From the Editor A Warm Welcome

During the pandemic shutdown of 2020, Las Vegas was like the rest of the country: Hurting badly. The Strip entirely shut down, and along with it all of our wonderful production shows, which always provide a needed respite from the pressures of the outside world. Greenspun Media Group, the parent company of Las Vegas Magazine, wanted to give fans of those shows a small glimmer of hope, a respite from the awfulness that was 2020. They came up with something that made me proud: Vegas at Home, a video series in which various entertainers (and many other types of famous Vegas personalities) contributed short videos. Some were truncated versions of their shows; others were a shout-out to all those who were hurting. But all were heartfelt and sincere, and all performers expressed a determination to return to their shows. I encourage everyone who didn’t get a chance to see these videos to check them out on our website, lasvegasmagazine.com. It’s a lasting testament to the resilient spirit of our city. Not only are most of our shows now back, they’re packing houses and receiving enthusiastic response. And the entertainers and performers up and down the Strip want to say to those of you who have not yet returned to Las Vegas a simple message: They can’t wait to see you again!

That’s the theme of this week’s feature (Welcome Back!,” p. 28). Photographer Chris DeVargas captured 15 of the city’s most iconic performers, ready to express their gratitude for all of the loyal fans who never gave up on them. Like Vegas at Home, it’s a encouraging reminder that Las Vegas is full of hard-working entertainers who genuinely want to connect with their audiences. If I said there’s a restaurant on the Las Vegas Strip filling two huge smokers with 2,000 pounds of meat daily, would that tempt you? Virgil’s Real Barbecue doesn’t joke around when it comes to meat and what they do with said meat. The original Virgil’s out of New York has been barbecuing all manner of meat since 1994, from Texas-style brisket to Carolina-style pork to competition-style ribs. Unpredictable Magic

Duo returns to Rio—with a whole new bag of tricks There’s a particularly hilarious bit in Penn & Teller’s return to the Las Vegas Strip. Penn Jillette indicates that the COVID-19 shutdown of 2020 led to the longest hiatus of their career—more than 400 days. Jillette explains that Piff the Magic Dragon, who performs at Flamingo, suggested that they do a “greatest hits” compilation of illusions they were well familiar with, since the long layover may have left them a bit rusty. After a brief pause, Jillette announces, “So tonight we’re doing eight new illusions!” Returning to the Rio after more than year with so much brand-new material? Many would suggest it’s brave, insane … or both. But that descriptor is al-

most a perfect encapsulation of the duo’s career. Never ones to rest on laurels or play it safe, Penn & Teller are the true renegades of magic, reveling in always zigging when the audience expects a zag. And the new material is fantastic: • A game called “Whack a Teller,” based on the classic “Whack-A-Mole” game which involves five “Tellers,” a very heavy mallet, a very, very nervous audience volunteer and plenty of talk from Jillette about “culpability” if anything were to go wrong, a discussion that eventually includes the audience. (Penn & Teller are a very meta act, as if you didn’t already know that.) But trust us: This one will truly surprise you.

• Jillette’s “Memory Palace” segment, which genuinely appears to be a feat of memorization on a grand scale, spanning four decades. This bit uses a huge map of the U.S., a whole lot of decks of cards, and a bewildered audience volunteer. Odds are you’ll feel exactly the same. • An examination of the Bible passage, “It is easier for a camel to pass through the eye of a needle than a rich man to enter the kingdom of Heaven.” Penn & Teller not only want to suggest that both are equally difficult, they want to show how both are possible—coincidentally, at the same time! –Ken Miller Rio, 702.777.2782

(Can’t) Read His Lips How big a hit has Tape Face been in Las Vegas? Big enough that his original venue at Harrah’s, The House of Tape, is no longer big enough to meet demand. Starting immediately, the inimitable mime who performs with a piece of tape over his mouth will move into Harrah’s Cabaret. “We are beyond excited to have outgrown the 180-seat House of Tape venue,” said Sam Wills, the creator of the Tape Face character, adding that the Harrah’s Cabaret has a 300-seat capacity. For those who have not yet seen a Tape Face show, know this: There’s a very real possibility you will be asked onstage to be part of his act. Tape Face delights in turning everyday household items into comedic props—oven mitts, table tennis paddles and staple guns—and the audience is a big part of that. For example, don’t be surprised to see your loved one onstage dancing to the Jacksons’ “Blame It On the Boogie.” And don’t be surprised to find yourself doubled over with laughter. –Ken Miller Harrah’s, 702.777.2782

A Room With a View It’s a sampling of Italian-focused flavors and a show when you dine at Lago by Julian Serrano. The dining room, with an open-air patio, overlooks one of the city’s most-famous attractions—the Fountains of Bellagio. (Ask about snagging a patio table when you make your reservation so you can get a front-row seat to the fountains). Here, it’s small plates loaded with big flavors. Antipasto and a raw bar get the meal started, followed by mains that focus

on meat, fish, pastas and risotto. There are even plentiful vegetarian options; and larger plates like osso buco, whole lobster and baked whole branzino. Lago is also a hot spot for brunch, Friday through Sunday. No End to the Fun There are really a lot of reasons to visit. Perhaps it’s the beautiful Gilley’s Girls. Perhaps it’s the live musical acts every Friday and Saturday evening. Caesars Palace restaurant excels at seafood Las Vegas excels at every cuisine, and seafood is no exception. Yes, our city lies in the middle of the desert, but that hasn’t prevented us from serving up some of the freshest, most delicious treats from the sea you’ve ever tasted. One of the leaders in seafood quality is Nobu at Caesars Palace, a restaurant that will make you want to sit down and spend some quality time—preferably with a large group. The décor is airy and is full of Japanese-inspired touches, and there are several areas where groups can gather in comfort and semi-privacy. There’s also a big bar area where you can enjoy

a signature cocktail or premium sake while you wait for your table. Nobu is a very recognizable brand the country (and world) over, with outposts including New York, Chicago and Malibu, but what makes this outpost extra special is that it’s the only one in the United States to have teppan tables. Here you can enjoy sushi one piece at a time, and this menu is exclusive to the teppan tables—you can’t get it with any other Nobu experience (it’s available from 5-9 p.m. Fridays and Saturdays). Another must-try here is the omakase, the chef’s tasting menu, which comes in three

different styles: Chef’s Daily Creations, Nobu’s Signature and Nobu’s Vegetarian. In each, you’ll be treated to various courses, from carpaccios and nigiri to crispy rice and miso cod. Each experience is completely unique and changes depending on what fish are available. Of course, you can also select from an incredibly diverse menu. Enjoy king crab ceviche, lobster tacos, squid “pasta” with light garlic or wagyu gyoza. Not a fan of seafood? Nobu also has a wide range of grilled meats, from free range chicken and CAB Prime beef tenderloin to roasted cauliflower with jalapeño. –Ken Miller

All the Beef Although the One Steakhouse name may not have been totally familiar to you before you dine, we are betting you’ll remember it afterwards. Morton brothers David and Michael, of the Morton family of restaurateurs, opened the restaurant at Virgin Hotels Las Vegas in the same space as their MB Steakhouse, and they kept some of the steakhouse’s signature offerings. That includes the Tomahawk Feast, a 16-pound, dry-aged experience for up to 12 people—it has to be ordered at least 72 hours in advance and includes six side dishes. Now that is worthy of a wow. But there are other tasty beef presentations if you aren’t opting for the feast, like a 32-ounce ribeye or a 32-ounce double porterhouse; wagyu from Japan and the U.S.; filet mignon, ribeye and N.Y. strip from a variety of Midwest ranchers. Get surf with your turf with crab legs, Maine lobster or tiger shrimp, plus seafood creations like Alaskan king crag pasta with white miso butter, shrimp risotto and pan-roasted Alaskan halibut. And the ricotta gnocchi, although a side, could easily make it as an entrée. –Nina King

A City Institution As the general manager—for more than three decades—of The Steak House at Circus Circus, Ron Randazzo says guests will enjoy the sweet sounds of the wood-burning mesquite grill in the middle of the dining room so you can watch the chefs cook exhibition-style and enjoy the throwback sounds of Frank Sinatra and the sounds of laughter. “We sometimes say ‘It’s dinner and a show,’ ’cause guests are walking out laughing because we give them a good time. You can’t last nearly 40 years without the laughter.” The restaurant hasn’t lasted this long without their dynamite menu, too. Simple and classic but oh so, memorable and delicious. So you think you’re brave, do you? Well, test yourself on SkyJump Las Vegas, where you jump off the top of The STRAT, from 855 feet up. Like a skydiver, you’ll leap out into the air, strapped into a harness, descending at speeds approaching 40 mph. You’ll fall past the Top of the World restaurant and 107 SkyLounge, and may startle a few folks there as you plummet past. But never fear—you will be slowed down before you land, and there are guide wires which help keep you on course. Art is life for this museum manager How many people can say that they love their job? Most people would say they don’t, but it’s the opposite for Baylea Clayton, museum manager for Museum Fiasco at Area15. “Honestly, this job is something that I look forward to every day,” Clayton says. “I just love the exhibit for what it is. I love the lights. I love the mirrors. I love the room. I find myself in there way more often than I ever thought I would. It’s kind of a release you get to go in—you just drown in the vibrations and whenever you need a second to step away from the hustle and bustle outside of the four walls with the craziness of the tourism industry, you can just walk into this room and recoup. It’s an experience I’ve never had before. And I just wholeheartedly love it. There’s nothing that I’ve ever loved more at a job.” The Las Vegas local also loves the artistic experience of Museum Fiasco, perhaps because she’s artistic herself. “I’m huge on art and so

I love the idea that I’d be working closely with other people who have the same value for art,” says Clayton, who joined the museum last year. “When I saw the venue for the first time I knew that this was exactly where I wanted to be.” Outside of the job, Clayton is a professional baker; loves to paint, draw and study historical artists; and makes wearable art through her business making custom shoes. As the manager of Museum Fiasco, Clayton helps handle VIP experiences, merchandising, ticketing, revenue and finances, but she also calls herself a “museum interpreter.” “I kind of describe it (to guests) as being stuck inside your own little world; being stuck inside of a computer glitch,” she says. “It’s almost like Tron meets the Bellagio fountains, but instead of water you see all of these lights syncing up with the sound and the music all around you. It is all immersive and it’s like being in your own world.” –Kiko Miyasato

Time for Some Tailgating

Catch Raiders games and more at new beer garden Las Vegas is a city that is known for doing things bigger, better and best. So the bar is raised when it comes to celebrating the new NFL season and Vegas’ first professional team, the Raiders. The long tradition of tailgating is more than just a parking-lot party in Sin City; instead, it’s a completely awesome experience. The new Bud Light Beer Garden at the corner of Las Vegas Boulevard and Hacienda is 130,000 square feet of outdoor gameday fun. Admission is free, and it’s within walking distance to Allegiant Stadium, so ticket holders can pregame four hours before kickoff. I’m a big fan of Giada De Laurentiis, such a big fan that I signed up for her newsletter, which sends recipes and stories to your email. But if you’re in Vegas and don’t want to wait until you get home to get a little Giada in your life, reserve a place at brunch (or dinner) at her eponymous restaurant. This venue was De Laurentiis’ first restaurant in Vegas and, indeed, anywhere, when it opened in 2014. The décor and cuisine captures The Food Network star’s heritage—during her early childhood years, she spent a lot of time in her filmmaker grandfather Dino De Laurentiis’ Italian restaurant and her later years in Southern California. You’ll find light colors and comfy seating surrounded on two sides with soaring windows that overlook the Strip and Flamingo Road. Scattered about are framed posters paying homage to her famous grandfather’s most famous films. If you are booked for a weekend brunch, fabulous! The brunch menu features a range of delicious cocktails and breakfast dishes with a California twist, like the lobster hash with sunny-side up eggs or the salmon Benedict, with wilted spinach, poached eggs, piquillo peppers and a prosecco Hollandaise. The Sunrise polenta waffle is accented with béchamel sauce, sunny-side up eggs

and pancetta. Brunch also provides some heartier options, from hazelnut chocolate chip pancakes to a grilled cheese with lemon pesto and heirloom tomatoes. Having indulged in that sandwich numerous times over the past few years, I can attest to how delicious it is. And having also indulged in dinner numerous times here, I can give the huge thumbs up on both the bucatini with Calabrian chili and the cacio e pepe. But you can’t go wrong with any of the pasta. If you are a lobster fan, try the ravioli. And Giada’s signature lemon spaghetti features shrimp, mascarpone, lemon and basil—now that really feels like it represents California. If you need a meatier entrée, try the Italian fried chicken, cacciatore style; the branzino with pomegranate glaze; the 28-ounce bone-in Tuscan ribeye with a sunny-side up egg or risotto with crab and scallops. For a lighter dinner, try the salmon with ricotta cavatelli, fava beans and Meyer lemon. Cap that off with the smashed, fried lemon potatoes. If you notice a trend of dishes with lemon, it’s true—the menu is liberally anointed with the citrus, even down to possibly the most signature of Giada’s signature dishes—the lemon ricotta cookies. Downtown Las Vegas offers plenty of dining rooms with old-school charm, places like Oscar’s (702.386.7227) at the Plaza, The Steak House at Circus Circus (702.794.3767), and the exciting new Barry’s Downtown Prime (702.726.5504) at Circa. But you can get a more of a sense of a modern era in dining at Joe Vicari’s Andiamo Steakhouse (702.388.2220) at The D, an all-American option imported from Michigan. Unique notes of Italian flair like veal osso buco and rich seafood cioppino complement prime beef selections in a one-of-a-kind venue hidden from the buzz and clatter of the casino. It’s a memorable escape. If you really want to get away from it all, head out to the Summerlin area and visit Echo & Rig (702.489.3525) at Tivoli Village, which has its own in-house butcher shop. That allows this kitchen to customize its creative cuisine and craft a modern menu that includes steak and arugula salad with grilled peaches, the Butcher Blend burger, bone marrow carne asada and the “baseball cut” sirloin steak with whiskey marinade. Also in the area, hidden gem Hawthorn Grill (702.507.5900) at the JW Marriott and Rampart Casino is a regally appointed restaurant that adds its own twists to the classics. Seek it out and discover pan-roasted scallops with Parmesan risotto, a prime grilled ribeye with bordelaise sauce and various surf and turf combinations that truly satisfy. On the opposite end of the valley in the Green Valley neighborhood of Henderson, Hank’s Fine Steaks & Martinis (702.617.7075) stands tall as a locals’ favorite for generations. The Green Valley Ranch Resort destination is beloved for its stellar service and icy martinis, and both of those are great reasons to visit Hank’s. But the food will blow you away, including Hawaiian bigeye tuna tartare, the Kitchen Sink Caesar salad with spicy horseradish dressing, the 20-ounce bone-in Kansas City strip and a 16-ounce bison ribeye.
