I wrote last week about the amazing twoweek experience that is National Finals Rodeo at the Thomas & Mack Center. And the fun continues this week, complete with country music performances to keep crowds entertained when they’re not cheering on their favorite riders. There’s just something about this time of year that makes me smile—it’s probably the combination of the holidays and all those cowboy hats, blue jeans and boots everywhere. Oh, and the entertainment! This week’s acts are some of the best you’re going to find on the entire planet: Jason Aldean performs at Dolby Live at Park MGM (“Saddle Up,” p. 30); Carrie Underwood officially christens the new Resorts World Theatre with a mini-residency (“A Time of ‘Reflection,’” p. 36); and Reba, Brooks & Dunn, one of the Strip’s most beloved residencies, prepares to come to a close at Caesars Palace (“One Amazing Run,” p. 40). It’s hard to imagine a better one-two-three punch than this! And then there’s all the holiday fun elsewhere on the Las Vegas Strip. Managing editor Nina King has collected some of the offerings this month that will allow you to get in the holiday spirit immediately (“Making Merry,” p. 16), while associate editor Kiko Miyasato has focused on some of the holiday-themed cocktail offerings,

hot spots, lounges and more (“What’s New,” p. 22). Las Vegas saw the opening of plenty of new restaurants in 2021, some of which you might not yet be aware of. In this issue, editor at large Brock Radke introduces you to some you should definitely make part of your itinerary this week (“Making a List,” p. 26). Speaking of new restaurants, you’ll definitely want to check out “one-stop shop” Wally’s Wine & Spirits at Resorts World (“The Complete Experience,” p. 9) How about a great show? This issue will take you through some of the most exciting offerings, from the gorgeous, athletic (and often very funny!) women of Fantasy at Luxor (“Anything Goes,” p. 47) and the colorful, nostalgic spectacle of Cirque du Soleil’s The Beatles LOVE at The Mirage (“A Magical Mystery,” p. 10) to the technical wizardry used to seemingly bring a legend back to life in An Evening With Whitney: The Whitney Houston Hologram Concert at Harrah’s (“The ‘Real’ Deal,” p. 12) and spending some quality time with Donny Osmond at his solo show at the same property (“A Life Fully Examined,” p. 14). Some say it’s just a line in a song, but for us at Las Vegas Magazine, this really is the most wonderful time of the year. We hope we contributed to that in some small way.

A Magical Mystery

Cirque du Soleil production celebrates a legacy The minute you hear an a cappella version of the famous Abbey Road song “Because,” as acrobats slowly climb ropes, you immediately feel part of a magical world at The Beatles LOVE. Yes, we’ve all heard the music of the Fab Four before, but never quite like this; everything from the classic canon has been remastered and remixed, giving each singular song a new life, and the visuals Cirque du Soleil offers up along with them creates a mesmerizing experience. Highlights from this colorful, elaborate production? Where do we start? There’s the light show that dances around the theater during “Octopus’s Garden”; a beautiful aerial routine performed to “Something”; a heartbreaking number in which a dancer performs amid digital

transcriptions as “While My Guitar Gently Weeps” plays; a Volkswagen Beetle that appears to crack apart during “A Day In the Life”; a large, white sheet that stretches over certain audience members during “Tomorrow Never Knows”; and roller skaters who flip, fly and come dangerously close to one another during “Help!” There’s also a nice tribute to The Beatles themselves, courtesy of performers who pantomime the quartet in silhouette, shown on a large silk screen. It’s humorous and, at times, touching, especially for those in the audience who remember the foursome’s slapstick antics, both in movies and in real life. You’ll also see the manifestations of several famous Beatles characters, including Father

McKenzie, Eleanor Rigby, Sgt. Pepper and Lucy. Quite simply, your favorite songs come to life in this show—and a state-of-the-art sound system makes you feel like you’re hearing “I Want to Hold Your Hand” and “Back in the U.S.S.R.” for the first time. All the way through this production, Cirque’s high standards for production design, music, costumes and choreography are all on full display. As you watch the parade of characters march through the theater—including through the audience before the show even starts—you’re completely drawn into the world Cirque has created, one you want to continue to linger in even after the house lights come up. –Ken Miller The Mirage, 702.792.7777

The ‘Real’ Deal

Hologram concert captures the emotions and essence of a legend There are only a handful of entertainers whose works truly continue to resonate with audiences long after they have gone. Sinatra and Elvis, certainly. Freddie Mercury and Michael Jackson, definitely. But it also goes for the music of Whitney Houston. Play one of her songs at a party, and suddenly everyone is either dancing or swaying back and forth, singing every single word. Want evidence of that? Head straight to An Evening With Whitney: The Whitney Houston hologram concert, a new Strip production that has all the energy of a Whitney Houston concert—even though the person singing onstage isn’t really there.

Through state-of-the-art technology, Houston appears, along with four live backup dancers and a live band, in various costumes to sing the best songs from her discography—which is to say, some of the greatest songs from the last 30 years. And when the audience hears songs like “Greatest Love of All,” “I Have Nothing” and “All the Man That I Need,” you swear the genuine article was performing before them—they stand up, raising their hands and dancing. The performer may not be real, but the emotion her music generates definitely is. Obviously, part of a live show is the performer’s interaction with the audience, something that’s impossible here. But Houston’s hologram

does address the audience, which gives it a much more personal touch. We may not be able to show her the love we could have when she was alive, but we can certainly show our appreciation for masterpieces like “I Wanna Dance With Somebody (Who Loves Me),” “Saving All My Love For You” and, especially, “I Will Always Love You,” her chart-topping hit from The Bodyguard. And when the show ends with Houston dancing to “I’m Every Woman,” the backup dancers enter the audience, turning the entire theater into a massive dance floor. Get a taste of the French bistro life with Favorite Bistro at The Linq Promenade. Head in for weekend brunch or for any other meal. Of course, a drink is a perfect place to start, and the spiked milkshakes and smoothies will whet that appetite. Brunch is especially fun, with such offerings as a croque monsieur—glorious ham and Swiss with béchamel sauce. Really, though, any time of day is good here. That perennial favorite, avocado toast, gets a boost with a poached egg, while that other perennial item, escargots Bourgogne, comes with garlic herb butter. The Hangover burger takes the basic idea burger and runs with it, piling Swiss cheese, caramelized onions, cheese sauce, bacon, a sunny-side up egg and several condiments on a bun with a half-pound Black Angus patty. There’s also a wonderful Niçoise salad with seared yellowfin tuna and a next-level barbecue chicken pizza. Other good options are the grilled salmon, the Le Petit New York strip steak and a cheese and charcuterie plate (you might want to share, even if it goes against everything you believe in). –Nina King

Join the Fun Some movies have longer-lasting impacts than others. It’s hard to watch a flair bartender work his magic and not think immediately of Tom Cruise flipping bottles in the classic Cocktail from 1988. And it’s impossible to walk through the doors of Coyote Ugly and not immediately feel like you’re living the 2000 classic, complete with the rowdy atmosphere. Let’s start with the décor—corrugated metal and lots of woods create an imme-

diately inviting, party vibe. Then there’s the servers, from the pouring antics of the bartenders (who make a simple gin and tonic a production show) to choreographed performances on the bar. Hang around long enough and you’ll probably find yourself part of the action! A Life Fully Examined Is there anyone out there who doesn’t immediately recognize Donny Osmond? And it doesn’t matter how old you are—the master showman has remained relevant ever since arriving on the scene more than 60 years ago, whether it was on The Donny & Marie Show, Dancing With the Stars or, most recently, The Masked Singer. You’ll get to know every facet of Osmond’s life and career during his jam-packed show at Harrah’s. He performs no fewer than 20 songs, including the ones he’s bestknown for like “Puppy Love” and “One Bad Apple,” but he also takes requests from his considerable catalog of more than 60 albums. Also expect plenty of dancing, comedy and a touching tribute to his sister, whom he performed with in Las Vegas for 10 years at Flamingo. The magnitude of Osmond’s career is almost overwhelming, particularly during the show’s true highlight, an “auto-rapography,” in which Osmond takes his audience through his entire professional life in just under 10 minutes. It’s mesmerizing and absolutely unforgettable, so much so that you may be buying another ticket just to see it again. –Ken Miller

Surprises Abound The first thing you’ll notice upon entering Joël Robuchon’s eponymous restaurant is the immaculately appointed dining room, punctuated by ornate, velvet banquettes, beautiful lighting, a stunning chandelier, white linen tablecloths, a lush garden terrace and marble flooring. It feels almost like an upscale brownstone home you’d find in the Upper West Side of New York City. The next thing you notice is that only two things are constant: A ridiculously addictive

bread-and-butter cart, which comes by your table at regular intervals to tempt you with its selection, and a dessert cart, which comes by at the end of your meal with a dizzying array of sweets. A standout is the Boulevard-Eight, which blends Octomore 11.1 Scotch, Carpano Antica and Amaro Montenegro. A Whole New Look

Shopping mecca to undergo extensive upgrades One of your favorite shopping experiences on the Las Vegas Strip is about to get a whole lot better. Miracle Mile Shops, a 500,000-squarefoot retail mecca that’s been packing in happy shoppers since 2000, will begin an extensive renovation next year, one that promises a completely new look and an even more exciting experience for the consumer. Interior and exterior renovations will begin next winter, with the new look to be unveiled in spring 2023. Aesthetic changes include new flooring, lighting, ceilings and seating, while entertainment changes will include a new sound system and an enhancement of the popular rainstorm feature. And since Miracle Mile Shops also includes plenty of places to dine, renovations will feature plenty of new and upgraded restaurant zones. In addition, the center’s exterior entrances on the Las Vegas Strip and Harmon Avenue will

be enhanced to include all-new, state-of-theart LED digital screens and signage, as well as modernized landscaping. Justin Mouzoon

General manager chose the right path When Justin Mouzoon was 20 years old, he found himself at a proverbial fork in the road. To one side was a job at a local rock radio station in Southern California where he was raised; the other side was culinary school in New York. “I had two passions—I liked to talk a lot and wanted to be on the radio, and the other was I liked to cook,” Mouzoon says. “So, when the radio station said I couldn’t drive their van because of a speeding ticket, I had I felt like it was a sign. Six months later I was going to culinary school, and I never looked back.” Mouzoon not only graduated culinary school, but also earned a degree in hospitality from UNLV and proceeded to work in the Las Vegas food and beverage industry for more than a dozen years, working every position from server and cook to bartender and management. Since 2014 he’s been with the Golden Nugget, where he’s currently the general manager for both Claim Jumper and Saltgrass Steak House.

Responsibilities for Mouzoon include overseeing a staff of almost 300 between the two restaurants, ordering products, creating menus, administration, finances, and any issues that might arise. “I have good people in place,” he says. “If I let them do their job it makes my job nice and easy. But I do wear a lot of hats; it’s something that I actually like, though.” You’ll even find Mouzoon getting behind the bar or helping cook in the kitchen. It’s his well-rounded background in the industry, working in various positions, that have helped him step in whenever needed. “To be able to jump into multiple positions, I like having that experience and ability to be able to do it,” he says. “I wouldn’t trade it for anything. I’ve always had that passion for the industry. Working in the hotel-casino environment—there’s nothing like it. I always come back to that fork in the road—I was meant to go to culinary school and end up right where I am.” –Kiko Miyasato

ONE OF THE BIG REASONS WE GO OUT TO DINNER? We want to be waited on and feel like we’re the most special people in the world. And at Carbone, mission accomplished. It’s as if restaurant creators Mario Carbone, Rich Torrisi and Jeff Zalaznick took a New York Italian restaurant from the mid-20th century, put it in a time machine and transplanted it to Las Vegas. You’ll know you’re going to experience something special from the moment you enter. You’ll dig the plush, high-backed booths and velvet curtains around the dining area, as well as the eclectic playlist. Captains are assigned to your table, and they attend to your every need and desire, providing you with detailed menu descriptions and more than a little personality in the process. Before you even order a cocktail, you’re feeling a bit tipsy from the rush. But you definitely want to order one here. Start with a classic cocktail like the Negroni, simply concocted with London gin, vermouth and Campari, or a fancy one like the White Lady, with gin, orange liqueur, vanilla and egg white. Num-num. You cannot go wrong with the appetizer menu here, but we strongly suggest starting with the carpaccio Piemontese, featuring truffles, walnuts and mushrooms atop thinly sliced beef tenderloin, brushed with a white truffle emulsion. Other highlights in this section include the baked clams, sizzling pancetta and prosciutto and melon. Moving onto main courses may present a challenge, as there are plenty of eye-catching offerings. For meat lovers, a medium-rare ribeye Diana with a cacciatore-style sauce is sure to satisfy, although we’re particularly partial to veal Parmesan, and this version is pretty much the reason. It’s enormous and enormously satisfying, accompanied with a cheese-crusted, deepfried rib. If seafood is more your style, the dover piccata, drizzled with a lemony brown butter sauce and finished tableside by your captain, is irresistible. Another must-try for seafood lovers is the lobster ravioli, such a perfect rendition with substantial chunks of the delectable meat. For pasta fans that might not prefer seafood, the choice here is clear: the rigatoni

in spicy vodka sauce, an absolute Carbone classic that lives up to its name and then some. You’ll probably suss out Calabrian chili, as well as plenty of onion. Whatever you do decide to order, don’t forget perfect sides like spicy rabe, potato Louie, corn tartufato or funghi trifolati. It’s awesome enough that you’re given a free bottle of limoncello just before your departure (along with seven-layer cookies), but don’t skip dessert. Again, Carbone specializes in the classics, and there’s absolutely nothing wrong with that, especially when items like tiramisu and cheesecake are presented so beautifully and create a perfect end to this experience.

self if you don’t sample chef Kris Yenbamroong’s street food-inspired specialties like scarlet prawn sashimi, three flavor whole fish, crispy five spice pork belly and som tum papaya salad. Virgin is just off the Strip, but back on the Boulevard, all the foodie buzz this year was about the arrival of Resorts World Las Vegas in June. There are so many new restaurants at this sprawling destination that it’s tough to choose a starting point. Among the most acclaimed and popular spots so far are Brezza (702.676.6014), featuring an ingredient-driven menu of modern Italian cuisine from renowned chef Nicole Brisson, and ¡VIVA! (702.676.6020), Los Angeles chef Ray Garcia’s personal and affectionate take on Mexican cuisine. ¡VIVA! recently began weekend brunch service featuring bottomless mimosas or sangria, chilaquiles made with heirloom corn tortilla chips, and pozole with tender pork and guajillo chile broth. Celebrity chef Bobby Flay struck earlier in the summer with his latest restaurant concept, the coastal Italian-centered Amalfi (702.650.5965) at Caesars Palace. This centrally located eatery with a refined design has become a favorite spot for a pre- or post-show meal, as it’s near the iconic Colosseum, and any time is the right time for fresh pasta, whole roasted fish or a juicy steak. Out in the neighborhoods, a variety of exciting local restaurants splashed down in 2021, including a completely new version of Ada’s Wine Bar (702.462.2795) at Tivoli Village. Originally a pizza and pasta bar with a great wine list, Ada’s came back to life with fresh Spanish flair, serving mushroom or chorizo croquetas, grilled figs with whipped basil ricotta, cheese and charcuterie plates and so much more. And you won’t find a more imaginative and experimental wine list in this or any other neighborhood. In the southwest end of the valley, casual eats come to life at Gabi’s Gorditas (702.268.7466), where the menu of delicious Latin fare is based on family traditions and the highest-quality ingredients. The namesake stuffed masa sandwiches come filled with beef brisket, brined organic turkey, Colorado pork loin, and tons of fresh-made salsas, pickles, sauces, guacamole and more, building maximum flavor into every bite. Don’t skip the house-made horchata, a sweet sip to go, along with seasonal desserts like sweet potato pudding and pumpkin spice cranberry cookies. –Brock Radke

Jason Aldean cooks up a taste of Macon on new album There are certain sounds that brings Jason Aldean back to his roots when he’s on the road. The voices of Georgia-born country music stars Tricia Yearwood, Travis Tritt and Alan Jackson can all trigger. A familiar song from acts that came out of his hometown such as the Allman Brothers, Little Richard or Otis Redding can send him down memory lane. For his 10th album, Macon, he decided the title should pay homage to both his birthplace and the contributions its citizens have made to music. It’s the first half of his double album, which will be followed in April by the second half, Georgia. Each half consists of 10 new studio songs and five live tracks. The endeavor was inspired in part by both having too much time on his hands during the quarantine and by the desire to do something different for a career landmark. “I always have a hard time narrowing songs down,” he said during an interview on Apple Music One’s Today’s Country Radio. “I feel like I’m always leaving songs on the table a lot of times because we’re trying to narrow songs to 15 or however many we’re putting on an album. And

when we’re done with a record I always look back and go ‘Man, I kind of wish I could have cut that one.’” Fans got a taste of Macon this summer when Aldean radio-released his first single from the album, “If I Didn’t Love You,” a duet with Carrie Underwood. The pair opened last month’s CMA Awards in Nashville with their first live rendition of the song, a day before Macon was released to the public. Underwood gets a night off from her Reflection residency during Aldean’s threenight (Dec. 9-11) Back in the Saddle run at Dolby Live inside Park MGM, making guest appearances at each other’s Vegas dates a scheduling possibility. Elsewhere on the album, “Over You Again” evokes Don Henley and Post Malone, while Aldean celebrates down-home living in “Small Town Small” with laid-back lyrical flow and rat-a-tat drum looping. Drinking songs include “That’s What

Tequila Does” and “This Bar Don’t Work Anymore,” while a cover of Bryan Adams’ “Heaven” is the cut most likely to become a concert spotlight. Macon’s live cuts include “Amarillo Sky,” “Johnny Cash” and “She’s Country.” The latter was recorded in Las Vegas, which Aldean will forever have a close connection to due to being onstage during the Route 91 Music Harvest tragedy on Oct. 1, 2017. Six nights later, he helped provide solace for a traumatized city on the verge of becoming #VegasStrong when he performed Tom Petty’s “I Won’t Back Down” on Saturday Night Live. Aldean, who posted a tweet on the day Macon was released citing Redding’s “I’ve Got Dreams” as his favorite sad song, wanted the title of his follow-up to 2019’s 9 to represent more than a number. “Ultimately, the tenth album, that’s a big deal in this day and age,” he told Today’s Country Radio. “We wanted to do something special for it.”

Sure, the Las Vegas Strip has completely reopened, and so you can gamble to your heart’s (and wallet’s) content, you can go on a shopping spree, you can eat at some of the world’s finest restaurants and see some of the greatest entertainers on the planet—often all in the same day! These experiences are quintessential Vegas musts and definitely contribute to a joyful and fulfilling visit. But what if that’s not enough? You may not know it, but away from the Strip, Vegas is a mini-paradise for the everyday adventurer, whether you’re venturing out during those brutal, triple-digit temperatures or during the current cooler months. There are mountains to climb, trails to explore, a man-made lake to admire and nature to observe. Of course, we fully expect that you’ll be taking advantage of all the Strip has to offer. That’s why you’re here! But if you really want to stretch your legs and see a side of the Southwest you’ve never seen before, take a chance and do something new—call that Uber or Lyft, head to REI for some supplies, and get off the grid. You may never want to leave!

Start off your morning by exploring one of the many hiking trails in Las Vegas. Near Lake Mead, right outside of Boulder City, is the Historic Railroad Trail (nps.gov), an easy 7.5-mile trek (round trip) that follows the old railway that transported machinery and supplies to Hoover Dam during its construction. Along the path, you’ll pass through five massive tunnels, which helps measure the scope of the dam’s construction and

shows how the project was a major feat of engineering. Another great option for easy hiking trails is Lone Mountain Park. There’s a flat-ground desert trail that loops around the tiny mountain and offers great views of the city. But if you’d like to make that view even better, climb to the mountain’s peak. If you decide to check out either of those hiking areas, remember that the weather may reach warmer digits, so bring a lot of water and don’t forget your sunscreen. If

you’d rather not deal with any heat, however, Mount Charleston is a much cooler refuge, with temperatures nearly 20 degrees lower than in the valley. It’s home to the popular Mary Jane Falls and Cathedral Rock trails, to name a few, which are a little tougher and rockier than the previously mentioned trails, but the crisp mountain air and stunning scenery—as well as seeing a side of Las Vegas that you probably didn’t know existed— will make it all worth it.

If hiking doesn’t appeal to you, but you still want to observe and enjoy nature, that’s not a problem. The Henderson Bird Viewing Preserve (cityofhenderson.com) is a tranquil place to view resident birds like roadrunners and verdin, as well as nesting American avocets and black-necked stilts. Go to Floyd Lamb State Park and you might wonder if you’re still in Las Vegas. The small oasis has lush vegetation, a quaint ranch and a few fishing ponds filled with ducks and geese— you’ll even come across a few peacocks. But if you want to see some nature without leaving your car, take a drive along the 13-mile scenic loop at Red Rock Canyon

(redrockcanyonlv.org), where you’ll be able to view unique red rock formations and wideopen desert landscapes. If you feel compelled to leave the cool air-conditioning of your car, however, there are several observation points and overlooks where you can walk around and further explore the canyon. In speaking of canyons, while it’s not Vegas, the Grand Canyon is too close to not be part of a Southern Nevada experience. If you don’t know where to start, try Grand Canyon West (grandcanyonwest.com). They offer a one-stop shop of ways to view the Grand Canyon and its surrounding areas, such as walking along the glass-paneled Skywalk or taking a helicopter tour. There’s also a convenient shuttle service that circulates through Guano Point, Eagle Point and Hualapai Ranch, allowing you to explore the West Rim at your own pace.

There’s always a last roundup, last rodeo, last song, last show, last boot scoot. For Reba McEntire and her “Cowgirls Don’t Cry” cohorts Kix Brooks and Ronnie Dunn, there will be nine final curtain calls together before Reba, Brooks & Dunn: Together in Vegas ends its run at

Her 19th album It’s Your Call was released in December 1992 and reached No. 8 on the Billboard Top 200 the following month, giving McEntire her first Top 10 album on the pop charts. She was widening her audience, stretching her wings and becoming a national treasure with film and stage credits, and a six-season sitcom in her future.

The mutual respect McEntire and Brooks & Dunn developed for each other as live performers dates back nearly three decades when the two acts first toured together. McEntire was well-established as a superstar by that time, having dominated the country music charts

Brooks & Dunn had just come off a roller coaster ride of success beginning in 1991 with No. 1 single “Brand New Man” and instant classic “Boot Scootin’ Boogie.” They won nearly every award a country duo could win by 1993 when they released sophomore album Hard Workin’ Man, which spawned a slew of singles and earned them a Grammy for the title track. Touring in support of McEntire that year on her It’s Your Call Tour was a no-brainer, but the camaraderie and chemistry the two acts discovered in each other would manifest in the studio decades before Together was a possibility. “If You See Him, If You See Her,” with Dunn alternating lead vocals with McEntire, was released in April 1998 and went to No. 1, stitching Brooks & Dunn’s destiny to the daughter of an Oklahoma rodeo cowboy together from then on. Follow up collaboration “Cowgirls Don’t Cry” would eventually become part of the shared-stage segments of Together. The trio opened their previous run of Colosseum shows with McEntire joining Brooks & Dunn for “Play Something Country,” which they’d proceed to do with McEntire’s “Why Haven’t I Heard from You” and a medley of both acts’ hits. “Red Dirt Road” allowed Brooks & Dunn to segue into their song catalog before McEntire stole the spotlight back with “Whoever’s in New England.” McEntire’s retrospective of solo material included everything from rollicking “The Night the Lights Went Out on Georgia” to a heart-rending rendition of “Is There Life Out There.” Whether McEntire does a “Boot Scootin’ Boogie,” Brooks gets “Fancy” or any other surprises are in store during the final nine shows remains to be seen. Unlikely to change: the three continuing to close concerts by weaving their voices together for “Only in America.”

Anything Goes The cast members of Fantasy (Luxor, 18+, 702.262.4400) are tireless—even those who have left the show. At a recent performance I attended, host Lorena Peril pointed out former Fantasy performers and choreographers in the audience, encouraging them to dance while she sang “Proud Mary.” They all joined in, making with their best Tina Turner moves to the delight of the audience.

That, at its heart, is the joy of attending a Fantasy performance: You never know what will happen. Yes, there are the choreographed numbers (courtesy of legends like Mandy Moore and Cris Judd), but there’s an air of spontaneity hovering around the whole enterprise. Nowhere is that more apparent than when the show’s “half-time” act appears (it rotates, but always features local perform-

ers). In my case, it was comedian Shayma Tash, who had the audience howling with her impersonation of a QVC host, using a volunteer’s purse (and its contents) as the product. But ultimately it’s the ladies who bring down the house, whether performing aerial moves on silk, romping on a bed or letting it all hang out during a high-energy “Roxanne.” This show just has it all. –Ken Miller
