Preparación: 1. Tamizado y mezclado: mezclar sorbitol, celulosa microcristalina, vitamina E (Sun E® 450 SD), ácido cítrico/citrato de sodio, fosfato de calcio, aromas y sucralosa durante 5–7 minutos. 2. Lubricación: añadir estearato de magnesio y mezclar durante 60–90 segundos. 3. Compresión: aplicar una dureza moderada de 6–9 kp, adecuada para comprimidos masticables, y comprobar su disgregación.

Consejos: Fuerza de compresión: se recomienda una compresión moderada para mantener la facilidad de masticación. Mejora de la fluidez: añadir un 0,5–1,0 % de sílice y celulosa microcristalina granulada.

NOTAS SOBRE LA DOSIS Y EL ETIQUETADO: Sun E® 450 SD es una mezcla antioxidante natural compuesta principalmente por d-alfatocoferol, la forma de vitamina E más eficaz para proteger el organismo frente a los efectos dañinos de los radicales libres. La vitamina E es un nutriente esencial. Lubricar: añadir estearato de magnesio; mezclar entre 60 y 90 segundos. 3. Comprimir: buscar una dureza moderada (6-9 kp) adecuada para que se pueda masticar; comprobar la desintegración.

Proceso: 1. Preparación de la fase acuosa y de polioles: introducir aproximadamente el 50 % del agua de proceso en la marmita de mezcla. Iniciar una agitación suave. Añadir gradualmente el sorbitol al 70 % y el jarabe de maltitol mientras se continúa agitando. Calentar hasta alcanzar 70–75 °C. 2. Dispersión de la pectina: Dispersar previamente la pectina en una pequeña cantidad de jarabe de maltitol frío (o utilizar una dispersión de alto cizallamiento) para evitar grumos; a continuación, añadirla a la caldera bajo agitación de alto cizallamiento o de barrido. Mantener la agitación hasta que se haya hidratado por completo (5-10 min). Mantener la temperatura entre 70 y 75 °C. 3. Añadir tampón/ácido y ajustar el pH: disolver y añadir el citrato de sodio disuelto en agua e incorporar gradualmente el ácido cítrico hasta alcanzar un pH objetivo de 3,4–3,6 tras la mezcla (esto garantiza una gelificación adecuada de la pectina y un entorno propicio para la conservación).

Añadir lentamente a 70–75 °C con agitación moderada y mezclar durante 5–10 minutos hasta obtener una dispersión uniforme. Evitar introducir aire. 5. Adición de sólidos, aroma/colorante: añadir el maltitol restante, el aroma de fresa y el colorante. Mezclar durante 3–5 minutos. Calentar brevemente a 85–90 °C hasta alcanzar los sólidos solubles objetivo (°Brix). No superar los 90 °C ni prolongar el calentamiento para minimizar la oxidación de los esteroles. 6. Mantenimiento/reposo y desaireación: Si se forma espuma, aplicar brevemente un vacío suave o dejar reposar. Evitar la incorporación de oxígeno y mantener la mezcla a 75–78 °C para su dosificación. 7. Dosificación/moldeado: ajustar el dosificador a 4 g por unidad y precalentar las líneas para evitar una gelificación prematura. Dosificar en moldes de silicona sin almidón o metálicos a 75–78 °C. 8. Gelificación/enfriamiento: dejar gelificar a 20–25 °C y con una humedad relativa del 35–45 % durante 2–4 horas, según la fuerza del gel. Desmoldar cuando las gominolas estén firmes. 9. Desmolde/acondicionamiento: colocar las gominolas en bandejas y acondicionarlas a 20–25 °C y 35–45 % de humedad relativa durante 12–24 horas, hasta alcanzar la humedad y textura deseadas. 10. Recubrimiento: preparar un jarabe con el maltitol restante y una pequeña cantidad de agua. Recubrir las gominolas en capas finas y uniformes, secando cada capa antes de aplicar la siguiente.

Proceso: 1. Preparación de la fase acuosa: añadir la cantidad necesaria de agua purificada, a unos 25–30 °C, en un tanque de mezcla limpio. Disolver completamente el ácido cítrico y ajustar el pH a 3,4– 3,5, un factor esencial para garantizar la eficacia de los conservantes. 2. Conservantes: añadir el benzoato de sodio y el sorbato de potasio al agua acidificada. Mezclar hasta que se disuelvan por completo al pH establecido. 3. Edulcorantes: añadir el jarabe de maltitol con agitación suave. Disolver completamente la sucralosa hasta obtener una mezcla homogénea. 4. Hidratación del espesante: Dispersar la goma xantana espolvoreándola en el vórtex bajo agitación intensa o humedeciéndola previamente con parte del jarabe. Continuar mezclando durante 20-30 minutos hasta que esté completamente hidratada y sin grumos.

Garantizar una dispersión uniforme sin incorporar aire. 6. Adición de vitaminas: añadir vitamina C y vitamina B1. Mezclar suavemente, evitando el calor para prevenir su degradación. 7. Ajustes finales: comprobar que el pH se mantiene entre 3,3 y 3,6. Corregirlo, si fuera necesario, mediante pequeñas adiciones de ácido cítrico o agua. Ajustar el peso o el volumen final hasta alcanzar 15,0 g por stick. Desairear la mezcla mediante un vacío suave o un barrido de nitrógeno para reducir el contenido de oxígeno. 8. Llenado y envasado: Llenar cada envase individual con 15 g utilizando equipo de llenado calibrado. Sellar inmediatamente en condiciones controladas de bajo contenido en oxígeno, si es posible. Almacenar el producto terminado a temperatura ambiente (<25 °C), protegido de la luz y la humedad.

Disperse the calcium carbonate thoroughly to ensure uniform mineral fortification and prevent sedimentation. 5. Add natural flavors and sea salt to achieve the desired sensory profile. 6. Hydrate and incorporate gellan gum into the aqueous phase under controlled agitation. 7. Suggested recipe for 100g yoghurt with Skimmed or semi-skimmed milk: 97.3% Vitasterol S-80 EST: 2.7%

Preparation 1. Heat for premixing skimmed milk to 50ºC 2. Premix Vitasterol S-80 EST heated to 50-65ºC and heated skimmed milk under continuous stirring 3. Add the premix under stirring to the bulk milk 4. Two steps homogenization (200/40 bar) 5. Cool down to fermentation temperature 6. Add yoghurt culture and process fermentation 7.
