Where Do You Wanna Eat? We make no secret of it here at Las Vegas Magazine: We all love restaurants on the Las Vegas Strip. All kinds. All price points. Whenever a new restaurant opens, we’re counting the days until we can head over to check the menu out. I mean, think about it: Chefs from all over the world come here to show off their culinary skills; designers rarely spare expense to transform their environments into true showcases; and the waitstaffs really make you feel like a VIP. Like the city itself, dining here is exciting and ever-evolving. The latest addition to our restaurant scene comes courtesy of celebrity chef Bobby Flay: Amalfi at Caesars Palace. It’s Flay’s foray into the world of Italian cuisine, and managing editor Nina King takes you through the venue in this week’s issue (“Coastal Chic,” p. 24). King has also compiled a list of some of the other amazing Italian options on the Strip and all over the Las Vegas Valley (“A Little Italy in Vegas,” p. 34). Not a huge fan of Italian? No worries. Blues Bonanza Blues fans will no doubt be flocking to Las Vegas this week to catch one of the genre’s hottest guitarists, Joe Bonamassa. He’s one of the best-selling blues guitarists of this generation, 11 of his 15 solo albums hitting number one on the Billboard Blues charts. His style recalls the sounds of Cream, Jeff Beck and Jimmy Page, while still feeling completely original. He’s been more or less a phenom from the age of 12, when he formed his first band. Since then, he’s jammed with legends like B.B. King, Greg Allman, Eric Clapton and Paul Rodgers. He also has direct ties to Las Vegas: His album Different Shades of Blue, which charted at No. 8 on the Billboard 200, was recorded at the Palms. Part of the fun of a Bonamassa show is seeing what instruments he’ll bring onstage—he’s an avid collector of vintage guitars and amplifiers, compiling hundreds over his decades-long career, including several “burst” Gibson Les Paul Standards from 1958-’68, considered holy grails for guitar enthusiasts. –Ken Miller

Absolutely Intoxicating

Caesars Palace production delivers laughs and excitement It’s a question anyone who’s lived long enough in Las Vegas is eventually asked by their guests: “If you could only see one show while you’re in town, which one would it be?” For at least the last 10 years, that answer more often than not is probably Absinthe, a one-of-a-kind production in a one-of-a-kind venue that has been drawing rave reviews since it debuted on the Strip in 2011. It’s the kind of show you can’t wait to tell everyone about once you’ve seen it. The venue itself makes you feel like you’re part of something special. The Spiegeltent is ornately decorated, its circular space featuring a bar, hundreds of seats, tables, and a smallish circular

stage at the center. “That’s it?” you might be asking yourself. But you’ll forget you even thought it once the show begins. That space is used extremely effectively by a variety of acts, all connected by the extremely foul-mouthed (and extremely funny) Gazillionaire, a sleazy “producer” who brags about his money when he’s not insulting the audience and abusing his poor assistant, Wanda Widdles, who’s not above being a bit blue herself. The acts themselves are all world-class, starting with one that may induce vertigo in some audience members—an acrobat slowly ascends to the top of a chair mountain he builds, balancing

himself along the way and sometimes actually moving the chair mountain around. Once he reaches the top, down comes The Green Fairy, an iconic part of the show displaying great curves and great pipes as she serenades the crowd with “Come On-A My House.” It’s the perfect segue into the show’s raunchy—but fun—style. Along the way, you’ll enjoy acrobats, jugglers, strongmen and a few naughty intermissions that will have you doubled over with laughter. Here’s the Beef The “instant” bacon (a five-spice pork belly) appetizer at StripSteak might be worth the trip alone. However, this widely popular plate is also just a precursor to the comfort-food delights combined with chef Michael Mina’s elevated culinary touches. The menu piles up steakhouse classics like a filling BLT wedge salad, oysters on the half shell, shrimp cocktail, gigantic seafood platter and a juicy Mary’s brick chicken entrée. But the star of StripSteak is, of course, the steak. All cuts—filet mignon, flat iron, bone-in ribeye, New York strip and dry-aged ribeye—are cooked over a wood-burning grill, so the sear and char are perfect. Big spenders and real meat lovers will want to order the Mishima A5 Japanese rib cap and slice it up like buttah! Guests can add the tasty StripSteak sauce or béarnaise or black truffle butter to any cut, too. Racing and Much More Whether you just can’t wait for NASCAR to return or you’re still feeling the buzz from last year’s event, you can always get your racing fix in a safe, friendly environment at Pole Position Raceway. The indoor facility features electric, state-of-the-art go-karts that to up to 45 mph. As you might expect, it’s terrific fun for the whole family—especially competitive families. Have Any New Year’s Eve Plans? Ring in 2022 with Blue Öyster Cult at Golden Nugget For nearly five decades, Blue Öyster Cult has toured in support of its music—even dubbing its endeavors as “On Tour Forever.” It’s that commitment that garnered the hard rock-meets-heavymetal band’s large fan following and continued support in the U.S. and around the world. While originally getting its start in 1967, and after going through many a band-name change, the late ’70s brought the band its permanent BÖC moniker and its first commercially successful album, 1976’s Agents of Fortune, with the band’s most-recognizable hit, “(Don’t Fear) The Reaper.” More hits followed with 1977 album Spectres’ huge radio hit “Godzilla” and the band’s live studio album Some Enchanted Evening in 1978, with more huge hits like “We Gotta Get Out of This Place” and “Astronomy.” Fire of Unknown Origin produced another iconic BÖC radio staple, “Burnin’ For You.”

Never taking a break from performing, BÖC became permanent faces on MTV and VH1—and pop culture icons with the legendary “more cowbell” SNL skit—and proceeded to take its music to the people with a relentless touring schedule. They’re set to release a new studio album this October with all-new songs. The band is also set to welcome in 2022 with a Las Vegas crowd when they take the stage at the Golden Nugget showroom on Dec. 31. “The Golden Nugget stage is magical,” founding member, lead vocalist and guitar player Donald “Buck Dharma” Roeser told Las Vegas Magazine. “Having performed for five decades ourselves, we are keenly aware of its history and all the stellar entertainers who have preceded us at the Golden Nugget. Ringing in the new year will be a special privilege.” What can fans expect from the band’s NYE performance? “Besides a

generous assortment of our classic songs, we’ll perform several tunes from our new album, The Symbol Remains,” Roeser said. “I know fans from all over are planning to attend, even internationally, if travel permits.” If you haven’t snagged your tickets to BÖC’s New Year’s Eve concert yet, now’s the time to purchase them. Spectacularly Strange The new—and ever-expanding—immersive entertainment district known as Area15 is a playground for the mind and body. It’s art come alive. It’s delicious food and drink. It’s where grown-ups can be kids again and kids can have some fun with the adults. “The whole idea is we’ve created an ecosystem for excitement, art, creativity, but also for events and experiences,” says founder and CEO Winston Fisher. “Everything in (Area15) was curated and picked—this was curated to find best-in-class experiences, and it’s exciting to create something truly unique and creative. From the minute the lights go up on “X” Burlesque, you barely have time to take a breath, so tireless and relentless are the performers who tackle every number with passion and confidence. It’s a topless show, yes, but these women have serious athletic skills. Main courses here feature all your favorites like chili verde and carnitas, but poultry fans should check out pollo Josefina, a bone-in airline chicken breast braised in a creamy chipotle sauce with mushroom and onions. Another highlight is Cabo Azul, a Maine lobster enchilada and a poblano chile stuffed with shrimp and

Dungeness crab, along with an Ensenada-style shrimp taco. Another standout is chile negro (pictured), braised Angus short ribs in chile negro sauce with micro-cilantro. If your tastes run more along the surf and turf route, definitely check out carne y camarónes, an 8-ounce filet mignon served with two Mexican wild white prawns sauteed in a garlic butter sauce. Vegetarians have choices here as well, including enchiladas stuffed with sauteed zucchini or spinach. Sommelier is uncorking those special moments For Dylan Amos—sommelier for Delmonico Steakhouse at The Venetian—drinking wine is more than just drinking wine. “There’s nothing better than sharing a good wine with good people; that’s part of the magic,” he says. “It creates moments. It freezes time. It’s preserved in amber in your memories.” And Amos serves as the gatekeeper to the 2,600 labels—ranging in price from $25 to $52,000—at Emeril Lagasse’s Las Vegas steakhouse. He joined the restaurant in 2015 but started working for the celebrity chef’s empire back in 2012 in Charlotte, N.C. But before that, Amos got into the food and beverage industry more than two decades ago—starting as a dishwasher simply to pay bills while he was going to college to study film and English. “I ended up falling in love with the service industry,” he says. “I realized that even though I was going after heady academic pursuits, I really liked working on my feet and with my hands.”

Over the years, Amos climbed the ladder and moved into management at various restaurants in North Carolina, where he grew up, and in Portland, Ore., where he lived for a few years, eventually moving more toward a sommelier position. He came to Vegas after Emeril’s restaurant in Charlotte closed to take a floor manager position, but quickly began to handle wine for the restaurant. “It happened lighting fast—at the speed of Vegas is how I always like to say it,” he says. “I feel like I’ve accidentally ended up exactly where I belong. I didn’t get into this industry with a plan to be here in Vegas—I just wanted to pay bills and get through college; then it steamrolled. I didn’t even have wine till I was 29 years old. It’s just such a collection of things that happened. Now I’m here at Delmonico, this incredible restaurant in Las Vegas. People come here for a once-in-a-lifetime experience, and I want to give that to them.” –Kiko Miyasato

The impressive menu is not your typical sports bar fare; instead, it’s packed with standouts like 18inch, all-beef hot dogs you can get in four different recipes, black truffle pizza, miso-glazed salmon, 16-ounce New York Strip, Beyond burger, Southern fried chicken sandwich and much, much more. And let’s talk cocktails. There are three different bars, all with seating, so you can enjoy a menu with a dozen specialty cocktails. Like chai tea? Try the Aces High with Hendrick’s gin and a Japanese butterfly tea reduction. Bourbon lover? When restaurateur and chef Bobby Flay first began traveling through Italy, he might not have been intending to transform his Mesa Grill at Caesars Palace into an Italian restaurant. But when the opportunity to do so appeared, it seemed perfect. “Opening Amalfi at Caesars Palace has allowed me to showcase my passion for the Amalfi Coast and the fresh flavors the region is known for,” said Flay in a release. Inside the upscale, seafood-driven restaurant, you’ll find a scene set with light woods and tile work, with a bar curving away from the entrance. The dining area is arranged as two large rooms, with comfortable seating, soaring ceilings and an open kitchen with large racks of wine on the area

above that, creating a striking architectural element. In the second room, you’ll find more tables and circular blue-tiled displays, a focal point that showcases the seafood available that night. There are several cocktails to start a meal with, from light spritzes to mezcal negronis and espresso martinis, plus wine and beer. The antipasti has plenty of seafood-inspired selections, including a shellfish fritto misto with pistachio pesto, charred octopus, tuna tartare and mussels in a tomato and white wine broth. The ricotta-stuffed squash blossoms are also popular, and in a delicious twist on the classic caprese, bufala mozzarella comes with charred lemon leaves and chopped tomato relish.

Choose from pasta like the squid ink fettucine, an eye-catching arrangement with lobster, squid, shrimp and a fra diavolo sauce. The paccheri, with rockfish and cherry tomatoes, presents a milder flavor, and the orecchiette is served with an inventive eggplant Bolognese. The fish menu is special here, with guests heading to the fish display to consult with a fishmonger, and select their dinner entrées. Recently, striped bass, red snapper, branzino, carabinero shrimp, among others, were available from the market. Choose from grilled whole or filleted, served one of three ways: with Meyer lemon and capers, with salsa verde or with red pepper and Calabrian chile pesto. You can also choose Jidori chicken al forno, with a pecorino crust, or ribeye, New York Strip or filet mignon steaks, all Prime Angus beef. An amazing side is the crispy potatoes with Parmesan, lemon and oregano. There won’t be any of this left over. The unusual mascarpone polenta with red pepper and a black olive relish is one of those love-or-leave-it dishes. We think you’ll love it. And the desserts are delightful, including Bobby’s pistachio sundae, a chocolate budino, blueberry panna cotta and tiramisu. But the Lemon, Lemon, Lemon cake definitely does take the cake. Tart lemon custard is layered over a light lemon cake and crispy lemon wafers, for a perfect finish to your evening.

Kathleen Madigan is excited to return to Vegas stand-up

Stand-up comedy queen Kathleen Madigan has been performing regularly on the Las Vegas Strip for years now, and is beyond excited to return to her current Vegas headquarters, the Aces of Comedy series at The Mirage. While some comedians hit the road again as soon as possible after last year’s entertainment shutdown, Madigan held off until she was ready, staying busy by launching a comfy new podcast called Madigan’s Pubcast.

and a place in Nashville, on two different lakes, and the stuff I want to do outside, fishing, golf, hiking, it was all open anyway. I went to a few places I’ve never had time to go, like Muscle Shoals to see those great recording studios. I did weird stuff that was safe and available. And I have a house I’m never in, so it was nice to live in it for a while. Every day was, “I wonder what’s in this closet? Oh, I put this here four years ago.”

How does it feel to be coming back to Las Vegas for the first time in a long time? It’s so exciting, because I love everything about The Mirage. As much fun as it is to have the show, I really miss video poker. I haven’t been in a casino since (the pandemic) started. The Mirage is my favorite. It is the perfect-size casino, and I do all the stuff, the gambling, I go to the pool, and it feels like the most manageable one. Some casinos are so damn big. I did a corporate gig once at Mandalay Bay and oh my god. It was a really nice room, but I had to ask, do you have anything less nice that’s a little closer to Earth?

The name of your tour is Do You Have Any Ranch. Can you explain that a bit? My sister has a friend who has these two teenage girls, and they all came to Nashville to go out on the lake and do stuff, and I didn’t know them that well, but for three days, no matter what I said to them, all they would do is look at me and say, “Yeah, so do you have any ranch?” It was so dismissive of the fact that I’m speaking to you. But also, like I said to my sister, I don’t remember a time when my brain was so empty of thought and worry that all I could think of was salad dressing. Then I went to get them the ranch, and the following day it was, “Yeah, do you have any more ranch?” Where did it go? You ate that whole thing? So it became this thing. Now whenever my sister or I just can’t take any more, when you’re just over it, we just say, “Yeah, do you have any ranch?”

Traveling isn’t just a big part of your job, you actually enjoy it. Was it tough to be stuck in one place for a long period of time over the last year and a half? I was fine with it. I have a place in Missouri

That was something you discussed on your podcast, Madigan’s Pubcast, which you started last year as well. I told that story on the podcast and people started sending in ranch things. I mean, I’ll have some with chicken wings, but I don’t usually buy it. Did you know there are, like, 20 million kinds of ranch? This country has really lost its mind with ranch. There are only maybe five kinds of blue cheese dressing, comparatively. But yeah, the podcast, I never would have done it any other time, but I thought this was a way to at least stay in touch with people. It’s been fun, and the YouTube comments we get do feel like communicating, even though it’s still online. It’s really just what happens when I go to my lake bar and see my idiot friends who are always there, and it’s just what we would talk about. Do you think audiences have a greater appreciation for live comedy now that they had to go without for a while? I don’t know, because I waited longer than the youngsters did (to perform again). There’s a club in Nashville I’ve been (playing) since June, but there’s a lot of (comedians) who had been there for a long time so it was normal to them when it wasn’t to me. I’m just glad I can still make 25-year-olds laugh. I was worried about that, because performing was like, half of these jokes are about you. And I’m not sure they know that; maybe it’s not registering that I’m actually making fun of you.

At Caesars Palace, the New York look-alike Rao’s (702.731.7267) brings more than just the feel of that venerable New York restaurant to Vegas—one of its dining areas is actually a replica of the N.Y. version, with plush booths and memorabilia on the walls. Try the signature Uncle Vincent’s lemon chicken, beef lasagna or ravioli beggar purses filled with Bartlett pears and ricotta. Stripside at Park MGM, the Eataly Las Vegas marketplace (702.730.7617) is a bustling spot with multiple counters representing casual Italian cafés, pizza places, gelato spots and wine bars. close, and is super intimate, with an attractive bar and a fabulous wine selection, natch. The restaurant has been around for 30 years and features vegan options in addition to its traditional menu. Monthly wine tastings here sell out in a snap. Head to the northwest, and Red Rock Resort hosts Marc Vetri’s Osteria Fiorella (702.797.7777). The range of inventive pastas and flavorful pizza may cause serious soul-searching when trying to decide. Sunday brunch here is a sought-after spot. At the other end of the valley, Bottiglia Cucina & Enoteca (702.617.7075) at Green Valley Ranch is a casual place perfect

for a leisurely dinner, but weekends add a little more. A DJ plays on Social Saturdays, and brunch is served on Sunday. Tarantino’s Vegan (7960 S. FEW CITIES DO LOBSTER JUSTICE LIKE LAS VEGAS

If you’re visiting Las Vegas, odds are you plan on having lobster at least once. After all, this city has perfected many of the niche food groups that most Americans love (shrimp cocktail perhaps being the most famous), and lobster is right near the top of the list. The only unanswered question for most of you is: Where are you going to have it, and in what form? Therein lies the real challenge, for Las Vegas offers lobster in so many forms it’s nearly impossible to know where to start. Luckily, we here at Las Vegas Magazine have eaten all over the city and have had every conceivable version of this tasty crustacean. So allow us to take you through some of our personal highlights. Let’s start with the absolute classic, one you’ve no doubt had regardless of where you come from: Surf and turf. (Are there three more mouth-watering words when visiting a classic steakhouse?) No more of that frustrating choice of steak or lobster. This is the best of both worlds! One of the city’s newest restaurants features a fantastic version—Barry’s Downtown Prime at Circa Resort & Casino. This eatery is already one of downtown’s hottest spots, and this dish is no doubt a big part of that, featuring a sautéed 8-ounce filet mignon (medium-rare, please!) and a Maine lobster tail served with roasted garlic aioli and red wine sauce. Next up is the single lobster tail, so appetizing with the meat popping out of the shell, ready to dip into melted butter. One of our personal favorites is the 2 1/2-pound Cantonese lobsters at Catch at Aria. This is a serious dish with serious flavor, the lobster divided up into succulent bites and served with sake, oyster sauce, scallions and garlic. So amazing! And Harvest by Roy Ellamar at Bellagio, a restaurant that stresses sustainably produced proteins, serves up a stone-oven-roasted Maine lobster with citrus and seaweed butter. Like everything else at Harvest, it’s unforgettable. Everything is served deli counter-style, and there are also some other lobster-based delights you’ll want to sample while you’re here: Lobster crab fries, lobster grilled cheese, and a “lobsicle”—a 4-ounce Maine lobster tail on a stick! For a true Vegas moment (especially if money is no object), we highly recommend the “One Pounder,” which is exactly what it sounds like: a full pound of Maine lobster meat. Sure, you’ll probably say that sounds like a lot, but let’s be honest: You’ll eat every bite and love it! And what’s a story about lobster without mentioning the seafood tower? It seems almost inconceivable to experience Las Vegas without indulging in at least one. There are so many great versions of this up and down the Las Vegas Strip. We’ve already mentioned Bugsy & Meyer’s Steakhouse, but that version definitely bears mentioning. It’s a terrifically displayed collection of seafood delights, with lobster (appropriately) towering over the rest. Vegas, we would certainly hope so!), head to Green Valley Ranch Resort in Henderson and Bottiglia Cucina & Enoteca, where as part of your overall experience, you can order the lobster Benedict—butter-poached lobster, Parmesan creamed spinach and spiced hollandaise sauce.

Another option we see popping up on more and more menus is lobster mac and cheese. Needless to say, this is one menu item we always order when we see it, for every restaurant tackles this item differently. We’ve yet to have one we weren’t crazy about. We’d start with the version at VooDoo Steakhouse at Rio, as much for the side dish itself as for the ridiculously cool views from 50 floors up. How about salads? There’s a splendid lobster salad at the newly opened Estiatorio Milos at The Venetian. This Greek restaurant celebrates the sea’s bounty, and this is one of the restaurant’s most popular offerings. And what’s a salad without a soup? Again, there are plenty of lobster bisques to sample up and down the Strip, but we’re seriously partial to the one created by Top Chef Tom Colicchio at his Craftsteak restaurant at MGM Grand. Flavored with tarragon, it’s so creamy and decadent. Finally, taco fans can rejoice that Nobu at Caesars Palace has a seriously ampedup version. Now go get your lobster on!
