From the Editor Exceeding Expectations

There’s a particularly noteworthy moment in this week’s issue of Las Vegas Magazine. Ryan Ross, the subject of this week’s installment of our Friends With Benefits feature, talks about the reaction he gets from some people when they find out his career path: “I always hear, ‘You go to school for marine biology but end up working in a desert?’” That right there, my faithful readers, is exactly why Las Vegas is one of the greatest places on Earth: It’s a place that consisently exceeds expectations, a place where almost anything is possible. Some of you may be aware of the mind-boggling array of water-based attractions our city offers, but for you newcomers, we’ve assembled just some of the great destinations where water is the star (“Water You Waiting For?” p. 34). Ross works at one of them; next time you’re there, seek him out and say hi. Only maybe skip the part about him working in the desert. He’s heard it a lot ... Our water theme continues with associate editor Kiko Miyasato’s feature on some of the best pools to hit when the sun goes down (“Party By the Moonlight,” p 22). Because it may be September, but we’ve still got those high temps. But there’s plenty of other entertainment options available during your stay. Check out the over-the-top spectacle of

perfectly complements the action. But it’s not all seriousness. There’s plenty of humor, including a great bit when he brings audience members onstage for a bit of fun in which they detail their greatest fears (and Angel then manifests those fears). –Ken Miller

A Grand Tribute There are bragging rights, and there are serious bragging rights. Legends in Concert has the latter, being the longest-running show currently operating on the Las Vegas Strip. If you take away the pandemic shutdown (which shut down every single show), Legends is nearing its 40th straight year in Las Vegas, a singularly amazing achievement in a city not well-known for longevity. As an added bonus, the show is now hosted by legendary drag queen Frank Marino, who shares something in common with Legends: He’s been performing on the Las Vegas Strip for nearly 40 years as well. What really puts Legends above others like it is that everything is live—the band, the backup singers, and the impersonators themselves. No lip-synching here. When you hear Vivia Ross Scott come out as Tina Turner, belting out such classics as “Proud Mary,” you’re hearing the real deal—or, at least, that’s how it feels. Same with John Anthony as Rod Stewart and Matt Lewis as Elvis Presley. The Finer Things The only thing nicer than the décor at Edge Steakhouse is the menu itself; both reflect the finer things in life, and isn’t that why you’re visiting Las Vegas in the first place? Get yourself psyched up, because you’re about to fly through time and space on SlotZilla, the zipline experience that zooms right down the center of the Fremont Street Experience. SlotZilla offers two ziplines to choose from, one in a seated position and one in a superhero position. If that’s not your thing, you can still zoom through time and space by simply looking overhead, where the enormous VivaVision screens display a light-and-music show. A Nod to Her Heritage

Celeb chef Lorena Garcia continues to wow with Strip eatery Four years ago, Las Vegas welcomed chef Lorena Garcia and her new restaurant, Chica, which presented Las Vegas visitors with dishes not only from Garcia’s native Venezuela but from countries all across Latin America. Garcia has authored two cookbooks, competed in Top Chef Masters, and has established a number of restaurants in addition to Chica. And since that 2017 opening, Garcia and her Chica partner, 50 Eggs, have expanded to Miami. In The Venetian, Chica sits at the entrance to the casino on Restaurant Row, and beckons you in with muted lighting perfect for a slow-to-rise breakfast or brunch, and also for those long

dinners. At brunch, start with a cocktail—Bloody Marys come in several different forms, with Chica’s signature mix combining tomato juice, fresh citrus, Worcestershire, an unusual horseradish chipotle purée and ancho chili. As far as what to order at brunch, there are so many good things that it’s almost impossible to choose. A basket of the signature savory arepas, of course, little cakes of beet, nata butter, black bean, cheese and cilantro. Avocado toast gets a significant upgrade here with pomegranate, pumpkin seed and house-pickled Fresno chiles. A go-to entrée for brunch is the corn cachapas; they have much more depth than the

standard typical fluffy buttermilk variety. But you can’t go wrong with a coconut-chia granola bowl or a bowl of hand-cut tropical fruit. French toast drizzled with dulce de leche and topped with fruit is a nice twist. You’ll find several egg dishes on the menu, from an egg Benedict cazuela with chorizo and Hollandaise sauce, the Latin breakfast with two eggs, your choice of meat and Peruvian purple hash. For more main meal, try shrimp tacos with a habanero aioli or the Chica burger, a piled-high sandwich with pepperjack and prime beef. The marbled potatoes with stewed onions and chiles are good with both. –Nina King

Plated Sophistication For a refined, high-end dining experience on the Las Vegas Strip, it’s hard to beat Mastro’s Ocean Club. Known for its iconic “treehouse” dining room, this is a wonderful spot to spend a few hours, lost in conversation, next-level service and some of the best examples of American classics to be found anywhere. Paradise Found It’s a nice respite from the buzz of the Las Vegas Strip, and it’s an attraction that many might not know about, but everyone really should. The Wildlife Habitat can be found on the Flamingo’s 4-acre tropical grounds, and is free for guests to stroll, stop and take a break and take in the beauty of nature and its inhabitants. A Fateful Tale

Take a deep dive into the history of famous ship You’ve seen James Cameron’s impressive blockbuster movie about it. (Actually, you’ve seen it multiple times, haven’t you? Admit it!) The story of the Titanic remains one of the most fascinating in history, partly because of the sheer scope of the ship itself, and partly because of the seemingly endless storylines of the passengers. And if you want to look inside the stories of the real people involved (sorry, Jack and Rose never existed), then head straight to Titanic: The Artifact Exhibition. Partly museum and partly interactive experience, this attraction is absorbing to the point of distraction. No detail is left out: the design of the ship (and the efforts to get it built); re-creations

of cabins; profiles of some of the famous people who stayed in those cabins; a simulation of the deck of the ship on the fateful night it sank, complete with accurate air temperature; and a large piece of ice you can touch to give you an idea of just how cold it was that night. The information you take in during this unforgettable tour will stay with you for some time. What makes it particularly powerful is that, upon entering, you are given the name of one of the passengers, and must go through the whole exhibit before you’re able to ascertain if your passenger survived. (There’s a large wall at the end that lists those who survived and those who did not.)

One thing the movie got right: That amazingly ornate grand staircase, here immaculately re-created to give you some sense of how opulent and grandiose this whole project was. It’s almost like they tried to put Las Vegas on a boat! Perhaps the most striking part of Titanic is The Big Piece, a huge section of the actual ship. Regardless of how you’ve seen it in your mind, nothing can compare you for the absolute reality of this spectacle. In an instant, you are transported to that night, wondering how it must have felt as this beast began to sink. A Perfect Night Here’s a little tip for you: Head off-Strip to the Suncoast resort in Summerlin, and you’ll enjoy one of the most relaxing, delicious dinners you’ve had in a long time. The Suncoast’s SC Prime Steakhouse has a casual, intimate vibe with attentive staff and soaring, floor-to-ceiling windows. Start with a classic cocktail like a lemon drop, or a nice glass of wine, and you’ll find they go nicely with the sounds of jazz and Sinatra in the background. The menu here is focused on classic, quality steakhouse fare, and that starts with the appetizers. You can enjoy crab cakes with a red pepper remoulade or prime rib crostini, with shaved prime rib, horseradish spread and tender, melt-in-your mouth sautéed onions. Steaks include custom-aged Creekstone Farms Prime ribeye and New York cuts, prime rib in two sizes, and a striking pan-roasted, 24-ounce, bone-in ribeye with cilantro garlic butter. All the sauces here are house-made, so indulge in peppercorn cream or a red wine reduction. Other specialties include the Chilean sea bass, served with white miso sauce and bok choy. A Real Downtown Gem

Plaza steakhouse offers the finest fare and ambience If you’re seeking some of that old-school charm, famous mob lawyer and former Las Vegas mayor Oscar Goodman—affectionately known as the Happiest Mayor in the Universe and serving three terms in Sin City—holds court again at his namesake Plaza restaurant, Oscar’s Steakhouse. The downtown venue was erected in honor of Goodman, and his cool, snazzy-snappy demeanor carries over into the restaurant’s ambience. In the bar and lounge area, bartenders don the classic bartender’s uniform and dole out drinks and discussions reminiscent of Vegas’ heyday. Try Goodman’s favorite cocktail—the Hizzoner with Bombay Sapphire gin, more Bombay Sapphire (it’s the way he takes his martini) and a slice of jalapeño. For drink and food specials

It’s old-school charm mixed with upscale touches—a space perfect for romance, as well as the feel of a Rat Pack-era hang out. All the steakhouse classics are here: shrimp cocktail, oysters, wedge salad, calamari and crab cakes, and might we suggest a couple excellent app choices like No Nose’s Mob meatballs and Crazy Phil’s onion soup.

Certified Angus beef comes á la carte in cuts like filet mignon, prime rib and an eye-popping 44-ounce tomahawk. USDA prime beef includes New York Strip, rib cap and Oscar’s favorite, a 24-ounce bone-in ribeye. Seafood lovers can jump into the seared Day Boat scallops or whole roasted seabass. And might we also suggest Oscar’s Black Angus burger, served on toasted brioche and served with a special “Plaza sauce.” Cap the meal off with a classic dessert like New York-style cheesecake or a slice of carrot cake. Or really indulge your sweet tooth with dessert decadence like the crème brûlée or the deep-dish chocolate chip cookie, served with ice cream and chocolate fudge. Stop in and concoct a delicious bath Have you ever wandered through a mall or resort in Vegas, and spotted the most amazing-looking sweets shop, only to realize that those weren’t cupcakes at all? If you have, you’ve undoubtedly seen Nectar Bath Treats, a Vegas-based and -manufactured chain of stores that specializes in bath bombs and beauty products in an incredible range. And everything is made locally! Nectar Bath Treats has only been around for a few years (the company started in 2015 and co-founder Tom Taicher is CEO today), but in that time has blossomed and now operates multiple shops across the Las Vegas Valley (The

Ryan Ross

Curator’s career is going swimmingly For Ryan Ross, aquarium curator at Silverton, animals have been a lifelong passion, specifically marine life. “When I was younger, I bought a little 15-gallon aquarium and set it up in my bedroom and it snowballed from there,” says the Pennsylvania native. “My whole bedroom was nothing but aquariums. I’d always go to the back of the pet shop, past the cute puppies and cats, just so I could see the aquariums and I’d sit there and stare at all the fish. Eventually I knew that’s what I wanted to go to school for.” And Ross did—he studied marine biology at East Stroudsburg College in his home state, and after graduating worked at various aquariums on the East Coast before getting the itch to move out west. He landed a job at Silverton in 2005 for the property’s aquarium. Ross says, “I always hear, ‘You go to school for marine biology but end up working in a desert?’ Yes, it’s strange. Never in a million years would I have thought Las Vegas, but I love it here.”

He started at the bottom of the ladder at the 117,000-gallon aquarium and in 2012 he was made curator. Among the many duties that fall under his title include taking care of the main aquarium, life support for the animals, the quarantine in the back of the facility, equipment and maintenance, budgets and financials. “I don’t say I have to do all this stuff—I say I get to do all this stuff,” Ross says. “I enjoy the variety because this job always keeps you on your toes.” When Ross isn’t swimming in all things aquarium, you can still find him connecting with nature. He’s an avid outdoorsman that loves adventure racing (like off-road triathlons) and competing in Tough Mudders. Nature, animals—it’s all a passion for Ross. “You don’t work with animals for the money,” he says. “You work with animals for the love of it. Whether it’s an aquarium biologist or zookeeper, you don’t get into this industry for anything but the love of animals.” –Kiko Miyasato

Restaurateur Bobby Flay chats about his new Italian concept Bobby Flay‘s wildly popular Mesa Grill at Caesars Palace played a major role in dining developments on the Las Vegas Strip. But times change, and the casino and restaurant partners decided to close Mesa Grill to make way for the celebrity chef’s very first Italian concept, Amalfi. We caught up with Flay to discuss his inspirations and influences.

How significant is it to open this restaurant now and play a significant role in the post-pandemic comeback of Las Vegas dining? Timing is everything. We designed the restaurant virtually during the quarantine days and started construction about five months ago and just brought it to life. The week we started serving was very exciting.

Did you bring the Amalfi concept to Caesars Palace or did the resort ask for an Italian restaurant? It was the perfect storm in the best way. Our partners at Caesars asked me what I wanted to do next and I explained how I had become obsessed and passionate about Italy in the last few decades and spent a ton of time there, and they told me they were looking

to do more fish at Caesars. I told them it sounds like we have a good deal here because I’m a huge fan of the Amalfi Coast and I just spent time there last summer, and they said, let’s do it. Were there specific dishes you discovered during your travels that inspired the concept and cuisine at this new restaurant? The fish market in general is the centerpiece of the cuisine there, and that is a big influence. On the Amalfi Coast, the fruits of the sea get paired with local vegetables and handcrafted pastas, and that’s what the restaurant in Las Vegas is really about. But specifically, I would say the bufala mozzarella grilled in the lemon leaves is a definitely a direct influence, and also the scialatielli pasta with scampi sauce; that noodle is a classic Amalfi Coast technique. The zucchini pasta with shishito pesto is a play off of something called spaghetti Nerano, and I was taught the basis of that dish

by a chef of a restaurant called Lo Scoglio in Nerano. It must have been difficult to say goodbye to Mesa Grill, one of the most popular restaurants ever on the Las Vegas Strip. Yeah, it’s one of those things. We opened the original Mesa Grill in New York in 1991 and we had Mesa Grill in Las Vegas for 16 years. It was an amazing chapter but I don’t think the chapter is closed. I think Mesa 2.0 is probably in the future at some point because it’s just been such a big part of my career and it’s an important cuisine to me. I look forward to possibly taking a new approach to Mesa in the future in Las Vegas. You also opened a quick-serve location of Bobby’s Burgers at the Forum Food Hall at Caesars Palace recently, which seems like a great fit. It’s been great. Obviously it’s a more casual, value-oriented concept, just burgers and fries and shakes and a fried chicken sandwich. But we’ve had a line through the food court since the day we opened.

big Vegas arrival is finally here. The Las Vegas Raiders are kicking off their second NFL season at Allegiant Stadium this month and this time the stunning new venue will be packed with fans from all over the country, all of whom will be no doubt over the moon to experience football done Vegas style. It makes all the sense in the world for legendary quarterback, sports broadcaster and mega-sized personality Terry Bradshaw to return to his Vegas gig at the same time, but Bradshaw was actually ahead of the game when it comes to his fast-paced show on the Strip. The Shreveport, La.-born Hall of Famer got his first taste of the Vegas stage with a slightly different production—more of a traditional one-man show—at The Mirage back in 2013. It allowed him to show off his singing skills while entertaining the audience with stories from his unique career. From its very beginnings, The Terry Bradshaw Show in Las Vegas was engineered by Anita Mann, one of the most accomplished choreographers and TV producers in the business and the creator and producer of the long-running female revue Fantasy at Luxor. Her collaboration with Bradshaw is a big reason why his show ended up in the same Atrium Theater at Luxor for a bit of a trial run in late summer 2019, but Mann’s expertise and rhythmic sensibilities also pushed Bradshaw to get even more musical in his show, and his ever-improving skills onstage are the reason why the show has quickly gained a following and was launched as a fullfledged residency in early 2020. Now that so many shows have turned the lights back on in 2021—including Fantasy and Carrot Top’s headlining comedy show in the Atrium—Bradshaw is ready to resume his 70-minute whirlwind that finds him singing more than ever before, joking and interacting with the audience, and always sharing his personal first-hand accounts of a life lived on and off the football field. And as he explained prior to the pandemic, there’s no better place for Terry Bradshaw to be Terry Bradshaw. “Las Vegas is really a family town now. It’s beautiful. People live lives here,” he said. “It’s not just that you go out to Vegas to have fun or go to a convention. There’s a great atmosphere and I find it to be perfect timing (for football) because the NFL has evolved over the last 25 years. I will be very exciting and very well-received—a smash hit in Las Vegas.” The same could be said of The Terry Bradshaw Show.

fact, at times you’ll swear you were in a humid, tropical area. It’s a bit disorienting, but then again you are in Las Vegas. It kind of comes with the territory!

FOUNTAINS Of the free attractions on the Las Vegas Strip, the Fall of Atlantis Fountain and Aquarium at The Forum Shops at Caesars (702.893.4800) and the Fountains of Bellagio (702.693.7111) are arguably two of the most visited. They’re certainly two of the most longstanding. Millions have watched the animatronic show about a son and daughter fighting for their father’s throne, and even more have lined up to see the fountains perform their exquisite dance to music like Cher’s “Believe” and Lady Gaga’s “Bad Romance.”

ANIMALS Yes, there are plenty of water-dwelling creatures in the desert, thanks to Mandalay Bay’s Shark Reef Aquarium (702.632.4555), Siegfried & Roy’s Secret Garden and Dolphin Habitat at The Mirage (702.791.7188), the Wildlife Habitat at Flamingo (702.733.3349) and the Silverton Aquarium (702.263.7777). For those with money to spend, Shark Reef and the Secret Garden are wonderful places to spend an afternoon with the family. At Shark Reef, check out everything from, yes, sharks to large octopi, Komodo dragons, golden crocodiles, piranhas and so much more. At the Secret Garden, the dolphins are a true

highlight, showing off their acrobatic skills with their trainers. For those on a budget, the Wildlife Habitat and Silverton Aquarium are free. You could definitely spend a considerable amount of time relaxing in the Wildlife Habitat’s 4-acre area while catching glimpses of flamingos as well as swans, ducks, turtles, pelicans and sacred ibis. And even the best home aquariums can’t hold a candle to Silverton’s 117,000-gallon beast, which contains a wide array of sea life, including stingrays, sharks and tropical fish.

Terry Fator’s Las Vegas journey continues at new, intimate venue When Terry Fator took the stage of America’s Got Talent way back in 2007, no one could have predicted the trajectory his career would have taken. After all, it was just a man, a puppet and a trio of judges, one of whom obviously had no tolerance for ventriloquists. (We’re looking at you, David Hasselhoff!). Then Fator opened his mouth—er, rather, his puppet, Emma Taylor, opened her mouth, and out came the voice of Etta James singing “At Last.” Suddenly some of the judges resembled dummies themselves, mouths wide open in stunned disbelief. He went on to win that season, and everyone knew he was on his way to significant fame. It made sense, as at the time, it was just a basic fact—no one could do what Fator could do; not only was he a world-class ventriloquist, he could throw his voice while singing! And not only that, he could sing in other people’s voices, specifically the voices of legendary musicians, everyone

from Garth Brooks and Karen Carpenter to Bruno Mars and Meghan Trainor. It was an act tailor-made for Las Vegas, as it had all the elements of a classic Vegas show: The ventriloquist element, well grounded in Vegas lore thanks to legendary acts like Willie Tyler and Lester, Wayland Flowers and Madame, and even more recent acts like Ronn Lucas and Jeff Dunham. The comedy element, one that incorporates the cheesy, anything-for-a-laugh style that goes all the way back to The Rat Pack, Rodney Dangerfield and Don Rickles. The singing element, as almost every voice Fator generates has performed in Las Vegas—Elvis Presley, Elton John, Paul McCartney, Justin Bieber, Louis Armstrong, and so many others. So began an incredibly successful run, first at Las Vegas Hilton (now the Westgate Las Vegas), for a year, followed by a $100 million, multi-

year contract at The Mirage, complete with a performance space built for him, The Terry Fator Theater. But as every entertainer on the Strip knows, Vegas is a town that changes rapidly, and that extends to performers. Fator wrapped up his Mirage residency after 11 years in 2019, and was set to return to New York-New York right before the pandemic shutdown of 2020. However, he was also one of the first shows to return in late 2020, originally in the space previously used by Cirque du Soleils’ Zumanity and, now, in a new space ideally suited to the intimacy his show requires: Liberty Loft, located on New York-New York’s second floor. Of his new show, titled, Who’s the Dummy Now? Fator said in a press release, “I am thankful to the MGM Resorts team for allowing me to perform at the resort, and am touched by the tens of thousands of fans who came out to support me this year. When we started to talk about Liberty Loft, I was thrilled to discover it affords us the opportunity to create the ideal viewing experience for my audience.” No doubt Fator will continue to amaze and entertain a whole new generation of fans.

Tropicana Las Vegas, you’ll find lower ceilings and a real old-school vibe, while Excalibur means soaring ceilings and a practically medieval feel. You’ll find a mix of games, from Vegas favorites to the hottest new ones out. 3-5: Drink up on the Stripside patios at Tom’s Urban or Nine Fine Irishmen. Prices don’t really drop like they would at a true happy hour, but the drinks are delightful. And on weekends Nine Fine features a band outside. At The Park next door, Beerhaus is a nice little bar with a decent beer list (and some local faves, too). 5-6:30 p.m.: Head back to the room to take a little snooze and get cleaned up for your dinner (or your show, if you indulged for happy hour). 7 p.m.: Did you score reservations at Nomad Library at Park MGM? The signature chicken here is raved about, and for good reason, but the fabulous décor might overwhelm the food. It’s spectacular. You’ll need to hustle to make your 9:30 p.m. show at Jabbawockeez at MGM Grand—these dancers are simply incredible. However, if you ate during happy hour, you’ll be headed to Legends in Concert at Tropicana Las Vegas, where you’ll see tribute acts that channel iconic musicians and leave you plenty of time to hit the slots again. In the modern era, the city’s steakhouses and French-influenced fine dining rooms have emerged as signature culinary experiences. The current landscape continues to evolve, and it’s never been more exciting to taste and learn.

Few American cities offer an eclectic variety of Japanese restaurants the way Las Vegas does. On the Strip, taste the legendary flavors at Nobu (Caesars Palace, 702.785.6628), where the sake and sushi selections are unparalleled. That’s just the beginning of this experience as original creations like miso black cod and tuna tataki tempt along with tempura, lamb chops and lobster with wasabi pepper. Exotic exploration is fun but the sheer popularity of these foods in the United States is hard to top.
