From the Editor The Show State
You’ve heard of the Show-Me State (better known as Missouri)? Well, Nevada might want to adopt a similar nickname: The Show State. It’s no exaggeration to say that our show offerings are second to none. It’s also no exaggeration to say there’s a show out there for every taste. This week’s issue of Las Vegas Magazine is packed with just a small sampling of some of the best shows currently selling tickets on the Las Vegas Strip. Editor-at-large Brock Radke introduces you to one of the newest arrivals— and one that was rudely interrupted by the Strip shutdown last year—RuPaul’s Drag Race Live (“Dressed to Thrill,” p. 38). Even if you haven’t seen the hit reality show it’s based on, you’ll love it. The same goes for magician Mat Franco’s show at The Linq Hotel (“Presto! Change-O!” p. 30). The America’s Got Talent winner proved to be so successful that the property named the theater after him. For fans of close-up, sleight-of-hand illusions, it really doesn’t get better than Franco, who “reinvents” his show every performance. No matter how many times you go, the show’s always different! Not able to get a ticket for either of those shows? No problem! If you’ve never seen Copperfield at work, very little can prepare you for the emotions you’re about to experience. As he makes things small and massive disappear seemingly at will, all you can do is gape and ask your plus-one, “How did he do that?” (Expect that to happen multiple times during the show.)
But as spectacular as Copperfield’s illusions are, what really puts his shows over the top is the way he personalizes his illusions—they almost feel organic to the story he is telling, whether it’s a memory of his father or a touching story from his childhood (Yes, you may tear up a bit). –Ken Miller

Belly (Laugh) Up to the Bar Atomic Saloon Show’s setting—looking like a Wild West saloon, with audience members both at floor level and in the balconies—just immediately puts you in a mood to have a great time. And when the singing cowboy comes out, belting out one of the raunchiest tunes you’ve ever heard, you are all in. The show follows the slimmest of plot threads—a love story, yawn!—but it’s completely unimportant to the proceedings. It’s more a framework upon which various performers strut their talents, from naughty nuns to hand-balancing studs to super-sexy acrobats. Tying these all together is host Boozy Skunkton, the foul-mouthed, hilarious proprietor. Those who have been to Spiegelworld’s other Strip production, Absinthe, have a good idea of what to expect at Atomic: An anything-goes, un-politically correct good time. And make sure to grab a drink at the bar before taking your seat: Alcohol is practically mandatory here! –Ken Miller

Get the Gordon Ramsay experience here Entertainment meets flavor at Gordon Ramsay’s Hell’s Kitchen, one of the most popular restaurants on the Las Vegas Strip. Named for Ramsay’s hit reality series, the dining room will be instantly recognizable to fans with its now-iconic red and blue kitchens. And the cuisine fans see being served on the show is all here, from the pan-seared scallops and lobster risotto to filet mignon—although, unlike the show, all are cooked to perfection each and every time, of course. Take a seat in the high-energy dining room and get ready for a real adventure. The signature cocktail list has a bit of everything, from

the Meet Your Maker, made with Maker’s Mark, of course, Domaine de Canton ginger liqueur, mint, apple, strawberry and cinnamon, to the Peat’s Dragon, featuring Ardbeg Scotch, Patrón Citrónge orange liqueur, lemon and egg white. But fans of Ramsay will love the Notes From Gordon, a cocktail featuring Plymouth dry gin, green tea, lemongrass, peach and lemon. In addition to a delicious sip, you’ll get a note with the drink containing a bon mot Ramsay has said on his show. (“This crab is so undercooked, it just told me its name is Sebastian!”) Most know about Ramsay’s beef Wellington, a juicy cut of meat surrounded by a pastry shell in
a red wine demi-glace, but explore the rest of the menu and you’ll find other delights. Jidori chicken scallopini is pure decadence, served with roasted pee wee potatoes, artichokes and lacinato kale, while crispy skin salmon is perfectly complemented by warm white beans, sea bean salad, Iberico chorizo, all in a citrus beurre blanc. Bigger and Better How big a hit has Tape Face been in Las Vegas? Big enough that his original venue at Harrah’s, The House of Tape, is no longer big enough to meet demand. Starting immediately, the inimitable mime who performs with a piece of tape over his mouth will move into Harrah’s Cabaret. “We are beyond excited to have outgrown the 180-seat House of Tape venue,” said Sam Wills, the creator of the Tape Face character, adding that the Harrah’s Cabaret has a 300-seat capacity. For those who have not yet seen a Tape Face show, know this: There’s a very real possibility you will be asked onstage to be part of his act. Tape Face delights in turning everyday household items into comedic props—oven mitts, table tennis paddles and staple guns—and the audience is a big part of that. One of the neatest experiences in Vegas, Van Gogh: The Immersive Experience at Area15, recently announced that it was extending its exhibition through the fall. This hybrid of museum display and digital animation takes one through a truncated version of Van Gogh’s life using his famous art. And special this month is Sunflowers & Rosé: A Guided Painting Experience that goes hand-in-hand with the show. Get ready to learn about human anatomy like never before You can view it as a learning experience. You can view it as entertainment. Either way you choose to view Bodies … The Exhibition at Luxor, you’ll walk away from the attraction with a better understanding and appreciation for that body that actually just carried you through said exhibit. Bodies...The Exhibition is human anatomy come to life in a unique, curious and teachable way. Put through a method known as polymer preservation, 13 real, whole-body specimens and more than 250 actual organs and body parts are on display (as well as skeletal structures). The self-guided experience is also chock-full of facts you can read throughout the exhibit. Every drop of blood in the body passes through the heart

once per minute. The tongue is made up of 16 individual muscles. The kidneys filter impurities from the blood at a rate of 15 gallons per hour. See what a lung looks like after years of smoking (guests that do smoke have the chance to toss their packs of cigarettes into a clear plastic box as a sign of a commitment to quit); what a liver looks like from cirrhosis damage; what the brain looks like after suffering a stroke; what organs look like from overeating or lack of exercise. The exhibit is also divided into sections so guests can explore the body’s muscular, skeletal, circulatory and respiratory systems. A highly sensitive exhibit explains and shows fetal development (this is a room you can choose to skip entirely).
For an extremely timely exploration, Bodies...The Exhibition recently added a few displays that explore the effects that COVID-19 has on the body. Read about what the virus does to the circulatory system, the reproductive system, the respiratory system, the digestive system and more. Perhaps the most meaningful quote on display says, “Why all this interest in the human body? The answer seems quite clear: your body is the only thing you can carry with you from the moment you are born until your very last breath.” So why wouldn’t you want to learn as much as you can about your body, right? Comedy, Laughs and a Dog The first thing you’ll probably notice about John van der Put is his costume—I mean, how could you possibly miss it? Bedecked head to toe in green and wearing a knowing smirk, he looks like a disgruntled member of the Muppets. Of course, once you actually hear Piff the Magic Dragon speak, it becomes a whole different story. You’re not listening to a guy in a strange suit; you’re enjoying a magician who makes nonstop jokes about how much he loves gold and fair maidens, all with the most deadpan lilt. Within a few seconds, you are under his spell. Whether it’s magic, comedy or a combination of both, you’re more than happy to spend an hour with this medieval, mercurial madman. He’s back performing with Mr. Piffles, his tiny dog that’s ever-present in everything Piff does onstage, whether it’s interacting with the audience or performing an illusion. It’s a welcome return for one of the Strip’s most unique and memorable performers, who now famously refers to himself as “The Loser of America’s Got Talent.” If you know anything about Piff, you’ll know that’s a title he’s extremely proud of. –Ken Miller

Oh, Those Wings Yes, you can get the wings, and most certainly you can get the beer, but that’s only part of what Hooters serves up. Location, Location, Location Beloved Greek restaurant moves to The Venetian When Estiatorio Milos closed in the fall at The Cosmopolitan, a deep sigh surely was issued from all the fans of Costas Spiliadis’ Vegas restaurant, where countless dishes and dinners were served up through the years. That sigh undoubtedly transformed into one of relief when they found out Estiatorio Milos was reopening in spring at The Venetian in a lovely new space in its restaurant row. The Vegas outpost of the global brand entirely remodeled the space at The Venetian with wood and marble, creating a light peaceful environment that nonetheless buzzes with happy diners.

Past an inviting bar, there are two beautiful market areas displaying both the incredible array of fruit, veg and herbs, and the fresh fish used in Estiatorio’s dishes, all in front of a bustling open kitchen. In addition, you’ll find a room dedicated to making the restaurant’s yogurt. What should you be on the lookout for when ordering? A new raw bar offering such things as big eye tuna sashimi and tartare, plus ceviche. And the Milos Special piles thinly sliced and lightly fried zucchini and eggplant with accompanying kefalograviera cheese and tzatziki. It’s just superb.
A Greek salad has all the classic ingredients, plus barrel-aged feta. Grilled octopus and mushrooms, Holland pepper and fried calamari are all sure to whet your appetite for grilled whole fish or fish encased in salt and oven-baked. For the red-meat lover, ribeye, filet mignon and Colorado lamb chops all come with Greek fried potatoes, all available with sides such as a Santorini fava purée, asparagus and broccoli. For dessert, traditional baklava comes with ice cream and pistachios. The Greek yogurt with Kythirian thyme honey is delicious without being overwhelmingly sweet. –Nina King

Try one of the Italian restaurants for pastas and specialties of the house—Mercato della Pescheria, Canaletto, Trattoria Reggiano, Buddy V’s Ristorante and Brera Osteria in St. Mark’s Square. As the Wink World lead—or “lead Winkster” as she’s called—Linares’ duties include the opening and closing of the experience, overseeing the staff and customer service. “We’re a psychedelic art house,” she says. “You start off in the black-light art gallery and then it transforms into six different infinity rooms, each individually orchestrated with different music, lights and sound. It was created by Chris Wink, founder of Blue Man Group. It’s super fun, vibrant, totally something you need to have an open mind to. It’s an experience.” You could say Wink World and Linares are a perfect fit; she’s been with the experience since its opening in January. Linares was raised in Las Vegas—“but my roots are 100% Mexican,” she says— and loves to be creative and view the world from different perspectives. “Creation, that’s my thing,” she says. “Being creative.
And that’s what I love about Wink Word—it’s a whole different perspective.” She is a proponent of a holistic, alternative lifestyle and alternative fashion. She’s also a yoga instructor, integrated nutrition health coach, owner and creator of Space Head Jewelry—“accessories for the spiritually conscious”—and is an aspiring photographer. “I truly believe in the metaphysical, the otherworldly—it can transform if you let it,” Linares says. “This is something that is really important to me.” And she says she sees Wink World transform its visitors. “When people walk in, their face just lights up and they’re on a different planet—that initial reaction is just so amazing to me,” she says. “Second is seeing people come out after experiencing Wink World—seeing the full circle, the full experience and they come out and they’re like, ‘My mind is so expanded right now.’ To see that transformation when they go through it—I love that.” –Kiko Miyasato

Eat this bit by bit or all at once—there’s no wrong way. Up next is something which feels almost counterintuitive, but which might change your mind about caviar’s flavor profile forever: caviar pie. This time, the caviar arrives atop a tart made with green apples, lemons, crème fraîche and brown butter. The saltiness of the caviar perfectly offsets the extreme sweetness of the tart, creating something truly unique. We could eat this every single day (if we could afford it!). Now it’s time for dessert, and this is where Petrossian really puts things over the top. The dark chocolate “caviar” presentation has so many elements it’s hard to know where to start. The dark chocolate pearls—that look exactly like caviar— are accompanied by Meyer lemon gelée, fresh citrus supremes, rose champagne sorbet and vanilla Chantilly, which you spread on thin, circular hazelnut tuiles. The cheerful greeting from the Taiwanese dumpling house mascot puts you in an upbeat frame of mind, and when you pause at the glassed-in display kitchen where dumplings of all sorts are being created by hand, that happy feeling is sure to continue until you are seated at your

cinnamon and boba, perfect for these summer temps. Ask your server to check on the latest additions to this menu as it does change seasonally. Choose appetizers like the wood ear mushrooms or baby back ribs, then follow up with the main event. Ordering here is on a checklist-style system, where you choose the dumplings and buns you want to share (or hoard for yourself; it’s all good). Good choices are the shrimp and kurobuta pork shao mai; Jidori chicken; and vegan dumplings, the latter stuffed with shitake and wood ear mushrooms, glass noodles and bean curd—but it’s the color that’s Aria truly amazing. The plump buns come in several options, like kurobuta pork, Jidori chicken and oyster mushroom buns, and a vegan version stuffed with the same mix you’ll find in the dumplings. Get wontons and xiao long bao varieties, too. It seems like the choices are endless. You’ll mix dipping sauces to your personal preference. And once the baskets of dumplings start issuing from the kitchen, you may be hard-pressed to keep up with the flow. Be prepared! If you’d prefer, choose soups, noodles or entrées instead of dumplings only. The vegan wonton soup is light and delicate in kombu broth. A little sesame drizzle is perfect here. Another star of the local scene, Jamie Tran is the chef and owner at the Black Sheep (702.954.3998), a southwest area dining room showcasing her imaginative take on Vietnamese and other Asian flavors and ingredients. She just wrapped an impressive run on the 18th season of hit competition show Top Chef, filmed in Portland, Ore. Now Tran is back in Vegas and ready to welcome a new group of curious diners for memorable bites like salmon skin tacos, glass noodles with vegetables and spicy gochujang sauce and whole fried rainbow trout with ginger and rice wine vinegar sauce. Guy Fieri is a prominent and recognizable force on the Strip with his popular restaurant at The Linq Hotel, but he’s brought his Food Network show Diners, Drive-Ins & Dives to town for some culinary exploration several times. Veteran chef Sheridan Su blew Fieri away with the deliciously legendary pork belly bao at Fat Choy (702.794.0829), an Asian-American take on the classic ’60s diner experience located in the off-Strip Eureka Casino. Su serves up other dishes locals love at Fat Choy, including chicken teriyaki rice bowls and a kimchi bacon cheeseburger, continuing to build on his reputation as one the city’s top chefs. Back on the Strip, the iconic duo of Mary Sue Milliken and Susan Feniger established themselves as award-winning restaurateurs before they broke through to the mainstream during the early days of the Food Network with their smash show Too Hot Tamales. It’s always the right time to revisit their cuisine at Border Grill (702.632.7403) at Mandalay Bay. And while Giada De Laurentiis continues to be one of the network’s all-time most popular personalities, you might not know that she began her career as a restaurateur in Las Vegas with Giada (855.442.3271) at The Cromwell. Mat Franco reinvents his iconic show on the Strip Before the pandemic shutdown hit, Mat Franco had one of the tightest sets of any magician on the Las Vegas Strip: It was one amazing close-up set piece after another, with lots of humor, wit and family memories thrown in for good measure. And Franco’s post-shutdown show is even better, partly because of the time he had to reimagine it. The first thing fans of the show will notice is a new segment before the show even starts—Franco, in a series of videos posted on social media, performs quick bits of magic, some meant to wow you, some meant to just make you laugh at their silliness. For those who have never experienced a Franco show before, it’s a great introduction to his style, as well as a hint as to what to expect from the show itself. The personality, sense of humor and smile that helped Franco win America’s Got Talent are in full force in his show at the Mat Franco Theater. He’s instantly likable, and spends plenty of time with his

audiences, finding out information from them that gets used at the end of the show in a signature illusion that lends itself to the name of his show—Magic Reinvented Nightly. No matter how many times you’ve seen this show, this final bit ensures that every performance will be different. One segment that’s likely to always be in Franco’s show comes midway through. After a touching story involving his grandmother helping him achieve the seemingly impossible, Franco proceeds to do just that: He begins producing cards from thin air, demonstrating why he’s easily one of the greatest close-up magicians in the world. This performance brings the house down each and every time, and requires no pyrotechnics, no special effects, no explosions—it’s just a man, cards and loads of technique. There are also a few new additions, and they are welcome additions to Franco’s stable of favorites. One involves a poker table and four volunteers, and trust us—no matter how closely you’re watching the cards, nothing can prepare you for how this illusion unfolds. It’s a great blend of humor, audience participation and sleight-of-hand. Another new illusion involves a helium-filled balloon that “switches” with another balloon not filled with helium. Again, best of
luck in trying to figure this one out. But, as Franco would admonish you, why are you trying to? Just enjoy it, as you would a big-budget Hollywood film, without trying to determine how all the special effects are achieved. And as Franco moves forward, ever reinventing his show, it’s a safe bet his fans will always be ready for more—whether they can figure it out or not.

From the early 1970s to 2012, the property was known as the Las Vegas

Hilton, then LVH from 2012-’14, then finally the Westgate Las Vegas in 2014. Although the hotel’s owners have changed, the property has always offered stellar options to grab a bite, have a cocktail and have some fun—and we’ve picked three of our favorite spots.
This restaurant has been part of the property since opening in 1974. The famed Benihana brand serves as the anchor eatery for the 38,000-square-foot complex that lies just off the casino floor. Once through the

The WNBA’s Las Vegas Aces have been an instrumental piece of the professional sports renaissance that has enveloped the city in recent years. With Mandalay Bay’s dynamic Michelob Ultra Arena serving as home court, the team relocated from San Antonio before the 2018 season and made an immediate impact in the league and on the Strip with an exciting, fast-paced style of play and a highly competitive approach. The franchise was founded in Utah in 1997 as one of the original eight teams in the league, a strong history that really resonates right now as the WNBA celebrates its 25th anniversary season and record-setting growth. In January, Las Vegas Raiders owner Mark Davis bought the Aces, paving the way for both professional teams to work together to raise the profile of sports in Las Vegas. After a short break for the rescheduled Olympic Games in Tokyo where an astonishing five Aces players represented their respective countries on the court—the WNBA season resumes this week and the Aces are back in action at Mandalay Bay against the Washington Mystics on Aug. 15 and 17. The team will hit the road after that, returning for more home games in Las Vegas on Sept.2 and 5 against the Chicago Sky. After a dominant start to the season, the Aces are currently resting in second place in overall league standings, in great position for another deep playoff run after winning their way into the conference finals last year. Leading the way once again is reigning MVP A’ja Wilson, the 6-foot-4 all-star forward averaging 19.4 points and 9 rebounds per game.

“We came into this season with a lot of confidence and we know what we bring to the table,” Wilson said. The Aces also rely on steady play from 6-foot-8 center Liz Cambage, one of the most dominant players in the league, and her 14.6 points, 8.9 rebounds and 1.7 blocks per game. On the perimeter, guard Kelsey Plum is having a banner year after sitting out last season rehabbing a serious knee injury. She’s responded with 13.5 points per game coming off the bench while providing limitless energy and pinpoint shooting. “I feel like I’m in a really good place and I’m grateful to have such a great team around me. You can find it in the wildlife habitat near the Garden Chapel (it’s also in the spot where the original bungalows were located where Siegel had his own personal suite). One cool fact about the plaque is you can read about the secret escape routes he had leading from his suite. For more mob history, there’s only one place in town to visit: The Mob Museum (702.229.2734). But did you know that the museum now produces and bottles its own hand sanitizer on property? The timely product is made down in the museum’s underground speakeasy, where they also make moonshine. The hand sanitizer is made from the externally sourced ethanol, as well
as the waste produced during the moonshine distillation process. If the mob era and old-school Vegas vibe piques your interest, a must-visit is the Golden Steer Steakhouse (702.384.4470), founded in 1958. Dine on some of the best steaks in town while seated in vintage booths once occupied by famous people that include the Rat Pack, Elvis Presley, Tony “The Ant” Spilotro, Natalie Wood and Nat King Cole.. For more Vegas history, head downtown to the Golden Gate Hotel & Casino (702.385.1906). While the property, which was first erected in 1906, has been revamped and revitalized through the years, you can browse through artifacts from its early days. In the hotel’s lobby, check out memorabilia that includes gaming ledgers, guest books, Prohibition-era liquor bottles and even Vegas’ first telephone. While downtown, head to the famous Atomic Liquors (702.982.3000)—the oldest free-standing bar in the city. It was the first spot where beer, wine and mixed drinks were served over the counter, thus creating the “Tavern Sale License” of which Atomic was issued the first ever: #00001. RuPaul’s Drag Race Live presents some of the best acts and costumes from the show
The reopening of RuPaul’s Drag Race Live this month at the Flamingo Las Vegas was a monumental event for several reasons, perhaps most notably because it marked the return of one of the Strip’s hottest new shows. The flamboyant original production based on the Emmy Award-winning TV competition show made its initial Las Vegas debut in late January 2020, garnering rave reviews and building massive momentum before the pandemic set in and halted live entertainment everywhere. “It was definitely disappointing, also because we had all been touring prior to coming to Las Vegas and we were looking forward to doing this show in one place and leading a somewhat normal life,” said Asia O’Hara, one of six stunning queens anchoring the cast. “Just when we thought we were getting comfortable and could take a deep breath and enjoy the show and our lives, it was shut down. “But it’s great to be back and a lot of local entertainers have been saying that they feel like things are better now than the first time around (before the pandemic). Steak tartare used to be the Rodney Dangerfield of the food world—it got no respect. In fact, it spent quite a lot of time being the brunt of jokes, including a particularly cruel bit courtesy of Mr. Bean, in which the titular character spends his entire meal trying to hide the dish in question wherever he can find space on the table, rather than just telling his server he really doesn’t want to eat it. Those days are fully in the rear-view mirror. Savvy diners know that

not only is steak tartare a must-try dish at higher-end restaurants, it can often define the dining experience. On its face, the dish can seem deceptively simple: It’s traditionally made with raw ground beef and served with any number of ingredients, from onions and Worcestershire sauce to capers and pepper. But take one bite of steak tartare at any of Las Vegas’ top steakhouses, and you’ll realize that description falls short. The only limits to steak tartare here are the chefs’ imaginations. There’s the sublime Prime steak tartare at Aria’s Bardot Brasserie, a visual feast with its orange egg yolk seeping into every crevice of the dish. A small bit of sauce verte (green sauce) adds just a bit more color and flavor, and the deep flavors of the meat pair perfectly with house-made waffle fries. Bazaar Meat by José Andrés at Sahara Las Vegas has a fantastic selection of tartares, each more inventive than the next. As good as Vittore 1950 is (small medallions of flawless tenderloin with black pepper, Parmesan, capers, brown-butter croutons and sherry dressing), fans—and especially vegetarians—will want to dive into Andrés’ beefsteak tomato tartare, which looks like the real thing but is a taste sensation all its own. Flavored with balsamic vinegar, cucumber and black olive, it will have you asking, “How did he do this?” Hank’s Fine Steaks & Martinis at Green Valley Ranch provides an excellent 7X wagyu beef tartare for its happy hour, and you won’t be happier than when you’re experiencing the flavor sensations of quail egg yolk and smoked paprika aioli on some toasted brioche. You might not expect to find great steak tartare at an Italian restaurant; you would be dead wrong! Brera Osteria at The Grand Canal Shoppes, which pays tribute to the famous Milan neighborhood, serves up a delicious version, using American wagyu beef, anchovies, capers, shallots and mayonnaise. Certainly not the least on this list is the hand-cut Prime beef tartare at Bugsy & Meyer’s Steakhouse at Flamingo. It’s easily one of the best things on the menu, served with a truffle crème fraîche and pan-toasted country bread. Odds are you’ll be fighting your dining companions for that last scoop.

Some of these are still in his show, like a pair of slippers equipped with a bumper to avoid stubbing your toe at night.

Paul Conforte Xpand Realty’s Paul Conforte is looking to help you expand into the Las Vegas area, and he has plenty of experience in that area. “I’ve been in real estate about 15 years,” Conforte says. “My mom was a Realtor, so it’s been in my blood. At Xpand, it’s more like family.” While Xpand Realty serves all types of customers, Conforte notes the niche they’ve created. “Our company’s owner is from Hawaii and our business is very referral-based,” Conforte says. “We find that a lot of people from Hawaii are looking at the Las Vegas market for vacation homes or investment properties because it’s so much cheaper here.” Conforte, who moved here more than 20 years ago to attend UNLV, sells homes all over the Las Vegas Valley, but he does a lot of business with custom home builder Toll Brothers. He observes, “Toll Brothers is going really modern, doing more with less space, and they’re doing so much with one-story communities.” Conforte is full of pro tips, but something especially valuable he notes is regarding perception on the part of the buyer. “The biggest misconception is that when you go to a builder, they’re your Realtor. If you want somebody to look out for your best interests, somebody who has fresh eyes to notice something that maybe you didn’t, you should always bring a Realtor.
