With happy memories of sunny spring break adventures, and March Madness behind us, we now turn our attention to our Easter celebration, the opening of our tennis courts and Men’s Opening Day on the golf course. Doug and his team have the course in great shape after a very long winter. Isaiah will be returning to the Halfway House, soon, to grill hamburgers and hot dogs and send tantalizing smoke onto the course and into the ‘hood. He has missed his many friends. Spring 2026 will also see the arrival of a new fleet of golf carts, for your comfort and state of the art enjoyment. There’s nothing like that new cart smell”!

As you may have already learned, we are excited to report that our Director of Racquets, Duncan Miller, will be with us through the season of 2028 and hopefully, beyond. I know it is Spring when I can hear Duncan on court 1 giving a tennis lesson…… from my office, with the windows closed. Thanks, Duncan, for your energy, for your dedication to our racquets program and for championing the addition of Padel to our lineup. In other staff news, three of our team members have recently reached the ten-year mark in their service to Green Spring. Congratulations to Asst. Manager Alex Prue, Chef Tom Hall and Sous Chef John Carroll.Thanks, gents, for your hard work and commitment.

Chef Tom’s Birthday Cake Recipe

My mom always made sure my brother, sister, and I had a homemade birthday cake on our big day. For years, I was strictly a yellow cake with chocolate frosting kind of kid.Then one afternoon she baked something new just for the fun of it, and after one slice, I knew that was going to be my birthday cake from then on.

This mini chocolate chip Bundt cake is still one of my favorite things to eat on earth. It couldn’t be easier to make, and it’s incredibly delicious. It’s over-the-top good when it’s still slightly warm from the oven, but it holds its own beautifully sliced and served the next day at room temperature.That said, I still like to pop a day-old slice in the microwave for about 20 seconds to bring it back to life.

One non-negotiable: it must be enjoyed with a cold glass of milk.

Chef Tom's Birthday Cake

Mini Morsel Pound Cake

What you Need:

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

2 cups granulated sugar

1 cup (2 sticks) butter or margarine, softened

1 tablespoon vanilla extract

4 eggs

4 cup milk

2 cups (12-ounce package) NESTLÉTÔLL HOUSE Semi-Sweet Chocolate Mini Morsels Powdered sugar to garnish

Steps:

Combine flour, baking powder and salt in a small bowl.

Beat sugar butter and vanilla in large mixing bowl until well blended (I use a kitchen aid)

Beat in eggs one at a time, beating well after each addition.

Gradually beat in flour mixture alternately with milk.

Remove from the mixer and gently fold in the morsels.

Pour into a greased and floured 10-inch Bundt pan or two greased and floured 9x5-inch loaf pans.

BAKE in preheated 325°F Oven for 1 hour 5 minutes to 1 hour 15 minutes or until a wooden pick inserted near the center comes out clean

Cool in the pan on a wire rack for 15 minutes.

Remove from the pan and serve warm or cool completely on a wire rack.

Sprinkle with powdered sugar before serving

Enjoy with a cold glass of milk!

Meet The Artist Date: Wednesday, April 22nd

John Brandon Sills

John Brandon Sills is a Baltimore artist. A Fine Arts graduate of Towson State University, he has been painting for over 20 years. Combining a semester abroad studying art in Florence, Italy and another five years of fine art studies at the Schuler School of Fine Arts, he has had the finest in classical art training.

John Sills still lifes are stylistically inspired by the Old Masters. His primary goal is to capture the qualities of light and atmosphere. The method used to achieve those light qualities is careful observation of the details and attention to the discipline of meticulously applying his paint in thin layers, a glazing technique. Also a landscape painter, John's favorite places to paint are the "intimate places in nature, corners of pastures, bends in streams; places that invite the viewer to a close personal relationship with nature. When I'm painting, I am trying to portray on canvas the emotional sensations I feel about this wonderful land. I cannot separate my personal philosophy and love of nature from a strong spiritual awareness and desire to care for and preserve this land."

John Sills is currently teaching drawing and landscape painting as well as participating in numerous art exhibitions each year. He has won numerous awards including the Artist Magazine still life competition and 1st place in oil painting at the Chesapeake Bay Foundation show, to name a few. His work has toured nationally in the "Baltimore Realist Show."
