform steam-only cooking. Instead, they enhance moisture like convection humid functions, making them ideal for everyday roasting, pasta bakes, and baking.
Consider how steam is delivered in the oven, as it affects maintenance. Many steam ovens use steam injection, generating steam in a boiler and piping it into the oven for efficient, easy cleanup. Others use evaporative steam, heating water in a reservoir.

A well-designed banquet can turn any corner into the best seat in the house, bringing connection, comfort and flow to the kitchen. Both timeless and elevated, they balance form and function to create a space that instantly feels more welcoming.
Dining banquets are becoming increasingly common, as they connect with our broader lifestyle shift towards more informal, flexible dining settings. Whether attached to an island or built in alongside cabinetry, they’re a great way to create a cosy, casual space, especially in renovations where there’s potentially limited room for a full dining table. By maximising seating and often incorporating built-in storage, banquets turn what can feel like a cramped area into a versatile hangout space that feels both comfortable and social.

From silent rangehoods to integrated dishwashers and combination ovens, Kristie Hill from ColourCube Interiors, shares her top five tips on where to allocate your budget, harnessing the latest innovations to create a kitchen that combines style and durability for years to come.

Steam ovens have become a priority on the kitchen appliance shopping list. As Kristie explains, ‘steam technology makes for a better way of cooking giving you beneficial outcomes – it's healthier, as the steam process retains vitamins and flavours while keeping food moist so it doesn’t dehydrate the food’. Kristie adds that for compact kitchens, a combi oven is a must as it provides five key functions – steam, combination steam, conventional oven, microwave and combination microwave.
With a little more of the budget directed to a silent rangehood, you’ll gain more than just better extraction, you’ll reclaim the ability to talk to your guests without the noisy hood taking centre stage. ‘A super silent rangehood has become a must-have luxury appliance in all my clients’ kitchens,’ says Kristie. ‘It not only reduces noise better than standard models but also creates a far more pleasant space in which to cook and entertain as kitchens become increasingly adjoined to family areas.’

The combi steam oven is a game-changer. By combining fan-forced heat with steam it delivers bakery-quality results at home. Fan-forced heat circulates even heat distribution, essential for cakes, pastries, and breads. I often use the fan-forced setting at 160°C for consistent cake baking.
The steam function is where the magic happens. It helps retain moisture, crucial for breads and pastries, creating a crisp crust while keeping the inside soft. I recommend experimenting with different ratios of fan-forced heat and steam depending on what you’re baking. For instance, with bread, I’ll use a higher steam ratio at the start to help with the rise and texture, then switch to fan-forced towards the end to achieve that crisp, beautiful finish.
Always preheat your oven to the correct temperature before baking. This prevents temperature fluctuations that can lead to uneven results and ensures your baked goods rise beautifully.
When loading the oven, space items evenly on the trays for proper air circulation. If baking multiple cakes, place the trays in the middle of the oven for optimal heat distribution, and rotate them for even cooking. Never set and forget, and always set a timer.

A classic spring and summer savoury tart that’s perfect for an alfresco lunch or to take to a picnic with friends. Serve with a side salad made with baby gem or cos lettuce caressed with French-style vinaigrette.
650 g zucchini, thinly sliced
1 teaspoon sea salt
1 pack store bought butter puff pastry
250 g ricotta
100 g Danish feta
2 tablespoons chopped chives zest of 1 lemon
1 tablespoon extra-virgin olive oil
60 ml milk, plus extra to brush leafy greens, to serve
Preheat your oven to 200°C fan-forced.
Place the pastry on a sheet of baking paper and roll out until about 30–35 cm diameter. Transfer pastry and baking paper onto a baking tray. Refrigerate before using.
Smash ricotta and feta in a bowl, then mix through the chives and lemon zest.
Spread the ricotta mixture on the pastry, leaving a 3 cm border around the edges.
Arrange the sliced zucchini on top of the ricotta and brush with olive oil and scatter with a little sea salt.
Fold over the pastry to enclose the filling and brush with a little milk to glaze.
Bake the tart for 40–45 minutes or until golden.
Serve and enjoy with leafy greens tossed in a good vinaigrette.
COOK’S NOTE
Top with rocket leaves lightly coated with lemon juice and olive oil before serving.

This genius focaccia is wonderfully soft and delicious to eat with generous amounts of olive oil. It works beautifully with a drizzle of salsa verde, pan-roasted zucchini and dollops of ricotta.
SERVES 12
500 g spelt flour
7 g (1 sachet or 2 teaspoons) dry yeast
10 g (2 teaspoons) baking powder
1 teaspoon sea salt
400 ml room temperature/tepid water
3 tablespoons extra-virgin olive oil
2 tablespoons raw honey
Toppings (your choice): Rosemary, garlic, olive oil, pesto, ricotta, cherry tomatoes, oregano and flaked sea salt.
Combine spelt flour, yeast, baking powder and salt in a mixing bowl.
Pour in the water, olive oil and honey and mix until combined and you have a soft, sticky dough. Mix well for 10 minutes using a standmixer, until the dough gets more elastic. You’ll see it come together at the end.
Cover the dough with cling film and leave to prove overnight in the fridge.
Next day, remove the dough from the fridge. Tip the dough from the bowl and place straight into a deep baking tray lined with baking paper and drizzled with generous amounts of olive oil. The size of the pan I used was 30 x 23 cm.
Using your hands, press down the dough to fit it into the tray and prove for 40 minutes. Top with your choice of toppings.
Preheat your oven to 190°C fan-forced.
Bake for 20–25 minutes until golden and cooked through.
Super-moist gluten-free and not too sweet, making it perfect for any occasion.
SERVES 10
300 g (3 cups) almond meal
125 ml (½ cup) raw honey
2 teaspoons gluten-free baking powder
½ teaspoon sea salt
4 large free-range eggs
125 ml (½ cup) extra-virgin olive oil
zest and juice of 2 lemons
2 teaspoons vanilla extract
1 x lighted up cream cheese frosting to serve, optional
1 x lemon curd to serve, store bought or home-made (see recipe)
METHOD
Preheat your oven to 160°C fan forced. Line a 20 cm round cake tins with baking paper.
Combine almond meal, honey, baking powder, salt, eggs, olive oil, lemon zest and juice and vanilla in a bowl.
Mix well and pour into the prepared tin.
Bake for 40–45 minutes until cooked through, then cool completely.
Serve the cake simply plain as a tea cake. Alternatively, cut in half and sandwich with cream cheese frosting and lemon curd.
250 g cream cheese, room temperature
120 ml (½ cup) thick Greek yogurt or labneh
2 tablespoons raw honey or pure maple syrup zest of 1 lemon
Combine all the ingredients in a bowl until smooth and creamy.
MAKES 2 CUPS
4 large free-range eggs
100 g unrefined raw sugar
125 ml (1/2 cup) lemon juice
125 g (4 oz) room temp butter, cut into small pieces
2 generous teaspoons cornflour

Whisk the eggs, sugar, cornflour and lemon juice in a bowl then pour the mixture into a saucepan over a low heat.
Heat gently for a few minutes until thickened.
Add the butter, a few pieces at a time, stirring continuously until the butter has melted into the lemon mixture.
Strain immediately into a bowl and refrigerate for at least 4–6 hours.

This makes the perfect breakfast bread when you want something quick and easy to accompany your morning coffee. It’s gluten-free and caressed with heart-healthy extra-virgin olive oil and a generous scattering of omega-3-rich walnuts for added crunch.
500 g ripe banana, chopped
3 large free-range eggs
60 ml (¼ cup) milk, any kind
125 ml (½ cup) extra-virgin olive oil
2 teaspoons vanilla extract
90 g (½ cup) coconut sugar
2 tablespoons instant coffee powder
180 g (1 ¼ cups) brown rice flour
125 g (1 ¼ cups) almond meal
2 teaspoons baking powder
½ teaspoon bicarbonate of soda (baking soda)
180 g (1 ¾ cups) walnuts
Embellishments: Ricotta, tahini, carob molasses
Preheat your oven to 160°C fan forced. Grease and line a loaf tin with baking paper.
Combine bananas, eggs, milk, olive oil and vanilla in a food processor or blender and mix until smooth.
Add the coconut sugar and coffee powder and mix again for a few seconds until combined.
Pour into a large mixing bowl and add the rice flour, almond meal, baking powder and baking soda.
Mix well and fold in the walnuts at the very end.
Spoon into the prepared loaf tin.
Decorate the top with a sliced banana if you have any left over.
Bake for 50–60 minutes or until cooked through. Make sure to test the cake after 45 minutes as baking times sometimes vary based on your own oven.
Remove from the oven and cool for 1 hour in the tin, then transfer to a board to finish cooling.

What a good wine this one is. Gordon gets it from Frankland as he has done for many years, recognising how good this region can be, and this is certainly one of the best. The season was pretty good and it produced a wine of deep complexity and rich flavours with a mighty combination of plum and cherry and some nice toasty spicy black olive characters. Palate is generous, supple and with a smooth and soft finish. That little bit of savoury dried herb character on the finish completes what is an excellent wine. ameliaparkwines.com.au

This is the top chardonnay from Rosenthal. It’s been sourced from Mount Barker and displays the typical power and complexity of previous vintages albeit on a slightly lighter frame. Moves into a distinctive savoury zone with creamy stone fruit and brioche character emerging. The oak integration is superb, allowing the fruit to fully express itself. This is as good as any syrah yet from Vasse Felix. It is thoroughly delicious and appealing from the first take on the nose through to the soft and plush palate delivered with medium body. Interesting techniques have captured the best from the fruit. It was wild yeast fermented, with a portion of whole bunches and a little carbonic maceration to bring it all to life. Powerful cherry and spicy plum aromas lead to a medium-weight palate that is so exquisitely smooth and seamless, yet with a fine minerality to define and sustain. Outstanding. vassefelix.com.au

Another cracking riesling from this wonderful Porongurup vineyard, under the expert gaze of winemaker Rob Diletti. This one captures the season perfectly. You get all the fresh vibrant intensity that is riesling, but it gets delivered with an almost understated textural feel. The nose has a slight lemon scent with deeper notes of lemon pith, and an obvious talcy and musk-like minerality. The palate is so delicately poised and fine, and yet you find the flavour lingers and lingers. This is what riesling is all about. If you are serious about your wines, cellaring is a great way to see them reach their full potential. Sure, there are some wines which won’t benefit from cellaring, but most will develop aromas and flavours that take you into another place in wine enjoyment. One of the questions I am most asked is how long I should cellar my wines. It depends on many things – the vintage, the pedigree, the variety, and how the wine is made are just some. If you intend to cellar wines, my tip is to buy at least six bottles, because then you can check them out over the years and see how they are developing. The last thing you want is to find that it has passed its use-by date. And of course, if you want to cellar them, you need a good place to store them. A wine fridge is ideal, because you can adjust the temperature and keep it constant, which is so important in ensuring the wine is kept in the best possible condition.
